History & Observations:

•Current operation is an Italian restaurant with full service lunch and dinners

•Small seating capacity inside due to large bar area and dance floor. Outside dining on patio supplements the seating capacity, however venue is different for patio dining than inside dining

•Current dining style is white table cloth linen & china service

•Business was established in 1964, loyal customer base from neighboring areas

•Core Customer- local residents, tourists and recommended families , average age is 45- 65

•Strong base for live entertainment, consistent band plays on weekend & creates good crowd at bar and in dining room

•Special events keep customers coming back, cooking show monthly draws large crowd

•Current seating at tables and bar do not match, booths are wood and without cushion seats or backs

•Artwork and picture lights illuminate the dining room, rope lights and disco ball light the bar and dance floor, lighting at booth is sufficient, table area are too dark

•Patio Dining lighting is striking with miniature blue lights on canopy

•Patio dining uses table cloths and china, more formal than space commands

•Patio seating is mixed, some patio some banquet style, needs to be consistent

•Tabletop needs additional enhancements.

•Bar stools all match, dark wood, newer than rest of patio décor

•Access to restaurant is minimal, main entrance in rear of property, should be another exposure on front of property.

•Plantings are so dense, patio is hidden at day parts and evenings, loosing exposure to potential customers.

•Outdoor Trellis in Dining room should be outside not inside

Recommendations to Paolo’s Ristoranti’ based on site review and observations during peak meal times and owner feedback.

Recommendations:•Change exterior signage, create new image with sign and color scheme on outside, create exterior image that reflects interior image, i.e. Old Fashion Italian Restaurant

•Thin plantings in front to expose patio, provide view to dining, make ramp and opening if possible.

•Purchase new chairs for interior and provide cushions for booth seats

•Increase Lighting with Italian style Chandeliers, in color red or black to complement the interior, remove fans with lights if possible. Add picture lights where possible.

•Simplify name and signage to Paolo's Ristorante.

•Expand Menu to offer small plates for customers not wanting a full dinner. Provide a entertainment menu or late night menu on a table top frame

•New menu jackets recommended, enhance the old Italian style feel of restaurant

•Need new match chairs with a patio feel for outside area, remove tablecloths and add table top accessories for all tables. There is a conflicting message with linen and outdoors, provide new tables if needed.

•Expand on logo to create new style identity and branding to use with menu, signage and advertising

•Keep owner presence, competition is strong in neighborhood, it is a very competitive advantage

•Change glass block on room divider to more modern partition,

•Remove trellis in bar area, remove table cloths from high top bar tables, use hard surface tops for bar area.

•Remove rope lights and fan light in lounge by bar, add chandeliers, anchor rope lights on step area and railing

•Provide new curtain behind stage, brighter to enhance stage setting

•Visual access to dining from patio is recommended, open the space to the patio by installing a window above booths if possible to patio.
