Meet the vanilla queen

Patricia Rain knows all there is to know about vanilla. She has spent her life working tirelessly on behalf of the vanilla farmers on the equatorial

belt and was even crowned the ‘vanilla queen’ by the farmers themselves. We’re honoured to have her joining us from California to open our

National Real Vanilla Day event at Bickleigh Castle.

Join us on Friday 17th October at 10.30am-11am in The Great Hall where sustainability expert Patricia will be officially opening National Real Vanilla Day.

We’re on a precipice where we could lose pure vanilla within a generation,

if we don’t act now

Only 1 out of 35,000 species of orchids is edible…vanilla! Sarah will be creating an orchid masterpiece whilst Patricia Rain tells the story of real vanilla. Patricia Rain will enlighten us as to vanilla’s journey from seedling to pod, with fascinating facts and stories from her experiences, including how she was crowned the ‘Vanilla Queen’. Alongside her, National Floristry judge, Sarah Hills-Ingyon will be putting together a beautiful orchid display, which will be on show over the two days.

From orchid flower to vanilla pod

National Diploma Florist & Chelsea Medallist, Sarah Hills-Ingyon, is an established and respected figure in the world of professional floristry as a demonstrator, tutor, floral consultant, examiner and UK National Judge. In June & July 2014 - Sarah had the honour to judge for the RHS at Chelsea Flower Show and Hampton Court Flower Show.

Manju is a British Indian chef and cookbook author known for offering western cuisine to India and Indian cooking to the Western world through her books, TV shows, cooking demonstrations across the UK as well as India. She's a great fan of spices, including vanilla, and campaigns regularly for encouraging people to cook good food using good ingredients.

Born in Paris, France, Stephane was inspired by his Breton background and the traditional dishes prepared by his Mother. His career has taken him around the globe on the world’s most famous cruise liner, the QE2, as well as to Dublin where he worked with Patrick Guilbaud in his self-named two Michelin-star restaurant, before returning to the UK. It was in the late nineties that Stephane finally fulfilled his childhood dream to live near the coast and work with high quality seafood. He moved to Cornwall in 1998 and joined The Seafood Restaurant as head chef, which has since won the ‘Best Seafood Restaurant Award’ on five occasions.

Cooking with vanilla In order to demonstrate the diversity of the spice, we’ll be joined by the following chefs & cooks to treat us to an array of mouth-watering sweet & savoury dishes.

ON THE MENU: Stephane will be demonstrating Chargrilled Sea bass with a tomato, butter and vanilla vinaigrette in the Great Hall at 2pm on Friday.

ON THE MENU: Manju will be cooking a Sweet Potato Curry & Indian coconut treats in the Great Hall at 3pm on Saturday and available to chat to during the library session in the Great Hall at 5pm on Saturday.

Kilted chef, David Buchanan, has travelled the world cooking for some of the wealthiest clients from her Majesty the Queen, to celebrity families over the past decade. Recently establishing a food export consultancy business , PlatinuMeats, he now travels to central Europe shipping Scotland’s finest larder to mega yachts, villas and private estates for only the most discerning clientele. ON THE MENU: David will be cooking Steak with a vanilla sauce in the Great hall at 4pm on Friday.

Steve Ashworth, South West Chef of the Year 2013 ‘Best Dish’ Winner is a self-confessed ‘foodie’. Best described as an accountant by day, and chef by night , Steve is a great advocate for quality and local ingredients. ON THE MENU: Steve will be proving how vanilla is not just for the sweet-toothed among us with a savoury dish at 11.30am on Saturday in the Great Hall.

Cooking with vanilla

Emma Ring, Hills & Parkes Delicatessen Emma and Jacqui opened Hills & Parkes Deli in 2011, for their love of fine food and delicious ingredients. Emma has now qualified as a Professional Chef at Plymouth City College and next year will be specializing in cakes and patisserie. ON THE MENU: Emma will be baking a Chocolate & Guinness Cake at 10am in the Great Hall on Saturday.

Burlesque Baker, Charlotte White is the passion and artistic hands behind Restoration Cake. Charlotte has created exquisite creations on behalf of Laurence Llewelyn-Bowen and Great British institutions such as The Old Vic Theatre and the fabulous Dame Vera Lynn. With her first hardback book, Burlesque Baking, published in February 2014, Charlotte is taking cake decorating to a whole new level of decadence!

ON THE MENU: Charlotte will be demonstrating her cake decorating skills at 2pm in the Great Hall, judging the LittlePod Bake-Off at 4pm in the Orangery, and signing copies of her fabulous book, Burlesque Baking, in the library session at 5pm in the Great Hall.

Cooking with vanilla Janet Sawyer is the founder of natural ingredient company, LittlePod. LittlePod’s speciality is natural, responsibly sourced vanilla and the company has brought to market the first natural vanilla paste in a tube to make it easy for everyone to use real vanilla . Janet has written her first book, called Vanilla: Cooking with one of the World’s Finest Ingredients. ON THE MENU: Watch Janet demonstrate how to make an Apple & Blueberry Cake recipe from the book at 5pm on Friday in the Great Hall and have a chat in the library session at 5pm on Saturday.

For day visitors, refreshments will be available to purchase over the course of the two days, and a hog roast will be available from 12.45pm. For exclusive ticket holders, a buffet lunch will be served in the Orangery from 12.45pm on Friday and Saturday. Just show your ticket on the door.

The Exploding Bakery’s Tom and Oliver are passionate about baking with good quality ingredients. Oliver, says: "Anyone caught using vanilla essence should be shot, no, they should be forced to drink the horrible stuff, then shot.“
