It’s been eight years since that fateful morning, the eleventh of September, when we glued ourselves to our television screens after learning about the planes crash-ing into the Twin Towers of the World Trade Center. Although I often have trouble looking back in retrospect to remember the events of last week, I clearly remember the series of attacks coordinated by Al-Qaeda as if that morning passed just a few months ago. Chances are, you remember exactly where you stood as the events of that morning unfolded, too. I can’t help but think, if eight years can slip by that quickly, so might a decade. So where do we go as a nation from here? How can we make a positive impact as individuals or as part of a community? Without a doubt, there’s no time to waste. Improvement begins with our commitment to rethink, recharge and reuse the resources of our planet to help secure its future for the next generations.

If asked, could you name even two ways that you are aiding in a green project in your own home? The following pages provide planet-friendly tips to assist

your start with a greener, more eco-friendly lifestyle. Small changes that add up quickly, leading to positive changes that will parallel new habits with the start of a new fall season.

This issue invites you to make a small contribution to our servicemen stationed in Iraq to aid in a little much-needed relaxation time. Our cover story highlights the rewards of determination. Read how DeNice Watkins put her mind toward a goal and achieved it!

I can’t promise you that your new efforts to live green-er will enable you to wake up to a fresh evergreen lawn or keep the electric company’s hand completely out of your wallets. However, I can assure you that a little extra effort to refurbish or reuse just might reduce your home’s energy usage, resulting in an accumulation of extra green in your wallet to spend on something much more important than bills - you!

hilton hawaii and waikiki Beach were two destina-

tions that Denice watkins only dreamed that she

and her and her husband, David, could visit “some-

day.” as a matter of fact, this southern california

native hadn’t ever been anywhere outside of

laguna Beach and her surrounding community

here in arizona. so this busy wife and mother of

three children challenged herself and earned the

hawaiian dream vacation through her independent

cookie lee jewelry sales over the past year. “laguna

beach is beautiful,” said estrella resident, Denice

watkins, “hawaii is better!” for seven full days, Denice and her husband,

David, along with many other cookie lee sales representatives and their

spouses, combed the beaches of waikiki and were pampered in luxury

through a variety of entertaining experiences. the highlight of her trip

wasn’t beating arizona’s June heat, the formal dinner cruise or traveling

into chinatown for shopping; although those elements of the vacations

were rewarding. the single, most important feature of the trip, was being

able to spend seven uninterrupted days with her husband, while the kids

played back at home in goodyear with grandma.

On one specific hawaiian evening, previous to a planned “white night

party,” some time was set aside for couples to renew their wedding vows.

a beautiful waterfall; the perfect backdrop to an

incredible evening. “David, a man of few words,

turned to me, looked me right in the eyes and said,

i’am proud of you. thank you for bringing me to

hawaii.” Denice recalls that those words meant the

world to her. she remembers that this particular

evening summed up her journey in the tropical

paradise. “i feel earning the hawaiian getaway is

one of my greatest accomplishments ever,” she

said. Denice set a goal and worked on it every day

for a year until it was achieved. “it wasn’t always

smooth sailing,” she recalls in regards to obtaining the trip, “But with many

prayers, determination and help from my family, my customers and my

friends, i did it!”

Denice has been selling jewelry as an independent sales consultant for

the company for more than four years. she has flourished from someone

who described herself as having low self esteem, owning only a single pair

of pearl earrings in those earlier days - which she described as, “too dressy

for the neighborhood park or applebee’s,” into an independent salesper-

son earning an abundance of friendships and income. her next goal is

to earn the 2010 dream vacation to punta cana in the caribbean through

this year’s jewelry sales. Denice credits her career for giving her personal

security and her flourishing new identity.

local publisher coming to estrella

The Starpointe Residents Club recently hosted a signing for Estrella resident Richard “Dick” Toliver’s newly published book, An Uncaged Eagle. Richard “Dick” Toliver is a retired Air Force Colonel. He and his wife Peggy have recently created a new com-pany called Saguaro Publishing Company with the assistance of Mark and Jennifer Weber, who have assisted the Estrella residents through the process of self-publishing.

Mr. Toliver’s latest release, An Uncaged Eagle is a piece sure to touch your emotions, featuring highlights and “low-lights” of Mr. Toliver’s life. An Uncaged Eagle is perfect read-ing for anyone who has encountered difficulties in his or her life. Uncaged Eagles are individuals who have made a signifi-cant impact on the lives of others. Dig in and travel through the life of Colonel Toliver, beginning with his family’s escape from the Ku Klux Klan, which took place in the backwoods of Louisiana back in 1942. Embrace events of survival, meeting face-to-face with Dr. Martin Luther King, Jr., the Legacy of the Tuskegee Airmen, a life-changing event at 20,000 feet, and the Retired Colonel’s journey of life, coming full-circle.

The Tolivers have settled in Estrella Mountain Ranch, calling Arizona their home. Mr. Toliver continues public service as a Motivational Speaker. He has spoken to troops and groups throughout the United States as well as those sta-tioned overseas. He served on the Board of Directors at West Valley Hospital and currently serves on the Resident Advisory Committee to the Estrella Community Board of Directors. goodyear white tanks rotary club collects school supplies for needy children

Members of the Goodyear White Tanks Rotary Club weath-ered some extreme weather condi-tions on Saturday, August 1 at the entrance of a local retail store to collect school supplies for needy children. Their mission this time was to fill 400 backpacks with crayons, markers, glue sticks, paper and necessary supplies to put smil-ing faces on some less fortunate youngsters.

On Thursday, August 6, members of the Goodyear White Tanks Rotary Club delivered 400 backpacks loaded with back to school supplies and “mountains” of loose school supplies to Arizona Children’s Association. Last year, the office located at 11327 W. Bell Road in Surprise received a total donation of only two backpacks. What a welcomed surprise it was to receive thousands of supplies that will benefit thousands of children throughout the Valley this year. The Arizona Children’s Association serves the entire West Valley from West Phoenix and Tolleson all the way to Wickenburg and Tonopah. Upon learning of the plight of this office which serves about 800 children who are mostly poverty stricken and in crisis family situations, the Goodyear White Tanks Rotary Club came to the rescue. Between the Rotary Club members’ donations and help from Walmart, this mighty effort from a 60 member Rotary Club showed how one organization can make a difference in our community, especially in times of great financial need.

Annually, Arizona’s Children Association serves more than 45,000 children and their families across all 15 counties in Arizona. awana program resumes this fall

it’s time once again for awana at estrella mountain church. awana, approved workmen are not

ashamed (2 timothy 2:15), has evolved over almost 50 years, into a nation-wide recognized christian

educational program for youth. it’s a scheduled time for children in the community to combine learn-

ing and game playing in a high energy, fun-filled environment. the awana program originated in a

handful of churches in chicago back in 1950 and has grown tremendously, spreading to more than

one-hundred countries. the program has accumulated millions of adult alumni and is gearing up for

another season at estrella mountain church.

awana begins on monday, september 14 at 6:30 p.m. it will be held on monday and tuesday evenings

throughout the course of the school year. ages of participants range from cubbies (those students

who are two years previous to kindergarten), sparks (kindergarten through second grade) and t&t

(third through sixth graders.) register your child now. Booths will be set up on sunday mornings in

the estrella mountain church courtyard following sunday services, or you can contact susan Young at

gram, or for registration inquiries.

estrella mountain car club hosts classic car show/sock hop

The Estrella Mountain Car Club is hosting a Classic Car Show and Sock Hop on Saturday, September 19. The classic display opens the evening at 6:30 p.m. at the west parking lot of the Starpointe Residents Club. All Estrella residents who own a classic car are encouraged to participate. There is absolutely no entry fee for viewing the array of beautiful automobiles.

Then, get ready to rock around the clock in the Starpointe’s Gallery Room as the Estrella Mountain Car Club brings back the 50’s. This sock hop is an “adult of all ages” event and requires only that the participants be young at heart! Have a retro great time cuttin’ a rug as you twist and stroll back in time with a rockin DJ, liba-tions and buffet style hors d’oeurves. There is a nominal $10 per person charge for the Sock Hop and Poodle skirts are optional, but welcomed! Bring your best girl and your wheels and stroll back to the 1950’s, back to the days when that high school Principal made all the kids take off their shoes to dance on that gymnasium floor.

The EMCC is made up of Estrella residents who own classic, vintage and hot rod cars. The enthusiasts enjoy getting together to socialize. Anyone interested in joining is welcomed. Club membership includes a regular monthly meeting, conducted at the Starpointe Residents Club on the second Saturday of each month at 9 a.m. Residents wishing to learn more about the club should contact Rich at 623-393-8998.

mike Jones and Beth ehle, have teamed up to help to boost morale among some of our troops by supplying them with some golf balls to enhance a makeshift driving range that troops have built. “hitting a few balls gives the soldiers a chance to enjoy a little r&r and that’s the least we can do for them,” says ehle. “we have a local business who will take them and ship them to iraq for us. now, we just have to spread the word and collect balls and clubs.” there is a drop off box at the golf club of estrella or donations can be dropped off at Beth ehle’s home at 17791 w. willow in the fairways. for more information on this collection, contact Beth at [email protected].

We all have great intentions of doing our fair share to help maintain our planet, but many of us wonder just how to accomplish “going green.” Besides recycling our paper, plastic and empty water bottles (which cuts contributions to our landfills by 66%), what changes can we make in our everyday lifestyles to lead an eco-friendly life? Maybe you’re wondering if your actions truly make a difference. Living green is effective and can be easy. Small changes in your lifestyle can help make a big difference in our planet, its climate, and our future. And doing what’s good for Mother Earth certainly makes us feel good.

Labels on products that are certified include Energy Star for appliances (including air conditioners, refrigerators, washers and battery chargers), the Leaping Bunny for personal care products and cosmetics, and, of course, the USDA/Organic stamp for foods.

getting started at home

Some “green” products that you might want to consider using in your home include household cleaners, dairy products, meat, poultry, rice and corn products and baby food. Also keep in mind that apples, strawberries, peaches, spinach, green beans and potatoes are all freshly grown foods that are heavily treated with pesticides. These are items that you may choose to purchase in the organic section of your local grocery store.

Going green can also mean saving money. With a few inexpensive purchases and a slight adjustment to buying what you’re “used to buying” you can end up saving a bundle while you’re moving toward your new eco-friendly lifestyle.

consider a few changes in your purchasing habits

• Break the bottled water habit by purchasing a portable stainless steel single-sized, reusable canteen to help keep your drink cold;

• Pack plastic dishware for picnics and camping trips, rather than foam, paper and plastic utensils. Many are dishwasher safe and durable, allowing many uses.

• We’re all seeing an adjustment at the grocery store with bagging our foods and products. Consider purchasing your own, reusable cloth totes and save plastic bag consumption by more than 95%.

• Challenge yourself to cut out one trip to the grocery store a week to save gasoline usage;

• Change the air filter in your car at least one time per year to save the equivalent of 28 cents per gallon of gasoline;

• Create an indoor “garden” of plants. Houseplants remove compounds emitted from paints, synthetic materials and cleaning supplies, from the air.

• Remove lint from dryer filter after each use. A dirty filter uses 30% more energy.

• Use sponges instead of paper towels for clean ups. Germs can be removed from sponges by microwaving a saturated sponge for two minutes, one time per week. (Do not microwave a dry sponge, it will catch fire!)

• Remove your name from catalog mail by signing up at catalog.org.

• Set wash cycle on your wash machine to “cold” which will clean your laundry equally as well and save you up to $63 per year.

• Challenge yourself to shave two minutes off of your morning shower to save water consumption and dollars.

In an effort to continually provide our children with the highest qual-ity of safety and education, we would like to remind you of our guidelines concerning a few important issues.

Deliveries to the ClassroomWe are unable to disturb classrooms as this takes our children off task.

Please notify your children, in the morning, if you plan to bring in their lunch. Please have their lunch labeled (name, grade and teacher name) and in the office by 10 a.m. to ensure delivery to the designated area in the caf-eteria. Your children will then know to look for their lunch in the cafeteria. Homework assignments and books will be placed in the teacher’s mailbox. Teachers check their mailboxes twice daily.

Pick Up and Drop Off of StudentsPlease be sure to completely fill out the sign in form, located at the front

desk, when entering our campus and fill in your ending time when exiting. Remember to have your ID available. When picking up students, at the end of the day, you must wait until the dismissal bell rings to go out on campus.

Please review your designated meeting area with your children to avoid con-fusion. Remember to use the ball field parking lot for pick up and drop off of all students, 1st through 8th grade. Kindergarten uses the kinder circle. The north parking lot is reserved for handicapped parking, overflow from the employee parking lot and visitors to our campus.

End of the Day Plans or Early Pick Up of Students When requesting your children early, it is important to come into the

office 10 minutes prior to allow the office time to call the student and have them gather their assignments and belongings. Again, we appreciate you always having ID available. We request that you keep your child’s end of the day plans as consistent as possible in order to avoid confusion. If you must change your child’s plans, it is important that you do so by calling our office at least 30 minutes prior to dismissal to ensure the office staff, teacher and child are notified.

Incoming freshmen enrolled in Estrella Foothills High School’s Summer Transition Program did their part to be kind to the Earth during one of their eco-friendly educational days. The students planted a variety of herb seeds in rich organic soil using bio-degradable pots. The seeds and some of the supplies for this ‘going green’ project were donated by the local Buckeye Lowe’s home improvement store. Team Members from Lowe’s were on-site to help with the planting project and instructed students on watering procedures to assure that the edible herbs flourished. In addition, students exchanged facts about consumption of water and other valuable resources Freshman, Mallory Rockhill recalls that two of the facts that were most surprising to her. First, how many full gallons of water were necessary to flush a toilet -seven. She was also surprised to learn that bathing, rather than showering, saved a substantial amount of water. Conservation tips raised awareness on water usage for the high school students.

Come join the fun and learn music at the same time! Music Together Classes are beginning a ten week Fall Semester on Thursday, September 17 at Starpointe. The research-based classes are part of an international program for children from babies through 5 year olds, and the adults that love them. Mary Wilkening, a certified public school teacher and music teacher, will lead the class in songs, dances, finger plays, and other activi-ties. Children learn music better in their first five years than they will at any other time in their lives. Come share the joy of making music with your children. Classes are at 10:30 a.m. on Thursdays from September 17 to November 19. Each family receives two CD’s and a Songbook of the semester’s songs as well as a DVD on how children learn music. Desert Dan needs everyone’s help as he works to vanquish Max Usage and save the day as water use peaks this summer.

Up to 70 percent of our water is used outdoors during the summer. The demand for water peaks every year in July and August. Average daily demand soars from a January minimum of four million gallons per day to a peak of more than 10 million gallons per day.

The city of Goodyear is urging its water customers to be efficient during this high-demand time and cut back on the amount of water they use – especially outdoors. Here’s how customers can help hold down Max Usage this month:

• Water yards and landscaping every other day using an odd/even sched-ule. Odd numbered addresses water on odd-numbered dates; even-numbered addresses water on even-numbered dates.

• Water only between 8 p.m. and 6 a.m. Less evaporation at night makes

this more efficient than watering during the heat of the day.

• Turn off irrigation systems when the weather is windy.

• Leave sprinklers and irrigation systems off for three days after heavy rains.

Reducing water use pays off now and later. In the short term, custom-ers who use water efficiently in the summer pay lower water bills. It costs the city more to deliver each additional gallon of water when demand peaks. The last few gallons can cost six and a half times more to treat and deliver than the cheapest water. Over time, using lots of expensive water will drive rates up.

safety, awareness, and assistance will be the theme for this year’s Oktoberfest which will be held in the amphitheater on October 31 from 12 p.m. to 5 p.m. the city of goodyear’s police and fire Department will be on hand to demonstrate the importance of safety and awareness in your neighbor-hoods as they promote Block watch. we have also partnered with st. mary’s westside food Bank to promote assistance to those in need. we hope to bring in 10,000 pounds of food that will go to the agua fria and Buckeye food Banks. the event will host a variety of fun carni-val type booths, entertainment, and concessions. children may participate in fun games such as gourd bowling, football toss, and sack races. what a great way to start off a spooktacular day! minimum donations will be accepted for activities.

3rd annual estrella Kid’s triathlon saturday, september 26

On saturday, september 26, we are going to have a day dedicated to promoting, educating, and motivating estrella residents to get mov-ing. estrella multisport club, inc. will be host-ing another wonderful triathlon geared for kids ages 5-13. this unique opportunity allows for kids to explore their interest in cycling, running and swimming in a positive environment, while learning fundamental skills necessary to reach their athletic goals and setting the path for a positive life-long journey in sports.

starting at the starpointe residents center, the race will commence at 8 a.m., with check-in at 7 a.m. the course will be held within a 3-mile radius of the starpointe. the race will begin with a run, followed by a scenic ride around the north lake, and will end with a dip in the lap pool. ages 5-8 will complete the short course consisting of a .25-mile run, 1.5-mile bike ride and a 25-yard swim. ages 9-13 will complete the long course consisting of a .5-mile run, 2.8-mile ride and a 50-yard swim.

pre-registration is required and will be cut off at 150 participants. registration forms can be downloaded from www.estrellamultisport.com or picked up at the starpointe residents club. registrations along with the entry fee must be received by september 11. there is nO same DaY registratiOn. packet pick up is scheduled for september 25.

entry fee is $15 for residents and $25 for non-residents. participants will be allowed to attend a free clinic to prepare both the parents and the kids for the event. the top 3 places in each category will receive a trophy and everyone will receive a participation medal, goody bag and a t-shirt.

let’s be courteous to our neighbors. please remember to bring along a “litter” sack for pet droppings when you take your beloved best friend(s) for that morning or evening stroll around the neighborhoods or community lakes and parks. cleaning up after our friends takes only a few seconds and the benefits of a clean envi-ronment are rewarded to each and every resident in this com-munity. for your convenience, there are several “doggie bag stations” along the walking paths near both lakes, followed by trash receptacles along the way. if you’re walking within private neighborhoods, please bring a bio-degradable bag from home. Did you know that a plastic bag can take 20 years to decompose? this small courtesy enables all of us to sit along the grassy walking paths near our lakes and to walk bare-foot in the sand or grass areas in the parks. the environment and community will be a better place with your help.

Dlc resources, inc. became the common area landscape management provider at estrella at the beginning of 2009. we are committed to enhanc-ing the community through as many avenues as possible: event sponsorships, resident education classes, web-based communi-cations, newsletter articles and aligned goals with the commu-nity management. One of the community’s primary goals is to be more sustainable. we have long recognized the importance and value of sustainable prac-tices in landscape management and regularly review and improve our business operations to iden-tify ways to operate smarter and more efficiently.

One way we are making a big impact at estrella is by reducing the amount of waste that goes to the landfill. waste is separated into two categories; green waste and trash. green waste is defined as the grass clippings, weeds, leaves, small branches and simi-lar debris generated by landscape work. we calculated that 80% of the debris removed from estrella is green waste. this summer, Dlc purchased a horizontal grinder to efficiently process the green waste from all our communi-

ties. when the trucks return to our yard at night, the green waste is separated, processed through the grinder and picked up by a green waste recycling company that takes our processed material and turns it into mulch. each year, Dlc prevents approximately 18 million pounds of plant waste from being added to a landfill through recy-cling.

in addition to recycling, Dlc helps improve the quality of life at estrella by reducing the num-ber of vehicles driven by employ-ees to the community. each employee, with the exception of the superintendent and foreman, meets at our shop every morning before departing for the commu-nity. the crew is transported to estrella in a passenger van, reduc-ing the number of vehicles on the road. additionally, the trucks and equipment utilized daily by the crew are stored in a secure loca-tion on site further reducing the potential emissions created trans-porting equipment and personnel to estrella.

to even further reduce our emissions, Dlc replaces all two cycle equipment in our inventory every year. this includes buying all new leaf blowers, line trimmers, hedge trimmers, chainsaws and

backpack blowers. By replac-ing this equipment yearly, we reduce equipment related down time and onsite mechan-ic visits to repair malfunction-ing equipment. consistently updating equipment allows us to take advantage of advances in emissions technology yearly. managers that travel extensive-ly throughout the valley drive smaller, more efficient vehicles including hybrid toyota priuses to further reduce Dlc’s emis-sions.

managing water consump-tion is an important step to operating efficiently. Onsite irrigation technicians spend significant time each day test-ing, repairing and, when neces-sary, replacing various compo-nents of a community’s irriga-tion system to make sure it is in good working order. aggressive water management means giv-ing plants the amount of water they need to thrive; no more, no less. By actively monitoring the irrigation system, changes in weather and the different needs of plants, it is possible for us to keep water that would have been used for irrigation behind the dam or underground in the aquifer.

whO are the

people in your neighborhood

As former USC graduates, Kari and Chris Hurley claim that their lives practically revolve around the Trojan football game schedule in the fall. As a matter of fact, Chris is diligently working this football season to transform the basement in their Fairways home into a sports fan paradise! And the sports memorabilia is getting easier and easier to come by. “This year, we were excited to have the Dodgers move to Glendale for Spring Training and twice a year we enjoy watching the Lakers beat the Suns. It is almost like LA sports are now coming right to our door….like we never left California,” said Chris. He and Kari are anticipating a trip to Chicago to see the Trojans play Notre Dame in October.

Chris and Kari made the decision to leave Aliso Viejo, California shortly after their son James was born. “We were outgrowing our condo and knew affording our dream home would be difficult in California,” recalls Kari. She added, “We knew Estrella was the perfect place to raise a family, especially after watching the film in the Home Finding Center. From that day forward, we knew it was the right choice.” The Hurleys enjoy the safe feeling of living in Estrella and have made many wonderful friends. “The people here are key,” says Kari “They are always willing to lend a helping hand, provide some kind of guidance and most important, always ready to have some fun!”

the hurley familyOne of their very best friends is Kari Duncan,

who babysits and dog sits for the Hurleys on occasion. “Little Harrison adores Kari and never cries when we leave him with her,” states Kari. Mike and Kim Jones are also two of the Hurleys’ best friends and neighbors. They were the first couple that Chris and Kari met when they moved here. The Hurleys share kid watching duties and dinners with the Jones family and Kari is relieved to know that she can always count on the Jones if she gets into a jam when Chris is traveling.

Chris and Kari have been married for nine years, but together for sixteen years! The two met

during their junior year at USC. Chris recalls that Kari “went climbing over tables and chairs to talk to him,” but Kari and I agree that there is a much bigger-untold piece to that puzzle! Together they have two small children, James and Harrison, and pup named Rosebowl (Rosie).

Setting the scene on a relaxed weekend at the Hurley home often involves turning on the outdoor speakers, putting up the umbrella and enjoying a few beverages while they float around and play with the kids in the pool, followed by some Wii games in the basement. All of this playtime often evolves into catching a Trojan game on the big screen, followed by an afternoon nap.

They always leave a little taller.

28-oz. pasta sauce – home-

made or your favorite jar

pasta sauce

1-1/2 cups water

12 oz. spaghetti pasta, bro-

ken in half

1/2 cup shredded part-skim

mozzarella cheese

1/2 cup grated Parmesan

cheese

in a large (12”) skillet, combine spa-

ghetti sauce and water. stir to com-

bine. Bring to a boil over medium-high

heat. add spaghetti and stir well, mak-

ing sure spaghetti is submerged in

the sauce. if necessary, you may add

another 1/4 cup or so of water.

Bring to a boil again. cover, reduce

heat to low, and simmer for 20-25

minutes, stirring frequently. You may

add more water or tomato sauce if the

mixture appears to be too dry. cook

until spaghetti is al dente. top with

cheese and serve immediately.

Simple Meatballs

1 lb. lean ground beef

1 egg

2 Tbsp. water

1/2 cup bread crumbs

1/4 cup minced onion

1/2 tsp. salt

1/8 tsp. pepper

preheat oven to 350 degrees. in large

bowl combine egg, water, bread crumbs,

onion, salt and pepper and combine.

add ground beef and mix together using

a spoon or your hands. form into meat-

balls about 1” in diameter and place on

a broiler pan (i use a portion scoop for

this so all meatballs are uniform in size).

Bake at 350 degrees for 25-30 minutes

until meatballs are no longer pink in

center. while meatballs are baking, pre-

pare the skillet spaghetti.

Feeding a family in these economic times can be tough. Always on the hunt for money saving menus and dollar stretching dinner ideas, I seem

to find the best values to be casseroles and other one dish wonders. A loaf of homemade bread costs less than one dollar to make and can round out the meal.

Casseroles and one dish meals can help to stretch the expensive ingredi-ents by bulking up the dish with less expensive items. Many times the bulk item is a starch, such as pasta or rice.

The recipes below cost roughly $2 per serving. They also freeze well, so consider doubling the recipes and putting the extra pan in the freezer for a future meal.

2-3 large boneless skinless

chicken breasts or 6 small

ones

1.25 cups feta cheese,

crumbled

6 cups cooked brown rice

1 10 oz package frozen spin-

ach thawed and squeezed

of excess liquid

1 28 oz can tomatoes, diced

or whole with juice (if they

are whole you will have to

break them up yourself)

1/4 cup sun dried tomatoes,

chopped

4-5 garlic cloves, chopped

fine

1.5 tbsp olive oil

1/4 cup grated Romano cheese

salt, pepper, basil, and oregano to

taste

add olive oil and garlic to a cOlD skil-

let. turn heat on to medium. when

the garlic has started to soften, add

chicken and par cook, about 5 min-

utes. add can of tomatoes, turn heat to

low, cover and simmer for 20 minutes.

remove chicken breasts and set aside

to cool slightly, then chop into bite

sized pieces. return chopped chicken

to pan. add sun dried tomatoes and

herbs. add the rest of the ingredients

except for the romano cheese and

combine thoroughly. place in a large

baking dish and sprinkle with grated

romano. Bake for 25 minutes; until

cheese is brown on top.

In the early years of retirement, some people may want to spend a significant amount of money on travel, the pursuit of their hobbies, and other leisure activities. In later years, health-care costs and possibly long-term care may eat away at a greater share of a retired couple’s income. After taking a closer look at their individual situations, some people determine that they would be more com-fortable living on 80%, 90%, or even 100% of their pre-retirement incomes. Once an income goal is established, they can calculate the savings they will

need to accumulate to generate that level of retirement income.If a $1.5 million portfolio earned a hypothetical 5% annual return, an

investor could theoretically withdraw $75,000 per year and never run out of money. If the portfolio earned less than 5%, or if the principal was also withdrawn, the money would not last indefinitely. When determining your target retirement income, it’s also important to think about the cumulative effects of inflation. If $75,000 in today’s dollars seems as though it would be enough, consider that the future purchasing power of that income would be significantly diminished over a period of 10 to 20 years. Fortunately, that same cumulative effect can also work in your favor. The sooner you begin saving for retirement, the longer your investment earnings will have to accu-mulate and multiply into the portfolio that you may eventually need.

The Little Gym of Litchfield Park, located at 1400 N. Litchfield Road, Ste. G-8A has been building self-con-fidence and enhancing child development for over thirty years, nationwide. Julie moved to Arizona from Washington State in 1980. Before she discovered The Little Gym, she had a long history of employment with a national company in swimming pool sales and management positions. As fate would have it, Julie then met Bob Bingham, the CEO of The Little Gym International at a book signing.
