My husband and I will celebrate our 18-year anniversary this year. Eighteen years is a long time and it’s long enough

to notice very distinct stages in a relationship. You see, you start off infatuated. You spend every moment together. You go out of your way to do nice things for each other. There’s passion and romance and lots of fun. Then, inevitably, infatuation moves next to commitment. The commitment is exciting at first, but it’s not long before the reality sets in. Sure, you still love each other and life is still good…but it’s different. There are roles, expectations, routines and rituals. Before long, things are more automatic than spontaneous and you start noticing the little things you were once oblivi-ous to…particularly those little things that drive you nuts. It’s where you go from this point that determines the course of your future together.

Life in Estrella is much the same way. You see, com-munity is a lot like marriage. Whether you moved in two weeks or two years ago…you prob-ably moved into Estrella completely enamored with the idea of a ‘perfect little community’. The people you met were so nice. Your house was perfect. Your neighbors were perfect. Everything around you was perfect! You met your neighbors out in the driveway or at the mailbox and talked for hours. You were over-whelmed with this happy feeling of infatuation. Let’s face it you were head over heels in love. You told all of your friends about your new little com-munity. You invited everyone you knew over to see this ‘magic’ place. You vowed you’d spend the rest of your life here…through thick and thin…better or worse…richer or poorer.

But it’s not long before ‘routine’ starts to set in. Suddenly you realize that rather than hanging out chatting with the neighbors, you’re trying to find ways to avoid lengthy conversations so you can get other things done. You start to notice things about your house that aren’t quite perfect and begin to bury yourself in home improvement projects. Things that used to be new and fun become expected and routine. Voluntary events start to feel like obliga-tions. On and on it goes.

Hey, don’t get me wrong…you still LOVE the community. In fact, you love it so much that you decide it’s time to step up and get involved in some-thing. It’s like having children in a marriage…you decide to ‘give birth’ to a group, club or volunteer position. And, just like having children, it changes EVERYTHING! You love it dearly. You give up your free time for it. You make sacrifices and you feel so good about it. You love every minute of it, but you’re exhausted all the time.

And, just like in a marriage, this is the stage where you realize ‘love’ is not enough. You realize that it’s not ‘magic’ and that you’re going to have to

make some conscious efforts to make that ‘commu-nity love’ last. You can no longer rely on spontaneous little moments to occur. You have to create them. You have to create the ‘romance’. You have to make time to really connect with that love you swore would never die. You have to find ways to keep the romance you have for your community alive.

The good news is that you’re past the gushy, puppy love stage and into a more ‘grown up’ kind of love…probably one like you’ve never experienced before. That infatuation you had for the community has evolved into a deeper love and commitment. It’s at this stage that you begin to feel like a real family. The ‘love’ is deeper than you ever anticipated and it

takes your life to a completely different level. Friendships are deeper. Your

commitments are deeper. You’ve never felt as connected to any-thing before.

Obviously, at this stage you can also take a different path. In marriage they call it

the ‘seven year itch.’ Suddenly, you start spending your free time

looking at new neighborhoods…younger models. You start to notice

all the little things that bug you in the community and rather than doing some-

thing about it, you complain. You start looking for reasons why the ‘love is gone’. You start to fanta-size about how a new ‘community’ will change every-thing. You justify all of the reasons why ‘moving on’ will be better in the long run.

If, however, you make it through the infatuation stage all the way to the ‘children and work pressure’ phase….you’ll find you have something really sig-nificant…something only few people find in their lives. (Did you know that after 15 years of marriage only 2% will divorce?) You’ve lived through the series of shocks…the shock of having children, the shock of lost romance, the shock of work and family pres-sures. You’ve found all of the little tiny ways to stay connected. You find more ‘us’ time. You schedule more play time. You realize that the love and passion is still there…it’s just easily buried. You begin to help each other find ways to live your best life. You find you have a true partner in life.

The same goes for keeping ‘community love’ alive. If you’re looking for more than the infatua-tion of a ‘sense of community’ – if you want a ‘true community’…a ‘love’ that lasts…something that will make your family life rich…something that your kids will come home for…something that will help you live your best life…it takes work. It takes some ups and downs…it takes personal sacrifices…but there’s nothing like it when you get to the other side and find you have a true life ‘partner’ and ‘connection’ that allows you to live your best life with all the love, passion, romance and fun that goes with it. Jennifer has been a resident for nearly four years. She is married to Jim, a pilot for NetJets, Inc. Jennifer is a stay-at-home mother to their daughter Emma, who is five years old. Jennifer is one of the founders and Vice President of A.C.T.I.O.N, a nonprofit organization serving Goodyear residents. Jennifer is currently leading a committee that will bring Health & Wellness to Goodyear families in hopes of fighting childhood obesity in our city. She is seeking her first seat for public office as a candidate for Goodyear City Council. Jennifer spent the majority of her fifteen years in broadcast journalism as an advocate for consumers, receiving national awards for her efforts. Most recently, Jennifer led the City of Goodyear to victory at the All-America City competition by writing a majority of the application and serving as the lead writer of the City’s presentation in June 2008. She learned more about the City of Goodyear in that process than she had ever dreamed. Her passion about Goodyear’s progress fuels her energy for candidacy. She feels that running for City Council is just an extension of the journey she’s been on for the past year. In her free time Jennifer enjoys writing, walking, swimming and golf.

Information about Estrella Candidates running for City Council

Frank has been happily married for 30 years. He has lived in Estrella since 1991 and purchased his Summit lot in 1988. He holds a doctorate degree in music and education.

Topping Frank’s agenda as a Council member is his interest in completing an Arts and Cultural center for the City of Goodyear. He is interested in enhancing parks and recreation, specifically in making Estrella Mountain Regional Park a more viable place for visitors. Mr. Cavalier loves being a part of a growing city. He is anxious to assist with its continuing guided growth. Frank’s travels have afforded him the opportunity to visit cities across the country. He has studied sustainable city-making processes and will utilize his goals and ideas if re-elected. Frank believes that many Arizona cities have done an outstanding job in creating sustainable cities; included are Chandler, Gilbert, Tempe and Scottsdale. He added, “We are not trying to be another Scottsdale or Pasadena. We are building a unique city.”

Frank believes in three concrete elements to support the building of a desirable community- 1) People, 2) Art and 3) Economics. Frank is convinced that Goodyear is achieving desired goals for a sustainable city through new industry and amenities such as Goodyear’s City Center, proposed universities and the transpiring baseball stadiums.

Frank is currently a member of the Board of Directors for Valley Metro and is also on Goodyear’s Budget and Finance Subcommittee. In his free time, Frank enjoys escaping to the mountains for hiking and fishing.

Roger has been a resident of Estrella for the past six years. He currently resides in the Sonoran Springs subdivision and is a Consultant, who works in Commercial Real Estate. His primary reason for pursing a seat on Goodyear’s City Council is his desire to learn about where Goodyear resident’s tax dollars are being utilized. He would like to become involved with managing the city’s budget, making sure that dollars are allocated to residents in Goodyear, specifically this community. If elected, Roger is determined to grasp a better understanding of Goodyear’s financial system. He is dedicated to researching areas of opportunity. He believes that Goodyear is a well-planned, well laid out City, and he would like to be a part of its managed growth.

In the community of Estrella, Roger plans to become diligently involved in the utilization of the Public Safety Facility located on Estrella Parkway in hopes of having the facility be a permanent station for on-site Police, Fire and Paramedic services. He plans to work closely with the Council and the Goodyear Police Department to learn what the costs of facility operation would involve, as well as “what it takes” to make it a permanent housing site for local law enforcement and emergency crews.

Roger is a Member of Estrella’s Voting Committee and has organized a Neighborhood Watch Program for his neighbors in Sonoran Springs. He states that Goodyear has the ability to have “a nice small town feel with all of the beauty any family or business could want.” With properly guided growth, Roger maintains that Goodyear will be both family-friendly and have the ability to house small-scale industry to assist in supporting our commercially growing city. Roger’s friends and neighbors describe him as hard-working, honorable, and unafraid to “step up to the plate” for his beliefs. In his free time, Roger enjoys mountain biking, hiking and amateur auto racing.

Ten candidates are running for three available Goodyear City Council seats. Our community has three residents who are

running to fill the vacant seats; incumbent candidate, Frank Cavalier and two new candidates, Jennifer Barber and Roger Matlin.

Goodyear’s Primary Election will take place on March 10, 2009. Candidates who receive 50% of the vote, plus one vote, move on to the General

Election which is May 19. This will be the first time in Goodyear history for a General Election. Goodyear will hold an all-mail vote this year in hopes of

raising voter turnout. Ballots are scheduled to mail out to registered voters February 9, 2009. Please do not throw away your ballots! Goodyear’s voter

turnout has been declining since 2004. It reached a 3 percent low in 2007, when three candidates sought three council seats. This election is the time

for Goodyear voters to research the candidates and be informed because often local elected leaders have more impact on your daily lifestyle than

federal leaders.

Westar Elementary Holds Their First National Geographic Bee

you answered the Aztec Empire, you are among

the minority and you just matched wits with the

first Westar Elementary National Geographic Bee

champion, 8th grader Tim Borowiec. Thursday

evening, over fifteen 4th-8th grade students

participated in the National Geographic Bee’s

annual national school competition. Sponsored

by Junior High Teacher Maureen Barndt,

each 4th-8th grade class held a competition before December 19. The finalists from each class were

invited to compete in the school-wide competition January 8. “The National Geographic Bee is very

important today with the world becoming more connected then ever,” said Barndt. “It helps students

become curious about the world around them while kick starting their curiosity.” Tim will now advance to

the next level of competition, with a written examination that determines state competitors.

Estrella Couple Adopts Little JoshuaLittle Joshua boarded a plane in Korea in early December with a Korean escort in route to Los Angeles via

an international flight lasting more than 16 hours. Tired and confused, upon arrival at LAX, he was greeted by Estrella residents, Claudia and Scott Acton. This story was the beginning of a new family, brought together to begin creating memories of a lifetime as Scott and Claudia Acton received their new nine-month old adopted son, Joshua Charles Acton.

With open arms and open hearts, Claudia and Scott met their newly adopted son on a connect flight to Los Angeles after just five months of preparation. The Actons had attended a seminar on international adop-tions over a year ago and turned in an application to begin the process in June 2008. They quickly decided on Korea as a desirable country from which to choose a child. “Korea has strict requirements for adoption,” recalls Claudia. The couple had to have been married for a minimum of three years, they had to provide proof of

health insurance for the child and they must agree to a doctor’s visit with the child within 48 hours of his arrival -- just a few of the requirements with which the Actons were happy to comply. “It was quite a process,” said Scott.

Scott and Claudia have been anticipating adopt-ing a child since shortly after their marriage six years ago. They are both child psychologists and love working with children of all ages. “One of the things that we love about our jobs is that we get to advo-cate for children and help them get the support they need, as early in their education as possible,” replied Claudia.

The past six months of preparations were extremely busy for the couple. Between painting the baby’s room, paperwork, reviewing medical history, scheduling appointments and viewing pictures and history of Joshua’s background, Claudia and Scott are in need of a bit of “down-time” and rest themselves. Both Scott and Claudia have taken time off from their jobs to adapt to their new lifestyle with a toddler in the house.

“Joshua is now sleeping in a crib, rather than on a futon with his foster mother, as he did since birth in Korea,” said Claudia. “He has his own room now and is making the adjustment quite well.” Joshua now feels comfortable enough in his surroundings to take two short naps per day. He is also adapting to the freedom of movement and crawling around on his own. In Korea, he was swaddled to his mother’s back in a wrap and was rarely, if ever, away from his mother’s body. Joshua has also been introduced to his new family pet, an Australian Sheppard, Rusty, who plays the role of Joshua’s great protector. Both Scott and Claudia are anxious to have extended family members visit and can’t wait to introduce Joshua to his new cousins.

Preschool Registration:Fall Registration for Estrella Mountain Preschool

2009-2010 school year starts at 9 am on February 11. Information packets are now available at the pre-school or church offices. All classes are from Tuesday through Thursday from 9am to 1pm, except the 3’s program has a shorter day available from 9-11:30am. The program is for ages 3-5 years old starting September 1, 2009.

Pancake Breakfast:Estrella Mountain Preschool is hosting its annual

Pancake Breakfast, Silent Auction and Mini Mall on Saturday, February 21 at Estrella Mountain Church. The church is located at 10485 S. Estrella Parkway. Breakfast is served from 7am-10:30am. A.C.T.I.O.N.’s Health & Wellness program has an official title and slogan! Goodyear In ACTION works to promote, educate and motivate Goodyear citizens toward living healthier lifestyles. Later this spring, Goodyear in ACTION will host a “Get Moving Day” in which Goodyear residents, schoolchildren, seniors and employers are encour-aged to get up and get moving for 30 minutes. Sisters give birth to last baby of 2008 & first of 2009 at West Valley Hospital

At 2:53 p.m. on December 31, 2008, Estrella Plath gave birth to her first baby girl, Estrella Nieto, weighing in at 8 lbs. and 20.5 inches long. Mom, Estrella, explained to Aimee Dobson, Director of Marketing and Public Relations at West Valley Hospital, that proud father, Samuel Nieto, wanted to name their daughter after her mother because one of their three sons is named after him. While chatting and snapping photos around 9:25am on January 1, 2009, Plath also had some other exciting news—her sister, Sandra Gomez, was preparing to give birth to her child…just down the hallway. Mom Sandra, gave birth to Franzizka Gomez, 7 lbs. 9 oz., 20.4 inches long, at 9:48am, mak-ing her the first baby born in 2009 at West Valley Hospital. She and husband, Javier Gomez, now have five children—two boys and three girls.

The last baby born in 2008, and the first baby born in 2009 at West Valley Hospital are, remarkably, cousins. When asked if the sisters had planned to have their babies within hours of each other, Sandra Gomez explained, “My doctor scheduled me to be induced on December 31. We arrived at West Valley around 2:00pm yesterday and found out my sister was already here and in labor.” Both moms and babies are doing great.

Congratulations to the families of our New Year’s Eve and New Year’s Day babies at West Valley Hospital. We can only imagine the future birthday celebrations in the Gomez and Plath/Nieto families.

The Estrella Foothills High School Chapter of

the Future Business Leaders of America (FBLA) is

in the middle of a year that has been anything but

ordinary. With current membership at 127 students,

the FBLA has embarked on numerous new projects.

At the beginning of this school year, several

committees were formed for various projects which

included the “Green Week” Committee and the

“Magic Bullet Fund” Committee.

The Green Week Committee hosted a week

long, school wide recycling competition in the

month of December and also created displays

and made daily announcements about ways that

students could “go green.” As a result

of the competition, over 100 pounds

of aluminum were collected for

recycling. The Magic Bullet Fund

Committee is overseeing a

fundraiser and awareness

project for the Magic

Bullet Fund, a non-profit

organization that funds

the treatment of dogs with

cancer. Having a principal, a

sponsor and several members

who have lost their beloved

canine companions to cancer,

this project is very close to the

hearts of the chapter members

and the fundraiser is being done in the memory

of those dogs. Also, for the first time this year, the

Estrella Foothills FBLA has created a Partnership

with a business team. This team, consisting of three

members, is working with Ground Control Coffee in

Goodyear, and has created their own coffee blend

along with its packaging and advertising. They are

currently selling the coffee

on the school

campus. Most

recently, the

EFHS FBLA

attended

Arizona State

University ASU Business Skills day,

a competitive event that is attended

by nearly one thousand students.

The team took home a 5th place

trophy in the Future Business Leader

competition, and a 4th and 1st place

trophy in the Accounting competition. Also

recently, the chapter received the Outstanding

Chapter award for West-MEC (Western Maricopa

Education Consortium). Currently, the chapter

is preparing to attend the state competition

to be held in Tucson in early April, and they

hope to qualify to attend the National

Competition which will be held in Anaheim,

CA. this summer.

Below are the results of the election. Positions indicated as “TBD” resulted in ties that are in the process of being resolved amongst the candi-dates involved. Positions indicated as “Vacant” reflect the lack of ballots received for those parcels. Hidden Hill, Palisades, and all of Montecito currently are not required by the governing documents to have Voting Members. Accordingly ballots were not sent to those homeowners.

This year, Voting Members in the Villages Association will vote in the election for a Resident Member serving on the Board of Directors as the term of the incumbent ends this year.

Member elections, seven

(7) neighborhoods were left

unrepresented in the New Year. The

absence of a Voting Member will

result in the neighborhood losing

its voting rights for the year. To

remedy that, the Board of Directors

for both the Villages at Estrella

Mountain Ranch (VCA) and the

Estrella Community Association

(ECA) approved the solicitation of

resident volunteers in those parcels

to fill the Voting Member position.

volunteers. Volunteering is a great way to get to know your neighbors and give back to your com-munity. Currently, we are looking for volunteers for Eggstravaganza scheduled for April 11. Fairway GatesThere have been questions about why the

Fairway Gates are open on Friday, Saturday, and Sunday. There is a provision in the builder agreement requiring that the gates remain open until the last new home is sold. There are still T.W. Lewis Homes that are for sale. As soon as the last one is sold we will close the gates 24/7 and those with codes and remotes will have access. The Richardson fam-ily moved to the Phoenix area in 2005 with a desire to see more of the United States and a job for Laurel at Southwest Human Development (SWHD) doing assistive technology training for the Arizona Department of Education. The Richardsons ini-tially leased a home in Litchfield Park, but then bought a home in Trailridge Crossing in

2006 when Dave landed a position as a math teacher at Estrella Foothills High School. He is now the Principal at Westar Elementary. Laurel works part-time for SWHD doing augmentative communication evalua-tions and also works at Buckeye and Liberty Elementary School Districts as an Assistive Technology Specialist and Occupational Therapist. Dave and Laurel’s son, Matthew, is twelve years old and attends Westar Elementary School. He loves all sports and is involved with his church and cub scouts. The Richardsons’ grown children include Drew, a Sargeant in the US Army in Kuwait; Katrina, who recently married and lives in Chandler; and Zachary, a Corporal in the US Army, currently stationed in North Carolina and who recently returned home from service in Iraq. Travel has been a big part of the Richardson family lives. Dave and Laurel met in college and joined the Peace Corps in 1982, serving as educa-tion volunteers for two years in Ghana, West Africa. On their return home, they spent a month in Kenya and some time in the Netherlands. They returned to the States and lived in North Carolina to raise their three eldest children. In 1990, the Richardsons moved to Tinian, an island in the Northern Mariana Islands. Dave and Laurel taught school there for another two years. Their youngest son, Matthew, was born on their return to the United States. Though the fam-ily hasn’t moved overseas since, they did live with a host family for a summer in Cuernavaca, Morelos, Mexico in 1998. The two oldest children Drew and Katrina returned to the host family during their middle school years to study Spanish. This family remembers Ghana as “the most memorable place we ever lived,” states Dave. Although it has been a long time since they lived there, the Richardsons remember many of the lessons learned there. “Life was without a lot of ameni-ties, including electricity. Travel was difficult and the entire experience helped us realize and pay attention to what was important and what wasn’t,” recalls the elementary school Principal. “Ghanians are very gracious people who work hard despite difficulties, without complaint.” Laurel added, “It takes a lot more work to find balance in the United States, but we find that Estrella Mountain Ranch provides a community that encourages our time together as a family.” The Richardson family especially appreciates the extraordinary beauty of Estrella. This family loves to bike and be outdoors. “The weather is great all year long and we even like the heat in the summer. After four years of living near the equator (two of which were spent without electricity), the heat is fine -especially when perks like the pool at Starpointe are available. We often marvel at the beauty of the lakes, the mountains, and the presence of the desert that we get to enjoy day after day,” said Dave.

When Derek Powell isn’t busy with school stud-ies at Estrella Foothills High School, he’s acting in the Drama Club, playing the drums or practicing the keyboard. For exer-cise, he loves playing Lacrosse or challenging his step-dad, Dennis, to an interactive video game. Dennis and Kim Onstott, along with their son Derek, moved to the Lakeview II subdivision approximately four years ago. The family shares their home with three Cocker Spaniel rescuees -- Kaylee, Ginger and Otis. Originally from the Cleveland area, this family says that they do not miss the cold and snow and find outdoor activities in Estrella especially rewarding during the winter and spring seasons. The Onstott/Powell family claims that it's easy to they find their way around the Valley, due to the grid set-up of the city, simplifying destinations. Dennis works in aviation and Kim is an accountant and owner of Your Place Gourmet Personal Chef Services. Kim enjoys helping busy families and professionals pre-pare healthy meals in our community. Hopefully, you have had the opportunity to try one of her delicious recipes featured in our publication. Kim trained with the U.S. Personal Chef Association (USPCA) at the Culinary Business Academy in New Mexico, becoming a premier member of the association. She is also the President of the USPCA’s Phoenix West Chapter. She recently donated her per-sonal chef services to a family in need over the Christmas holiday season. Kim learned about a single mother in the area, who is attending school and recently lost her job. She learned that many concerned donors were focusing on gifts for the woman’s children for Christmas, but Kim wanted to do something special just for the mom. She donated $300 worth of her standard personal chef services, collecting donations to purchase a Safeway card to cover the cost of the grocer-ies. When this fortunate mother calls Kim to schedule her services, the family will be interviewed for their likes and dislikes in menu options, as well as inter-viewed for any food allergies or sensitivities. Kim will then craft a menu, person-ally designed for the family. Then, it’s off to the grocery store to buy the freshest ingredients for meal preparation. The meals will be prepared right in the family home. Kim will bring her own cookware and utensils as well as a variety of her own pantry oils and spices, leaving a clean kitchen, filled with the aroma of those fabulously cooked meals. Those meals will be individually packaged and placed in either the freezer or refrigerator with cooking instructions as needed. What a stress relief Your Place Gourmet Personal Chef Services will be for a mother, facing personal difficulties. let the wire grow into the tree. After one year, you should remove the center pole that is against the tree. Its purpose was to help the tree grow straight, but with the guide wires in place, it is no longer needed.

Lantanas can be pruned at this time. Leave about 6 or 7 inches from the root ball. As soon as the heat comes, the new growth comes from these branches.

Don’t forget to fertilize your plants. They need it and now is a good time to add a balanced fertilizer around your yard. This is also a great time to slowly water your trees. Run your hose on a trickle and let it run under the tree for sev-eral hours. This will wash the salt in the soil away from the roots and will help push the roots deeper into the soil.

I have had many ask why I write so much about irrigation systems and repair. I guess it is because most homeowners know how to turn on the timer, but they don’t understand exactly how it works. I am seeing a lot of irrigation systems failing and lots of water leaks. The cities are starting to crack down on homeown-ers that waste water. Expect to see fines in the near future for letting the water run down the street. Here in the desert, plants die fast without water. Too much water can kill plants just as quickly. Lifestyle: Another important consideration is your desired retirement lifestyle. Do you want to travel? Will you have an expensive country club membership? Are there any hobbies you would like to pursue? The answers to these questions can help you decide what additional costs your ideal retirement will require. Many baby boom-

ers expect that they will work part-time in retirement. However, if this is your intention and you find that working longer becomes impossible, you will still need the appropriate funds to support your retirement lifestyle.

Inflation: If you think you have accounted for every possibility when constructing a savings goal but forget this vital component, your savings could be far from suffi-cient. Inflation has the potential to significantly reduce your purchasing power over time. It is important for your savings to keep pace with or exceed inflation.

Social Security: Many retirees believe that they can rely on their future Social Security benefits. However, this may not be true for you. The Social Security system is under increasing strain as more baby boomers are retiring and fewer workers are available to pay their benefits. And the reality is that Social Security currently provides only 20% of the total income of Americans aged 65 and older with at least $44,000 in annual household income. That leaves 80% to be covered in other ways.

And the Total Is…After considering all these factors, you should have a much better idea of how much you need to save for retirement. After determining your retirement savings goal and factoring in how much you have saved already, you will be able to determine how much you need to save each year to reach your destination. The important thing is to come up with a goal and then develop a strategy to help reach it. You don’t want to spend your retire-ment years wishing you had planned ahead when you had the time. The sooner you start saving and investing to reach your goal, the closer you will be to realizing your retirement dreams.

It’s a great time of year for some light pruning. It is important to remember that we are just thinning out the tree. Thinning will allow the sun-light into the center of the tree. Light pruning will keep the tree strong and allow the

wind to blow through its branches. This will keep the tree upright and not on the ground when those strong winds blow. The trees here do not have long tap roots; they move across the surface. Trees that are not pruned correctly, or often enough, are the reason the wind blows them over. A nice shaped, cared for tree will add thousands of dollars to the value of your home.

When pruning, look for branches that are rubbing each other. One of these branches should be removed, usually it will be the smaller of the two. Depending on the size of the branch you may need to cut two or three inches above the trunk or main branch, then make a second cut at the main branch or trunk. The reason for this is, if the branch is too big and starts to tear the bark, it will not tear into the main part of the tree.

If you find you have mistletoe growing on your tree remove it. Mistletoe will kill trees if not removed.

At least three times a year you should loosen guide wires that are around your tree trunk. These are the wires that are from the wooden post to the tree. Do not

One rule of thumb is that retirees will need approximately 80% of their pre-retirement salaries to maintain their lifestyles in retirement. However, depending on your own situation and the type of retirement you hope to have, that number may be higher or lower. Fortunately, there are sev-eral factors that can help you work toward a retirement savings goal.

Retirement Age: The first factor to consider is the age at which you expect to retire. In reality, many people anticipate that they will retire later than they actually do; unexpected issues, such as health problems or workplace changes (downsizing, etc.), tend to stand in their way. Of course, the earlier you retire, the more money you will need to last throughout retirement. It’s important to prepare for unantici-pated occurrences that could force you into an early retirement.

Life Expectancy: Although you can’t know what the duration of your life will be, there are a few factors that may give you a hint. You should take into account your family history—how long your relatives have lived and diseases that are com-mon in your family—as well as your own past and present health issues. Also con-sider that life spans are becoming longer with recent medical developments. More people will be living to age 100, or perhaps even longer. When calculating how much you need to save, you need to factor in the number of years you will spend in retirement.

Future Health-Care Needs: Another factor to consider is the cost of health care. Health-care costs have been rising much faster than general inflation, and fewer employers are offering health benefits to retirees. Long-term care is another consideration. These costs could severely dip into your savings and even result in your filing for bankruptcy if the need for care is prolonged. Factoring in higher costs for health care during retirement is vital, and you might want to consider purchasing long-term-care insurance to help protect your assets.

Now that the new year is in full swing, our schedules are busier than ever. For many families, this means being on the go all day with little time to prepare the evening meal. As a personal chef, I help my clients with this

dilemma by preparing several meals that are ready to pull from the freezer at their convenience. I also do this for my own family and you can too!

The best strategy is to double recipes so you have another night’s dinner in the freezer. In addition, investing the time on your day off to make several meals will pay off later in the week when all you need to do is pull them out of the freez-er and pop them into the oven. A little advance preparation and you can have dinner ready whenever you are.

Purchase the protein in the large, family-size packs and make a couple freezer meals with each type. This approach saves both time and money. The recipes below are casserole or dump-type meals that are easy enough for the novice cook to prepare and are also budget stretchers.

Pizza Casserole

2 lbs ground beef or ground turkey

1 large onion, chopped

1 clove garlic, minced

1 teaspoon Italian seasoning

2 tablespoons olive oil

2 (26 ounce) jars marinara sauce (or make your own)

16 ounces rotini pasta, cooked and drained

5 cups shredded mozzarella cheese (20 oz)

8 ounces sliced pepperoni

Southwestern Casserole

1 lb cooked lean ground beef or ground turkey, seasoned with

taco seasoning

1 (10 ounce) can Rotel Tomatoes

1 (15 ounce) can ranch style beans

8 ounces tomato sauce

3/4 cup Minute Rice, uncooked

1 1/2 cups shredded ched-dar cheese, divided

Super Simple Teriyaki Chicken

1/2 cup soy sauce

1/2 cup sugar

1 1/2 tablespoons red wine vinegar

2 teaspoons vegetable oil

1 small minced garlic clove

3/4 teaspoon ground ginger

1 lb chicken, uncooked and chopped

Brown ground beef, onion, garlic and seasoning in oil.

Drain.

Stir in pasta, marinara sauce and 3 cups cheese.

Place mixture in 2 greased 9x13x2 inch baking pans or 4 square pans.

Sprinkle with remaining mozzarella.

Top with pepperoni.

Cover and freeze up to 3 months.

To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heat-ed through.

To bake frozen casserole: Thaw in refrigerator overnight and bake at 350 for 35-40 minutes, till hot.

Makes 2 casseroles, each serving 10.

If cooking right away, pre-heat oven to 350°F.

Combine all ingredients except 1/2 cup cheese in a large casserole dish and bake for 45 minutes.

Sprinkle with remaining cheese and bake for another 15 minutes.

Makes 8 servings

Mix soy sauce, sugar, vinegar, veg-etable oil, garlic and ginger to make marinade.

Freeze chicken in marinade in a 1-gal-lon bag.

To serve:.

Thaw.

Pour chicken and marinade into a bak-ing dish.

Bake in a preheated 350º oven for 35 minutes.

Prepare rice according to package directions.

Serve chicken over rice.

Makes 6 servings

Dojo Leader and Head Instructor, Kevin Bench, brings Shotokan Karate of America (SKA) to Estrella. Students of all ages can benefit from karate classes that take place at the Starpointe Residents Club. Kevin first became interested in karate at ten years of age. He lived in a remote area with nothing but sagebrush for miles and miles and recalls feeling quite certain that karate could not be learned via mail order. He had to wait until he attended BYU in his college years to pursue his karate interests. Mr. Tsutomu Oshima, Founder of Shotokan Karate Of America, had been in the United States since the 1950’s and set up BYU as the second oldest college karate club in the U.S. Kevin considers himself lucky to have found Mr. Oshima at BYU. Shotokan Karate is the oldest karate organization in the United States. This organization has been teaching in the U.S. since 1955. It adheres to the original 5 degrees of black belt. Obtaining any black belt rank in SKA is highly controlled and only done under the direction of its founder, Mr. Tsutomu Oshima.

After being born and raised in southern Idaho, Kevin spent two years in the South Pacific on a mission for his church. He then graduated from BYU and took a job the closest to Mr. Ohshima that he could find, working as an engineer on the Space Shuttle main engines. He also worked at Advanced Cardiovascular Systems in the Bay Area and finished a music degree on his path to the Valley. When Kevin first came to Phoenix, he had accepted a job in computer animation, combining engineering with art. He worked locally for channel 45 until they were bought out by Fox channel 10. The change in networks helped Kevin decide that it was time to expand his karate teachings, rather than follow job trails into other countries.

Kevin’s love of karate has helped children and adults receive rewards of their own. He holds the title, Yodan. “Dan,” meaning black belt level and “yo” means 4th degree. Shotokan karate is a 5 degree system. Yodan is classified by Mr. Oshima as the top technical level. Kevin’s process to achieve the Black Belt status was not an easy one. Although he claims to always have applied himself 100% to sports, education and activities throughout his lifetime, karate has been a regi-mented foundation that has enhanced his concentration and physical strength over the years. He has duplicated some of the ancient martial artists by doing 24 hour practices, concentrating on one technique to perfection. Kevin claims these special intense trainings push him beyond preconceived mental and physical limi-tations.

Kevin appreciates the community of Estrella and the many parents who have enrolled their children in karate classes. He states that parents are often pleasantly surprised by the repetitions completed in just one class. “There is nothing really mystical about any part of the practice,” states Bench. We meditate at the begin-ning of each class to prepare our minds and at the end of practice for a reflection. Practice consistency leads to positive results for students. The constant motion builds self improvement. “There is no cookbook solution to self defense and con-fidence,” says Kevin. Karate helps promote those two things as a way of life; self improvement that spills over to every area of life.

Kevin and his wife have six children, all of which have studied karate with Kevin and Mr. Oshima. Kevin and his wife are now grandparents as well and enjoy spending time with their family playing music together and hiking.

Our most precious resources, our “Lil Angels”, have a new professional, friendly home environment day care here in the community. Resident Esther Lopez is excited about expanding her eighteen years of experience of working with children and their educational needs, to her new, in- home childcare services. Esther cur-rently works with special needs students in a self-contained classroom at Westar Elementary School. She is certified in early childhood development and has previ-ously worked for the non-profit organization, Chicano Por La Causa’s Head-Start

Program, in Surprise, Arizona, which offered educational services to children with parents in the agricultural industry. It was there that Esther saw growth and develop-ment of small children enhanced through unique learning techniques and complete family interac-tion.

Esther’s eighteen years of experience working with children included

reading assistance, student socialization enhancement and health care assistance for a variety of toddlers and young children in an educational setting. Esther worked in an elementary school in Nebraska as a social worker for F.A.S.T. (Families And Schools Together), a program that kept parents involved with their children’s educa-tional process. The program encouraged parents and siblings to interact with their student’s entire educational and social process. Esther particularly enjoyed the posi-tive outcome of the F.A.S.T. program. Her past experience also included a position as a Para-Professional, teaching Spanish to kindergarten through fourth graders in Nebraska.

Esther’s new small business, Lil Angels, is planning a curriculum to incorporate many of her most positive past experiences. The Lil Angels Day Care setting will include organized activities including age appropriate reading, texture exploration, language learning centers with organized crafts, and many fun activities. Working in the public school system and maintaining direct involvement with educational leaders has proven to be a great resource for Esther’s learning tools. “I see a need for childcare for new families moving into Estrella,” stated Lopez. Her goals for her new business include having fun with the little ones in a safe and happy atmosphere. She wants to make sure that parents can feel at ease about going off to work while their children are cared for.

Esther’s previous training in childcare development also included courses in nutrition. Esther has a food handler’s certification and is planning nutritious meals and snacks for enrolled children. The daycare provider will also employ grown-up assistants to aid in childcare as necessary. She is excited to provide quality daycare to Estrella families who need to enroll children full or part-time. She is also accepting “drop- in” youngsters, infants and toddlers.

Esther has three children of her own: Yesy, a junior at Estrella Foothills High School; Tiffany, who attends the seventh grade at Westar Elementary School; and Emily, a fourth grader at Westar Elementary. It was her oldest daughter, Yesy, who came up with the Lil Angels name and logo idea for the new business. Esther and her family are members of Palm Valley Church and enjoy a variety of church and family activities including bowling, piano, going to the movies and frequenting Estrella’s Yacht Club socials.
