We have some very exciting news! We will be starting up bus trips again in July. All our trips will be through Fox Tours. We have spoken to Bill Fox, the owner of Fox Tours and we are very com-fortable with the safety measures in place. The minimum is 40 people and the max is 50. Debra Diamond from Diamond’s Health Inspirations will be at the COA on May 13th at 10:30. Debra will be presenting an introduction to the basics of food nutrition. She will teach us about carbohydrates, fats, proteins, and vitamins What are they, where they come from and how they fit in with your health? Debra is a Mansfield resident and is currently working on her degree as a Nutrition Edu-cator and has a certificate in Plant Based Nutrition from the T. Colin Campbell Center for Nutrition Studies at eCornell. Debra also has received a cer-tificate of participation in the Moving Medicine For-ward Master Class in Plant based clinical experience. Debra enjoys sharing her knowledge about food and nutrition to help enlighten and support those who are curious about healthy lifestyle options which may enhance their own journey towards im-proved health as we all age together. We are pleased to offer two new exercise classes being taught by LeAnna Sheehan a local Mansfield fitness expert. LeAnna fully believes all clients are capable of reaching their fitness and health goals with proper instruction and guidance. Known for her pas-sion and enthusiasm for helping others, she is most excited seeing clients thrive on their fitness journey. Since 2008, LeAnna has been certified as an AFAA (Athletics and Fitness Association of America) personal trainer. In 2018, she was also certified as an AFAA group trainer. Most recently LeAnna has developed a heart for the active aging community. As a 58-year-old active ager herself, she understands first hand, the im-portance of physical activity and how it positively impacts the body and mind alike. She is an avid learner and enjoys professional retreats where she can learn

about safe and smart exercise and hopes to bring this knowledge into her own studio as well as the local communities she serves. These illnesses can be, especially dangerous for seniors. Exposure to ticks occurs year-round, but ticks are most active during warmer months (April-September). Ticks live in grassy, brushy, wooded areas, and on animals. Spending time outside could bring you in close contact with ticks. Many people get ticks in their yard or neighborhood. If you are in an area where ticks might be, you should wear long pants, long-sleeve shirts, boots, hiking shoes, and a hat.

Add toma-toes, onions and broccoli to pan; cook 5 minutes, uncovered. Drizzle lemon juice over vegetables and season with salt and pepper, to taste. Place fish on top of vegetables in center of pan and place two lemon slices on top of fish. Sprinkle with salt and pepper, to taste. Cover pan and cook on medium heat 10-12 minutes depending on thickness of fish. Drizzle olive oil over fish and top with rosemary, if desired, be-fore serving. 1 cup unsalted butter, softened 1/2 cup sugar 2 cups all purpose flour Confectioner’s sugar Preheat oven to 325. Cream but-ter and sugar until light and fluffy. Gradually beat in flour. Press dough into an ungreased 9 in square baking pan. Prick with a fork. Bake until light brown, 30-35 min. Cut into small squares while warm. Cool com-pletely on a wire rack.
