Laser Assisted Cataract Surgery:Precision Vision Cataract surgery is one of the most common, safest, and effective surgical procedures performed in the United States. According to the National Eye Institute, 90% of patients who undergo cataract removal increase their quality of vision after their recovery period.The formation of cataracts clouds the natural lens of the eye anddeteriorates vision slowly overtime, eventually leading to blindness if left untreated. For several decades,Ophthalmologists have performed manual cataract surgery utilizing a microkeratome blade for the incision and phacoemulsifi cation energy or ultra sound waves to break up and extract the cataract. This technique has been the standard of care for decades UNTIL NOW!

In recent years, the F.D.A approval of Femtosecond Laser Assisted Cataract Surgery has given ophthalmologists and patients, additional and potentially safer options in their cataract removal process. Approved in 2013 by the F.D.A, the LENSAR Femtosecond Laser Assisted Cataract System, provided by Dr. Frank A. The LENSAR laser system offers a variety of features that are designed to enhance the cataract removal process. A major advantage of the LENAR laser system over other systems is it’s 3-D Augmented Reality Imaging System. The 3-D Imaging system developed by LENSAR provides much greater accuracy in diagnostic testing and imaging to ensure the highest level of quality care delivered by Dr. Bucci to his patients. LENSAR’s 3-D Augmented Reality System displays a true 3-D model of a patient’s eye, providing a potentially more predictable and desired customized plan of care.

In conjunction with the 3-D Augmented Reality Imaging System, the LENSAR laser system softens and disassembles a cataracts nucleus with lens fragmentation technology. Based on the density and size of a cataract, the LENSAR laser system will grade the cataract and offer fragmentation patterns best suitable for it’s removal. The fragmentation or softening of the cataract provides Dr. Bucci the ability to use less ultrasound or phacoemulsifi cation energy to break up and extract the cataract, thus reducing the length of the procedure and potentially offering a safer and more predictable surgical outcome.

The Belsnickel

As the various immigrant groups made their way to the “New World”, they brought traditions from their native lands that became absorbed into the fabric of daily life, blending with other cultural practices of their neighbors. Nowhere is this more apparent than with holiday celebrations. While 21st century American children are reminded to be good because “Santa Claus is coming to town”, 19th century Pennsylvania German youngsters were more concerned about a visit from the Belsnickel! In old world German villages, Belsnickel accompanied Saint Nicholas on his rounds, acting as the fearsome counterpart to the kindly St. Nick. Known as Pelznickel-nicholas, or Nicholas in pelts or furs, Belsnickel characters were grotesque figures, clad in patchwork rags and mangy furs with blackened faces or frightening masks designed to scare children into good behavior. In 19th century Pennsylvania, the traditional visit of the Belsnickel became a singular character in rural villages who called on families on Christmas Eve. As darkness fell, he made his rounds of the neighborhood, ringing cow bells, clanging chains and banging on windows and doors to announce his arrival. Generally a male figure, although older women would also play the role, the person was frequent-ly known by the parents of the child that perhaps had not been as well behaved as they desired. TheBelsnickel came with a sack of sweets or other treats for the obedient children along with a switch or rod for those needing correction. The children were frequently required to recite a biblical verse or poem as well as confess their misdeeds. Although belsnickeling continued in some rural Pennsylvania German communities into the early 20th century, the tradition seems to have merged with Santa Claus, the “right jolly old elf” that determined who was “naughty or nice”. Whether St. Nicholas, or Kris Kringle or the Belsnickel comes calling at your home on Christmas Eve, it is still recommended that you leave milk and cookies just in case!

DirectionsHeat pan with olive oil on med to high heat. Preheat oven to 350°. Sprinkle seasonings on both sides of fi lets. Sear fi lets in heated pan for 3 minutes, turn and repeat on other side. Remove from heat and place in preheated oven for an additional 5-7 minutes or to desired doneness. Serve with baked potatoes or other favorite side dish.

Sweet Potato CrunchLanay’s KitchenIngredients 2 - 40 oz. yams (drain & mash)4 eggs1 c. milk1 c. sugar2 tsp. vanilla2/3 c. soft butter

Topping3/4 c. brown sugar2/3 c. fl our1 c. pecans or walnuts1/2 c. butter melted

DirectionsPreheat oven to 350°. Beat yams. Add in other ingredients until well blended. Place mixture in a 13X9 baking dish. In another small bowl add your fl our brown sugar, and desired nuts. This is your topping. Mix well then place on top of sweet potatoes. Melt 1/2 c. butter and drizzle over the top of dish. Make sure melted butter covers all of the topping. Bake in preheated oven for 30-45 minutes. Sweet potatoes should be fi rm to touch when done. Feeds a crowd.

Dissolve sugar in water overlow heat until clear, turn heatto high, when mixture turns adark amber color turn off heat. Pour in cream and whisk, addbutter and vanilla and cool.

DirectionsChop chicken tenders into 1” pieces. Transfer chicken into a large bowl. Add the teriyaki sauce, soy sauce, honey, minced garlic, ginger, salt and pepper. Massage into chicken with hands. Transfer chicken (liquid and all) into an oiled and heated pan. Place the stove on medium high heat for fi ve minutes. Crank the heat to high, stirring occasionally. Cook until sauce has reduced. This process takes between 10-15 minutes. When the sauce thickens and starts sticking to the chicken and sesame seeds, stir, then remove from heat. Let sit for 5 minutes. Top with chopped scallions.

DirectionsRinse cranberries in cold water. In a food processor, add cranberries, apple, red pepper and onion until coarsely chopped. Place into bowl and set aside. In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest. Mix well. Add to cranberry mixture and mix well. Cover and refrigerate. Serve with tortillas.

Directions for CheesecakeFor the crust: preheat the oven to 325º. Combine everything. Press crumb mixture fi rmly on sides and bottom of a 9-inch springform pan. Chill.

For the fi lling: in the bowl cream cheese, sugar, and sour cream on medium speed for 3 minutes. Reduce speed to low and add eggs, add vanilla and mix until combined. Pour into chilled crust. Wrap the spring-form pan. Bake for 1 hour and 20 minutes. Remove from the oven and cool. Refrigerate. Decorate with caramel sauce, toffee candy pieces and whipped cream.
