DirectionsCook potatoes with the skins on until almost soft. Refrigerate overnight. Grate the potatoes into a casserole dish. Pour 1 pint heavy cream over them. Place6-8 tbsp. of butter on top. Sprinkle with salt, pepper and paprika. Bake at 350º for 30-40 minutes until heated through.

In a small mixing bowl add crushed pineapple, brown sugar, sprite and ground cloves (if using). Mix together. Pour over ham pressing the pineapple into cuts. Return to oven and continue to cook uncov-ered for 30-40 minutes or when internal temperature reads 140º.

I t has been twenty years since Beck ‘N Call stepped into their fi rst client’s home to provide care and support to someone in need. Our commitment to service and caring for people in need within our community continues, and for all these years, we

have been driven by the same solid mission. The mission to enhance our client’s quality of life by treating them with respect and compas-sion while helping them maintain their dignity and independence. It would be tragic to leave out the history of how Beck ‘N Call got started because even though our business has grown, we have never forgotten where our story began. For those who may not know it, here is just a snippet. My mother, Beverly Allen, and I started this business in 1995, when our own family was getting deeply involved in learning what it meant to care for our elders. At that time, our family was caring for 8 seniors, over the age of 70, all with health issues of varying seriousness including breast cancer that had spread to the brain, early through late Alzheimer’s disease, emphysema, chronic obstructive pulmonary disease, and heart failure. These were the biggest of the bad boys. When we looked for support in the community...none was available. We decided we could fi ll that void in the community and Beck ‘N Call was born.

Many things have changed over the course of twenty years, but some things also remained the same. We understand that everyone wants to live their life as independently as possible. We understand that everyone wants to live at home. Because of this, we are con-stantly inspired to fi nd ways to provide the necessary care respect-fully, and with compassion.

We know that we sell the one thing that no one wants to buy. The harsh reality is that we all age. As we do, many of us fi nd ourselves or our loved ones in situations where they simply cannot manage without a little assistance. That assistance can take many forms, including the need for help with bathing and dressing, meal prepa-ration, medication management, or even transportation services. We provide all of these services, and many more. We also understand that the ability to pay for these kinds of services varies greatly, so we work diligently with clients and families to fi nd solutions that are cost effective and affordable. Over the years our service territory has expanded to include all of Monroe County, and portions of Pike, Carbon, and Northampton County. We have added a skilled nursing homecare agency, Allen Lear Home Care Associates, to help provide the medical care at home that many of our clients have required. Despite our growth,

we have maintained a welcoming offi ce and a personal touch. One offi ce. No franchise. Homegrown in the Poconos.

Our entire reason for being is simple. You spend your whole life turning your house into a home. We make it our life’s work to keep you in it.
