Training at Leicester College supports food manufacturing and hospitality employers in delivering a service which meets and exceeds the expectations of their customers.

The College has a wealth of experience in working with employers within the Food Manufacturing and Hospitality industry, in particular, with the delivery of apprenticeships, industry specific training and legally required qualifications.

The Hospitality and Food team at Leicester College pride themselves on developing and nurturing excellent relationships with employers. In 2014 highlights included welcoming a food icon back home into its city centre shop with the recruitment and training of apprentices, and celebrating with a well known Health Hydro and Thermal Spa in supporting the employment and training of 40 apprentices.

Leicester College was also recognised for providing high quality of training and excellent skills development for hospitality, gaining a Silver Accreditation from the leading industry skills body, the Hospitality Guild.

Cleaning Support Intermediate Apprenticeship

What is the training about?It aims to develop employee’s skills and knowledge within the cleaning industry and aid progression within this industry.

Who should attend?Employees working within the cleaning industry for more than 30 hours per week and who have successfully completed an initial assessment process.

Duration12 to 24 months depending on the employee.

ProgressionUpon successful completion of the apprenticeship the employee will have an industry recognised qualification which will allow them to progress within the cleaning industry. They could progress on to an Advanced Apprenticeship or Level 3 QCF/NVQ qualification.

Food Manufacturing Intermediate Apprenticeship

What is the training about?It aims to develop employee’s skills and knowledge within the food manufacturing industry and aid progression within this industry.

Who should attend?Employees working within the food manufacturing industry for more than 30 hours per week and who have successfully completed an initial assessment process.

Duration12 to 24 months depending on the employee.

ProgressionOn successful completion of the apprenticeship the employee will have an industry recognized qualification which will allow them to progress within the food manufacturing industry. Employees could progress onto an Advanced Apprenticeship or Level 3 QCF/NVQ qualification.

Leicester College has enjoyed a close working partnership with The Belmont Hotel.

For the past ten years the hotel have been employing apprentices through the College across various departments including housekeeping, bar, kitchen and reception desk.

Tom Metcalfe is on a Professional Cookery Apprenticeship at The Belmont Hotel. He said: “Working at The Belmont Hotel has been an exciting opportunity for me. It’s provides a really good grounding for me and the training I get, both from the staff at the hotel and from my assessors at the College, is second to none.”

An Apprenticeship is a work based training programme which allows employees to complement the skills that they learn, develop and use within the workplace with theoretical knowledge gained at College.

Training outcomesOn completion employees will achieve:• a NVQ in their chosen occupation (NVQ Level 2 for

Intermediate Apprenticeships and NVQ Level 3 for Advanced Apprenticeships)

• technical certificates relevant to their occupation and level of work

• Functional Skills in English, maths and ICT• workplace Health and Safety knowledge.

AssessmentAssessment is undertaken in the workplace and at College. Employees should demonstrate competence across various work-based tasks and compile a portfolio of evidence.

Food Production Intermediate Apprenticeship

What is the training about?It aims to develop employees’ skills and knowledge within their chosen industry, and to help them to progress within their chosen career.

Who should attend?Employees working in the food production industry for more than 30 hours within their chosen industry, and who successfully complete an initial assessment process.

What is the training about?The course aims to develop employees’ skills and knowledge within the facilities industry and aid progression within this industry.

Who should attend?Employees working in the facility industry for more than 30 hours and who successfully complete an initial assessment process.

Duration12 to 24 months depending on the employee.

ProgressionCandidates could progress on to an Advanced Apprenticeship or Level 3 QCF qualification. Upon successful completion of this apprenticeship delegates will have an industry-recognised qualification which will allow them to progress within the facility industry.

Licensed HospitalityIntermediate Apprenticeship

Course Code: C2500 Fees: 1 Start Date: Any time through the year Level: 2

What is the training about?The course is aimed at people who are working in the licensed hospitality Industry as a bar person, in bars, pubs and night clubs. It has been designed in conjunction with licensed hospitality experts to provide a fit for purpose competence based qualification that covers the skills essential for those working in the industry.

The qualification offers appropriate optional units related to specific job roles and the variety of premises types that make up the industry, there are four mandatory units health and safety, working as part of a team, serve alcoholic and soft drinks and maintain and deal with payments. Then there are four optional units which you have to choose

Who should attend?You must be employed for more than 30 hours within your chosen industry, and successfully complete an initial process. Before the application process you must have the approval of your employer to under the programme. You will be interviewed in your current workplace

Duration12 to 24 months depending on the employee.

What is the training about?The course is a vocational course that embeds advanced customer service skills from preparing to deliver customer service through to developing the rules and regulations to follow in a customer service role.

It will cover Functional skills in Communication and application of number Level 1. NVQ in Customer Service optional units from a range of units within a credit value. Delegates will get the opportunity to select the most relevant units based on their particular job role.

ProgressionOn successful achievement of the apprenticeship the employee can progress on to a HND in Hospitality Management. They could also progress on to become a chef de partie or sous chef.

ProgressionEmployees’ can progress to head of department or manager after completion. They could alternatively go on to an HND in Hospitality or Management NVQ at Level 4 or 5.

What is the training about?The course aims to develop the employees skills and knowledge within the cleaning industry and aid progression within this industry.

Who should attend?You must be employed for more than 30 hours within the chosen industry, and successfully complete an initial process.

Training outcomesThe qualification consists of a wide range of units related to the cleaning industry. Units are agreed between the employer and assessor which meet the employees current job role. These units form the basis of the cleaning qualification. There are some units that are generic to the cleaning industry such as health and safety.

Duration12 months.

AssessmentAssessment is via coursework and exams.

ProgressionUpon successful completion employees can progress on to Level 3 QCF qualification in Cleaning and Support on the basis they work within a supervisory role.

What is the training about?This course provides an on-the-job qualification covering the theory and practical application of customer service in any environment or size of business.

Who should attend?Delegates should be employed in the industry and have Ideally a relevant Level 2 or equivalent qualification.

Training outcomesThis qualification is ideal for those who have attained a basic understanding of consistent and reliable customer service and now wish to develop further. Potential or newly appointed team leaders, supervisors and managers would benefit from this course. The customer service delivery could be face to face or by telephone. Successful employees will receive a certificate for their chosen pathways that is highly regarded by employers and the industry (including contact centres).

DurationNine months.

AssessmentAssessment is via coursework.

ProgressionThis courses provides experience in management as well and therefore can lead onto a management-based qualification. It will enable career progression to supervisory positions in customer service, or look to move into similar customer service roles within other organisations.

What is the training about?This is a vocational course that embeds introductory customer service skills from preparing to deliver customer service through to following the rules and regulations in a customer service role.

Who should attend?Delegates should be working within a customer service role.

Training outcomesDelegates will get the opportunity to select the most relevant units based on their particular job role. This includes handling customer service problems and sales based training.

DurationNine months.

AssessmentAssessment is via coursework.

ProgressionThis courses provides progression opportunities to the Advanced Customer Service Level 3 that will also cover supervision. It will enable career progression to supervisory positions in customer service, or employees could look to move into similar customer service roles within other organisations.

Food Manufacturing Certificate

Course Code: C1165 Fees: 3Start Date: Any time through the year Level: 2

What is the training about?Employees can follow Award, Certificate or Diploma programmes and each has several pathways that cover all of the processes involved in food manufacturing. Training is tailor-made to suit the employer’s needs and is completely based at the employer address at a time convenient to the employer and employees concerned.

Who should attend?Employees will need to be working within the food manufacturing industry.

Training outcomesEmployees will receive valuable one-to-one guidance and support from our assessors, with training focuses including food hygiene, food safety hazards and prevention techniques.

DurationUsually up to one year, depending on the employee and programme.

AssessmentAssessment is continuous.

ProgressionSuccessful completion allows progression to Food and Drink Manufacture Award Level 3 certificate or to advance within the Food Manufacturing industry to a team leader or supervisory position.

Food Safety Award

What is the training about?This course provides delegates with essential information on food safety for the catering industry.

Who should attend?Any employee whose job involves food handling.

Training outcomesThis course is broken down in to two key areas: • take responsibilities for food safety and keeping food safe, • understand the importance of keeping clean and hygienic.

DurationOne day.

AssessmentAssessment is exam based.

ProgressionOn completion of this course delegates could progress further by enrolling on workskills award, short vocational programme or employment. .

Food Safety in Catering (Group) Award

Course Codes: C0434 Fees: 2 Start Date: Any time through the year Level: 2

What is the training about?Current legislation requires all food handlers to have some form of food hygiene training. Food poisoning is usually caused by negligence or ignorance and education of all food handlers is regarded as one method of tackling the issue.

Who should attend?Any employee whose job involves food handling.

Training outcomesUpon completion of the training delegates will have looked at food safety laws, hazards, the importance of temperature control, cleaning and safe food storage.

DurationOne day.

AssessmentAt the end of the training delegates will be required to complete a 30 question multiple choice examination. A score of 20 correct answers is required for a pass.

ProgressionDelegates may want to progress on to a Food Safety Level 3 Award or HACCP Principles Level 3 Award.

Food Safety Supervision for Manufacturing (Group) Award

Course Code: C0438 Fees: 2 Start Date: Any time through the year Level: 3

What is the training about?It is designed to equip employees in a supervisory position with adequate knowledge, to ensure that their company operates in a hygienic and efficient manner.

Who should attend?Employees should be competent to foundation level in food safety or equivalent.

Training outcomesEmployees will receive high-quality training in food safety terminology, supervisory responsibilities, legislation, potential hazards, bacteriology, temperature control, design, waste disposal, cleaning, pest control, personal hygiene, staff training, food safety management systems and tools, and food storage.

DurationOne week, 9am to 5pm for three days per week.

AssessmentAssessment is exam based.

ProgressionProgression to the Chartered Institute of Environmental Health (CIEH) Advanced Certificate in Food Safety.

Food Production Certificate

Course Codes: C1199 Fees: £300 upwards Start Date: Any time through the year Level: 2

What is the training about?The course is based around cooking and finishing food for school meals, pubs, nursing homes and hospitals.

Employees will learn how to prepare and cook sauces, soups, cakes, sponges and scones, and will also cover food safety and general health and safety.

Who should attend?Employees must currently be employed in the hospitality industry and will require an interview prior to starting the course.

Training outcomesThe course includes three mandatory units; • health and safety • food safety • working effectively as part of a team.

There is also a choice of further units to complete which includes: • producing hot sauces • producing basic pastry• producing basic meat and poultry dishes• preparing to cook and finish basic cake sponges and scones• complete kitchen documentation • producing healthier dishes.

Duration18 months.

AssessmentEmployees will be visited at work for assessments and portfolio building.

ProgressionAfter successful completion, progression routes exist to the NVQ Diploma in Hospitality Supervision and team leading. Once achieved, this qualification enables career progression to working as a cook in the following establishments: pubs, schools, hospitals or nursing homes.

Hospitality Services Diploma

Course Codes: C1195 Fees: £300 upwards Start Date: Any time through the year Level: 2

What is the training about?The course is based around the whole of the hospitality industry, which includes training in: kitchen, reception, housekeeping, restaurant, and bars.

Who should attend?Employees must be employed for more than 30 hours within the chosen industry and successfully complete an initial process which will include an attending interview and carrying out a skill scan.

Training outcomesThe course includes three mandatory units: • health and safety • food safety • working effectively as part of a team.

There is also a choice further units to complete which include: • producing hot sauces • producing basic pastry• producing basic meat dishes• producing basic poultry dishes• preparing to cook and finish basic cake sponges and scones• Basic vegetable dishes, • complete kitchen documentation • producing healthier dishes.

Duration12 months.

AssessmentAssessment is via coursework

ProgressionAfter successful completion, employees could progress on to NVQ Diploma in Hospitality Supervision and Team Leading also could look to apply to become a supervisor.

What is the training about?It provides a professional development opportunity for those who currently supervise or manage others in the industry, and covers a range of advanced processes within food and drink manufacturing.

Who should attend?It is intended for those working at a supervisory level within the food manufacturing industry.

Training outcomesThe training encompasses a number of themes related to the industry including:• controlling and maintaining quality within integral

manufacturing operations• resolving problems in integrated manufacturing

operations• maintaining and improving Health and Safety within

the workplace• contributing to the achievement of organisational

and personal goals• providing information and advice for action towards

organisational objectives. Duration12 to 18 months.

AssessmentAssessment is continuous.

ProgressionEmployees will be able to fault diagnose within food manufacturing operations, enabling them to have managerial responsibilities, and may also wish to enrol on the College’s Food Technology Level 4 training.

Training outcomesEmployees will gain further knowledge in a range of topics, including maintaining a safe and secure working environment and networking within the industry.

Duration12 to 24 months.

AssessmentContinuous assessment and exams.

ProgressionIt will enable employees to progress to a supervisory role, or if they are a chef to progress to a chef de partie role, which would make them an advanced skilled worker.

Hospitality Supervision Diploma

Course Codes: C1197 Fees: £2,583 Start Date: Any time through the year Level: 3

What is the training about?Delegates will learn how to carry out health and safety risk assessments, lead team meetings, cost out recipes and menus, solve customer service problems, and lead a team to improve customer service .

Who should attend?Delegates must be in a supervisory position in the Hospitality industry this could be front of house or kitchen.

Training outcomesThe course includes five mandatory units: • monitor and solve customer service problems • maintain the health, hygiene, safety and security of the

working environment • contribute to the control of resources • set objectives and provide support for team members • develop working relationship with colleagues.

Atendees must then choose three optional units.

DurationOne day.

AssessmentAssessment via coursework.

ProgressionBy completing this course delegates could move on to NVQ Diploma in Management level 5, or could also apply for a role as head of department.
