Heat loving blooms and yes, you can grow your own Bay leaf tree.

Sweet Bay Leaf Tree (Laurus nobilis) is a welcome addition to the gar-den for its form and versatility. A native to the Mediterranean region, it is best known for its green leathery leaves that are used to add flavor to soups, meat and sauce recipes. They are also a common ingredient in the French seasoning packet, bouquet garni. Dried bay leaves are available in gro-cery stores, but fresh leaves have a slightly stronger flavor and if you have grown them yourself you know what chemicals have been used in their cultivation, which is hopefully none.

When given the correct conditions, bay leaf can be grown in the ground but I have found it is easier to grow them in contain-ers and that is what I am sharing with you. Select a container that is light enough to move as needed. This may be necessary if temperature drops below 32 degrees or to protect from strong windy conditions which are damaging to weak wood. Sweet Bay is hardy in our zone 7 and should do fine when placed in a sheltered area as needed but prefers full sun exposure. Fill container with well-drained soil that has been amended with compost or peat. Be sure to plant at the same depth it was growing in the nursery pot. Be sure it never stands in water. It is a good idea to not use a catch tray and to set the container on pot feet or bricks to allow for good drainage. Only water when the top part of the soil is dry to the touch. For added interest, I added Candy Stripe verbena to my con-tainer.

Black Eyed Susan (Rudbeckia hirta) plants are heat and drought tolerant, self-seeding plants that grow in a variety of soils. They prefer full sun to light shade loca-tion. A member of the daisy family, Black Eyed Susans grow and bloom all summer long adding color in the garden. They attract butterflies and bees and other pollinators to the garden. Black Eyed Susan flowers make excellent cut flowers that will last a week or longer. Add this beauty to your garden and you can’t help but smile when you see them blooming.

Purple coneflower (Echinacea purpurea) is a native of the American prairies that works well in both cottage and formal gardens. Coneflowers have upright flower stalks that are about 2 feet tall, with furry, dark green leaves. Pink-purple flowers with droopy petals and a large cone shaped head in the middle start to open in mid-summer and continue to bloom off and on until frost. In the garden, monarchs and swallowtails butterflies are attracted to the coneflowers’ bright, nectar-rich flowers. The cut flowers are beautiful and long lasting in arrangements. For winter interest, leave the black-brown seed heads of purple coneflower. They are attractive and a great food source for goldfinches and if a few seeds land on the ground they will reseed themselves.Purple coneflower is very low maintenance, but does benefit from deadheading. It is cold hardy in USDA zones 3 to 9. The plants can handle poor and rich soil and perform consistently in either one. Hot weather does not phase coneflower, and it can tolerate ex-tended dry spells. They are tough and beautiful and when you add low maintenance, they certainly merit space in my gardenTasks for July:• Remove spent flowers to encourage continued blooming.• For second blooming, trim back leggy petunias and other annuals, and give them a good feeding with liquid plant food. • Keep weeds pulled, before they flower and set seeds again. • Continue to water as needed and be on the lookout for slugs.

Carol Moseley learned the love of gardening from her mother and father. Both were avid gardeners; his focus was vegetables and hers were flowers and shrubs. Carol has been garden-ing since 1969, and in 1999 completed the Master Gardening Training Course through the N.C. Coop-erative Ser-vice. She said she was very fortunate to learn how to grow and use herbs from her dear friend, the late Diane Morris, the Herb Lady

July is here, and Lake the Magazine hit the stands after the Independence Day celebrations and fire-works have lit up the sky and filled our hearts with

patriotism. I wish that we continue to feel that swell of pride in America throughout the year. Perhaps we need to continue to reflect on our country’s history this summer by visiting some of our notable historic sites.

Focusing on the colonial era, the Lake Gaston region has several offerings for you to step back in time and remember the foundations of America. Most of these sites are somehow connected by their proximity to water, in most cases the Roanoke River and what is now Kerr Lake and Lake Gaston.

In Mecklenburg County, Va., Whittle’s Mill is the site of a colonial era grist mill on the Meherrin River along the border of Mecklenburg and Lunenburg counties. The sce-

nic old millpond located in South Hill,Va., is now known as the Max Bagley Crowder Memorial Park, honoring a distinguished Southside Virginia historian.

Travel over to Clarksville, Va., and discover Prestwould Plantation, built in 1794 by Sir Peyton Skipwith for him-self and his second wife, Lady Jean. Many of the original outbuildings and Lady Jean’s garden remain. The manor house still contains many Skipwith family furnishings, offering a rare look at the gentry’s way of life in Virginia after the American Revolution.

In Boydton, Va., Boyd Tavern actually predates the town, which was established in 1812. In 1765, the newly formed Mecklenburg County granted Richard Swepson Sr. a license to operate an ordinary. Swepson’s ordinary is the earliest record of what would become the Boyd Tavern of Boydton.

Brunswick County, Va., offers a beautiful and historic bed and breakfast called Brunswick Mineral Springs, built in 1785 and primarily used for tobacco farming. Mineral Springs has several outbuildings that are still standing, including the smoke house, stable, dairy, well house, tack house, tobacco barn, hospital-ity house and more. However, agriculture was only one of the property’s several uses. The economy of the county between 1815 and 1845 was booming, mak-ing leisure available and luxury enjoyable. Visitors came to Brunswick County to drink and soak in the waters at Brunswick Mineral Springs.

Also located in Brunswick County is Fort Christan-na, one of the projects of Lt. Governor Alexander Spotswood, who was governor of the Virginia Colony 1710-1722. The fort was designed to offer protection and schooling to the Siouan and Iroquoian tribes, liv-ing to the southwest of the colonized area of Virginia. The fort was completed in 1714 and operated for three years as the westernmost outpost of the British Empire before being finally closed by the House of Burgesses in 1718.

Located on the Roanoke River, the town of Hali-fax, N.C., blossomed into a commercial and politi-cal center during the American Revolution. North Carolina’s Fourth Provincial Congress met in Halifax in the spring of 1776 and unanimously adopted the Halifax Resolves, the first official action by any colony recommending independence from England, on April 12. Guided walking tours allow visitors to explore several authentically restored and furnished buildings. A self-guided tour is also available, includ-ing a map of the site and wayside exhibits that offer educational information regarding the buildings and area. The historical buildings include a 1760 merchant’s home, the house and law office of a 19th-century attorney, the 1808 home of a wealthy landowner, an 1833 clerk’s office, the 1838 Jail, the 1790 Eagle Tavern, a 1760 Tap Room, and more. There is also a museum and wayside exhibits about the Underground Railroad, leading to an overlook of the Roanoke River.

In nearby Warren County, N.C., just a short drive from Lake Gaston, is Buck Spring Planta-tion, home of Nathaniel Macon, who was a member of the United States House of Representatives from 1791 to 1815 and served as Speaker of the House from 1801 to 1807. He also served in the Senate from Decem-ber 1815 until his resignation in 1828. The property includes Macon’s and his wife Hannah’s

graves, a log corn crib, a smokehouse, the caretaker’s house, and a reconstructed dwelling house dated to the 1930s. There is also a walking trail around the property.

July is in full swing, and we want you and your fam-ily to have all the fun the waters and shores of Lake Gas-ton can offer. When you can, take time to explore these nearby historic sites and continue to reflect upon the story of our nation’s independence, as many of the places and players in-volved were right here in the Lake Gaston region.

Lake Gaston Coffee Company business picking up

The strong, enticing smell of fresh coffee filled the shop on a beautiful recent day as owners of Lake Gaston Coffee Company worked hard at roasting and grinding

beans to be shipped out for consumption. Opened in November 2015 by Shelly and Jason Shearin, Lake

Gaston Coffee Company imports beans from around the world and roasts them in house.

The small operation, located on Enterprise Road in Littleton, is quickly becoming a local success. Their coffee is sold at a variety

of locations in the Lake Gaston area, and is served at several local restaurants. The flavors and roasts they sell are based on the two’s personal preferences, and so far they seem to be hitting the mark. There are a few special blends they have produced for places, such as The Hen and The Hog in Halifax and The Crypto-zoology of Paranormal Museum in Littleton.

A wonderful feature of the business is the Shearins host “Tues-day Tastings” at 10 a.m. each week. This gives people a chance to sample their coffee, and learn a little bit about what it takes to

get the java from the plant to your cup. They recently did a tasting where they presented customers

with two cups of coffee and asked them to describe the differ-ences. The responses were varied, but when Jason revealed both cups were made from the same beans, people were surprised. The only difference between the coffees was the amount of time the beans were roasted. One cup had been roasted for only 30 seconds longer, and this gave the coffee a more bitter taste.

“The roast impacts the coffee taste tremendously,” Jason said,

noting light roasted coffee has a very floral, earthy taste. “In a good medium roast you get the sweetness, plus some of the origin flavors. If you roast it even darker, you lose your origin flavors, and everything starts to taste the same.”

Most of the coffee they offer is a me-dium roast — this helps to make their coffee stand out by showcasing each coffee’s origin flavors, giving each one a unique and full taste.

Shelly and Jason also juggle other careers, and Jason owns another small business. They have two sons and enjoy spending time together as a family, even if that sometimes means the boys have to work a little.

Expansion may be on the horizon, but nothing is set in stone. For now, Lake Gaston Coffee Company is a passion, and Shelly and Jason said they hope one day it can become their legacy.

July is one of my favorite months of the year as it is the month of my birthday.

While growing up in Greece we did not just celebrate a birthday for one day, it was a month long celebration. Well, at least that is how my family cel-ebrated my birthday. I will be 37 years young this year, however, if you ask my wife, she may say I often act like I am just turning 13. July also includes Independence Day — everyone wears red white and blue to show the rest of the world how proud we are to be Americans, and how blessed we are to be living in such wonderful and opportunistic country. GOD BLESS THE USA.

For my July column and the story from around the world, I asked a good friend to help me: Helen, who we call Juju, lives in Canada. She was kind enough to share a childhood story and a recipe with me and all of you. I hope you enjoy the short story and try to make the pota-toes — they are amazing and go well with a nice grilled steak or white flesh fish. Enjoy!

JUJU’S WORDSI grew up in North Ireland. Both my parents were

born and raised there and both came from poor homes. Potatoes are very inexpensive in N Ireland and therefore

a lot of meals have them as the main ingredient.

My family was not well off growing up; my Dad worked long hours. He would work up a good appetite during the day and wanted nothing but meat and potatoes each evening. We would have mashed potatoes almost every night for dinner; my Dad would eat at least five potatoes with each evening meal. They were a great way to fill up his hungry belly. Mom would usually pair the mashed pota-toes with baked beans or peas. Along with the mashed potatoes and beans/peas we would find inexpensive meats such as sausages or ground beef and sometimes lamb; lamb was reasonably

priced back then. I really did not appreciate potatoes ev-ery night for dinner and looked forward to our weekly visit to my great aunts’ house. At my great aunt’s we would usually have fish and chips from the local chippy (Chippy was a takeout place) or they would make me a huge salad with ham and boiled eggs.

When we moved to Canada, almost 40 years ago, the potato feast continued. Mom became a bit more adven-turous by cooking a chicken curry or a lasagna once in a while (a rare treat) but Dad always had meat and potatoes.

As my palate expanded and I acquired a taste for more exotic foods (i.e. Indian, Thai, Japanese) I started to enjoy potatoes a bit more as I wasn’t eating them every single day. I learned to experiment with potatoes a bit, but my favorite dish is a traditional Irish potato dish called Colcannon. I don’t eat meat anymore but have adapted the recipe to suit my veggie eating ways. I will share the original recipe; if you choose to alter it as I do to make it more vegetarian friendly make sure to add butter for the fat needed in the dish.”

COLCANNONIngredients: 2.5 lbs. potatoes, peeled and cubed4 slices bacon1/2 small head of cabbage, chopped1 large onion, chopped1/2 cup milkSalt and pepper to taste1/4 cup butter, meltedDirections: Place potatoes in a saucepan with enough water to

cover. Bring to a boil, and cook for 15 to 20 minutes,

until tender.Place bacon in a large, deep skillet. Cook over medium

high heat until evenly brown. Drain, reserving drippings, crumble and set aside. In the reserved drippings, sauté the cabbage and onion until soft and translucent. Putting a lid on the pan helps the vegetables cook faster.

Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the bacon, cabbage and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter. Serve immediately.

Docking: A learnable skill

It has been said the first rule of boating is, “Approach the dock at the speed at which you are prepared to hit it.”

Great rule! But, before we hit the dock, just how do we plan and maneuver to get there? Here are some tips that will make docking, if not a thing of beauty, at least not a memorable event. Way back when I was learning to drive a jet ski, I bounced off a few docks. Believe me, it ain’t fun! As with anything, it takes practice, practice, practice. If any of you have ever had to get fiberglass repaired, you know how expensive that can get.

First, we need a plan. To put together a plan, we need to look at the environment. As we approach the dock, have a good look around. Here are some of the items we want to check:

• The condition of the dock where it will contact the boat. Are there any nails or other obstacles that could cause dam-age?

• Are there fenders on the dock? (They are air-filled rubber bags that keep the boat from contacting the dock). If not, then lower your own fenders.

• What kind of devices are present to tie off the boat (cleats or wooden pilings)?

• Is there anyone on the dock to assist with docking?• Which way is the wind blowing and the current flowing?• Are there other boats on the dock that we must maneuver

around?• Are the docking lines ready to be used – that is, attached

to the boat on the docking side.Once these questions have answers, you can proceed with

the plan. First, approach the dock with the lowest speed rela-tive to the dock. Remember the rule above) What this means is that you normally want to approach the dock into the wind and/or current. (There is very little current on our lake, but it

can be awesome along the coast.)An example would be if the dock is running North and South

and the wind/current is from the North, then you want to approach the dock from the South – going North. While wind and currents affect boats differently, unless something extraordinary is present, always dock into the wind/current.

Proceed toward the dock at the slowest speed you can man-age, still being able to steer the boat. Do not go in fast and expect to use reverse to stop. It is not worth the potential consequences. Remember, boats don’t have brakes.

The first goal is to get a line (remember a rope once aboard a boat becomes a line) attached to the dock. Usually this means someone from your boat throwing a line to someone on the dock. When you do this, throw them the end of the line that has a loop on it. Then it is easy to ask them to put it around a cleat or piling.

Once this has been done and the line is tied to your boat’s bow and the dock, it is a simple matter to bring the stern into the dock. If the dock is on your right side, engage the throttle forward a little and turn the wheel to the left – remembering you steer the stern and the bow goes the other way. This turns the stern of the boat toward the dock, making it easy to attach another line there. The bow line keeps the bow from turning left.

If the wind is pushing you off the dock, it is best to approach the dock at a good angle. In situations where the wind is really blow-ing, you might approach the dock almost head on. Whatever works to get a bow line attached to the dock. Once that is done, the rest becomes easy.

Often you may have no help on the dock. If that’s the case, ap-proach the dock close enough for one of your crew or sometimes just yourself, if you are alone, to either attach a line or jump onto the dock and do that. (Being oh so careful on the jump.)

Always remember that you are the captain. You have the respon-sibility for what happens to your boat and the dock. Thus, you have sole authority and don’t let any-one talk you out of it!

Gavin Honeycutt was born on Sept. 24, 1970, in Farmville, Va. His mother was born and raised in South Hill, Va. After she and his father were mar-

ried, they lived in Victoria, Va. As a family, they moved back to South Hill in 1978 and it has been home to Honeycutt ever since.

Where did you go to school? I graduated from Park View

Senior High School in 1989. I was just elected this past No-vember to represent the 5th District on the Mecklenburg County School Board.

Tell us about your family.Growing up in lake country,

Southside Virginia was great for my family. My father worked for Centel telephone company, which is now better known as Verizon Telephone Company. My mother went to work early in her career for the Lunenburg County Bank, which today is known to many as Benchmark Community Bank. She was a banker for more than 35 years. I lost my dad to esophagus cancer in January 2003. My mom retired from banking a year after Gavin’s House of Flowers and Gifts opened and is, in my opinion, the glue that holds everything together. She makes sure all finances are in order. Gavin’s first opened its doors Jan. 16, 1996, and will be celebrating 20 years this January. My sister, Michelle, was a cosmetologist and was very talented in her profession. My sister lost her battle to ALS. June 24 was three years. Her legacy is left behind in her twins, Emmi and Brady, my joys in life. They will be turning 10 this coming November. The great-est niece and nephew I could ever be blessed with.

Tell us about your hobbies.My dearest and most rewarding hobby is singing. God has

blessed me in so many ways, but the greatest gift he gave

me is the gift of music. Other than music, I love lakes, water skiing, tubing and quiet evening rides on the tranquil waters of our manmade lakes in Mecklenburg County. The winter months, I really enjoy the mountains of North Carolina. Blow-ing Rock is my quiet, serene place to be in the winter. Our two, 180-pound Great Danes love the mountains as well. They love all the wildlife they encoun-

ter while on vacation.

What’s your favorite song to sing and why?

I have to say I love all types of music, both sacred and secular. Broadway music has some of my favorites. If I had to pick a favorite song to sing, it would be “Bring Him Home” from “Le Misérables.”

What’s your favorite show you have been in and your role?

I would have to say my most favorite show and role was “The Sound of Music,” playing the role of Captain Von Trapp.

What made you start your flower business?

I have always had a cre-ative side and a creative eye in life. After high school, I went to work in the food and clothing

industry. Learning that two florists in the town of South Hill

were closing, both being in business for more than 25 years each, I said to myself, you know, I think I might would like to do this. I was mentored by Robert Thomas of South Hill, also a lifelong resident, who I owe much of my success to. I have learned so much from him over the last 20 years. Robert owned Thomas Florist and Gifts for over 25 years. I laugh when I think about one of the hardest things I had to learn to do and that was tie a bow. I would ask Robert, “Does this bow look better?” He would say “yes.” They couldn’t get any worse, they had to get better.

What’s your favorite flower and why?My most favorite flower would be an array of tropical flow-

ers. Those styles are light and airy, remind me of lake life.

What’s the most beautiful spot on Lake Gaston and why?The most beautiful spot on Lake Gaston would have to

be, well the lake as a whole. I think I could drive it on the boat with my eyes closed. I have many wonderful memories with family and friends on Lake Gaston. I will treasure these memories always. I look forward to making many more.

Do you have a favorite activity to do on the lake?Yes, skiing, tubing and cruising in the late afternoons. The

water is smooth as glass, makes for nice quiet rides, and I admire the beauty and all of what Lake Gaston has to offer.

What makes Lake Gaston special?Lake Gaston is special in so many ways. I would have

to say the most special would be the families, and the many people who I have made relationships with over the past 20 years. Whether it’s for a wedding, new babies, an-niversaries or helping families with the loss of loved ones. The continuous support of the businesses and families that are situated on Lake Gaston, Southern Virginia and North Carolina is why Gavin’s House of Flowers is the success it is today. I owe a great deal of gratitude to the people that have supported me and continue to do so today.
