The American holiday of the 4th of July holds historical significance globally. The message of liberty and “freedom for all” that was written in the Declaration of Independence that day in 1776 spread quickly worldwide – at a time when communication was limited to say the least. As the new concept of individual freedom took hold, the world began to change ... and those effects are continuing today.

A lot of deeply felt speeches were made during the Ameri-can Revolution. Someone on the news is always paraphrasing or rewording what our forefathers “really” meant to say, so I enjoy reading them for myself and agree or disagree. I know the history I find when I research has significant relevance to today. Try it for yourself: the lessons of history are great.

The 4th of July has historical significance locally as well. This year is the 10th Anniversary of the great flood of 2002 when the floodwaters – on July 4th – breached the spillway at Canyon Dam. If you weren’t here to experience it with the community that did, you have surely heard of it’s effect: the emotional bonding of a community thrown into emergency mode and the physical change of the land, as well. The GBRA ceremony at the spillway on June 29th to commemorate the anniversary will have passed by the time you read this, but the Gorge they helped preserve remains. The eons of history revealed in the layers exposed by the water are fascinating to see. Sign up for the guided tour soon.

Our Canyon Lake Community Profile this month is another couple who has been paired long enough to be one. They share a common interest in history and the different flavors that dif-ferent cultures produce for us to taste. Married 48 years this past March, “DeeDee” and Tony Dunn have owned and oper-ated the Old Sattler Bakery Company that opened the 4th of July 1996.

The 22nd Annual 4th of July parade on FM 2673 sponsored by VFW Post 8800 in Startzville makes history every year, because they make it happen. Not all communities have a pa-rade on this important day. Canyon Lake is lucky the veterans value this day. Show them you value their efforts. Be a part of history, and be there.

On July 4, 1996, Tony and Dianna (“DeeDee”) became the new proprietors of the Old Sattler Bakery. Dianna is the owner and Tony is the “tender-hearted baker slaving away in the back.” By the end of their first day open, they knew the bakery had to become a full ser-vice restaurant to be profitable – a challenge. But making these two happy is easy ... baking is just part of that.

They’re old-time bakers. Fresh breads and pastries made from scratch are labor intensive and the ingredients to make their speciality breads are expensive, but they refuse to use processed mixes as most bakeries do now. Unprompted customer compliments remind them why on most days by adding plenty of praise – something the Dunns are grateful to hear. They want a bite from their kitchen to be a taste of the past, made like your grandmother made – complimented with the delicate flavors of breads from other parts of the world – like Danish-es and crepes. Some are familiar favorites, others delightful surprises.

Tony and DeeDee have traversed multiple paths during their 48-years of marriage. They share an avid appetite for learning from history. “And for good food,” Tony pipes in. They are well-versed in world events and knowledgeable about the past. They share a love of people, but most of all, they share a common interest in each other and a love of what they do.

DeeDee was born at BAMC (Brooks Army Medical Center) and is a Native Texan with deep family roots preceding “Canyon Lake” – she remembers when there wasn’t one. Her dad was a retired Army photographer and in the Calvary when horses were still used and carrier pigeons cages still needed to be cleaned. In 1947 at the end of WWII, the family was sent with the first Americans when the mili-tary occupied Japan. Frequently exploring the countryside with her father, he often told her, “if you’re privileged to live in another part of the world, you embrace it.” The experience taught her to appreciate other cultures – to value them.

In 1924, DeeDee’s Great Grandfather bought 1,000 acres off FM 2722 known locally as Dry Bear Creek. Her family used the farm as a weekend hunting camp when she was growing up in San Antonio – when Startzville consisted of “two gas pumps and Old Grandma Startz,” she says. Oldtimers might have heard tales about her Aunt Emma (Reiber) in the 40s – a colorful local character who cooked for large groups in the main house known as Old Indian Days. The old ranch has been divided through the years. She and Tony live in the remodelled house built by her uncle, on two acres that her uncle and grandfather cleared with hand saws.

In 1963, DeeDee was working as a secretary at Kelly AFB as Tony was finishing at the Air Force Academy. His first assignment

landed him at Kelly where they met and married a year later. After Tony earned his Masters Degree, they adopted their two girls who are grown now and live in San Antonio.

One of Tony’s assignment took them to Turkey – an experience that impacted them both. Fascinated with the cultural differences as well as the history, Tony and DeeDee studied the customs and tradi-tions of the new world surrounding them. Skipping Americanized meals, they experienced the tastes and characteristic aromas of the local cuisine while enjoying the warmth of the people who served them.

DeeDee returned to San Antonio to help in the family business when her mom became ill, and stayed until their daughters finished school. (Teasingly, Tony added he learned early on that you can’t keep a Texas girl outta Texas for very long.) After retiring from the Air Force, he joined her in San Antonio. He began to learn the family trade and to his surprise, he was soon learning to bake too.

They didn’t plan to be bakers. They were interested in property in that location and got an offer on the business too. Because they always cooked together, the transition felt natural – but the days were long. Exhausted after six months of bakery hours at daybreak followed by full days in San Antonio, DeeDee was desperate for more help. The ‘helper’ a friend sent over was a lifesaver instead.

The tall, svelt German woman named Hannah Mathis had ap-prenticed with old fashioned master European bakers. Skilled in European breads and desserts of the old school, Hannah quickly be-came more teacher than helper.

A lot of recipes currently in use are Hannah’s, many are family gems handed down through generations, or from Irene, the bakery’s original owner. Other specialties have evolved on site.

DeeDee whips up her Extraordinary Eggs Benedict any time of any day – they will cook your eggs any way all day. The hand-bread-ed Chicken Fried Steak is unmatched anywhere around.

Like the pastries, Tony says, “all the sandwiches and hamburgers breads start in a 50-lb bag of flour” – all handmade. Gourmet salads can be a whole meal alone.

The Old Sattler Bakery Cafe has expanded four times by popular demand and as the kitchen demanded more space too. DeeDee says her lifesaver today is her cook, Andy Hebert – who is “as depend-able in the presentation of her food as she is the taste.”

The restaurant opens at 7:30 Wednesday through Sunday but follows baker’s hours and closes at 2. Tony and DeeDee practice one philosophy they believe in wholeheartedly: “You make people happy when you feed them.” And that makes them happy, too.

The Old Sattler Bakery Cafe is a full service restaurant located at 2000 FM 2673 near the intersection of River Road. They are open from 7:30am until 2pm, Wednesday through Saturday and serve extraordinary breakfasts all day. The lunch menu is available at 11am. In the April issue, we discussed the fact that dogs need leadership, otherwise they will assume they must be the leader themselves. If your dog believes he is the leader of your fam-ily pack, then according to dog culture, he can ignore all your commands – as a matter of fact, Fido has the right to demand that every family member instead follows his every command. There are four simple rules I have found to work well for most people in their quest to be their dog’s leader. In the May and June issues, we discussed the first two rules.

Rule Number 3: Only the leader can decide when petting and loving is okay. In other words, if your dog gets all needy and demands to be petted, it is not okay to fall into the trap of petting your furry friend – because it would be on Fido’s terms, not yours. Instead, when your puppy approaches you all needy, command him to sit first. You can then tell him what a good boy he is, give him a big hug, and pet him to your heart’s desire.

By making him sit first, you effectively turn the situation around from giving in to his demand, into giving him love because he was such a good boy minding your command. Of course, dogs are quite intelligent, so Fido may soon figure out that he never gets petted unless he sits first – and so, he will al-ways sit when he comes up to you. Sitting on his own, however, is not good enough. You must still give him another command before he can get love. For example “Fido down” (“lie down”) followed by “sit.”

The reason Rule Number 3 is so im-portant to dogs, is because they learn it shortly after birth. The most dominant pup in the litter can demand that the other pups groom him. Dogs equate our pet-ting to the same act as one dog using his mouth to groom another dog.

Last month, I stressed that the crust is an important element of the pie. Its im-portance is not (normally) as a flavor in-gredient but rather as the structural carrier of the filling. The two prime qualities the crust must have are strength and texture – it must feel pleasing to the mouth (that means flaky). We decided to minimize water and moderate the wheat pro-tein, but we didn’t discuss fat. Fats (all chilled) available for use in order of their desirability are lard, hydrogenized vegetable oil like Crisco, butter and margarine.

This recipe is for three crusts for 9” to 10” pie tins. Any left over should be rolled out into a circle or square, lightly buttered, sprinkled with a cinnamon sugar mixture, rolled into a cylinder, baked and enjoyed.

Ingredients: 3 Cups of all-purpose flour (14 oz); 1 Cup chilled lard (chunk into 20 or so small pieces); 1 tsp salt; 6 Tbsp chilled vodka (alcohol does not create gluten); and 4 Tbsp (1/4 Cup) chilled water

Procedure: Measure out water and vodka, chill and set aside. Cut two pieces of wax paper each about 12” long. Then (1) com-bine and mix flour and salt in bowl or (even better) in a food pro-cesor. (2) Add chunks of lard and cover with some of the flour before adding the next chunk. (3) Process lard into flour with two tableware knives, pastry blender or food processor. If using a food processor, use the knive edge in short bursts. Stop when you have created a crumb-like texture. (You can use a table top mixer with the paddle blade for this, but you have to be very careful to not over process.) If you end up with a paste, you processed too long – start over. (3) Add vodka mixture – dribbles at a time – as you continue processing until it forms 1-2 clumps. (4) Empty the bowl on the counter and form it into a disk about 5” in diameter. Double wrap with plastic and refrigerate for at least an hour. (5) Cut the disk into three parts, returning two to the reefer. (6) Form the re-maining piece into a ball and place on one of the sheets of wax paper. Place the other sheet on top at 90º to the bottom sheet. Press the ball into a disk of about 6” diameter while attempting to keep its thickness even. (7) Using a rolling pin, roll the disk (from the center outward) into a disk that comes close to the waxpaper edge on each side. (Never roll all the way to the edge of the pie dough – thin edges.) After every few rolls, lift the paper off the disk and rotate it 90º. (Do this for both sides.) Then roll a few more times before adjusting the paper. (8) Done.

July is usually regarded as the month when we all gather ‘round to blow things up. This tradition has been in my family since the Rev-olution. I’m talking about the Revolutionary War, not the Beatle’s song – that’s a whole other story.

It’s a very little known fact – so keep this to yourselves – my roots are in New England. It’s true that I was born and raised in Texas, but my paternal heritage is Massachusetts. Boston, Con-cord and Lexington are the areas to be specific.

Growing up, I was told that Captain Parker of Lexington fame ("Stand your ground. Don't fire unless fired upon, but if they mean to have a war, let it begin here.") was my great-something grand-father. I’ve seen his statue on Lexington Green and I’m a bit suspi-cious. He’s good looking and he has hair. I’m thinking now that heredity isn’t all it’s cracked up to be.

When I was first told of my famed relative, I thought my dad said “Colonel” Parker. I was about seven and flying high thinking that I was somehow related to Elvis’ manager. I admit that I was a bit disappointed to find out that my Parker was a long-passed Revolutionary War hero instead of the cigar smoking, back slap-ping boss of “The King”.

Am I sharing too much?The point of all this rambling is to let you know that in an effort

to help celebrate Grandpa Parker’s fight for independence, your

local hardware store will have a lot of great patriotic and celebra-tory stuff to help you get through the 4th of July holiday.

Here are some ideas to help you party your way through the weekends and the 4th. A fresh new flag flying on the front of your house always looks good. Coolers and drink tubs are handy any-time during the summer. Comfy canopy chairs keep you out of the sun and give you a place to relax.

Heading off to the folks’ house? Pick up a hanging basket or something to plant in their garden.

Bottom line: enjoy the weekend, wave your flags and don’t let yourself be jealous of a statue.

infected with DNSChanger after July 9, 2012 will no longer be able to connect to the Internet. The problem dates back to November 2011, when the FBI seized and shut down about 100 servers that were infecting millions of computers with the DNSChanger Trojan. Infected machines had their Domain Name System settings altered so websites would redirect to servers controlled by criminals.

DNSChanger is a trojan that will change the infected system’s Domain Name Server (DNS) settings in order to divert traffic to unsolicited, and potentially dangerous websites. What this means is that if you have this trojan malware on your computer – when using a website browser – your browser would be redirected to malicious DNS servers and ultimately fake real-looking websites. These fake websites would then provide malicious answers, altered information searches, and load spyware and/or viruses onto your computer. If your computer is infected with this trojan, this is a very dangerous situation.

On Google, infected computers will see a warning atop their screen when completing a search: “Your computer appears to be infected,” it reads. “We believe that your computer is infected with malicious software. If you don’t take action, you might not be able to connect to the Internet in the future.”

Facebook will alert users about this Trojan. This information is from the DNSChanger Working Group’s (DCWG) website: “When a user browses to Facebook from a DNSChanger-infected computer, the social networking giant will display an alert with a link to the DNSChanger Working Group’s website, the Facebook security team wrote on the Facebook Security blog on June 4. The DCWG website contains information about the malware and instructions on cleaning up the infection.”

To find out is your computer is infected, go to this website: http://www.dns-ok.us/. You will see a webpage titled “DNS Changer Check-up.” If your computer is not infected, the page will display “DNS Resolution = GREEN. Your computer appears to be looking up IP addresses correctly!” Another related very good website is: http://www.dcwg.org/ where you can Detect, Fix, and Protect you computer from DNSchanger.

This month I wanted to write about meditation. What a huge subject to cover in such a short column! So here is my short course, Meditation 101.

First of all, meditation is not about stopping the mind. What you can expect, over time, is a slowing down of thoughts. Through a meditation practice, you are developing a relationship with your-self. And like any relationship, it takes time, patience and under-standing. Learning how your mind works…thinks…you will, in many ways, be meeting yourself for the first time.

There are many different methods of meditation and finding what works best for you is key. For our purposes here, we will use the breath as a point of focus.

So, let’s get started. Find a comfortable place to sit. Tradition-ally meditation is done sitting on the floor on a pillow or cushion. Making a comfortable seat is of the utmost importance, so if sitting on the floor doesn’t work for you; sit in a chair, with both feet flat on the floor, and your back straight. Pick an area that is clean and quiet. It is also helpful to sit at the same time every day.

Some people like to meditate first thing in the morning. It’s a wonderful way to start your day. Others like to meditate in the evening to relax and let go of the day’s events. Pick one time and stick to it.

Now to begin, take your seat. Close your eyes and let your breath settle. Relax. Begin to notice the breath as it moves in and out of your body. Just sit and watch the breath… notice how almost immediately your thoughts start pulling you in different directions. As soon as you realize that you’re thinking, return to focusing on the breath. The mind may interrupt you a thousand times, but a

thousand and one times, return to your breath. Sitting in this way for even five minutes a day is a great way to start a meditation practice.

Reducing stress and anxiety, lowering blood pressure, enhancing the immune sys-tem, increasing concentration skills and de-veloping presence of mind are just a few of the many benefits of a meditation practice. For these reasons and many more, I believe that a consistent meditation practice is one of the greatest gifts that you can give yourself in this life.

nate at the sternum and clavicle and insert on the humerus. These muscles that form the upper chest wall have two parts: the major and minor. The main action is adduction – bringing the arm closer toward midline of

the body. Tight pectorals muscles result in rounding the shoulders forward thus over stretching the back muscles. This conflict be-tween the muscles is visible in poor posture.

There are so many important muscles in the back that support the spine, enough for an entire column. With space limitations, the large muscles of the back will be the focus for this discussion.

These large muscles are the Trapezius, Rhomboids Major and Minor and Latissimus Dorsi. Big names, for big muscles! Having strong back muscles are vital for good posture and also help protect the shoulders. Maintaining good posture throughout the day really has an amazing effect on your overall wellbeing. Your chest cavity is open and the lungs are then able to inflate and deflate allowing great oxygen exchange – which leads to a greater mental focus and less muscle and mental fatigue.

The shoulder is an amazing joint – the range of motion that the shoulder provides the arm is barely short of miraculous. The rotator cuff muscles are small and seldom thought of until an injury occurs. There are four muscles deep within the back and shoulder area that allow the shoulder to rotate forward and backwards. Because the shoulder is so mobile and flexible, it is also prone to injury. That said, strong back muscles bring the shoulder joint backwards align-ing it correctly for overhead lifting and reaching movements.

The human body has over 630 muscles! To get up close and personal with all of these muscles, a good anatomy and physiology class is required. Because there is a right way and a wrong way to strengthening these muscle, getting to know a personal trainer is wise! The wrong way can have you sitting on the sidelines missing out on the action!

There are some really cool new things to tell you about on The Hopper that has been updated since my column when The Hopper first came out in March. First, for those of you who don’t know about The Hopper, it’s a satellite receiver from Dish Network.

It lets you record up to six channels at once, it records hundreds of hours in High Definition programming and lets you view and play back in any room in the house in HiDef.

The Hopper is also an internet-connected box which means if you hook it up to your high speed connection, you can stream movies straight from the internet. You can also enable it to re-cord the four major local networks – such as ABC, NBC, and CBS and FOX automatically every night between 6 and 10pm – and it will store the programming for eight days. That means even if you didn’t tell it to record one of those shows, it would be there.

The groundbreaking new feature – Auto Hop – lets you skip commercials without all those repeated 30-second jump forward button presses. The way it works is when you begin to playback the show for the first time, a box appears and asks you if you would like to skip commercials for the rest of the show, and you select Yes or no. I know it sounds too good to be true. Well, a little over a week after Dish activated this feature, they were promptly sued by most of the major networks. If Dish is able to fight the law suit, in a few years, I think all the cable and satellite companies will offer that feature in their DVRs. Way to go Dish on pushing

the envelope! Dish also has added a few new apps like Pandora – a free internet music ser-vice – Facebook and Twitter directly through The Hopper on your TV!

worse her memory, according to new research published in the journal of the American Ge-riatrics Society. This data analysis was per-formed on 8,745 women, ages 65 to 79, who showed no signs of dementia at the beginning of the study. For every unit increase in their body mass index (BMI), their score – on the memory test that was administered – decreased.

Samuel Gandy, MD, PhD, Professor of Alzheimer’s Disease Research, neurology, and Psychiatry, and Associate Director of Al-zheimer’s Disease Research Center at Mount Sinai, says, “that the risk between excess body fat and the risk for coronary disease has been recognized for some time.” He goes on to say, “Since every risk for coronary disease has turned out to be a risk for Alzheim-er’s disease, the findings are entirely consistent. According to Fran Grossman, RD, MS, EDE , CDN, a dietitian at Mt. Sinai, many dietary changes can help you lose weight. Grossman recommends you try the following tactics*:

• Eat small, frequent meals.• Increase your fiber intake with more whole grains, fruits and

vegetables.• Use healthy monounsaturated oils, like olive or canola oil, for

cooking.• Avoid fried foods• Eat healthy proteins that are low in fat, such as skinless turkey

or chicken and fish.•Minimize your intake of simple sugars, like those found in soft

Medical massage: An alternative to surgery?

The medical massage industry was established in 1997 to set the standards and raise awareness of what massage can do. Us-age of terms like medical massage, advanced neuromuscular, and therapeutic massage means that your therapist has completed spe-cial training to work on those soft tissue injuries. They differ from traditional massage (Swedish) techniques that are more commonly used because of the specialized training required.

Putting the finishing touches in your home caOnce you have the shell of your room just the way you want it, it’s time to think about what finishing touches you’ll add. You have painted the walls, installed

window treatments, and the furniture is in place. But why doesn’t the room look finished yet? The job’s not done! Here are a few tips to make your new room have that welcoming, polished, finished look.

Add a Punch of Color. Neutral walls and fabrics can look clean and neat in a room. But to really draw the eye, add color with pillows, candles, or paint an accent wall in a bold color.

So, you’ve set up a Facebook/ Twitter page and perhaps you are blogging too, but how do you use your online social media presence to actually get customers to frequent your business?

Social media is based on a customer’s interest in what you have to offer, and more often than not, your followers will be people who have done business with you in the past. But what can you do to generate repeat customers or even new customers?

1) Make Promotions Available Exclusively via Your Social Media Sites. Big retailers offer coupon codes and offers exclusively to their Facebook/ Twitter fans all the time. Have you tried it? Encourage your followers to print the coupon and use it at your business (don’t forget to limit the offer to a value and timeframe).

2) Use the Facebook App Toolbar to Display Your Call to Ac-tion. Get to know the Facebook app toolbar (just below your cover photo) and use it to display your call to action. A call to action can include things like sign up buttons for your email newsletter, a link to your online store and special offers or events.

3) Combine Great Content with Compelling Offers. A call to action is one thing, but when you combine it with a great story or engaging content, it can help drive new traffic to your business. Fuego Mundo, a Georgia-based restaurant uses its Facebook fan page to do this. For instance, they invite fans to have a say in new menu items. Recently, it came to choosing a new range of soup dishes, the restaurant promoted a weekend of free soup tastings to its Facebook fans, asking them for help picking the dishes. Pictures and videos of the tasting event and the winning soups were uploaded to Facebook to help promote the new menu.

4) Integrate Your Social Media and Email Campaigns. Social media communities are valuable, but the speed and volume of in-formation can make it hard to reach your target audience with your key messages. So it’s important to take steps to drive social media followers to sign up for your emails. Use page apps, post updates about your email content, and encourage fans not to miss out on your latest updates.

Home health is administered by li-censed nurses, physical, occupational and speech therapist, home health aides and social workers. The care provided is based on the specific, individual need of each person.

To receive home health services requires the following: an or-der from a physician, the person must have a medical need, and that person must have difficulty leaving the home.

Sadly, I see it happen at least once a month at my clinics: a client brings their beloved pet Fluffy into the clinic

because she’s A.D.R. In fancy vet speak, this commonly used acronym means “ain’t doing right.” After asking a few questions, I learn that about a week ago Fluffy was limping and the client had given her some Tylenol for a few days. After completing some in-house bloodwork, we determine that Fluffy is in acute kidney failure from Tylenol toxicity and that her days are numbered. Heartbreakingly, by the end of the week my client’s family is saying their goodbyes and we are forced to euthanize poor Fluffy.

Dogs and cats are not little people, so we should not assume that the same over-the-counter drugs we commonly use for ourselves are safe and effective for them to take. While much of human and animal physiology is very similar, there are many differences in what types of drugs each species can metabolize.

In fact, there are many drugs that may be great for dogs, but are toxic to cats, horses, or cattle, etc. It’s also true that many veterinary drugs are not safe for humans to take. On the other hand, there are many over-the-counter human drugs that can be used in pets, but the dosage of that drug may be very different when comparing a dog versus a cat versus a human.

I fully understand that times are tough for a lot of people out there – bringing your pet to the vet every time it sneezes may not be financially feasible. I only ask that you please call your veterinarian’s office and ask if an over-the-counter medication is safe for your pet before giving it. Also be sure to ask what the appropriate dose (amount and frequency) would be for your pet. Almost all veterinary clinics offer this advice free of charge whether you are an existing client or not.

If you have any doubt about a medication, please call before potentially harming your pet!

As we approach the 4th of July so well known for its picnics, barbecue and beer, it’s important to remember the dangers of drink-ing and driving. The holiday commemorates the signing of the Declaration of Indepen-dence that set the 13 colonies on the road to freedom as a sovereign nation, separate from Great Britain. It celebrates freedom. So, re-member your personal freedom is threatened if you get behind the wheel after drinking – whether you feel okay to drive or not.

With the 4th of July falling midweek on Wednesday this year, many social events – spontaneous and planned – are on the agenda and the gatherings of family and friends that accompany it may span two weekends. Naturally alcohol is involved in many of the celebrations and, like Memorial Day and Labor Day, law enforce-ment is well aware of this. DWI awareness and enforcement are at their highest level. Many of you may know that most counties in our area including Comal, Bexar, Hayes, and Travis have some form of “No Refusal.”

Although I believe there are Constitutional issues with forced blood testing, it is in place, and we all need to realize the con-sequences of DWI. It is very expensive. Many think they cannot afford a lawyer – that is actually one of the smaller and more im-portant expenditures one should make when faced with a DWI.

DWI often results in the suspension of driver’s license. You are allowed a hearing, but if not represented, your license will be sus-pended. At that point, your only option is an occupational license. With filing fees and the like another several hundred dollars are required for the civil suit to reinstate an occupational license that is only good during work hours and to and from work. To deviate can result in arrest. Beyond the expense, your personal freedom will be seriously impaired.

One mistake, handcuffed, at least eight hours in jail, a lifelong record, possible loss of job, monthly probation testing and fees, community service, AA meetings, alcohol and drug evaluation, yearly surcharges, loss of mobility, enhanced penalties for future offenses, and the general stigma of DWI. It’s not worth it.

If drinking, choose not to drive, period. Like other families on the road who you would endanger as well as yourself, your fam-ily and friends will appreciate that wisdom too. If you hurt or kill someone, the offense can rise from a class B misdemeanor to a --felony. It might sound cliché, but the life or limbs you save could be your own.

You’re a contestant on a game show and down to the last question to win a Bazillion dollars. Yes, A Bazillion Dollars! ... which is about $20 less than the National Debt. The question is, “How many mosquito bites would it take to drain the average human of blood?” Just blood now ‘cause if it’s blood and alcohol, the answer would be way different especially around Comal County in the summertime.

The answer is 1,200,000. You know this because you read my columns, of course. Don’t forget my commission.

Do you know why the capital of the USA was moved twice? The mosquito. Numerous accounts of Yellow Fever occurred in Philadelphia, PA. So the capital was moved to New York City and finally to Washington D.C.

What? You want to know wing beats per second. I knew it. So here: Hummingbird 75, Honey Bee 200-250, House Fly 330, Mosquito 600 and the most beats per second are Midges (No, I didn’t say midgets) at 1040! Humans can twitch some muscles at ten beats per second. Now guys, I know you think you achieved that but the ladies unani-mously disagree. That’s not the right muscle group anyway. It’s involuntary tremors measured at the finger tip.

Here’s something else you never really needed to know. Given the choice, mosquitoes prefer to bite blonde women. That’s natural blonds, OK! I’m partial to brunettes myself. Only female ‘skeeters make that annoying high frequency sound. That stands to reason, right men?

Final food for thought. Remember this the next time a house fly lands on your Happy Meal. A single fly carries 1,941,000 bacteria. That means it leaves more bacteria than hundreds or even thousands of cockroaches. What?! That’s darn near a bazillion! Years ago, Mao Tse-tung said every good Chinaman should kill ten flies a day. You know what? It worked.

Question. Who sits there counting fly bacteria anyway? I envision this guy with some megaton microscope and a tiny pair of tweezers going, “One. OK. That’s two. There’s three.” Thirty years later, he’s up to 1.9 million, the clean-ing lady comes in and whoops! “One. OK. That’s two...”

It seems everyone is interested in the idea of rainwater collection these days. As both the popularity and envi-ronmental awareness increase, many

homeowners are considering some form of rainwater harvest-ing. Despite the recent drought, interest in these systems reached an all-time high. Here are just a few items to consider.

When deciding what type of system is right for you, one im-portant step is to determine the square footage of the collection surface (using the structure’s footprint). For every 1,000 square feet of collection area, you can expect to reclaim an estimated 550 gallons per inch of rainfall. According to local climate data, our average rainfall is around 34 inches annually.

Although it’s difficult to determine an exact figure, it’s esti-mated that the average Texan uses 80-100 gallons of water per day. This accounts for all water used throughout the day both inside and outside the home. In order to ensure an uninterrupted water supply during a drought, even a conservative water user would require a sizable storage tank, and/or an extremely large collection surface. Since these might prove impractical for most homeowners, it is important to plan ahead for how you will use the stored water.

If your main reason for collecting rainwater is irrigation, you can use a much less expensive holding tank, as well as elimi-nate the need for any treatment equipment. In some cases, the tank can be elevated to allow for gravity flow, thus making a pump unnecessary. A simple system for garden watering can be a relatively inexpensive investment. On the other hand, if you intend to use the stored rainwater for daily household use, then it must be stored in an appropriate tank, and repressurized using a booster pump. It is also crucial to filter debris and disinfect the water prior to use. It’s also recommended that you use a well to supplement your rainwater system.

While pets love us unconditionally, pet own-ers often find themselves at the end of their pa-tience as they see that new carpeting taking on that “brownish tinge!” Pets, just like people are not perfect. They have accidents all the time. Even that top of the line carpeting with its 10-year warranty now looks terrible. And the warranty? … that only covers normal wear. When you have pets, there is no such thing as normal wear.

Fortunately today, there are many pet friendly floors to choose from. Laminate, wood, ceramic and porcelain, and luxury vinyl tile and plank are the best flooring categories for pets. Let’s com-pare. For many people, hardwood floors are the only option. If this is true for you, here are a few tips to keep your floors in shape.

Buy a species of wood – pecan, hickory, Brazilian cherry – that is harder than oak. Avoid high gloss finishes, satin finishes that are hand scraped will not show the wear. Minor scratches will add to your floor’s patina. Sweep, vacuum, or dust mop at the very least weekly. Clip your pet’s nails regularly. If your pet has an accident, wipe it up immediately with a towel. Avoid harsh chemicals.

Laminate floors are tough because its wear layer is made of alu-minum oxide making it extremely scratch resistant. In our home, we have both laminate and hardwood floors. With three Labs the laminate has held up much better than our wood floors, but it is noisier. My dogs’ nails tick, tick, ticking took some time to get used to as they ran up and down the hallways.

Luxury vinyl plank and tile with its hard durable finishes are extremely scratch resistant. These are made from PVC which is the hard plastic used in plumbing pipes. They are waterproof products. Vinyl is a low allergent, moisture resistant, and very quiet. Your dog’s tick, tick, tick running on the floors will be a distant memory. Accidents are easy to clean up.

Ceramic and porcelain tiles are very pet friendly. However, to avoid absorbing pet accidents, the grout must be sealed. Tile can be difficult for older dogs with hip problems – not to mention, slip-pery for us, older humans!

If anyone tells you they have a pet proof flooring, run – with your dog! There is no such thing. However, an honest evaluation of your lifestyle and your expectations will result in you making the best flooring decision.

PAX Community Coordinator, Stephany Hamrell, is interview-ing families in this area who are interested in participating in a cultural exchange experience by hosting international high school students for the coming academic year.

A resident of Fischer, Stephanie is the local Community Co-ordinator for PAX, a non-profit foundation which provides a US high school and homestay program for students from over 40 dif-ferent countries, including those in Europe, Eastern Europe, Asia and Latin America. PAX students are between the ages of 15 and 18, speak English, have full insurance coverage and their own spending money.

Students from many different countries are looking forward to living like American teens for one school year, joining sports teams, studying for exams and participating fully in family life. Each PAX family is asked to provide their student with meals, a place to sleep and study and a warm supportive environment. Pri-vate rooms are not required and single parents, young couples and retirees are welcome to apply for these volunteer roles.

Programs like these help build the global communities of to-morrow that our kids and grandkids will live in.

Since the Enlightenment, God has been relegated to the realm of mythology, ignorance, or psychological projec-tion. Darwin, Freud, Nietzsche, and Marx, each attacked the idea of God.

Yet the topic of God occupies more space in the col-lection titled “The Great Books of the Western World” than any other. We are fascinated with the concept of God whether we believe God exists or not.

There is a significant amount of recent material in sci-ence, philosophy, theology and other disciplines which point out the fallacies of the opponents of God, and firmly establish His existence.

This material was not produced by uneducated re-ligious louts, but by men and women who write on the highest levels, and are respected members of the aca-demic community. Dr. Alvin Platinga was the first protes-tant ever to chair the Department of Philosophy at Notre Dame University. He was elected president of the Ameri-can Philosophical Association which has been historically dominated by atheists. One of his associates there said “I’m still an atheist, but I can’t refute what he says about God!” Another example is Dr. Francis Collins who is both a scientist and a physician. He was the head of the Human Genome Project and yet he writes books which defend the existence of God.

Over the next several weeks at Hill Country Bible Church we are going to explore the existence of God, and also the objections to His existence. Is there scientific evidence for a beginning of the universe and for intelli-gent design? Where does our moral impulse come from? Where do ideas like the multi-verse and string theory fit in? What’s so special about the man called Jesus and how is the Bible different from other religious books?

You’re a veteran. Whether you recently got out or you have been out for years, you have had some hard experiences. These ex-

periences have, in some way, affected you and the life you’re lead-ing. Your family, friends, and everyone else around you are telling you to get some help. In your mind, however, getting help sounds like a wimpy thing to do. You were taught and conditioned to be hardened, to just ‘suck it up.’ You should be fine if you just shove it all down and bottle it away, right? Wrong.

Reaching out for help and getting the proper counseling is one of the most important steps you will take, not only for yourself but for your loved ones as well. Since beginning my internship with the Military Veteran Peer Network, I’ve gone to the weekly Friday breakfasts at our local Veterans of Foreign Wars post in San Marcos. It was there and in conversation with Dan West, State Assistant Adjutant for the VFW, that I heard one of the greatest analogies ever used for mental health.

He said, “You have to put it in their terms. I tell my guys, it’s like if we were in the middle of a fire fight, and you ran out of ammo, but I had a lot of extra. You wouldn’t hesitate to ask for a spare ammo box, and I wouldn’t hesitate to give it to you.”

Getting help is like asking for that spare ammo. Your life after service is a new battle, on a new battlefield. Your comrades not only include your fellow veterans and your family, but also the professionals looking to help you. You’re lost in this new battle, and you have no ammo. Counselors and therapists have that spare ammo to give you so that you can move forward and win.

Seeking help is not a sign of weakness, but of strength. So vet-erans, do not be afraid to ask for that spare ammo – we have plenty for you.

Operation Float A Soldier In June, OFAS began their annual service to provide Wounded Warriors recovering at BAMC a day away on the lake with their families. Numbers per event generally scheduled twice a month over summer months range from 50 to over 100. Sponsors have been secured but all needs are not covered. of Columbus, offers a delightful evening of entertainment that is patterned like Branson or Nashville-style. With auditorium seating of 540 people a frequent sell-out, the performances on the third Tuesday of every month has raised over $150,000 for the Comal County Senior Citizens Center and its Meals on Wheels program. I just presented at a conference in Hous-ton, highlighting why dental offices should use lab-based science to quantify health, just as physicians do. Sometimes it is less about the lab results and more about personal ac-countability for our own health. Nothing like

staring at a lab result and knowing it is a result of lifestyle!For instance, a week at the beach after an intense three-year

work stint preceded this conference. I usually eat pretty “clean” but it is hard to find healthy food away from home and yes, I did knock down a (very) few margaritas. At the conference, I dem-onstrated how to perform A1c tests. A1Cs show sugar control over the last three months; my score was 5.9. Too many ruined red blood cells for my comfort. It got my attention because I know what sugars do to my immune system, circulatory system, pH, gums, etc.

Testing anti-oxidant levels, pH, specific microbes, and sali-vary components are all important tests dentists can do, and are some of what we offer. All affect oral health.

While in Houston, I met remarkable practitioners. I was most struck by one who just graduated from a Utah dental school and mentioned that she wrote critical analysis papers regard-ing dentistry’s pro-stance on fluoride and mercury. How brave of her to question curriculum at such a young age and in such a vulnerable position! She eagerly soaked up the information presented both during the conference and in our more relaxed conversations afterwards.

I know how personally difficult it is to not live by commonly held belief systems, whether professionally, personally, or po-litically. So does Dr. Warlick. I am proud to work for an equally courageous employer.
