Our expertise is to provide you with a solution and industry specific design that meets your needs, right through to bringing your project smoothly from construction stages to completion. We will then continue to support you with our renowned after sales back-up & support.

Concept/Preliminary DesignEngaging with our client to get a feel for what a kitchen means to you and your project is a key part of the design process. Particular emphasis is made of the flow and interaction from the customer’s perspective.

Once basic bulk and location are sorted we work in with your architects and our interior design consultants and suppliers. We will work with your operations team equipment that reflects the menu and operating method.

Developed DesignThe decision making time. When we get to this stage we need to work out what is going to make the final cut. How does the project sit with your budget; what are the consequences of changing a particular item; how will it impact on your final offering?

Detailed DesignNow the final selection is made we set to work on the detailed plans, elevations and services schedules for each area of the kitchen. We engage with other consultants such and mechanical services, electrical and hydraulics to ensure there are no discrepancies. With our accredited ArchiCAD software, we can also offer 3D plans and Virtual Walkthroughs for our customers.

Project ManagementThe team at Hostservice has extensive knowledge of the construction industry having come from an electrical trade background. This translates into efficient project management. Our project management services include site marking out and liaison with tradesmen to ensure services are installed in the correct position. This gives you, the customer, the assurance of a hassle free project. We can also offer full ‘turn-key’ packages if required.

Delivery & InstallationDelivery of Hostservice supplied items can be coordinated into bulk deliveries to ensure there are no multiple deliveries to site. The team will unpack, assemble and place the equipment. This ensures that the equipment arrives on time, undamaged and in the correct place. We are happy to work in with your preferred tradesmen to connect and commission your kitchen.

Design/BuildCommercial Kitchens

Commissioning & HandoverCommissioning of the equipment is carried out in accordance with manufacturers instructions. A copy of all manuals is given to the client along with a servicing schedule. We recommend we set you up with a regular maintenance programme with a local provider, however this isn’t compulsory. We also offer a full range of utensils and small appliances to complete your kitchen.

Training We typically carry the training out over two stages, the initial training covers the basic operation and use of the equipment, setting them up to use and get some experience with each unit. We encourage staff to write down any non-urgent questions and we follow up with more detailed training covering these points a month after the kitchen is operational. We also give training to maintenance staff on basic servicing routines on the equipment and can supply servicing manuals if required.

After-Sales Service & BackupFull backup and support for our product is provided throughout New Zealand. With 50+ combined years of service experience we are well qualified to support our product both remotely and hands-on. We fully back-up our product with a large range of spare parts which can be dispatched overnight throughout New Zealand.

Host Service Limited t/a Hostservice Commercial-Warranty Policy

a. Unless otherwise stated, the warranty shall cover a period of 12 months effective from the date of final invoice. Irrespective of what replacements may be made within this period, such replacements shall not extend the original warranty period.

b. Hostservice Commercial shall have no liability under this warranty for any products if the customer has not complied with Hostservice Commercial payment terms and conditions.

c. If a fault or defect occurs within the warranty period contact Hostservice Commercial in the first instance. Hostservice Commercial will arrange an approved service provider to check the equipment. In the case of any plug in appliance the customer will be required to return the faulty product to our service provider’s facility at their cost.

d. If determined by Hostservice Commercial that the fault is covered under the warranty Hostservice Commercial liability under this warranty will be limited (at its option) to either

• ThereplacementoftheProducts;or • ThesupplyofequivalentProducts;or • Makingafullrefundtoyou.

e. The warranty covers manufacturer’s faults only.

f. Fair wear and tear, repairs alterations and modifications to the product without the authorisation of Hostservice Commercial will not be covered under the Warranty.

g. If Hostservice Commercial or our service provider determines that the fault is not covered under warranty the service fee will be payable by the customer.

h. Hostservice Commercial is not liable or responsible in any way for any consequential loss due to equipment failure. This includes (but not limited to) loss of profits, perishable goods or foodstuffs or hire of replacement equipment.

i. Hostservice Commercial shall not be liable for

• Anysumgreaterthanthecostofrepairorreplacementoftheproducts,or • Anyconsequentiallosssufferedbyyou,or • Anylossarisingfromtheuseoftheproductsbyyououtsidethenormaloperationoftheproducts,or • Anylossresultingfromanyfaultornegligenceofyou,or • Wheretheproductshavebeeninappropriately,negligentlyorcarelesslyoperatedormaintained.

j. Where the Customer purchases the goods for the purposes of a “business” (as defined by the Consumer Guarantees Act (1993) then the Consumer Guarantees Act is excluded.

k. The following are regarded as wearing parts and are not covered under warranty- Glass, door gaskets, light bulbs or tubes, light covers, bandsaw blades, mincer plates and knives and wheels or castors.

Jøni EasyMix

The simple kettle with a stirrerThe EasyMix is a simple kettle with an integrated stirrer. Mechanising the stirring in the kettle simplifies food preparation and saves labour. It also ensures a better result, as the heat is distributed more evenly throughout the entire contents of the kettle and prevents burning. The kettle is available with nominal volumes of 40, 60, 80, 100, 120 or 150 litres and is fitted with Auto-Temp 15 control as standard. This control system includes electric tilt with TiltBack, digital control and display of the inner kettle temperature, stirrer control, push-button operated water filling and WaterLevelAutomatic. The control panel is located on an adjustable control box on the pillar.

The stirrerWith its fully penetrating stirrer shaft, the kettle has no unhygienic joints around the food and the lifting handle on the stirrer is always clean and easily accessible. The stirrer has six dynamic stirring patterns, which automatically adapt to the speed selected and therefore always operate optimally. The speed can be set to any speed between 5 and 140 RPM. A slow rotation speed distributes the heat and treats the food gently, while a fast rotation speed mixes effectively and makes certain dishes lighter. The powerful stirrer motor provides 152/243 Nm and can therefore also stir thick dishes. Mashed potato made from fresh potatoes can, for example, be prepared in the kettle. For safety reasons, the stirrer will stop when the lid is opened, but thickeners, spices, etc. can be added through the inspection hatch.

Flexibility With the SlowMix accessory, the stirrer can rotate slowly when the kettle is tilted. This can be used to mix the contents of the kettle during serving. The stirrer also enables the MultiClean cleaning tool to be fitted, which saves time, energy and water when cleaning the kettle. Several kettles can be linked together and the control panel can be placed on either the right- or the left-hand pillar. The EasyMix model can also be linked with the Easy model.

Often the under used, misunderstood item in a kitchen. Cooking kettles are perfect for cooking a range of quantities of vegetables, meats, pie fillings, desserts, purees, mashed product and more.

Jøni EasyStandThe four-legged kettle - Stable stand and easy set-up

The EasyStand model is a kettle on four legs. It can be used to avoid fixed installation in the floor, e.g... in rented premises or for temporary use. The kettle is available with a nominal volumes of 20, 30, 40, 50, 60, 80 or 100 litres and is supplied with a lightweight, tight-closing lid made from synthetic material and hinged on the pillar. As an option the kettle can be delivered with a rotatable lid. This makes the cleaning of the lid easier especially for larger kettles. EasyStand model kettles are supplied as standard with AutoTemp 01 control, which includes electric tilt, heating is infinitely variable with a dial and a cold water tap for adding water to the kettle. Water is added to the steam generator using a valve on the back of the pillar. As an option, the kettle can be supplied with AutoTemp 11 control, which includes electric tilt with TiltBack, digital control and display of the inner kettle temperature, push-button controlled water filling and WaterLevelAutomatic. The control panel is located on an adjustable control box on the pillar. The EasyStand is mounted on a solid, stable underframe with four legs, enabling the kettle to be tilted safely. The kettle is only available as an electrically heated version and the power and water connections are placed on the underside of the pillar.

Jøni MultiMixErgonomic kettle with advanced control

The Multi model is available in many versions and meets all the requirements for a modern kettle with or without a stirrer. Kettles from 40 to 500 litres and the option to link the Multi with the MultiMix, Opti and OptiMix make the Multi an obvious choice for kitchens seeking labour saving functions and user-friendly solutions. A minimum tilt height of 400 mm makes serving simple and also makes the Multi ideal for high output kitchens.

Available with nominal volumes of 40, 60, 80, 100, 120, 150, 200, 250, 300, 400 and 500 litres, the Multi is supplied as standard with AutoTemp 31 control, which includes electric tilt with TiltBack, digital control and display of the inner kettle temperature, an electronic water flow meter, a clock with an alarm function and WaterLevel Automatic.

As an option, the kettle is available with AutoTemp 51 control, which includes a further six programs and a cooking probe. Ten sets of parameters can be saved for each program and the cooking probe can be used to control and display the temperature of the food. The control panel is located on an adjustable control box on the pillar.

The Multi comes as standard with a lightweight, tight-sealing lid made from synthetic material. The lid is hinged on the pillar with the control panel. A gas spring enables the lid to be opened with minimal effort. However as an option the kettle can be delivered with a rotatable lid. This makes the cleaning of the lid even easier, especially for larger kettles.

The many options for combining sizes and models with narrow or wide pillars enable the kettle to be customised to existing installations, hence minimising the need to make modifications to existing buildings which can be very expensive.

VITO® Large Mobile Oil Filtration SystemsBoth the VITO® XS and the VITO® XM clean their oil and stores it in their large tanks (45L for the XS and a massive 75L for the XM) which provides an easy and hygienic transport in the kitchen. Because of the innovative vacuum-filtration technology, particles remain in the filter in a dry condition. Like every VITO® oil filter system these mobile units provide microfiltration up to 5 μm.

The unique design makes sure the units can handle temperatures up to 175°C. They provide highest safety at work, as direct contact with the hot oil is avoided. After filtration the oil can easily be pumped back into the fryer automatically.

Basic Rules of FryingThings you should keep in mind while frying:

The adjusted temperature of the deep fryer should not exceed 180°C (356°F) and preferably lies within a range of 160-175°C (320-347°F). Higher temperatures do not mean shorter cooking times, but lead to a faster fat deterioration and accelerate the acrylamide formation with starch containing foods.

The quantity of the product which will be deep fried should be measured so that the temperature does not reduce too much during deep frying, thereby having a negative impact on the deep frying result.

Turn down the temperature of the deep fat fryer when out of use for prolonged periods of time in order to prevent unnecessary exposure to heat and therefore premature ageing of the fat.

To guarantee the optimal quality of your oil, the temperature and the level of the oil deterioration should be measured daily. Use the FOM330 Oiltester

The cooking oil should be filtered at the end of the service in order to remove residues of the products that have been deep fried and parts of the degradation products of the fat. Use a VITO® Oil Filter

To protect the fat against oxygen, light, dust and water, the oil and fat surface in the dwell phases must be covered. This prevents additional deterioration of the deep frying medium by oxidation and photo-oxidation.

MISA Modular Polyurethane Cool & Freezer Rooms A simplistic modular system of cool and freezer rooms. These can be easily expanded, with the advantage of quick assembly or disassembly over time.

The Misa system can be utilised for cool and freezer rooms, production rooms, processing plants or any food grade area.

As your business evolves and expands so too can your MISA cool or freezer room be easily expanded or re located within hours not days. The MISA modular system ensures your investment retains more value than an expanded polystyrene (EPS) constructed room. Removal of the need for on site cutting with all its associated hazards, improved fire resistance, reduced running costs resulting from superior insulation qualities and rapid on site assembly are key benefits enjoyed by MISA users throughout New Zealand.

Panels can be added or taken out at a later date, giving you huge flexibility and major advantage over polystyrene installations.

Floor panels are manufactured from a high density reinforced polyurethane panel with a finished floor surface comprising of an anti slip plastic coating. (No vinyl required.)

Where a level flat concrete floor is available at ground level a cool room can be constructed directly onto it without a need for MISA floor panels.
