Southern Style Oven Fried Catfish

Ingredients

3 tablespoons vegetable oil

1 1/2 pounds catfish fillets, cut into serving pieces

1 cup cornmeal

2 teaspoons Creole seasoning

1 teaspoon paprika

1 teaspoon white sugar

1/2 teaspoon ground black pepper

2 eggs, lightly beaten

1 tablespoon hot pepper sauce or water

Directions

1.Preheat an oven to 425 degrees F (220 degrees C). Grease a 13x9 glass baking dish

with the oil, and set aside.

2.Rinse the catfish fillets, and pat dry. In a shallow bowl, combine the cornmeal,

creole seasoning, paprika, sugar, and black pepper. Combine the eggs and hot sauce

or water in a another bowl. Dip the fillets in the egg mixture, dredge in the corn-

meal mixture, and arrange in the baking pan.

3.Bake for 15 minutes, or until cooked through and golden brown. Turn once during

cooking. Place catfish on a paper-towel lined plate, and serve immediately with

additional hot sauce.

Fortunately, many health plans,hospitals and care providers, andemployers have introduced new ini-tiatives to help people better managetheir health care benefits.

Individuals can easily access up-to-date onlinepersonal health records that provide simple andsecure health histories, and the most recent infor-mation on treatments and prescriptions.UnitedHealthcare, for example, makes suchrecords available to all its plan participants throughmyuhc.com.

Hospital performance rankings – also availableonline – enable people to gauge the quality of careavailable in their community. One example is the

Wisconsin Hospital Association (www.wicheck-point.org) website, which ranks hospitals for per-formance and patient satisfaction based on criteriasuch as death rates, infections, a variety of com-mon procedures and patient-safety practices.

The federal government’s “Hospital Compare”website (www.hospitalcompare.hhs.gov/) providessimilar information, and private organizations suchas the nonprofit “Consumers’ Checkbook” use gov-ernment statistics along with their own research tocompare and rank hospitals.

In order to take full advantage of these

resources, understanding health careterminology is critical. Consumerscan learn the ABCs of health care(HMOs, PPOs, HSAs, etc.) by visitingwww.healthcarelane.com.

This virtual town’s “residents” pro-vide easy-to-understand informationabout common health insuranceterms, wellness programs and healthylifestyles, and how to use onlinehealth tools and calculators.

Better information can lead toimproved health, and many healthplans are developing targeted pro-grams to offer improved coordinatedcare for people with specific illnesses.UnitedHealthcare, for example, nowoffers a health plan designed to helpthe rapidly growing numbers of dia-betes and pre-diabetes patients man-age their conditions while loweringtheir costs.

The first-of-its-kind Diabetes HealthPlan requires participants to complywith evidence-based guidelines fortreatment of their illness. Participantswho meet their plan’s required guide-lines receive significant savings on

out-of-pocket expenses such as lower copaymentsfor related doctor visits and even free diabetessupplies.

Better health translates to both personal andfinancial health. At a time when Wisconsin andstates across the country are trying to balancebudgets while maintaining critical services, the cor-relation between better health and cost savingscould not be more important.

—­At­first­I­thought­Spike­Lee­was­justhatin’­but­after­going­to­see­the­latestinstallment­of­the­Madea­franchise­byTyler­Perry­–­I’ve­got­to­shout­it­loud­andproud­that­“I’m­withSpike.”­Don’t­get­mewrong­–­Tyler­Perry­isEXTREMELY­gifted.He­also­seems­to­be­avery­nice­person,­gen-erous­and­kind-heart-ed.­Don’t­know­him­–but­from­what­we­allsee­of­his­every­daycharacter­there’s­no­doubt­he­has­manyadmirable­qualities­and­an­impressivework­ethic.

With­that­said,­I­must­also­say­–­thatup­until­Saturday,­April­23,­2011,­I­was­ahuge­Madea­fan.­I­first­fell­in­love­withthe­Tyler­Perry­Madea­phenomenon­afterseeing­the­Madea­Goes­to­Jail­play­at­theKodak­Theater.­I­thought­the­characterswere­funny,­yet­respectable­and­the­mes-sage­was­rich­with­spiritual­undertones­onthe­importance­of­faith­and­family.­So­Iwas­more­than­excited­to­see­the­latestMadea’s­Big­Happy­Family­flick.­Iplanned­for­weeks­to­see­the­film,­pur-chasing­advance­tickets­and­even­arrivedan­hour­prior­to­show­time­to­beat­anycrowds.­I­had­eagerly­awaited­this­much-needed­cinematic­break­from­reality.

However,­reality­is­what­gave­me­aclassic­Madea­slap­in­the­face­as­I­satthrough­an­excruciating­storyline­full­ofback-to-back­black­female­characters­thatwere­the­epitome­of­the­most­popular“angry,­annoying,­nagging,­loud,­unattrac-tive,­beat-down-your-man,”­stereotypes­ofblack­women.­The­movie­depicts­all­ofour­worst­stereotypes­on­Barry­Bondssteroids.­I­found­these­stereotypes­to­beextremely­dreadful­and­frankly­I­was­sur-prised­that­they­were­coming­from­TylerPerry­–­who­I­had­previously­thought­dida­nice­job­of­creating­positive­roles­forblack­women.

Unfortunately,­any­earlier­positivefemale­roles­Perry­did­create­–­now­seemlike­they­were­just­a­figment­of­my­imag-ination­after­seeing­the­first­hour­ofMadea’s­Big­Happy­Family.

Let­me­explain.­There­was­the­obese,weed-smoking­auntie­Bam­who­justcouldn’t­get­enough­of­a­high­to­satiateher­appetite­–­to­the­overweight,­cold-cream­wearing­daughter­Tammy,­who­isso­down­on­her­man­even­after­he­bringsher­beautiful­flowers­for­their­anniver-sary,­to­this­same­couple’s­Robin­HarrisBébé’s­kids­that­continuously­refer­totheir­dad­as­“punk­ass.”­Then­there’s­thepretty­Kimberly,­who­plays­the­cold-hearted,­career-hungry­sister­that­treatsher­handsome­husband­(Mr.­Old­Spice)with­spiteful­disdain­for­no­reason.­And­ifthat­wasn’t­enough,­Kimberly­is­alsodepicted­as­an­unfit­and­unloving­motherwho­is­cruel­to­her­sweet-faced­18-monthold­son.

Really,­Tyler­Perry?­Are­black­womenthat­bad?­Apparently­so­–­because­it­does-n’t­let­up­here.

Byron’s­character,­a.k.a.­Bow-Wow,has­some­extreme­baby-mama­drama­withhis­fast­talkin’,­burger­pimpin’,­ghetto­ex-girlfriend­known­as­Sabrina.­Shedemands­child­support­but­spends­it­onBaby­Phat­instead­of­formula.­Not­tomention­Bow­Wow’s­current­girlfriend­inthe­film­played­by­Lauren­London­–­whoencourages­him­to­hit­the­streets­againand­to­start­sellin’­because­his­$10­anhour­job­ain’t­cutting­it­for­her­gold-dig-ging­ventures.

Did­I­also­mention­the­over-used“1.800.choke-that-ho”­joke­–­which­wasnot­even­funny.­Thanks­to­this­Perryscript­–­kids­all­across­America­will­bechanting,­“dial­1.800.Choke-a-ho.”

If­it­takes­all­of­these­negative­imagesand­foul­dialogue­to­tell­the­eventualmoral­of­the­story­about­the­importanceof­faith­and­family,­I­am­not­willing­totravel­the­road­anymore­to­see­whateverlight­might­possibly­be­at­the­end­of­theTyler­Perry-Madea­tunnel.­For­now,­weare­with­Spike­on­this­Tyler­Perry­movie–­this­was­straight­buffoonery­on­par­withEddie­Murphy’s­Norbit­and­MartinLawrence’s­Big­Mama’s­House.

It’s­no­wonder­why­so­many­blackwomen­are­single­and­not­getting­anyproposals­from­the­same­men­that­theyhave­birthed­and­raised­when­we­arecharacterized­in­such­a­negative­light.­Itis­these­hateful­and­demeaning­imagesthat­stain­the­minds­of­many­men­andyoung­boys­(black­or­not)­to­see­blackwomen­as­undesirable­mates­and­lessvaluable­than­other­women.

Black­women­better­wake­up­and­smellthe­proverbial­coffee­–­because­they­arenot­profiting­from­these­types­of­hurtfulimages­broadcasted­to­the­entire­world.This­is­especially­true­for­the­42­percentof­black­women­that­have­never­beenmarried­and­never­will­get­married.­It­isan­even­more­pressing­issue­for­our­blackdaughters­who­are­next­in­line­to­be­sin-gle­and­lonely­if­we­as­black­women­con-tinue­to­stand­in­silence­and­support­ourown­demise.

And­why­is­it­that­Black­women­arethe­only­women­who­have­a­negativestereotype­about­themselves­that­trans-

lates­into­undesirability?­The­commonAsian­female­stereotype­is­that­they­aresubmissive­–­but­in­the­eyes­of­most­men–­this­is­seen­as­a­good­quality­for­a­wife.White­women­have­the­stereotype­of­thedumb­blonde­–­but­this­is­viewed­ascomedic­first­and­foremost,­and­thenthere­is­the­assumption­that­if­she’sblonde­–­then­she­is­automatically­consid-ered­beautiful.­Lastly,­Latina­women­havethe­stereotype­that­they­are­“sexuallyspicy”­and­cater­to­their­man’s­every­need–­and­while­I­am­sure­that­most­Latinasfind­this­extremely­degrading­–­it­doesn’thurt­them­in­the­context­of­desirabilityamong­men.­After­all,­being­desired­by­aman­who­loves­you­is­what­most­womenultimately­want.

Black­women­are­the­only­women­whosuffer­from­stereotypes­that­say­they­areunattractive­across­every­dimension.­This

is­why­these­negative­stereotypes­perpetu-ated­in­Tyler­Perry’s­latest­film­have­to­beidentified­and­confronted.­As­long­as­wecontinue­to­allow­negative­images­ofwhat­it­supposedly­means­to­be­a­blackwoman­to­go­on­the­air­unchallenged­–we­will­continue­to­see­such­painfulreminders­of­our­silence.­I­am­remindedof­the­recent­State­Farm­commercial­withthe­black­smart-talking­girl­on­the­cornerpopping­her­neck­to­her­boyfriend.­Betteryet,­if­we­stand­by­and­say­nothing,­wewill­surely­get­a­sequel­to­the­infamous2011­Super­Bowl­Pepsi­Max­commercialof­the­black­overweight,­bug-eyed,­unat-tractive­wife­whose­husband­fantasizesabout­the­fit­cute­white­blonde­on­thepark­bench.

Every­single­unpleasant­and­spitefulmedia­image­of­black­women­contributesto­what­now­is­an­ever-growing­trend­andintentional­separation­of­black­men­withblack­women­throughout­mainstreamadvertisements­and­television­programs.Perhaps­if­the­majority­of­the­images­ofblack­women­were­positive­then­this­allwould­not­be­as­much­of­an­issue­–­butthat­is­not­the­case.­There­are­too­manyimages­on­the­big­screen­that­still­portrayblack­women­as­despicable­and­difficult.Please­Tyler,­stop­tellin-this-vision.­Blackwomen­have­suffered­enough­from­mediamockery.

Orange­County,­California­GOPCentral­Committee­member­MarilynDavenport’s­email­blast­depictingPresident­Obama­and­his­family­as­mon-keys­was­sick,­vile,­and­disgusting.­Butthat­was­not­the­worst­part­of­it.

Even­herwitless,­dunder-head­defense­ofthe­photo­asjust­a­“joke,”was­not­theworst­part­ofher­slur­either.The­worst­partwas­the­reac-tion­of­GOPofficials­to­it.

The­localparty­chair,Scott­Baugh,appropriatelyblasted­it­as­“itdrips­withracism”­and­said­that­she­should­resign.He­claimed,­though,­that­the­bylaws­pre-vent­him­from­expelling­Davenport.

But­he­did­not­call­for­a­change­in­theby-laws­to­make­expulsion­possible,­oreven­indicate­when­or­if­he­would­moveto­censure­Davenport.

To­their­credit,­some­former­GOP­stateofficials­did­call­for­her­expulsion.­Butcensure­or­expulsion,­the­record­standsthat­no­action­of­any­kind­has­been­taken

against­DavenporThe­non-action­paled­in­comparison­to

the­reaction­of­other­GOP­officials­whoeither­downplayed­it­as­“much­ado­aboutnothing”­as­Davenport­branded­it­ordefended­her.

Davenport­is­not­some­loose­screwed,raving­Tea­Party­haranguer.­She’s­a­mem-

ber­in­good­stand-ing­of­the­powerfuland­well-connectedOrange­CountyGOP­partymachine.

In­Democratleaning­California,this­is­not­insignifi-cant.­OrangeCounty­is­one­ofthe­reddest­of­redcounties­inSouthernCalifornia,­and­atraditional­bastionof­GOP­conser-vatism­and­GOP

votes.­The­Orange­County­GOP­has­andcan­still­muster­tens­of­thousands­of­votesfor­GOP­local,­state,­congressional­andpresidential­candidates.­GOP­presidentialcandidates­have­beat­a­steady­path­to­thecounty­for­decades­to­secure­votes­andmoney.

Davenport­for­her­part­has­adamantlysaid­she­won’t­resign.­She­would­not­havedug­her­heels­in­on­staying­at­her­partypost­if­she­wasn’t­confident­that­she­had

the­backing­of­more­than­a­few­partymembers.

Those­GOP­Davenport­cheerleadersaren’t­just­in­Orange­County.­Other­partyofficials­essentially­blew­off­the­contro-versy­as­a­non-issue.­This­strikes­to­theGOP’s­continuing­denial,­subtle­or­flatout­stoke­of­the­racial­fires.

Davenport­underlined­her­despicabledepiction­of­President­Obama­with­thecaption­“”Now­you­know­why­no­birthcertificate.”

This­is­just­the­crude,­stupid,­versionof­what­would­be­GOP­presidential­candi-date­Donald­Trump’s­been­parroting­withhis­media­grabbing­and­Tea­Party­appeal-ing­crusade­to­bait­President­Obama­onhis­birth­certificate.

It’s­worked­because­polls­consistentlyshow­that­a­significant­minority,­possiblya­majority,­of­GOP­rank­and­filers­clingto­the­false,­discredited,­and­bogus­beliefthat­Obama­is­a­fake­American­citizen.

Trump­would­not­have­gotten­to­firstbase­with­his­birth­certificate­ploy­if­thesemillions­didn’t­give­credence­to­it.

The­controversy­has­had­enough­juiceto­even­draw­Obama­into­it.­In­a­recentinterview­he­made­more­than­a­veiled­ref-erence­to­it­when­he­said­“we’re­not­real-ly­worrying­about­conspiracy­theories­orbirth­certificates.”

Top­GOP­possible­presidential­con-tenders­have­either­been­mum­on­theissue,­sent­mixed­messages­about­theissue,­or­as­in­the­case­of­MicheleBachmann­and­Sarah­Palin,­gave­tacit

credence­to­the­fraudulent­issue.­Despitethe­media­ridicule,­Trump­hasn’t­backedaway­one­inch­from­the­issue.

In­a­pep­rally­speech­to­a­swooningTea­Party­throng­in­Boca­Raton,­Floridahe­again­questioned­Obama’s­citizenship.

Trump’s­slur­didn’t­dampen­theapplause­or­enthusiasm­of­the­crowd.­Norhas­it­dampened­the­enthusiasm­for­himfrom­millions­of­others.­In­the­latestnational­poll­of­the­names­of­the­potentialGOP­presidential­candidates­commonlybandied­about,­Trump­obliterated­thefield.­Second­place­vote­getter­formerArkansas­Governor­Mike­Huckabee­was­adistant­second,­garnering­ten­percent­less

of­the­straw­vote­than­Trump.A­straw­poll­that­at­this­stage­of­the

presidential­derby­tells­nothing­about­whothe­GOP­voters,­party­regulars,­and­partymoney­backers­will­ultimately­decide­on.It­won’t­be­Trump.­But­that’s­hardly­thepoint.­The­fact­that­a­political­non-entitycan­work­up­the­kind­of­mania­and­mediaattention­that­he­has­on­the­strength­ofvirtually­one­issue,­namely­Obama’sbirth,­tells­much­about­the­crazed­state­ofmillions­of­GOP­voters.

Davenport’s­slanderous­email­depictionof­Obama­and­family,­her­refusal­to­seeanything­wrong­with­it,­and­the­foot-dragby­GOP­local­and­state­officials­inCalifornia­to­say­or­do­anything­about­itspeaks­volumes­for­GOP­leaders.

Smith:­Yeah,­well,­we­havethings­(acting­roles)­that­weknow­how­to­do­so­you­do­thatin­whatever­place­you­get­anopportunity­to­play­such­a­char-acter­as­a­team­member­on­theset.­­With­this­film,­our­directorSalim­(Akil)­was­very­passionabout­how­he­saw­my­character,Shonda.­­For­me,­I­just­love­what­Ido­so­to­be­able­to­show­another­sideof­me­--that’s­probably­the­side­of­methat­I’m­most­at­home­with--­the­calmerside­that’s­not­always­going­a­hundredmiles­­per­hour.­­Certain­movies­call­forthat­kind­of­energy­and­if­that­part­ofyou­works­along­with­the­other­dynam-ics,­then­you­want­to­play­it­and­youwant­to­utilize­that­part­of­your­instru-ment.­It’s­as­if­you­are­a­musician,there’s­a­certain­tune­that­you­know­howto­hit­but­you­don’t­always­need­it.­So­Ididn’t­need­it,­I­was­able­to­hit­some-thing­else­and­thank­God­it­worked.­­­

Smith:­Yes,­I­can.­I’m­a­newlywed.­­Ijust­got­married­December­9,­2010,­andI­think­love­is­great.­­When­it­comes­tothe­lead­characters­in­this­film,­Jason(Laz­Alonso)­and­Sabrina­(Paula­Patton),they­met­and­were­together­for­sixmonths;­they­trusted­their­love,­organi-cally.­­Many­times,­we­think­we’ve­gotto­wait­two­or­three­or­four­years­to­getmarried.­­Yes,­in­some­cases,­it­takeswisdom­to­do­that­but­at­the­end­of­theday­you­still­have­to­trust­your­heart,trust­God­and­don’t­shy­away­from­aunion­that­is­only­going­to­bless­you.

Smith:­Family­unity­because­eachindividual­family­had­their­own­bondand­their­own­connection;­also,­theimportance­that­marriage­has­to­eachfamily.­­Many­times,­we­may­not­neces-sarily­see­all­of­the­family­membersshow­how­much­they­love­to­share­in­theopportunity­for­their­loved­ones­to­findthat­kind­of­love.­­In­this­film,­the­wholefamily­comes­out­to­be­a­part­of­it­andthat­was­a­wonderful­thing­to­experiencein­this­film;­the­fact­that­marriagebrought­everyone­together.
