Farm to Table is a growing food movement that is quickly popularizing on the Central Coast. Also known as Farm to Fork, this concept is best described by its name: food from

the farm that arrives directly to your table. Meaning, there are no stops in between; your food does not sit on a truck or shelf – ever. It is fresh and local because it does not travel far to arrive to the kitchen where it is prepared. And lo and behold, the next stop is your table, on your plate. This movement has changed the way that local restaurants and chefs cook and purchase food. More and more often, chefs go directly to farms themselves, or grow their produce and herbs in private on- and off-site farms. Thus the time between harvesting and consuming food has been shortened as this philosophy enables Farm to Table restaurants to provide you with plates that were picked that same day! The following is a San Luis Obispo County Farm to Table res-taurant dining guide.

FRESH LATIN FLAVORS,SIGNATURE COCKTAILS, INVITING AMBIANCE

The second creation of acclaimed chef, Santos MacDonal, La Cosecha Bar + Res-taurant in Paso Robles celebrated its grand opening in the beginning of July. The res-taurant, whose name means “the harvest” in Spanish, is a celebration of Latin cuisine, boasting flavors from Spain, Central and South America. “By trade, I’m an Italian chef,” said Chef Santos, whose Italian eat-ery, Il Cortile Ristorante, enjoys accolades far and wide for his fastidiously-crafted pas-tas and sauces. “But I’m Honduran by birth. Developing La Cosecha has immersed me back into the tastes, textures and aromas I know best.” Along these lines, Chef Santos has crafted a rotating menu inspired by seasonal local produce, proteins and grains; and accent-ed by imported fruits, roots, herbs and spices from Latin America and Spain. From small plates, entrees to desserts, guests can ex-pect the quality of ingredients and creative cuisine for which Chef Santos is recognized, and many will be treated to their first expe-rience with authentic flavors and recipes, including: Peruvian assorted fresh ceviches, rare imported hams, sausages, and chorizo, Honduran pollo asado, and Monfongo, a traditional Puerto Rican dish consisting of plantains, Carribbean spices, crispy pork and fresh local fish. In the kitchen, the culinary team consists of Chef Santos, his brother and longtime col-laborator, Jorge MacDonal, and Chef de Cuisine, Fernando Bedolla, Jr., who arrives fresh from Santa Monica where he was Exec-utive Chef at farm-to-table restaurant West 4th & Jane. Chef Santos has also partnered with mixologist Eric Carfagnini, to develop a cocktail menu that includes specialty drinks made from garden-fresh ingredients, import-ed herbs and spices and artisanal spirits. A sampling of La Cosecha’s signature cock-tails includes: Botanicos Espumosos made

from fresh thyme, lemon, rhubarb and gin, topped with cava and Seasonal Caipirinha with fresh berries, lime, simple syrup, St. Ger-main elderflower liqueur and cachaça. With its ideal position just off Paso Robles’ charming City Park, La Cosecha’s ambi-ance is casual, sophisticated and engaging. Per MacDonal’s commitment to sustainably-sourced décor, the wood used to shape the beautiful bar was reclaimed from Paso Robles’ Windfall Farms and built by carpen-ter Peter Smith. “I love taking classic archi-tectural elements and applying them to re-claimed, rustic materials,” said Smith. “In this case, we took 30-year-old pasture fencing from Windfall Farms and combined it with good solid design and traditional craftsman-ship, making for a beautiful, inviting finished product.” The rest of the design elements followed suit, with hand-crafted light fixtures by Jon Wommack of Wommack Electric and PB&J Custom Lighting in Paso Robles, using re-claimed and leftover materials, including slate floor tiles, copper conduit from discard-ed refrigerators, among others. The glass used in the scones was hand-blown by Eric Dandurand of Harmony Glassworks. “The overall effect is very rustic-meets-modern,” says Wommack. “I’ve gotten much more into the artistic side of things in the past few years with a concentration on going green, using solar and LED whenever possible. I was allowed to have artistic freedom, collabo-rating with Eric, and the result is fantastic.” In designing the restaurant’s interior, Chef Santos’ wife and partner, Carole MacDonal, said, “Our goal was to honor tradition while mixing it up with a fun and inviting ambi-ance. The reclaimed wood reflects our belief in sustainable and reusable goods, while the hand-blown glass sconces provide a mod-ern, clean edge and demonstrate our com-mitment to local artisans.”

WHEN IS IT NECESSARY TO DECANT WINE?In the course of going through a bottle of red wine—or sometimes even in the time it takes you to finish one glass—have you ever noticed the wine improving? Perhaps more aromas are detected, or the finish lasts longer. That’s because the wine is getting aerated, also called “opening up,” and releasing its full potential in aroma, flavor, and texture. Decanting is the transfer of a red wine from its bottle into a new container, either for the purpose of aeration or to separate wine from its sediment, or sometimes both.

Some fundamental knowledge of wine certainly would have served me well during my first encounter with wine sediment. While sitting with friends and family, I was gazing at a delicate, 25-year-old bottle of red wine moments after it had been slowly and carefully uncorked and placed gently on the table. I was surprised when I noticed tiny black particles floating inside the wine. So, I calmly reached across the table, took the bottle, and started shaking it—as if it were a half-gallon jug of orange juice! I thought if I got the solid bits inside circulating (I probably called it pulp) they would mix with the wine, which would taste better as a result. I was only able to complete one or two shakes of the bottle before others at the table frantically jumped out of their seats, grabbed my arm, and screamed, “No! Put the bottle down!” At the time this occurred, my wine knowledge amounted to little more than how to use a corkscrew. Six years later, the first edition of my weekly wine column, which would run for ten more years in the same newspaper, was published.

And speaking of harvest, Villa San-Juliette has broken ground and is un-dergoing construction on an all-new state-of-the-art crush facility which will allow the wines to be made in-house as early as this vintage. To commemo-rate the new addition to VSJ’s beautiful property, the winery will host a speak-easy-themed Harvest Festival, October 19, that’s sure to be the cat’s pajamas, complete with a costume contest, jazz-age music and dancing, and of course, Villa San-Juliette wines. Harvest season is nearing, but in the meantime there is plen-ty of summer fun to be had at wineries in the happiest city in America – San Luis Obispo. Don’t wait until grapes are harvested to enjoy summertime winery events full of light-hearted fun, new friends, and tasty wines. Wineries in San Luis Obispo have a charming, young-at-heart feel with great wine events that are both musical and artistic. Leading up to harvest is a full schedule of fun events with great tunes, food, and rockin’ wines at Claiborne & Churchill Winery one of my favorite wine stops in San Luis Obispo.

I had the pleasure of visiting Claiborne & Churchill Winery re-cently and have sipped their Riesling all season. It is refreshing during summer heat with characteristics that are dry, crisp, and cool. “Our 2012 dry Riesling is a blend of grapes from two counties,” explain owners Clay Thompson and Frederic-ka Churchill-Thompson, “The classic floral aromas come from Monterey County fruit while grapes from our own Edna Val-ley contribute the solid structure and rich texture.”

WHERE ARE YOU FROM? TELL US A BIT ABOUT YOURSELF, YOUR FAMILY AND HOW YOU CAME TO BE A CONTRACTOR.

Sheryl: I’m a native Californian born and raised in Redding, California. By hap-penstance, I was introduced at a fam-ily gathering to my husband Chris and a relationship blossomed into twenty-nine years of marriage that is still going strong. We moved to Newbury Park, California to start our life together. We have two beautiful children, Ryan and Brittany, who also reside in California. My husband was a contractor, providing residential and commercial construction services, which provided my initial introduction to the industry. Chris transitioned to a cor-porate engineering position early on and the business was left to me. I started by working at a local architectural firm, but soon realized that my true passion was to become a design/build contractor,

which led me back to school to obtain a degree in interior design. As our family grew, I enjoyed participating in the busi-ness and realized my love for residential construction after I designed and built a custom home for our family. Having enjoyed the process and challenge so much, I decided to make it a long term career focus.

TELL US ABOUT YOUR HOME. WHAT WAS YOUR GOAL WHEN BUILDING IT?

Sheryl: In the mid ’90s, we purchased our second home on Lake Nacimiento. Our home is all about large living in small spac-es, responsibly integrating development into the local environment. After multiple alterations over the last eighteen years, we have finally arrived with a design that nurtures our individual family personality.

WHAT FEATURES ARE YOU MOST PROUD OF

WITH THIS HOUSE IN PARTICULAR?

Sheryl: We transformed one of the oldest houses in the community into a comfort-able country bungalow that balances tra-ditional finishes with modern convenienc-es. The interior provides an open floor plan with traditional finishes in the classic crafts-man style. The exterior provides a natu-ral and organic environment for nature observation, entertainment, or just plain relaxing. We have two golden retriev-ers, Rosie and Sydney. We live a casual lifestyle with a focus on outdoor living, so the spacious decks and garden areas fit nicely. And of course, Rosie and Sydney couldn’t agree more.

WHAT DO YOU ENJOY MOST ABOUT LIVING IN THE NACIMIENTO LAKE AREA?

Sheryl: We love water sports. It was always our intention to transition into full-time liv-

ing on the Central Coast. We enjoy liv-ing in a vacation destination that is rich in culture, great people and great weather. I have always been an active volunteer and love the sense of community that this area provides.

WHAT DO YOU ENJOY MOST ABOUT YOUR JOB?

Sheryl: First of all, I love meeting new peo-ple, listening to their stories, understanding their needs and translating that into a de-sign/build project that fulfills their vision. I love making dreams come true. I believe in providing the highest level of customer commitment and service. I believe in the team approach, which includes my clients and sub-contractors working together to deliver a quality product.

WHAT HAS BEEN THE BIGGEST CHALLENGE THAT YOU HAVE FACED DURING YOUR CA-REER?

Sheryl: The biggest challenge as a design/build contractor is delivering what the customer wants versus what I envision for them. This means I need to be an active listener and take the time to work through issues so I can ultimately hit their target. When I first start a project with a customer, I get to know the family dynamics, style and color preferences, etc. Sometimes this is a painstaking process, but always worth the effort.

HOW ABOUT ACHIEVING YOUR PERSONAL/BUSINESS ACCOMPLISHMENTS? TELL US MORE.

Sheryl: In 2007, we made a decision to incorporate our construction company and pursue two opportunities: speculation development and a residential customer business. We made this decision with the intent for my husband to retire from cor-porate America and join our business full-time. As we know, life has a serendipitous path and my husband is yet still employed in his corporate position. I took the chal-lenge of growing the business indepen-dently and have enjoyed success beyond my wildest dreams. My commute to work in our lake community averages only about five minutes.

WHAT ARE YOUR HOBBIES?

Sheryl: Gardening, lake activities, volun-teering and music entertainment.

WOULD YOU SAY YOU ARE NOW LIVING IN YOUR “DREAM HOME?”

Sheryl: When we first purchased our home in 1995, we wouldn’t have called it our “dream home,” but now — with a little thoughtful design and sweat equity — we are pleased to say we have finally arrived.

Let’s Dance provides quality social dance instruction by Cammie Velci and Chris Harmon at their upstairs studio in Atascadero. Cammie and Chris are trained professionals with a long history of dance experience.

As a teenager, Cammie trained and performed as a professional hula dancer in Hawaii. She easily transitioned to social dancing about twelve years ago. Her experience in various styles of dance enables her to provide excellent insight to women on how to follow their leaders and add style to their dance. Chris has over twenty years of high school teaching and social dance instruction. With this experience, he is able to carefully break down each dance into easily understood pieces and then put them together – creating a wonderful experience for both leaders and followers. For the past six years, Chris has been teaching dance to both adults and his high-school students.

Together, Cammie and Chris create a learning atmosphere that is fun-filled yet focused, allowing participants to not only learn what it means to lead and what it means to follow, but to also have a good time in the process.

Do you ever take inventory of the way you spend your time? How much of the time you spend, you actually use purposefully, productively, meaningfully? How much of time you throw away on TV, pointless speculations, meaningless interactions on social media, useless tasks, soul sucking things you really don’t want to do, arguing, complaining, and so on? If “Time is money” than what value would you

put on all that time you are throwing away? What value would you put on the priceless moments of ut-ter joy, connectedness, love, and the feeling of riding on the momentum of purpose and inspiration? “Life is too short” is a familiar cliché very few people pay attention to, until it’s too late and you are out of time. To find out what matters most to you, you will have to tap into your personal source of wisdom and inspira-tion – your heart. In your mind, you may be full of rationalization about what you do and why. In your heart, those same rationalizations are dissolved in the ocean of knowing that no amount of rationaliza-tion will really make you feel better. The only thing that would make you feel elated, fulfilled, happy and content is you doing what you are here to do.

DO SOMETHING THAT MATTERS We all have many gifts to contribute to the tapestry of living. We have talents, unique points of view, ideas, inspirations and dreams. With every dream we kill, a little part of us dies away. With every inspiration we forego, a little life in us shriv-els up. With every gift we withhold, we are a little more impoverished. A life time of holding back and rationalizing our actions and choices, results in one day looking back and wishing you could have another chance. But there’s no going back. So, why not do it all, just right, now. For every brave

moment you choose to be yourself, you grow a little taller and more confident. For every contribution you make, you grow a little bigger than yourself. What you do in your life is not only important to you but for countless others you will encounter, even through five degrees of separation. MOSAIC ART

The Gallery at the Network is pleased to present Mosaic Art: Diversity and A New Direction featuring the work of local mo-saic artists and sculptors Rebecca Reibel of Pismo Beach and Fred & Donnell Pa-sion of Passiflora Mosaics, Grover Beach. The show will feature the artists' diverse use of form, color, texture and subject matter.

"We appreciate this opportunity to not only show our latest work but to also edu-cate the community about the endless possibilities of today's mosaics and the exciting new direction the art form has taken in recent years,” says Rebecca Reibel, whose work for the show will in-clude hand made ceramic sculptures, face vases and wall panels all delicately accented with glass, beads and ceramic mosaic.

"A passion for smashin'!" says it all when describing Fred and Donnell Pasion's love for making mosaic art. What started as a hobby in 1999 turned serious and since establishing Passiflora Mosaics, have created many larger scale public and private mosaic sculptures and ar-chitectural installations such as recent commissions for Santa Barbara Cottage Hospital. For the upcoming show they are creating primarily smaller pieces such as whimsical concrete and glass mosaic sea anemones and garden bugs as well as a few "eclectic organic" mixed media pieces. Fred and Donnell Pasion also teach mosaic and sculpture workshops in their beautiful Grover Beach studio. The show will also offer a glimpse of the artists' work to be displayed at the annu-al Open Studios Art Tour taking place in October. Meet the artists and view their work at the opening reception planned for Friday, August 2, 6-9pm during Art Af-ter Dark at The Gallery at The Network, 778 Higuera, Suite B, SLO.

Cirque du SLO is an aerial, acrobatic and circus troupe based in San Luis Obispo. Founded in 2013 by seasoned performers Paige Wyatt and Alex Milaychev, Cirque du SLO offers show-stopping live performances for private events and festivals. When not booked for performances near and far, Cirque du SLO holds classes and camps for kids and adults interested in learning or improving their skills in the circus arts. The troupe’s repertoire of performance ap-paratuses includes aerial silks, hammock, rope, cube, lyra and trapeze, as well as hula hoop and unicycle. Their unique two-person act also combines skilled acrobat-ics, dance, and comedic performance, appropriate for and enjoyed by all ages. Wyatt and Milaychev also teach private and group instruction at Suspended Motion Aerial Arts in San Luis Obispo. Fitness lovers can get ready to race, taste and indulge at the new SAVOR Run on September 29 - the latest addition to Sun-set SAVOR the Central Coast, the leading wine and food event on the West Coast. The event, produced by the Central Coast Cancer Challenge, features a 5K or 10K walk/run and a fastest mile chal-lenge through the streets of charming San Luis Obispo, beginning and ending at the historic Mission San Luis Obispo de Tolosa. Organizers will reward runners for their efforts which benefit local cancer survivor fitness programs with a gourmet pancake breakfast with all the trimmings. Athletes looking for an extra challenge can enter the race’s “Fastest Mile Chal-lenge” the first of its kind to take place in San Luis Obispo County.

“One of the ways Sunset SAVOR the Cen-tral Coast continues to stand apart from typical wine and food events is we’ve incorporated San Luis Obispo County’s active, healthy lifestyle into the festivities, such as the new SAVOR Run,” said Stacie Jacob, executive director of Visit San Luis Obispo County. “Unlike most wine and food events these days which can take place anywhere, SAVOR was inspired by the place it calls home - one of the happiest and healthiest communities in America. In celebration of the world-renowned oysters of Morro Bay, the second annual Central Coast Oyster Festival will be held this year Saturday, October 19th at the Morro Bay Golf Course from 12PM to 8 PM Tickets on sale now, shuck yeah! Jacqueline Delaney of Spin-Cycle Event Installations and Neal Maloney of Morro Bay Oyster co-partnered together to continue the further development of an amazing festival soon to be the icon for original unique events on the Central Coast. Last year was a huge success with over 4000 in at-tendance, the largest first year attended event on the Central Coast to date. This year expected attendance well over 6000 and the team is ready to treat this large crowd to an experience they will never forget! Larger venue with outstanding design installations, more oyster vendors and on site parking, this event will surpass all expectations for attendees. The Central Coast Oyster Festival will feature a range of amazing oyster preparations, the best wines, brews, exclusive cocktails, and a full lineup of knockout bands to play through-out the day under the most beautiful settings. “There are so many great wine, food, and entertainment events on the Central Coast that we’ve really concentrated on creating an experience unlike any other to equally highlight entertainment and art right alongside the food and wine experience.”

With a view of the Morro Bay Oyster Farm as well as the iconic Morro Rock, the Central Coast Oyster Festival will feature oysters from the Morro Bay Oyster Company, widely recognized as one of the greatest suppliers on the West Coast. Dozens of chefs from across the Central Coast will go head-to-head for the ‘Best Oyster of the Central Coast” Chef Award, and the audience will be invited to taste their sumptuous efforts. But while oysters will, of course, be the main attraction, other epicurean delights will also be available. Any good oyster festival needs a shucking competition, and the Central Coast Oyster Festival is no exception. Local shuckers will be invited to demonstrate their speed and skill to a live audience for prizes and the respect of the Central Coast community.

In addition to the delectable flavors of fresh Morro Bay oysters, the festival will include spe-cial features such as whimsical structures from SpinCycle, a locally based event art instal-lation company who first started at Burning Man creating beautiful designs and unique environments within the festival. SpinCycle will work alongside The Do LaB, based out of Los Angeles. The Do LaB is world-renowned for bending reality through interactive environ-ments, event production and creative lighting design. Prominently showcased at such high-profile gatherings as the Coachella Valley Music and Arts Annual Festival. The Do LaB takes an organic approach to everything they design and create, striving to bring their visions to life with natural materials, found objects and sustainable resources, both a perfect fit for the vision of this one of a kind Central Coast Festival.

Come out this year to this full day music festival that includes all the amazing local chefs preparing oysters in various ways. New to this year will be a food stage in addition to the full day music festival stage, where chefs and wineries will entertain your palette. The Aphro-disiac Lounge will also be back bringing you the most delectable raw oyster bar, sparkling wine, chocolates and cheeses. Included in this weekend of events will be an exclusive Aba-lone Dinner w/ Star Chef Bradley Ogden and a Foodie mini Golf Tournament. This event continues to benefit OPTIONS Family of Services, a nonprofit organization serving the disabled or persons with developmental disabilities and persons with a traumatic brain injury (TBI).
