Currently fat transfer is all the buzz, from plumpingup sagging faces to rejuvenating breasts. As with any

procedure or new device, fat transfer has its own history,along with its shortcomings and advantages.

In the 1980s, liposuction became a widely availabletechnique for the harvesting of adipose tissue (fat). Withthe advent of liposuction came the ability of a physicianto take out unwanted fat and transplant it to another areaon a patient’s body. Patients would now have the choiceof using their own fat to rejuvenate their face or give theirbuttocks a lift. One of the advantages to this “new”technique was that the transplanted fat came from thepatient’s own body and wouldn’t be rejected. Now youwould have a technique that would be natural and longlasting.

Because fat transfer lasts for years, it offers a realadvantage over Botox Cosmetic™ and dermal fillers likeRadiesse™ and Juvederm™. Dermal fillers are metabolizedand absorbed by the body over months and can becomequite expensive over the course of treatment. In addition,patients who need large volume filling may require somuch filler that the price outweighs the results. In myexperience, older patients who need extensive fillingnever get the correct filling they need or are looking for.With fat transfer you are only limited by the amount offat a patient has stored on their body. Transplanted fatcan be used to fill aging hands, fill wrinkled faces, lips,under eyes, or to create a more curvaceous buttocks andenlarge breasts.

Fat transfer is performed by using a liposuctiontechnique to harvest the fat and then it is prepared fortransfer. The fat is prepared by isolating the “best” fat thatwill have long term survival. The physician generallyinjects greater than 30% of the intended volume becausenot all of the transplanted fat will survive. The procedureis performed under local anesthesia with light sedation.The patient is given antibiotics prior to the procedure.Immediately after the procedure the patient will beswollen and may have mild to moderate bruising.

Of course no procedure is without risks. The risks ofbleeding, hematoma (a pool of blood under the skin),infection, nerve damage or wound dehiscence (when awound opens) can all happen. Most complications arewell managed without long term complications.

V aricose veins appear as dilated or bulging leg veinswhile spider veins are visible on the surface in red or

purple configurations. People often seek treatment forvaricose and spider veins because they are unsightly.These abnormal veins can also cause multiple symptomsincluding pain, throbbing, burning, swelling, fatigue,phlebitis, discoloration and ulceration.

The management of varicose veins has beenrevolutionized since the development of a specialprocedure called Endovenous Laser Treatment (EVLT®).This technique has become the state-of-the-art varicosevein treatment, eliminating the need for traditionalsurgery. The procedure involves sealing the mainabnormal vein by passing a thin laser fiber through asmall puncture wound in the skin. It is performed in theoffice under local anesthesia and it takes less than anhour. Due to the ease of this method there is no age limitand it is also covered by most insurances.

The Laser Ablation is usually combined with aprocedure called Phlebectomy. This involves removingthe bulging varicose veins through small puncture siteswith the use of special micro-hooks. Sometimes it is doneas a separate procedure.

The technique used to treat spider veins is calledinjection Sclerotherapy. It requires injecting a specialsolution into the veins using tiny needles. Depending onthe extent of the problem multiple treatment sessionsmay be needed. Some veins resolve quickly and somefade away gradually.

After people undergo either EVLT® or Sclerotherapythey can return to normal activity right away. Bothmethods have been proven to be very safe and highlyeffective. Most people experience improvement orresolution of their associated symptoms and they arevery pleased with the cosmetic result.

According to scientific studies, there are importantbenefits to exercising at least an hour every day.Many people don’t exercise because they don’t

have the time. When you consider the time it takes todrive to the gym, change into gym clothes,work out, shower, change back into streetclothes, & drive back to home or office,that can really add up to 2 hours or more.

Because schedules don’t always allowfor a trip to the gym, it’s necessary tochange perception of what we normallythink of as exercise. So let’s take exerciseout of the gym, and make it part of oureveryday life.

Exercise is cumulative. It all adds upat the end of the day, and as long as it’ssomething that gets your body moving, itcounts. Park your vehicle further awayfrom your destination. Take walkingbreaks, and when possible, choose thestairs instead of an elevator or escalator.That may be advice you’ve heard, so it’stime to think out of the box a little.

Use the stairs to exercise. At thebottom step, step up with left foot,putting your weight onto the left leg, andbring right foot onto step. Step backdown to landing, then alternate startingwith the right foot. Lengthen the leg,without locking out the knee. Considerthat a mini step class, and continue towalk up the stairs. Another exercise is, as you arewalking up the steps, gently straighten the leg behindyou as climb up (little leg lifts). Make sure that you holdon to the railing as you walk up, for balance.

When on the telephone, don’t sit down. Stand up,and do a wall sit while you’re talking. Stand with backagainst wall, walk legs forward, slide down, hold forwhatever time you can. With time, you'll be able to holdit longer. Stay straight and keeping your head in linewith your spine, gently hold abdominals in, keep kneesat right angle, and thighs parallel to floor. As youstraighten legs to come up, think of pushing the flooraway from you to really engage the leg muscles, instead

of just straightening the knee. Side leglifts are another option, holding on to awall or chair for support.

Push-ups can be performed againsta wall, and varying hand position fromwide to narrow will change difficulty, andmuscles targeted. Make sure arms arelevel with the shoulders, and keep thepace slow to keep the muscles engagedlonger. Next time you are pushing a cart

in the supermarket, do lunges as you walk,pulling in abdominals as you push. Keeping yourabdominals engaged protects the spine. Remember tobreathe normally during the exercise, and always checkwith your doctor before starting an exercise program,especially if you have pain or an injury.

Exercise not only boosts immunity, it lowers stresslevels, and increases energy. Finding time to exercisecan be a challenge, but sometimes all it takes is a littleimagination.

What dental questiondo I get asked the

most? You guessed it -teeth whitening. Everyone

wants whiter teeth! It'sgreat to have sparkling white

teeth but with so many options- how do you choose? Over-the-

counter white strips? The mall kiosk?In-office Zoom or BriteSmile? At-home professionalwhitening? How much lighter will your teeth get? Howlong will the whitening last? Will it damage the teeth? Willit cause sensitivity?

First, let me say that you need to begin with aprofessional dental exam. The teeth need to be free ofplaque, stain, and calculus and free of cavities or darkfillings. Also the teeth need to be examined for crowns,veneers or composite fillings - all of which will notbleach. You should also be free of gum disease, and youneed to avoid smoking and acidic foods. All of this is whyI don't favor white strips (because one size doesn't fit all)or the whitening kiosk - because the personnel are notdentists or hygienists.

Professional tooth-whitening options include in-office bleaching or at-home bleaching. For the in-officebleaching, the dentist first applies a protective gel or arubber shield to protect your gums. The bleach is thenapplied to the teeth, and a special light is used to facilitatethe whitening agent. The procedure takes about an hour,and at-home trays are supplied in order to enhance theprocedure.

For the at-home professional teeth whiteningprocedure, the dentist takes an impression of the teeth,which is used to make a model on which custombleaching trays are fabricated. At home, the patientapplies the bleaching gel to the trays, which are wornabout 8 hours a day for 7-10 days. The patient is in controlso if the teeth whiten enough in fewer days, he/she canstop the treatment. Patients keep the trays and the gel soif their teeth darken a year later, they can reapply thebleach.

You may want to speak to your dentist about sideeffects such as sensitive teeth and soft tissue irritation -either from a tray that doesn't fit properly or fromsolution that may come in contact with the tissues.

TTwo prospective patients came intothe office recently with the samecomplaint. Both had lost all of theirteeth and were wearing worn-outand ill-fitting dentures. Theirdentures were loose; they hadtrouble eating foods they wouldhave liked; their faces had thatsunken-in look and they were inpain.

My approach is different from

other dentists. I make new, custom-fitted dentures for my patients andexplain to them that if the newdentures don't fit and function well,we can then add implants. Myexperience is that the denturepatient does very well with the newdentures and often decides not toadd the implants. Implants arealways an option but they don’t haveto be the first option. I believe thatpatients like these can be well servedwith well-fitting dentures.

Glamour... sparkle... color... and... glitter ! That isthe stuff Holiday make up is made of, at any age.So, don’t be afraid to sparkle and shine.

The base for any make up look, of course, is your skin.Colder weather brings drier skin and a paler color. Besure to moisturize! During the holiday season, for thosespecial party looks, try a tinted moisturizer with a bit ofshimmer, or add a pinch of glitter to your liquidfoundation. A fine, loose glitter is best. It may soundintimidating, but when blended well and appliedsparingly, it gives your skin a beautiful glow, perfect fora holiday party.

Nothing says glamour like a smoky, sultry eye. Forthis eye look, apply eyeliner on top and bottom lashlines, and smudge with a sponge-tip applicator or thecorner edge of a make up wedge. Give a little smudgeupward at the outer corner of the eye. Shimmer eyeshadows are great at softening the eye and a good choicefor women over 40. You can use a shimmery shadow onthe lid and just under the eye bone. Make sure theshadow has a light shimmer or iridescence, not a frost.The heavy, frosty eye shadow look is outdated, and tooaging. Combine this eye look with a nude, natural lipcolor. A gloss, perhaps with a hint of gold for theholidays, can be very sexy on the lips. A nice shimmeryblush adds a holiday sparkle to your look.

Another sexy look is a natural, muted eye with aredder lip. What better lipstick color forthe holidays than red? Use a neutralshimmer eye shadow. This works bestwith less of an eyeliner look. Taupes,cocoas, even bronze eye shadows areperfect. Dark mascara frames the eye andworks well with the neutral eye shadowcolors. Choose a nice red lipstick thatmatches your skin tone. Make sure thered is not too deep or heavy or too

orangey for your coloring. A too-dark or heavy red canappear clownish. A nice shimmery blush in your shadeof pink, rose or peach completes this look.

NEVER use a heavy eye AND a heavy red lip together.Combining these can lead to a masquerade look, and isvery aging. Choose either the smoky eye/nude lip look,or the neutral eye/red liplook - one or the other!

A little touch of goldalways adds to theholidays. There arenumerous products outthere for eyes, lips andcheeks which add just ahint of gold to your look.There are lipsticks andglosses with gold flecks,blushes, foundations andtinted moisturizers with a gold shimmer, and of course,eye shadows with a light touch of gold iridescence. If youchoose not to buy all new products for a holiday look,try glittering up what you have with a little loose, goldglitter or a gold shimmer cream. Make sure it is very fineand use it sparingly. You can also add a little to anypowder eye shadow. A light dab across the lips or intothe lip gloss sparkles up any pout. If you do use a littleshimmer in your face, remember to bring it down to theneck, shoulder and chest areas. When wearing a low cut,off the shoulder or even strapless party dress for thatfancy New Year’s Eve party, remember to apply someshimmer to your skin. Use a shimmer powder with abrush, or apply the bronzing moisturizer.

It is estimated that fifty million Americans suffer fromtinnitus, often described as an annoying ringing,

buzzing, humming, roaring or hissing in the ear. Theterm tinnitus does not refer to a single disorder, but acollection of symptoms that may have a number ofdifferent causes.

For many people, tinnitus is a mild, occasionalannoyance and may be temporary. However for peoplewith chronic tinnitus, it can be debilitating. It can affecta person’s work, family and social life. It can interferewith sleep, make it difficult to concentrate or to relax,increase sensitivity to loud sounds and can lead toanxiety and depression. Tinnitus can be caused by avariety of factors but many times it is related to hearingloss.

The widely accepted Neurological Basis Theory ofTinnitus states that the tinnitus signal is perceived by thebrain in an area which attaches a negative emotionalresponse to it. This in turn can cause a physiologicalresponse, such as anxiety and stress, which in turn canworsen the tinnitus. The good news is that we no longerhave to accept the advice “You’ll just have to live with it.”

There are a number of treatment plans that can helpwith the disturbance caused by tinnitus. Some have beenproven to reduce the disturbing effects of tinnitus in 90%of those treated. Sometimes just getting information andcounseling is enough to help. But step number one is toconsult with a physician to rule out the rare seriouscauses of tinnitus. Most people know that it is important to see theirdentist twice a year to get their teeth cleaned and checkfor cavities and gum disease. But it is just as importantfor your dentist to do an oral cancer screen.Unfortunately, there are about 36,000 new cases of oralcancer diagnosed each year. And as is the case with mostcancers, early detection is very important, yielding an80 to 90 per cent survival rate. Tobacco use is still themost common cause, especially when mixed withalcohol use. However, human papilloma virus (HPV –the cause of cervical cancer in women) has beenincreasingly found to be a causative factor.

In between visits to your dentist, it is important foryou to look for changes in your mouth. You should takenote of any growths, ulcerations (open sores) or

discoloration of the gums, the inside of the cheek, thetongue, the floor of the mouth (under the tongue) or theroof of the mouth. While the vast majority of changes inthe mouth are benign (not cancer), it is often necessaryto perform a biopsy to know for sure. And sometimesgrowths may need to be removed because they interferewith normal eating, are painful because they get bittenor, simply put, “ugly.”

As an oral and maxillofacial surgeon, Dr. David Milleris specifically trained in diagnosing and treating thesetypes of problems. If you, or your dentist, noticeanything suspicious in your mouth, you should be seenfor a consultation. What is Heart Failure?Heart Failure, also called Congestive Heart Failure,

CHF, is a condition in which the heart can no longerpump enough blood to the rest of the body. It can resultfrom either a reduced ability of the heart muscle tocontract or from a mechanical problem that limits theability of the chambers to fill with blood. Whenweakened, the heart is unable to keep up with thedemands placed upon it; blood returns to the heartfaster than it can be pumped out so that it gets backedup or congested.

CHF occurs most frequently in those over age 60and is the leading cause of hospitalization and death. Inover 50 percent of cases, sudden death occurs due to acardiac arrhythmia, or irregular heartbeat.

Although many conditions that lead to heart failurecannot be reversed, the good news is that heart failurecan often be treated, with your help.

� Be realistic. The holidays don’t have to be perfect or just like lastyear. As families change and grow, traditions and rituals often changeas well. Choose a few to hold on to, and be open to creating new ones.For example, if your adult children can’t come to your house, find newways to celebrate together, such as sharing pictures, emails orvideotapes.

� Plan ahead. Set aside specific days for shopping, baking, visitingfriends and other activities. Plan your menus and then make yourshopping list. That’ll help prevent last-minute scrambling to buyforgotten ingredients. And make sure to line up help for party prep andcleanup.

� Stick to a budget. Many of us feel pressure during the holidays tospend beyond our means and without regard for our actual income.We also may lose track of expenses by counting “the number” of giftswe give rather than watching the totals we are cumulatively spending.Before you go gift and food shopping, decide how much money youcan afford to spend. Then stick to your budget. Don’t try to buyhappiness with an avalanche of gifts.

� Learn to say no. Saying yes when you should say no can leave youfeeling resentful and overwhelmed. Friends and colleagues willunderstand if you can’t participate in every project or activity. If it’s notpossible to say no when your boss asks you to work overtime, try toremove something else from your agenda to make up for the lost time.

� Don’t abandon healthy habits. Even die-hard holiday enthusiastsmay find that the extra shopping and socializing can leave them wipedout. Being exhausted and overindulging increases your stress, creatinga vicious cycle. Don’t let the holidays become a free-for-all. Have ahealthy snack before holiday parties so that you don’t go overboard onsweets, cheese or drinks. Continue to get plenty of sleep and physicalactivity.

� If your family is having problems, don’t try to patch them up now.Resist the temptation to patch up long-standing family problems. Thisis not the time of year to do that. It’s an emotionally charged time.People put a lot of importance on holiday celebrations. It’s easier topatch things up when things are less stressful.

HolidaysTransform your home with the

right holiday decor

The holidays are fast approaching and you want yourhome to look its company best. So what to do, if timeis running out and your major decorating projects

are still undone?For one thing, do not attempt to begin a design project

that may leave you in a disrupted or incomplete state. It’sbetter to put off a kitchen renovation or a whole housepaint job until after the holiday season. Instead, devoteyourself to a major clean-up project. Start with the entryfoyer and move into the living room, dining room andpowder room areas. Throw out what is worn, put awayarticles that make your rooms look overly cluttered anddonate what you don’t use anymore. A restful, orderly roomcan now be punched up and have a new look with simpleadditions such as area rugs, throw pillows, new curtainsand some interesting art.

Basic repairs should be a priority (leaky faucets, toiletsthat don’t work properly, etc.) Good lighting is alsoimportant. Make sure all lamps and fixtures do not haveblown out bulbs. See to it that your front porch is well litand free of leaves or ice so that no one is in danger offalling.

Holiday decorations can usually transform a room intosomething special all by themselves. More may not bebetter. Proper showcasing can make inexpensive objectslook grand and beautiful. Try to group holiday accessoriesas you might any other collectible. For example, yourexisting bookshelves may be the perfect place to display awhole Christmas village collection rather than on anadditional table brought in taking up needed space. Focuson staircases with decorative garlands and plants.Fireplaces can also be wonderfully dressed for the seasonwith mantle covers, candles and stockings. Most of all,place your tree in an area leaving enough space forpresents and people opening them! Think aboutrearranging the furniture just a bit for maximum use andeffect.

Chanukah can becelebrated with festivedisplays as well. Manyfamilies have large collectionsof menorahs: from old andtraditional to contemporaryto hand made by theirchildren. Judaic artcollectibles are very popularand are available in specialtyshops and department stores.

Whatever holidays youcelebrate, the dining roomtable plays a most important role. Dress it beautifully withtable runners, cloths and napkins. Light it with candles,scent it with flowers, and display your best china, crystaland silverware. Use your special things; enjoy them andshare them with those you care about.

This is a question I get asked quite often, especially nowwith the holidays approaching. Most people think a

single man over 50 meets tons of women and has his pick ofany woman he wants. Are men over 50 in demand? Yes. Canmen over 50 find women to go out with? Yes! But they stillneed to know answers to the following questions. Is this thewoman they would like to date? Are they compatible withone another? Do they have chemistry? Just like women,men don’t know these answers until approximately sixmonths of dating each other. Men actually have the sameroadblocks as women when they try to find the rightperson.

Using a Matchmaker typically just makes the man’s lifemuch easier, and it also gives him the advantage of findinga woman of a much higher quality than he can ever do onhis own.

intimacy alive. Not only did they take each otherfor granted, they also suffered from repetitivebad fights that left lingering resentment andanger. Research shows that among marriedcouples, 2/3 of fights are left unresolved, leadingto the recycling of arguments. My discoveryabout the cause of relationship dissatisfactionwas exciting because it meant that if I helpedempower people with better verbal skills, theycould single-handedly improve theirrelationship in one day.

Q. What are the most common healthrelated side effects you see in atroubled relationship?

My clients in troubled relationships oftenhave difficulty concentrating; they are moreforgetful and just seem edgier with everyone. It’sas if they are always on their “last straw.”Research shows that women who give in a lotduring fights with their spouse, meaning theyreported “keeping their mouths shut,” had 4xthe risk of dying from heart disease over a 10-year follow up study. Also, couples inconflict-ridden marriages take longer than thehappily married to heal from all kinds ofwounds. Basically, if you give in or blow up, yourhealth suffers. The only other option for livingand loving well is to learn how to have a goodfight in which you express yourself and reach acompromise solution together.

Q: How do you have a good fight?I recommend using the 5-minute anti-

conflict conversation. First, you sit down assoon as tensions start to boil (ask your spouse tosit down too), then play detective by askingneutral questions like “What happened?” and“You seem really angry. Can you tell me what’sgoing on?” Listen to and then summarize theanswers. Next, you can share your own thoughtsabout what happened. The key insight here is torecognize that there are two sides to the story,and you can’t change that. While you mightbelieve your mate was being hurtful when he didthat thing, he could think he was being helpful.I beg you not to get stuck in the bad fightargument about who is right. Instead, just say,“we both see the situation differently, but thatshouldn’t stop us from coming up with asolution.” Finally, brainstorm solutionstogether. Discard your solution and your mate’ssolution. The only one that will work, and last, isone you create together. I call that the “thirdoption.”

Q. Your book includes over a dozen 5-minuteconversations we should use to confrontrelationship obstacles, but what are some of thesimple things we can do in even less time to improveour relationships?Here are 5 key phrases you can use today to create an instantpositive change in your relationship.

Key phrase #1: “You are such a generous person” Many people compliment the superficial things in

others: “You look great in that dress” or “I love your newhaircut.” External compliments are nice, but research showsthat people prefer compliments for internal character traitssuch: “You’re such a kind, helpful or thoughtful person.” Inthe on-line survey we did for my new book Fight Less, LoveMore, we found that 84% of people want their mate tocompliment them for being kind rather than good-looking.

Key phrase #2: “I never thought of it that way”Want to put a smile on your mate’s face? That’s simple:

After your mate has explained his/her viewpoint onanything from a current event to your child’s behavior,ponder the comment and say, “I never thought of it thatway.” It’s the respectful way to say that their opinion mattersto you (even if you don’t agree with him or her). Oncesomeone senses that you respect their ideas, they are morelikely to listen to and respect yours.

Key phrase #3: “Good night” In our on-line study we found that 25% of the couples

surveyed don’t bother to say “good night” to their partner.Fact: Of those who forget to say goodnight, 70% thoughtabout ending the relationship in the last year. If you andyour mate aren’t going to sleep at the same time, make it ahabit to find your partner before you retire and say twocaring words: “good night”. And why not add on “I love you”?

Key phrase #4: “Thank you for ____” Each day find something to thank your mate for. If you

have trouble finding something, ask yourself, “what didhe/she do today that I didn’t have to do?” Answers could be:take out the garbage, help your child with homework, pickup a pizza, etc. When your mate does something you expecthim/her to do, it’s still worthy of appreciation.

Key phrase #5: “How did it go?”A little bit of remembering shows a lot of love. If you know

your mate has an important meeting, doctor appointment,etc., be sure to follow up with your partner. Call, email ortext, “how did it go?” This sends a clear message: I careabout you.

These may be symptoms of allergic disease! Adults withpersistent sinus infection, chronic sinusitis andpostnasal drip may also have allergies, which maybenefit from immunotherapy (IT). Allergy shots changetheir biology, decrease symptoms, and reduce use ofnasal steroids and antihistamine medications. IT blocksa seasonal rise in allergic antibodies and increases aspecial anti-inflammatory cell called the regulatory Tcell. With the heat on, a concern indoors is dust miteantigen, mold, and cat. Long Islander's live by the waterat sea level and are at high risk for mold exposure,

especially in old homes whichleak water. If lung function iscontrolled with medicines,immunotherapy may then beused to improve clinicaloutcomes among asthmaticpatients and reduce their useof medications. Evaluation ofexercise performance

(cardiopulmonary exercisetesting) and lung function, especially the smallerairways, with a newer technique called ImpulseOscillometry (IOS) can detect airway obstruction.

Food allegy may also be a concern. Recognition andavoidance of implicated foods may improve a person'srashes along with topical medications. Adults withpeanut allergy and anaphylaxis should carry “Epi-pens”and know how to use them. They should wear Medic-Alert bracelets and know how to call 911. Women whowear cosmetics and jewelry and dye their hair maydevelop contact dermatitis to allergens which may be

detectedby patch testing on the back. Avoidance ofimplicated products containing these chemicals canavert symptoms.

A drug class called ACE inhibitors used for high bloodpressure, heart disease, and kidney disease may causepostnasal drip, coughing, and rarely, life-threateningthroat closure. Recognizing this as the culprit andstopping the drug is important. Our research team ispatenting a drug and currently partnering with apharmaceutical team to use a designer drug to reversethe swelling by targeting the chemical cause of ACEinhibitor angioedema.

Chocolate Dipped SpoonsThese chocolate covered spoons make an excellent

accompaniment for hot chocolate, coffee or tea. Wrap thespoons in cellophane packages with gold curling ribbon,pair them with coffee beans or cocoa in a festive containerand you have a thoughtful gift.

Ingredients� 6 ounces semisweet chocolate pieces � 20 to 24 plastic spoons � 6 ounces white baking bar

Directions1. In a heavy saucepan heat semisweet chocolate piecesover low heat, stirring constantly until the chocolate beginsto melt. Immediately remove from heat; stir until smooth. Diphalf of the spoons into chocolate, tapping handle of eachspoon against side of pan to remove excess chocolate. Placespoons on waxed paper; refrigerate for 30 minutes to allowchocolate to set up. 2. In a heavy saucepan heat white baking bar over low heat,stirring constantly until baking bar begins to melt.Immediately remove from heat; stir until smooth. Dipremaining spoons into the melted baking bar. Refrigerate for30 minutes to set up. 3. Place the remaining melted white baking bar in a small,self-sealing heavy plastic bag. Using scissors, make a smallopening at one bottom corner of the bag; drizzle one or bothsides of the chocolate-coated spoons with the melted whitebaking bar. Drizzle remaining melted bittersweet chocolateon white baking bar-coated spoons. 4. Refrigerate spoons for 30 minutes to allow chocolate toset up. Wrap each spoon separately and store in cool, dryplace for 2 to 3 weeks. Makes 20 to 24 chocolate-coveredspoons.

Chocolate Dipped PretzelsThese pretzels are super easy to whip up to give as a gift.

Dip them a day ahead, and pack them in a box lined withwaxed tissue paper. Don’t forget to add a note, or simplyremind your friends that pretzels are best eaten within aweek — if they’re even around that long!

Ingredients� 8 ounce(s) milk chocolate, broken into pieces � 27 (8-inch long) pretzel rods � Flaked coconut and/or green, red, and white sprinkles

(for topping)

Directions1. Place chocolate in microwave-safe measuring cup ormug. Heat, covered with waxed paper, in microwave on High1 to 2 minutes or until chocolate is almost melted, stirringoccasionally until smooth. 2. Meanwhile, place each topping choice on separate sheetof waxed paper or on individual plates. 3. Chilled Pineapple-Cranberry Relish

Jarred relishes are the gift thatkeeps on giving: your giftee can usethis sweet topping on meat dishes,toast, or sandwiches

Makes about 4 cups

Ingredients� 2 tbsp. grated fresh ginger � 16 oz. cranberries (fresh or frozen) � 1 cup fresh orange juice � 2/3 cup sugar � 1/2 cup apricot preserves � 2 small Granny Smith apples—

peeled, cored, and cut � 1/2 pound chopped fresh

pineapple (1 1/4 cups)

Directions1. Melt the butter in a saucepan overmedium heat. Add the ginger and cook, stirring, for 2 minutes.Stir in the cranberries, orange juice, sugar, and preserves. Bringto a boil, reduce heat, and simmer, stirring occasionally, untilthe cranberries burst and the sauce thickens, 15 to 20 minutes. 2. Remove the sauce from the heat and stir in the apples andpineapple. Let cool to room temperature. 3. Transfer to a serving bowl, cover with plastic, and refrigerateuntil chilled, about 2 hours.

White Chocolate Oatmeal Cookie Mix in a JarPut this mix in a pretty jar, tie with a ribbon, and give as

Ingredients:� 1 tsp. baking powder � 1/4 tsp. salt � 1/2 cup crispy rice cereal

Preparation:Combine flour, baking powder and salt in small bowl

and mix well. Pour into 1 quart jar. Layer cereal, chips, oats,brown sugar and sugar into jar on top of flour mixture,pressing firmly in place to fit into the jar.

Add contents of jar and mix untilthoroughly blended. Drop dough by tablespoonfuls ontoprepared cookie sheets. Bake at 350 degrees for 9-11 minutesuntil edges of cookies are golden. Cool 1 minute, then removefrom cookie sheets. Recipe yield: 24 cookies

Toasted Almond and CherryChocolate BarkYields: 1 1/2 pounds

Ingredients� 3/4 cup (dried) tart cherries � 3/4 cup (natural) almonds,

toasted � 12 ounces (semisweet) chocolate,

chopped � 8 ounces white chocolate,

chopped

Directions1. In small bowl, combine almonds andcherries; set aside. 2. In a 2-quart saucepan, melt semi-sweet chocolate over low heat, stirring.In a 1-quart saucepan, melt whitechocolate over low heat, stirring.Remove saucepans from heat.

3. Stir half of almond mixture into semi-sweet chocolate.Spread semisweet-chocolate mixture to about 1/4 inch thickon a large, ungreased cookie sheet. Drop white chocolate bytablespoons onto semisweet-chocolate mixture. With tip ofknife, swirl chocolates together for a marbled look. Sprinklewith remaining almond mixture.

Sweet and Sassy Nuts Cumin, cinnamon, and ground chipotle pepper givethese easy baked nuts their irresistibly addictive flavor.Yields: 8 cups

Ingredients� 1 large egg white� 1/2 cup sugar� 1 tsp. ground cumin

Directions 1. Preheat oven to 350 degrees. Lightly grease two 15 1/2"by 10 1/2" jelly-roll pans with vegetable oil, or spray withnonstick cooking spray.2. In large bowl, with wire whisk, beategg white until foamy. Add sugar,cumin, chipotle pepper, andcinnamon, and beat until wellcombined. Add nuts to egg-whitemixture; with rubber spatula, stiruntil well coated.3. Spread nut mixture evenly inprepared jelly-roll pans. Bake on 2oven racks 20 to 25 minutes oruntil coating on nuts is golden-brown and dry, stirring once androtating pans between upper andlower racks halfway throughbaking for even browning.4. Cool nuts completely in pans onwire racks, at least 1 hour. Withhands, break apart any largeclusters of nuts when cool.Store cooled nuts in tightlysealed containers at roomtemperature up to 2 weeks.

The contemporary vision for gingerbread usually involvesvisions of Hansel & Gretel like Gingerbread Houses, Cookies

shaped like people, and squares of aromatic spiced cakes servedwith a dollop of freshly whipped cream...YUM!

Ginger however, like so many other popular herbs and spices,is rooted as much in therapeutic use as with confection.Gingerhas long been used in teas for cold symptoms, as a circulatorystimulant, as a pain remedy (when mixed with liquor or rum),and as a digestive aid for stomach upsets and queasiness (gingerale). It has recently been integrated as a motion sickness drugand is being strongly considered by arthritis sufferers as well.

The use of Ginger can be traced to the Far East and China inthe time of Confucius, and to the early Greeks and Romans andthe Mediterranean Basin throughout the Middle Ages. It's use incakes and doughs to make cookies and breads became extremelypopular in Europe centering on the city of Nuremberg, Germany.Nuremberg happened to be fortuitously positioned on thecrossroads of the major East/West spice trade routes and nearforests which produced voluminous amounts of honey from itsresident bees. From this honey, the traditionally famous“Iibkuchen” cakes were produced, which when combined withsaffron were actually the precursor of Gingerbread. As gingerreplaced saffron as the main flavoring component of these honeycakes, "gingerbread" was born. Both ginger and saffron wereconsidered extremely valuable commodities at this time andactually were tightly regulated. They still share many recipes forbreads and cakes.

In the America's, the making and decorating of Gingerbreadbecame a Christmas tradition which prevails to this day.

Following the long established European tradition, ornatelydecorated houses and gingerbread pieces now appear in avariety of settings. The internet offers an assortment of all thingsGingerbread and there is even a Gingerbread University on LongIsland which offers lessons in house decorating to individualsand groups throughout the year. And despite Its popularity inconfections. Ginger stIll finds widespread medicinal use in avariety of forms, particularly during the winter season..

But certainly the most visual and popular use of this versatileroot vegetable is as a key ingredient in recipes for GingerbreadHouses, such as the one that follows. Enjoy!

HOW TO MAKE GREAT GINGERBREADRemember, Gingerbread is a cake-like bread. All recipes

require minor adjustments in ingredients and a bit of patience tomake breads, it does not require ""proofing" but provides betterresults when chilled a bit. Here's a basic recipe for Gingerbreadfor cookies and houses.

7 1/2 cups AP flour 2 teaspoons baking soda 11/2 teaspoons cinnamon 2 teaspoons ground ginger 1/2 teaspoon ground clove 1/2 teaspoon salt 11/2 cups margarine or butter 1 cup brown sugar 1 cup molasses Cream butter and sugar. Add molasses. Blend dry ingredients

separately in bowl. Add dry ingredients to butter/sugar/molassesmixture until dough is not sticky but firm to the touch. If too wet,you may add flour. If too dry, you may add water. Wrap the doughin plastic wrap and refrigerate for a couple of hours. (Overnightis fine and dough will keep wrapped for weeks)

If desired you may weigh out your dough to match your pan.A normal size cookie sheet wilt require approximately 11/2 to 2lbs. of dough. A 1/2 size commercial pan 2 pounds. A full sizecommercial pan 4 to 41/2lbs. You should roll your dough on thesheet pan on top of a piece of parchment paper.

Use cutters to create shapes and remove excess dough or youmay bake the sheet in it's entirety if you are making a house andcut roof and sides within 5 minutes of removal from oven. Bake at35O-360 degrees for 12 to 15 minutes .

FOR ROYAL ICING COMBINE: 1lb of powdered (confectioners) sugar 3 oz. of pasteurized egg whites without yellow food dye (papeete brand works fine) 1/8 teaspoon cream of tartar You may use a drop of food coloring to color icing.

Whip mixture until peaks form and put into decorating bag.Unused icing must be kept covered and/or sealed.
