Spring

Briskness refers to a tea’s ability to make your mouth pucker, also known as astrin-gency. Some astringency makes tea brisk and desirable (like white wine). Too much briskness can be a problem, but may be controlled by reducing the brewing time.

Body refers to whether or not a tea feels thick in the mouth, such as Assam, or light such as a white tea. Sometimes this body comes from dissolved solids from the leaves like the Assam, and sometimes it is from all the amino acids, like Ichiban Sencha.

Aroma refers to whether or not the tea has a pleasant smell, often the most prized part of tea. That makes sense, since humans can smell much better than we can taste. Sometimes the pleasant smell is teased out of the tea leaf by a skilled tea maker, some-times it is flavor blended by our blenders.

It was just the other day we received the first tea of the season. It was a nice green tea from the Szechwan Province in southern China. The green tips looked so lovely but we decided to hold out for better teas later. There are only so many Chinese green tea that one can have. However, it was a wonderful reminder that the new season has started. It is still cold in most of China and Japan. Darjeeling has warm days but chilly nights, so tea is growing very slowly. However in a few weeks, all that changes.

Soon it will be warm enough for the tender buds to grow. Everything that the tea plants stored last Fall: sugars, antioxidants, and amino acids, will start to travel up from the roots. It is everything necessary to make the new leaves that are essential for the plant’s future. As tea lovers, we may find that nice, but what we really like is the results in a warm cup. We love the natural sweetness that comes from those sugars offset by the briskness that comes from anti-oxidants. When young leaves are loaded with amino acids, our mouth feels delightfully full (there is a bit of sweetness from amino acids also). It is hard to ask more from a cup of tea.

As a mother, I understand about hoping for a better future. So let us sing praises to this new season. Let us hope that the weather is perfect!

ASSAMAssam is India’s largest producer of tea, and the broad flood plains make for some of the most fertile tea estates in the world. In the 1820s, Assam was a jungle, and it was there that the Bruce brothers found a different type of tea plant. This variety of tea brews a brisk drink that works well with milk and sugar.

Water should be fresh, pure, and filtered. Hard water, water with high sulphur content or chlorinated water will affect the taste of the tea.

Storage & HandlingOur teas should be stored in sealed containers away from light.

Keep coffee separate. Tea will pick up flavors and odors from the foods around it.

Like all other food products it is important to properly rotate your teas. Tea can become stale and flavors dull.

I remember that cold New York City day in February 1953 standing outside of St. Patrick’s Cathedral, the wind cutting through us. Elyse and I were waiting our turn, as we were getting married, and it was so cold. Back then; people got married at a young age. And we were no exception. I was a veteran going to college at Cornell University, starting a family. (Our firstborn was a son followed by more sons, and a daughter.) We were trying to scrape together rent and hoping for a bright future. We had no idea what awaited us.

Together, Elyse and I raised a family and worked in inns. It was in Salisbury about 10 years later that we both met Stanley Mason. Stanley was so influential. He taught us the British traditions of tea. First, we served his tea at the White Hart Inn. And Elyse sold his tins in our store. Later we bought the company from him and learned some of the intricacies of the tea trade.

In 1983, Elyse and I left the White Hart Inn and again went blindly into the future, just trusting that the sun would shine. I went on my own to form Harney & Sons; she started Elyse Harney Real Estate. Honestly, in the beginning, she was abit more successful than I. So when I needed a bit of cash for the growing tea business, my bride assisted. We ran both businesses out of our old house. I started to rope in my sons to assist me and Elyse got our daughter to help her. And the future did become better.

Now 60 years have gone by. My bride and I have shared a life of work, faith, and family. I am sure the future will be even brighter for all of us. Good luck to all!
