Coat an 8-inch tart pan with a removable bottom with cooking spray. Press the pie dough into the tart pan, trimming any excess. In a skillet over medium-high, heat the oil. Add the garlic and cook for 1 minute. Add the spinach and cook until completely soft and most the of the liquid has evaporated, 4 to 5 minutes. Transfer the spinach to a fine mesh strainer. Using a spoon or silicone spatula, press the spinach to extract any remaining liquid. In a medium bowl, beat the egg, then add the ricotta, thyme, lemon zest, salt, pepper and spinach. Stir to combine. Spread the mixture in the prepared tart shell and sprinkle with Asiago cheese. Place on a baking sheet and bake for 35 to 40 minutes, or until puffed and golden brown. Allow to cool slightly. Serve warm or at room temperature. Study the deal above and decide — would you rather defend or declare six diamonds on a club lead? Declarer has 10 tricks and needs two more. Against most players, you should choose to defend, but South on this deal was the legendary Giorgio Belladonna, of Italy, who showed us all how it’s done. The king of clubs was played from dummy at trick one, covered by East and ruffed by South. Next came two high trumps, followed by a trump to dummy’s jack. South cashed the queen of clubs, discarding the 10 of spades from hand, ruffed a club, and began running the trumps. With one trump to go, this was the position: On the lead of the last diamond, West was crushed. A spade discard would allow South to shed a heart from dummy and play the ace and queen of spades from hand, setting up two long spades in dummy. A heart discard and South would play the ace, king and another heart, establishing the long heart in his hand while end- playing West, who would be forced to lead a spade into declarer’s ace-queen.
