The aim of this Congress is to identify the most pressing problems that face food scientists and technologists in their work with cereals and to outline future possibilities. The principal event will be a symposium on Cereals in a European Context. It is also expected that there will be round table meetings, poster presentations, a scientific and technical exhibition and a social programme. The symposium will consider the following themes. Cereal Genetics and Plant Breeding. Cereals and Nutrition. Milling Technology. Cereal Chemistry. Baking Technology. Fermentation. Leading speakers will be asked to open each section, but the organising committee wishes to use this occasion to encourage dissemination of original research and especially that of younger scientists. The opening address will consider the economic and social forces shaping the demand for cereal products and which in turn, influence the associated research programmes. Thereafter, the programme will be wholly scientific, each section opening with an update or overview paper leading into contributed papers, which will deal with technological development and recent or current research. Papers on cereals other than wheat will be welcomed, and while bread may well figure largely in the section on baking technology, papers on other cereal products such as breakfast foods, flour confectionery and biscuits are being sought. The organising committee invite the submission of briefdetails of the nature or content of papers or posters, and enqu iries for further details, to Professor John Hawthorn, c/o Conference Clearway Ltd., Conference House, 9 Pavilion Parade, Brighton BN2 IRA, U.K. Papers and posters presented at the congress will, subject to editorial discretion, be published thereafter as proceedings.
