The pieces are made fromsuper-light-weight wool, quite sheer, designed to wickaway moisture and theyre odor resistant.     cently discovered, while talking with Kate Carty, ofher eponymous store in Millerton, that cashmereshould never be dry-cleaned. That was news to me,but apparently dry-cleaning is why sweaters pill.Hand-washing in cold water with mild detergentand drying flat so the sweater does not stretch outis the only method approved by the Scottish manu-

    facturers of the very enticing sweaters Carty sellsin her store.

    You can take your pick of jacket length sweaters,shawls, wraps and scarves. Wraps are particularlypopular as they can be an added layer over a jacket,a sumptuous scarf, or simply something to wearinside just to increase the coziness factor. Cartydoesnt just sell Scottish cashmere; she also sellsMinnie Rose, a popular womens line in wonderful

    colors, complete with ruffles. Carty offers lots ofmenswear, too.If you havent been to Her House in Millerton

    you should make a point of checking it out. HerHouse shares space with the clothing boutique, Par-lour, on Main Street and the shop has an eclecticmix of clothing and accessories.

    This past summer, I bought the sweetest cot-ton nightgown for my daughter there. By nowthe store is fully stocked for the fall season. AnneNewbury, the proprietor, likes the small American,French and English companies that have limitedproduction runs, and, she says, sweaters with greatdetails. One of the best may be Meg Cohen cash-mere, a New York City-based company known forits reasonably priced shawls, scarves and wraps.

    Still, despite all the virtues of natural fibers,there are times when only a Patagonia Nano Puff

    jacket will do. Super-light, down filled jackets, they

    stormed the marketplace about five years ago andare still all the rage. They are sleek, come in snap-py colors and Peter Becks also carries them in kidssizes.

    Teen fashions. As I contemplatethe topic, I realize how much I will miss those mother/daughter what are you wearing?! issues when thelast of my five girls are grown.

    I am, of course, being sarcastic. About missing that.And so I hike up my mom jeans and my expectations

    and dare to hope for an afternoon of dtente as we headout to shop for real jeans.

    Shopping for school clothes, that ritual that signals theend of summer well before the calendar does, never losesits sense of signaling the biggest change life throws at allof us during the year, whatever your perspective.

    When the initial adrenaline rush subsides, it strikes methat I am lucky that none of the five are fashion crazy.And that they are lucky to not have grown up on the cuspof such a huge societal change as womens lib, when twogenerations faced off on the issue of proper attire.

    At a popular family clothing store the chain has anissue with this, so well call it, uhhh, New Army we areimmediately confronted by mannequins wearing skinny

    jeans. (They actually dont do anything as aggressive asmoving on their own, but the offbeat TV ads haunt.)

    Who wears skinny jeans? I ask my 17-year-old.Everyone, she answers, not realizing Im being rhetori-

    cal and also not daring to roll her eyes because she knows

    Im not buying the exaggeration.Now, Im not calling anyone fat, heaven forbid, but

    they just seem to make kids bigger these days. I look atthe second-skin jeans on a mannequin that has nevereaten a cheeseburger and wonder how they could de-cently fit anyone over the age of eight.

    Later, my youngest, soon to be my last to enter high

    school, and with an athletic build that makes it difficultto rock form-fitting, stated she doesnt like the longer,billowy shirts now in style. They are made to go overthe skinny jeans, completing the look, in my mindat least, by providing a wealth of camouflage for thosewho may need it.

    The always-a-step-ahead marketing geniuses knowjeans now need a name, and each of my three teens

    can state undeniably that she fits perfectly into stylesthat go by the likes of the Diva, or the Sweetheart.Dont ask about boyfriend jeans. They were as clue-

    less as I.My advice, parents: choose your battles, and always

    remember jeans are not as permanent as tattoos.All that said, I had no idea I was chasing down thewrong fashion trend story.

    On the way to the car, we detoured into the phonestore (remember when people only did that to pickup a phone leased from the sole phone company, andthey all came with cords and your choices were desk orwall, black or sometimes red). I smacked myself in theforehead.

    I listen to the girls, and the boyfriend who camealong, talk about who has what cell phone.

    Sometimes its OK to have the same phone as some-one else.

    Sometimes not.

    I discover it depends entirely on whether you likethe person or not. It has nothing to do with riskinga fashion faux pax, i.e., wearing the same prom dress,or making a fashion statement, i.e., buying the sameboots your BFF loves.

    You dont want someone you hate thinking you cop-ied them, one daughter sums it up.

    But what about touch screens and slide-out key-boards and all the latest technology?

    Well, it turns out, its all about how you use them;whether you spend more time texting, e-mailing orplaying games, or doing all three at the sametime.

    Its not necessary to get into it any further. All youneed to know is its a very functional thing.

    Fashion following function; now theres a new con-cept. A far cry, and yet oddly similar, to when my momand I fought over my wearing a hat.

    Do Realtors really telltheirclientsto bake bread before showing ahouse, to make it enticing? Not in my experi-

    ence, but thats OK with me; I think fresh-baked bread smells lousy.Too much yeast.Having said that, however, I will now tell you with enor-

    mous pride that I have suddenly and unexpectedly becomea world-class bread baker. My secret? A cookbook by JimLahey, owner of the Sullivan Street Bakery in New YorkCity and a bread evangelist.

    You might have first read about Laheys revolution-ary (and yet ancient) bread-baking method in a New York

    Times article published about a year ago. Chef/writer MarkBittman touted it heavily but didnt quite give his readersthe full technique He merely emphasized that it doesnthave to be kneaded. There is more to it than that.

    I tried the Bittman interpretation of Laheys no-kneadbread and wasnt pleased with the results. For one thing, itwas too yeasty. For another, I tried baking it on a pizza stoneand ended up with a balloon-shaped loaf that didnt exactlymake my mouth water. It tasted fine, but it was an experi-

    ment that wasnt worth repeating.Now Lahey has taken control of his no-knead breadin his book, My Bread: The Revolutionary No-Work No-Knead Method. In one of the cover blurbs on the back,chef/author/TV star Anthony Bourdain says Lahey is tobread what the Dalai Lama is to Buddhism. I dont feel likethis is hyperbole. Lahey is truly evangelical in the way hedescribes his breadmaking method. And he makes bread-baking accessible to even really bad bread bakers such asmyself. I am the living proof that any idiot can bake aston-

    ishingly good bread; all you have to do is follow Laheysinstructions to the letter.

    And those instructions are minimal. I personally believethat recipes are like couture clothing; simple is always best.Laheys explanations also tend to be on the brief side, buthe imparts a great deal of information. Readers learn manydetails of his romantic life (just enough, not too much) butmainly you learn about his personal pilgrimage to learnhow to make really really good bread. He moves to Italy.

    He studies ancient techniques.And the result is a bread

    recipe that is absolutely fool-proof as long as you followhis instructions. The first ruleis to make his basic recipe

    before you move on to other it-erations such as cheese bread,wheat bread, peanut butterand jelly bread, coconut choco-late bread.

    I have so far stuck with thebasic loaf, and with a recipe fora baguette-like loaf that Laheycalls by an Italian name: stec-ca, or stick. One of the tricks to

    making the basic loaf is that

    you need to be fussy about theflour (in short, get King Arthurbread flour or Bobs Red Millunbromated unbleached whiteflour) but you dont need tobe fussy about your yeast (Iused Fleischmanns and it wasfine). The essential piece ofequipment that you need is aDutch oven kind of thing. Ivebeen using a heavy, deep castiron skillet with a lid and itsbeen fantastic. I havent hadthe courage yet to put one ofmy expensive Le Creuset potsin the oven, but Im nervous

    like that. I will note that all

    the pots in the photos in La-heys book are kind of batteredlooking; however, I will alsoremind you that T. J. Maxx inTorrington always has a goodselection of Dutch ovens by LeCreuset and Emile Henry andother companies, at discountprices. If you want just a regu-lar cast iron pot with a cover,

    WalMart and KMart oftencarry them.

    creates the exact scientific conditions that are needed tomake bread with a tender core and a crusty exterior. Youdont need a fancy oven and you dont need a pizza stoneand you dont need to mist the inside of the oven with aspray bottle.

    But you do need to let your bread rise for 18 hours. Yes,almost a full day. So this bread requires a little advance

    planning, but its worth it. What I do now is make thebread dough before I go to bed, around 10 or 10:30 p.m.This dough takes literally 15 minutes to put together, andthat includes the time it takes to assemble the ingredi-ents and wash the dishes afterward.

    I then let it rise until I get home from work the nextday. Unfortunately, I cant make it for that nights dinnerbecause the dough needs to be tipped out of its bowl andallowed to rise for two more hours in a clean tea towel.But if you bake it before you go to bed, you can have

    fresh bread for breakfast. Or you can really plan aheadand parbake your bread and freeze it. When youre readyto serve, finish the baking in a hot oven and serve it up(as with all fresh bread, this bread does get soggy afterits been out of the oven for a couple hours).

    I love the fresh loaves of basic no-knead bread, but ittakes an hour to bake and an hour to cool. So I find that Imost often make the stecca bread, which takes 15 minutesto bake and about as many minutes to cool. Although itis not ready for dinner, my daughter will often take a hotloaf and slather on fresh chocolate raspberry sauce andeat that for her dessert.

    In your bowl, combine the salt, flour and yeast. Addthe water and stir into the flour gently until the dough iswet and sticky. This should take about a half minute. Youcan use your hands or you can use a wooden spoon. Allbreads are very susceptible to weather; on some days, youwill need to add one or two more teaspoons of water. Ivenever yet had to add less water, however.

    Cover the bowl with plastic wrap and set it aside in a spotthat does not get drafts and is not in direct sunlight (I usemy dining room table). In 12 to 18 hours, the dough will be

    bubbly and will be about twice as big as when you put iton the table. Lahey recommends the 18-hour rise, and Ivealways let it go for the full time or even a little longer than18 hours. After 12 hours my dough is definitely bubbly anddefinitely doubled in size. Once winter and the cold nightsarrive, however, I suspect that the fermentation will beslower.

    At any rate, after youve waited between 12 and 18 hours,flour up a large cutting board or your counter. And setaside a clean towel that has a light coating of flour on it.The dough should be clinging to the sides of the bowl so

    you will need to gently pry it away from the sides and thenroll it out onto your floured cutting board; then transfer itto your clean tea towel on a cookie sheet.

    First, roll the dough into a round loaf shape; then putit, seam side down, on the tea towel. Fold the edges of thetowel over the dough and let it rise another two hours. Inthe last half hour of this second fermentation, turn the ovenon to 475 degrees and put your covered pot in the oven on a

    rack in the lower third of the oven.Half an hour later, very carefully remove your very hot

    pot from the oven. Do another quick dusting of the dough,so its easier to remove from the tea towels, and then gentlyroll or lift it into the hot pot. Cover and bake for 30 min-utes, then remove the lid and continue baking until thebread is a nice rich brown, which can be anywhere from 15to 30 minutes. If you plan to freeze and rebake it, err on theside of underbaking it a little. Remove your pot from theoven and remove the bread from the pan with a spatula.Cool on a wire rack for an hour.

    first choice for cleaning agents is one made from naturalingredients that are edible, such as white vinegar, bakingsoda, lemon or from pure castile soaps. Used properly inappropriate combinations, these all-natural cleaners are

    just as effective as chemically-processed cleaners.Palmers Plan B is an all-natural cleaner with all the

    ingredients listed. I do not recommend using any productthat does not have a compete ingredient list or one whichlists some or all of their ingredients as proprietary.

    A house needs to be in orderbecause you live in it. The same could be said for your com-puter, where you are probably spending more and more of

    your time these days. You started using the computer be-cause it was fast, efficient and effective. Make sure you keepit that way.

    I think certainly we see plenty of cases where people are

    not managing their files, says David Maffucci, owner of Vi-sionary Computer in Lakeville, an Apple-based repair shop.It stems from the usual things: easy access to downloads,lack of time. All of a sudden you have dozens of items litter-ing your desktop.

    From a performance perspective, Maffucci says that hav-ing a disorganized hard drive isnt really going to make

    your computer slower. But having to search through amessy folder or wade through a clogged up desktop, re-gardless of how much memory your computer has, is goingto wear you down.

    Weve had plenty of customers who have literally hun-dreds of files on the their desktop, Maffucci says. Theyrelayered one on top of the other and it makes it nearly im-possible to find anything. Weve definitely had cases wherethe owner could not operate his computer because hecouldnt navigate his desktop.

    Unfortunately, the computer guru said there is no quick-fix solution in the form of software.

    Its hard for an automated system to decide which filesare relevant to you and which arent, he pointed out. Itsreally up to the user to do that.And its not a decision that Visionary Computers staff is in

    a position to make either.I really try to sit down and go through it with the per-

    son, he said. If Im not doing it with them, chances are thesame problems will keep occurring.

    The solution is fairly simple, but will require a changein the way you conduct yourself electronically. All ittakes is a little more legwork up front: organizing yourdocuments folders just like you would a filing cabinetso that when you do need that one file months downthe road, its exactly where youd expect it to be. All

    your photographs can go into a folder labelled Photos,which can then be broken down into theme, date, size orwhatever other criteria will make it easiest to locate thatneedle in a haystack when you need to.

    Its really about organizing the files in a way thatmakes sense to you, Maffucci says. Dealing with onefile at a time that youre working with is always going to

    be easier than dealing with 50 files later.
