I caught upwith managing partner IvyNagayama, in a rare, quietmoment, to chat aboutthe Sansei style.

Jo McGarry: Is it really six years sinceyou opened here inWaikiki?

Ivy Nagayama:(Laughs) Yes! And thispast April we celebrated10 years on Oahu. Weopened our first locationon this island at Restau-rant Row in 2000.

JM:I remember when youmoved here, everyonewondered if you’d be ableto entice locals out toWaikiki. Seems like you’vedone that fairly success-fully.

IN:Well, everybody knewSansei from our years atRestaurant Row, so ourgoal was always to keepthose kama‘aina cus-tomers. And they did fol-low us to Waikiki.

JM:I want you to talk a littleabout the “thank you”that you regularly run foryour customers.

IN:On Sundays and Mondayevenings we give 50 percentoff the entire food check atSansei, between 5 and 6p.m. And on Fridays andSaturdays, we do the samedeal – late night – duringour karaoke evenings.

JM:I’ve seen the lines outsidethe restaurant on Satur-day nights and on Sundayevenings, with peoplewaiting to take advantageof the “thank you” deal –it’s crazy!

IN:(Laughs). It does get a littlebusy, but we always man-age to take care of every-one, and the atmosphere isalways great. Customerslove it – and they love ourweekend karaoke, too.

JM:You know, I think that’s ahuge part of your success– the fact that you knowwhat local people like.Whether it’s food, enter-tainment, accessiblewines or just creating acomfortable place to eat.

IN:I think it’s just about givingpeople what they want. Wehad a great role model inSandy Kodama, she was“Mom” to all of us. I spentevery working day withher when she was alive,and she really did try togive everyone what theywanted. She taught us somuch about understand-ing our guests. She was amom to everyone.

JM:Do you think that is herlegacy? That the way shetreated people is being

carried on through differ-ent generations?

IN:Yes, yes. Within our com-pany culture we always ask,“What would Mom do?” Shetried to make everythingwork. She turned thingsaround with everyone, andshe taught us so muchabout how to make peoplehappy when they come intoa restaurant.

JM:Of course, the food has tobe good, too.

IN:Fortunately we have a re-ally talented group ofchefs. They’re workingright now with a lot ofnew, local produce and in-corporating that intosushi rolls. And we’resourcing excellent freshfish from Japan that’s inseason.

JM:What are some of your fa-vorites on the menu rightnow?

IN:The white tuna sashimi iswonderful. The escolaris marinated in olive oiland Cajun spices, andthen served with a deli-cate Korean-style saucethat’s familiar to localpalates – but at the sametime is really refined – andit’s topped with fresh, is-land-grown jalapenos. It isa fabulous dish. And rightnow, on Wednesdayevenings, we’re offeringsteak and lobster com-plete meals at both of ourrestaurants – d.k’s SteakHouse and Sansei. For$39, there’s a lot of food!

JM:You’re known for yourwine list, which alwayshas so many “food-friendly” wine finds.

IN:Yes, a great example rightnow is this beautiful sushiwine – Oroya – that is ablend of three Spanishgrape varieties. It’s madeby a Japanese sake mas-ter, a woman named YokoSata. We try to look forwines that go well withAsian foods. Nothing withtoo much oak, good acid-ity, good fruit. When youtaste this wine, you seeimmediately that it’s madeto go perfectly with sushiand seafood. It’s delicate,but it has enough citrus toclear your palate and letyou enjoy the next bite offood. It’s really beautiful.

JM:And now there are food-friendly cocktails too.

IN:We wanted to have a pro-gram, like our wine pro-gram, where we could offer

cocktails that paired wellwith our food. We workedwith Christian Self – amixologist who’s the spiritversion of a master somme-lier. So now we have drinksthat are amazing and pairwell with the flavors of ourfood. For example, we havea Mui Tai, which looks like amai tai but is Asian-inspiredand incorporates Bacardiaged rum, Bols orange cura-cao and a homemadelemon grass syrup toppedoff with a candied gingerlemon grass foam.

JM:One of the things that I al-ways tell people about therestaurant is that you’reable to do all this, and stillcreate an atmosphere thatis sophisticated, but wel-coming to families.

IN:Absolutely. That’s anotherthing we learned from“Mom.” Through her,we’ve found a way to treatthe whole family well. Wecelebrate when childrencome into our restaurants.They are important in ourrestaurant culture.

Cocktails, like this Mui Tai, have been created to go with the Asian flavors ofSansei’s foods.

Most people knowthat Valentine’sDay is the busiest

dining night of the year,but Father’s Day at a steakhouse runs a very closesecond.

“It even beats outMother’s Day in terms ofhow busy we are,” saysRuth’s Chris general man-ager at Restaurant Row,Don Assam. “We have morethan 100 reservations onthe books right now, so wereally encourage people tomake a reservation for Fa-ther’s Day before it’s toolate.”

But if there’s one thingthat the staff at Ruth’sChris can handle, it’s abusy evening of fine din-ing. The national restau-rant chain celebrates 45years in business thisyear, with Hawaii’s Ruth’sChris celebrating 21 years.

“We’re very blessed tohave been in business allthese years in Hawaii,”says Assam, who admitsthat adaptability has beenkey to the restaurant’ssuccess. “You have tomake changes when it’snecessary, and becauseit’s all about the guest, welisten to what our guestssay, and we act uponthat.”

A special Father’s Daymenu, priced at $64.95, in-cludes soup or salad, achoice of bone- in rib-eye,surf and turf, New York stripor grilled lamb chops, withsides of creamed spinach,roasted garlic mashed pota-toes or sautéed mushrooms,and dessert.

And while Father’s Dayis undoubtedly a great timeto taste what’s new at oneof the city’s oldest steak

houses, there’s a menu pro-motion running until theend of July that should ap-peal on any night to anyonewho appreciates good foodand wine. “We have a spe-cial anniversary menu tocelebrate the 45 years ofRuth’s Chris,” says Assam.

There’s also an excitingopportunity to win some-thing very special.

“Ruth’s Chris SteakHouse, which opened origi-nally in Restaurant Row in1999, partnered withLangtry Estate & Vineyardsto create their special 20thanniversary wine,” saysCEO Randy Schoch. “We’vedecided to give someonethe opportunity to spendtwo nights at the LangtryEstate on the ultimate foodand wine trip.”

The prize, which in-cludes round-trip air fare toSan Francisco, two nights’accommodation at theLangtry Estate and VIP din-ner with a tour of the win-ery, will be awarded at theend of the promotion.

lobster meat• 2 oz. ground pork• 1 oz. chopped Fresh

Shiitake mushroom• 1 oz. chopped

green onion• 1/2 oz. chopped

Chinese parsley

• 1 tablespoon toastedsesame seed

• 2/3 tablespoonAloha Shoyu

• 1/2 tablespoon unsaltedgranulated garlic

• pinch of ground pepper• 1 whole egg

List B• 1 package of wonton pi• vegetable oil enough

to fry the wonton• 1/2 cup sweet and

sour sauce

• In a bowl, combine all the ingredients in list A and use as a filling.

• On a flat surface put 1/4 tablespoon of filling, fold the wonton skin in half-moonand brush the edge with water or egg wash, then connect the left and right sides to-gether and seal with water or egg wash.

• Preheat the oil to 325-350 degrees and fry the wonton until they turn goldenbrown, about two minutes or so. Remove from oil and serve with sweet and sourdipping sauce.

• In a pot, combine all in-gredients together, bringit to a boil and simmer fora few minutes.

Serve at room temperature.
