Cookies and Cream Cheesecake Bundt Cake

Ingredients

For the cake:Nonstick cooking spray2 (8-ounce) packages cream cheese, softened 1/2 cup confectioner’s sugar1 teaspoon pure vanilla extract1 (15.25-ounces) box chocolate cake mix1 1/4 cups water1/2 cup vegetable oil 3 large eggs10 chocolate sandwich cookies, such as Oreos

For the glaze:1 pound high-quality chocolate, 60% cocoa content or higher, finely chopped 2 cups heavy cream

Directions

1. Make the cake: Preheat oven to 350 degrees. Liberally coat every nook and cranny of a 10-cup Bundt pan with cooking spray.

2. In a medium bowl, stir together the cream cheese, sugar, and vanilla extract until smooth.

3. Prepare the cake mix according to the package instructions, using the water, oil, and eggs listed above. Pour half the cake batter into the bottom of the Bundt pan, smoothing it with a spatula.

4. Using a 2-ounce ice cream scoop, scoop the cream cheese mixture evenly onto the cake batter, making sure that it does not touch the sides of the cake pan. Pour the rest of the chocolate cake batter on top of the cookies and cream cheese scoops, smoothing it evenly.

5. Bake until the cake rises and a toothpick inserted in the cake comes out clean, about 45 minutes.

6. Transfer the cake to a wire rack and let cool 20 minutes and up to an hour. Invert the pan onto the rack set on top of a baking tray, letting the cake release naturally. Let cool completely.

7. Make the glaze: Microwave the chocolate and the cream together in 30-second intervals, stirring in between, until the glaze is smooth and glossy.

8. Pour the glaze evenly over the cake, letting the excess drip off the wire rack and onto the baking tray. Let the cake stand until the glaze has set, at least 30 minutes.

9. Transfer the cake to a serving plate and slice in large wedges to serve.
