INGREDIENTS1 to 1 1/2 pounds coho salmon
3 tablespoons dijon mustard
2 tablespoons light brown sugar
1/4 teaspoon ground black pepper
1/4 teaspoon kosher salt
1 cedar grilling plank

INSTRUCTIONSSoak plank in water for 1-2 hours.
Preheat a charcoal or gas grill to medium-high heat. In a bowl, mix
to combine mustard, sugar, pepper, and salt.
Place salmon on top of the plank. Using a spoon or spatula, spread
the mustard glaze evenly on top of the salmon.
Place the cedar plank in the middle of the grill and close the lid.
Grill for 15 to 25 minutes, depending on your grill. Grill until the
internal temperature of the salmon reaches 135°F or flakes easily
with a fork.
Serve immediately, right off the plank.

IGA Fresh Coho Salmon
INGREDIENTS1/4 cup bourbon
1/4 cup honey
4 cloves garlic, chopped
1/2 cup softened butter, plus additional butter for preparing the baking sheet
1/2 teaspoon coarse sea salt
1/4 cup chipotle chile paste
4 (6-OZ) COHO SALMON FILLETS
INSTRUCTIONSWhisk the honey into the bourbon until it dissolves fully, and then
set it aside. In a medium bowl, or in the basin of a standmixer, beat
the garlic, butter, sea salt and chipotle chile paste together until
smooth, then, continue beating the seasoned butter while pouring
the honeyed bourbon into the butter in a smooth, thin stream until
fully incorporated.
Heat the oven to 425°F, and spread a thin layer of butter on the
baking sheet.
Arrange the salmon on the greased baking sheet, and then spoon
the Honey Chipotle Bourbon Butter generously over each filet.
Brush the butter along the whole fillet to evenly coat them. Bake
the salmon for 15 minutes, or until the fish flakes easily with a fork.

2 tsp butter
1 tsp olive oil
1 clove of garlic, minced
Sea salt and freshly cracked pepper, to taste
Fresh dill, to taste
Lemon slices
INSTRUCTIONSPreheat the oven to 450 degrees. Line a baking sheet with tin foil
then coat it with cooking spray.
Combine the butter, olive oil, and garlic together then spread
evenly over the top of the fish. Season with sea salt and freshly
cracked pepper, to taste. Sprinkle freshly chopped dill all over
followed by a layer of lemon slices. Place skin side down on the
prepared baking sheet.
Place into the oven and bake for 10 minutes or until the salmon
flakes easily with a fork. Remove from the oven and serve with
additional slices of lemon if desired. Serve immediately. Enjoy.
