The story of Brilliant Brew Co. dates back to 1985 when me and a couple buddies started drinking lots of beer in college. We got really into the idea of home brewing and tried it for the first time in the summer of 1996. We started trying out different ways to brew beers we liked and when we started giving them to more friends who asked for more beer we realized we were pretty good at it. We began thinking we could make a business out of this about a year later. Since we were all into different things at the time such as music and science and literature we thought we were a pretty smart crew and vua-la! the name Brilliant was born. Each of us worked on crafting our perfect beer and picked a Brilliant Minded person that inspired us for our very own six pack. It wasn’t until we realized how much we loved brewing different beers, and how much people liked trying different beers that we created our staple tripacks. These tripacks had three very different beers in one six pack and allowed people to get a taste of all the different ways we brew. So welcome to Brilliant Brew Co. Time to experience the genius that lives in every sing bottle. So get smart, crack open a cold one grab a glass and sit back and relax. Remember great minds drink alike.

Because sometimes variety is just betterWe really love to brew beer and because of that we have a lot of brews to drink. We also think we’re pretty smart so we know that people love variety especially when it comes to drinking new beers. What is better than giving a new flavor a try and falling in love with your new
favorite all over again. This is why we created our tripacks. We find that some Brilliant Minds are complex and deserve more than just one flavor in their six pack. So we offer three different tripack options for those variety lovers. Our Hemingway Collection, Louis
Armstrong Trio and Frued’s Mind Trio each contain three distinctly unique beers. This is great for anyone looking to get a range of flavors in one sitting or for someone just looking to please the crowd at a party. Yup, we think this idea is pretty brilliant too.

At Brilliant we have five staple six packs. Three of these six packs are our tripack option meaning they contain three different flavors and two are classic brews. One, which is a bitter IPA and the other which is our begium wheat brew.

Frued’s Mind Trio
The Freud’s Mind Trio contains three wildly different beers. Each beer has a different taste and alchoholic strength which cordinates to Freud’s analytic theory of the mind being made up of and controled by the id, ego and superego.

The Louis Artstrong Trio has three distinctly different jazzy brews. This pack ranges from a smooth dark raspy brew to a poppy citrus wheat. Just turn on old Satchmo and crack these babies open.

Gloria Steinem’s Power Brew
Our Gloria Steinem Power Brew is one of our staple six packs and is a pale ale. While this beer is a pale ale it still makes a bold statement. It has a sweet aroma that is easy to take in but don’t worry just like Gloria it is sure to pack a powerful punch.

power pale aleThe power pale ale is inspired by Gloria Stienem. It has a sweet flowery aroma, but don’t let that fool you. This beer is sure to pack a punch. While it is light and drinkable, it has loads of citrus flavors that will sizzle on the tounge and get you in gear for a night out.
Brew Co. we started brewing beer on our back porches because we love beer. When other people loved our beer too we realized wie needed to expant and up our technoloty. This was the begining of Brilliant Brew Co. Our Brewery is located in Brooklyn and houses all of our brews except for ocasional yearly brews which we host brew at other locations.

How We Brew
We use just the classic ingredients to brew our beer. Each beer is a unique combination of hops yeast, grain and water. Our yeast ages back over two hundred years and is locked in the vaults of the Brilliant Brewery to ensure that it remains unique to our brews. Each beer uses a manipulated strand of this classic yeast for it’s own taste. At Brilliant

Our ingredients are what make each of our brews unique. A special blend of grain, hops, yeast and water creates our six staple beers and every year we experiment with these ingredients to create our yearly limited release six pack.

Malting
Brewing always begins with malting. This means that we dry out the grains whether it is barley, rye, wheat or something else. Each of our brews uses a unique combination of grains to create an individual malt blend.
The process of malting extracts enzymes in the grain which are key to the brewing process. and will become even more important in the next step of crafting our beers.

Sometimes we use other grains for different flavors. We also vary the malting time to create different flavors. The longer we malt gran for the darker it gets which will create those rich coffee flavors in some of our brews.

Mashing
Up next our grains go through a process known
as mashing. In Mashing the malt is put into
extremely hot water and soaked for about an
hour. During this time the enzymes in the grain
are broken down and release sugar.
This creates a sugar water called wort. This wort
is essentially beer that is unfermented. Similar to
a bread dough that is unbaked.

Boiling
Up next the wort is boiled for about an hour
during which time hops are added at various
points. The hops provide bitterness to balance
out all the sugar in the wort and provide each
beer with a unique flavor and they also act as a
natural preservative. However, while they give the
beer bitterness, they are sweet in smell. Hops
were originally used to preserve beer when it
used to have long hours to travel on boats. Our
hops come from both the Yokima River Valley in
Washington and Willamete valley in Oregon.

Fermentation
Once the hour long boil is up the wort is cooled, strained and filtered. It’s then put in a sealed container and yeast is added to it. The brewing is now complete and fermentation begins. The beer is then stored for a couple of weeks at varying temperatures while the yeast works its fermentation magic. Basically the yeast eats up all that sugar from the grains that’s in the wort and spits out CO2 and alcohol as waste products.

The final and most important step is drinking. Each one of our beers is unique in taste, look and feel and we have created our own line of glassware which enhances the drinking experience of certain beers. The glass to the left is our “horn” and pairs well with our Frued’s Ego which is a Red IPA and also our Cornet Blow’n Pilsner from the Louis Armstrong pack both which are packed with hops and aroma.
