Dear Black Diamond Members:
I hope everyone is staying warm during this unusual cool start of the year. With the new year comes a new attitude for Black Diamond. Things are on the upturn and courses are in good condition with lots of member golf activities scheduled for the upcoming months. Kenny and Brad have another fabulous wine dinner scheduled so make your reservations early on our new ForeTees dining reservations system. We are still working out some of the bugs with Fore Tees but we believe that with the new reservation system it will make the start of your dining experience that much better. We are in the final stages of putting together our new advisory board for Black Diamond and I will be announcing the members of this board in the next couple of weeks. In the meantime, the POA has a new ARB committee headed up by Don Hasek. Don will be replacing Dick Goss who has spent many volunteer hours helping keep our community beautiful. The new ARB mission is to make every resident’s need for any kind of design or landscape change to your residence an easy enjoyable process. One of the first changes they have made is eliminating the fee on simple request changes and decreasing the time of approval for those changes. With all the new processes in place there shouldn’t be any reason why you don’t fill out the application as required by your association. Forms will be available at the Welcome Center or in the club office with Peggy. The ARB committee is looking for a few more volunteers. If you have any interest, please contact Don Hasek. I also want to thank all the residents that have responded to the letters they have received on keeping your properties up to required standards. We are slowly working our way through the rest of the community with friendly reminders about your roofs, driveways and mailbox maintenance. So if youtake a look at your roof and you think it is questionable whether or not it needs to be done, then it probably needs it. If you’re still not sure, then send me a note and I will be happy to stop by and help you decide. Again, this is a new year for Black Diamond and I need each and every one of you to help do your part in making our community something we are all proud of once again. My door is always open for comments and suggestions and I welcome them. Happy New Year, Doug

Hello Members,
As we all look forward to another month of fun-filled events, I wanted to make sure everyone is aware of our Wednesday “Theme Nights” and how we intend for them to work. Every Wednesday
has a theme, this month we will have our Taco Bar and Italian night just to name two of them. We would like to be able to provide our
membership with what you are looking for, typically on these nights there are other member gatherings as well, so we continue to “tweak”
what we are offering to accommodate. If you are not interested in the actual theme for the evening we have always taken special orders and there was a rule
we tried to put in place to let us know before 3pm. This seems to have created some confusion as to what we can and cannot do. We will always do everything we can to prepare what you are specifically looking for, so if you have special dietary needs that we can help you with we would like to know before you arrive and if you can let us know the earlier the better. We have made the decision to offer a limited Clubhouse menu for you to order from, in addition to the theme selections, at any of our theme dinners. The following items; hamburgers, flatbread pizza’s, Caesar salads, and our quesadilla will always be available, so feel free to order these items most anytime you are dining here at The Clubhouse. We are hoping this meets most everyone’s needs. In addition, we recognize that the member gatherings for gaming purposes may require an earlier seating for dinner. We will now open up for dining starting at 5pm every Wednesday.
Here is a snapshot of another fun-filled month of Happenings here at The Clubhouse! We are planning a “Steakhouse” night, Valentine’s activities kicking off on Friday the 14th with our dinner followed by the Sweetheart Golf Tournament on Sunday the 16th, and we are bringing back the NoWhere Band on the 20th with a Nashville theme for food and Elvis tunes for dancing.

Attention Members:
We are continuing to stay busy on the golf course in regards to projects and clean up. With the weather pattern bringing us several rain events throughout the month of January we are behind on the clean up behind Quarry #15 green, but we were able to address other areas. We will continue to remove and clean vegetation once the area behind Quarry #15 green dries out. We added additional lights to the wall and will be adding more as we clean vegetation.
Next, I want to touch on a few member questions I have received lately.
Q: What is the process or how do we select what trees are trimmed and/or removed? A: We have a plan in place where we remove trees where we have extreme shade issues and it is hindering turf
growth. We are thinning out or trimming any other trees to create air flow in other areas.
Q: What is the black sand on the greens and why are we using it?A: We have switched our top dressing program only during the winter months. I started using a black-dyed sand
with charcoal to attract heat to the putting surface and stimulate growth during cold temperatures. We check soil temperature daily and use this along with potential weather patterns to identify when is best to top dress.
Q: Why are we painting the greens?A: I am not painting the greens just to paint the greens. We are using several fungicides that have a green
pigment, but we are not just spraying “paint.” Due to the weather pattern we have been spraying fungicides that we would normally be spraying in the fall months.
We have a very busy February in regards to agronomics. We will be spraying all greens with another application of selective herbicide to eradicate any poa annua, we have a wall to wall fertilizer + pre-emergent application scheduled, and we have a liquid pre-emergent scheduled in the non-overseeded rough on the Highlands and Ranch Courses.
I look forward to seeing everyone out on the courses.

Our winter weather has not been extremely kind to us lately here at Black Diamond Ranch but we were so much better off than most of the rest of the country! I for one sometimes lose sight of the fact that we have truly been blessed with 45 remarkable holes of golf to enjoy for the entire year! And we have not only Ladies’ Days for our participation in the month of February but also the Club’s Sweetheart Tournament on February 16 as well as our Ladies Club Championship on February 21-23. Great fun for all in the first and a good test of skills to be found in the second...do sign up to play in these events!

2014 Black Diamond Rider Cup Featuring

All Black Diamond members are invited to sign up for their choice of country. The United States Guys and Dolls will be dressed in their traditional red, white and blue and the Scottish Lads and Lassies will be dressed in red and yellow. There will be four nine-hole matches: Scramble, Team Better Ball, Chapman Two Ball and Individual matches. All matches will be with partners of the same gender and playing opponents with similar handicaps. Tee markers will vary depending on handicap level. Tee times will be 9:30 am to 2:00 pm each day.
On Wednesday March 12th, there will be dinner menus featuring selections of Scottish and USA cuisine open to participants and all members of the club and their guests.
On Thursday March 13th, The Rider Cup dinner will be held for all participants and any non-playing spouses. The entry fee includes Thursday dinner. Menu and cost will be posted on the sign-up sheet. The prize for the winning team is the raising of their national flag by their opponents while singing the winning team’s national anthem. This is a fun event for all members of Black Diamond with dress and cart decoration in their country’s theme and colors. Prizes will be awarded for best dress and cart.
Sign-up sheets will go up February 12th. Members who are out of town may phone the Golf Shop after that date to place their entry.

Black Diamond Foundation Endows a Third “STEPS
to CF” ScholarshipBy Dave Burns, Vice Chairman
Black Diamond Foundation has been a long-time supporter of the College of Central Florida, providing grants totaling $168,500 since 2007. Over the years, your contributions to Black Diamond Foundation have funded both classroom building projects and student scholarships. Our grants to the general scholarship fund provided deserving Citrus County students with financial assistance to initiate or complete their undergraduate studies. This month, we’d like to provide information about another College of Central Florida scholarship program that Black Diamond Foundation has been pleased to support over the years: STEPS to CF. STEPS (or Scholarships Taking Elementary Promising Students) to CF is a unique investment in higher education. It is an endowed scholarship program that identifies deserving 5th Grade students for attendance at the College of Central Florida. Students selected for STEPS have excelled academically, and have been identified as youth who could benefit from the incentive of having a college scholarship set aside for them at an early age. Recipients must maintain good grades, and remain drug and crime free throughout their high school years. In return, each student receives $4,000 toward their education at the College of Central Florida. Each endowment of $10,000 provides a STEPS scholarship at a local elementary school. Black Diamond Foundation was one of the earlier supporters of the STEPS to CF program in Citrus County. In 2011, the Foundation endowed two scholarships: one at Central Ridge Elementary School, and the second at Citrus Springs Elementary School. In December, the Foundation Board of Directors voted to endow a third STEPS to CF scholarship to benefit students at an elementary school to be identified later this spring.
With the addition of the Black Diamond Foundation’s recent funding initiative, there are now 17 endowments providing STEPS to CF scholarships in Citrus County. Since 2005, these endowments have funded 45 individual scholarships. The CF Foundation is only a few endowments away from reaching its goal of having a scholarship available each year to both a deserving young man and young woman at every elementary school in Citrus County.
“It is just wonderful to see the faces of these students when you award them their scholarship at their 5th grade graduation ceremonies. You can tell by the look on their family members faces, this scholarship is not just life changing for these students, it is giving their entire family hope for a better life through this gift of higher education,” said Traci Mason, Resource Development Coordinator for the CF Foundation.
We couldn’t agree more. We all benefit when we invest in the future of our children.

Recipe of the Month - Chef KennyCreamy Chinese Chicken SoupThis is a great recipe to warm you up on a cold night. It is a basic chicken soup recipe with an Asian twist. You can have fun with it and garnish with wontons, cilantro and even add noodles or just eat as is.
1. In a large soup pot, sauté the ginger, garlic and shitake mushrooms over med heat for 5-10 minutes then add the chicken, carrots, celery and onion and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (about 45 minutes to an hour-skim off foam every so often).
2. Take everything out of the pot. Strain the broth, separate the chicken
and pick the meat off of the bones. Season the broth with salt, pepper and chicken bouillon to taste, if desired.
3. Melt the butter and whisk in the flour till smooth. Slowly pour the chicken broth into the butter and whisk vigorously to prevent lumps. Return the chicken and vegetables to the pot, stir together.
4. Add the soy sauce and the heavy cream. Serve!
Makes 10 servings1 (3 pound) whole chicken2 carrots peeled, large, diced4 stalks celery, large, diced1 large onion, diced4 cups of shitake mushrooms1 teaspoon of chopped fresh Ginger1 teaspoon of chopped fresh Garlic
Water to coverSalt and pepper to taste1 teaspoon chicken bouillon¼ cup butter¼ cup flour½ cup heavy cream1 tablespoon low sodium soy sauce
