CHAMPAGNE & SPARKLING COCKTAILS

The origin of Champagne cocktails is unclear, but some believe they first splashed on the scene in 1861, when England went into mourning for Prince Albert.

According to historians, a bartender at London’s Brook’s Club decided that Champagne also should mourn, and paired it with Guinness stout to make a Black Velvet.

A Night in Paris £12

Dubonnet was first created in 1846 in response to a competition run by the French government to find a way of persuading French Foreign Legionnaires in North Africa to drink quinine to combat malaria. It was repopularised in the late 1970s and is known to be a favourite of Queen Elizabeth II and the late Queen Mother!

Old Cuban £14

The Old Cuban is one of the few well known cocktails of which the origin is uncontroversial since the recipe was only published in 2002 and was created by the barkeeper Audrey Saunders from Pegu Club in New York.

The term ‘Cocktail’ first appeared in print over 200 years ago and at that time the description was less generic than it is today. Now we group nearly every mixed drink under the umbrella of ‘cocktails’, but if you wandered into a bar in the mid 1800s and asked for a cocktail you would be given only one choice:

‘For the recipe book let the following be copied...

Cocktail is composed of water, with the addition of rum, gin or brandy, as one chooses, a third of the spirit to two thirds of the water, add bitters and enrich with sugar and nutmeg’

Roxanne £9

The Police lead singer Sting wrote the song ‘Roxanne’ after being inspired by the individuals he saw near the band’s seedy hotel in Paris while the band were lodged there in October 1977.

The red lights in windows of our hotel give a cheeky nod to the similar history of Blythswood Square opposite, where ‘ladies of the night’ used to ply their trade.

This is a great pre-dinner cocktail that’s both zesty and fresh and is perfect for those who don’t like bitter drinks. This is an elegant drink that plays well in all seasons. It’s delicate and light enough despite the lack of citrus for the summer, yet complex enough to be enjoyed in the winter, where the lack of citrus helps.

Tropical Iced Tea £11.50

A tropical take on the (in)famous Long Island Iced Tea which has origins going back to the early 1970s in Babylon, New York. The fact that the cocktail looks like ordinary non alcoholic iced tea has led to theories that it might have originally been created during the prohibition era to avoid suspicion.

Papa Doble Daiquiri £9

Created for Ernest Hemingway by the legendary Constantino Ribalaigua Vert of the El Floridita in Havana, Cuba, after he walked in to use the facilities.

He had an aversion of sugar due to a rare disease. We add sugar to this cocktail to balance the drink, but if you would prefer the original then just ask and we’ll be happy to oblige.

A close relation to a Brandy Crusta, the Side Car was first created around the end of World War One and is directly named for the motorcycle attachment.

This is a complex but balanced sour - if you would prefer a sweeter option then please do ask for a full or half sugar rim.

Chamomile Daisy £9

The fine balance of rum, elderflower and chamomile make for a perfect lazy day cocktail. Chamomile possesses anti anxiety properties and is also known to help with stress and insomnia. Elderflower is fresh and fragrant and brings some sweetness to the drink, and rum helps with all the above!

Named after Gustave Eiffel, designer of the famous Parisian tower and part of the distillery in Thuir, France, where the fortified wine Byrrh is made, this drink follows the DNA of a classic Daisy cocktail, and delights the taste buds.

Clover Club £9

The Clover Club cocktail pre-dates prohibition and is named after the Philadelphia men’s club of the same name which met at the Bellevue Stratford hotel from 1882 until the 1920s.

The cocktail was all but forgotten until recent years, but thankfully has been rediscovered and is now celebrated.

White Lady £9

The White Lady is believed to have been invented by famous bartender Harry McElhone while he was working at London’s Ciro Club in 1919. At that time, he used equal parts of white crème de menthe, triple sec and lemon juice. It was not until he had his own Harry’s New York Bar in Paris, in 1923, that he adapted the recipe by swapping the crème de menthe with gin.

Harry Craddock, of The American Bar at The Savoy in London also gets a fair bit of credit. In 1930 he published the recipe in his Savoy Cocktail Book, increasing the volume of gin and therefore making the drink drier. It was Peter Dorelli, legendary former manager of The American Bar, who suggested adding a dash of egg white to bind the drink together and give a smooth and silky finish.

New Orleans Fizz £10

Also known as a Ramos Fizz, the New Orleans Fizz was created in the late 1800’s by Henry C. Ramos in New Orleans.

The cocktail became so popular that by the 1915 Mardi Gras celebration Ramos’ 35 ‘shaker boys’ could not keep up with demand.

Hanky-Panky £10

This cocktail was invented in the 1920s by Ada Coleman who was head bartender of The Savoy Hotel’s American Bar in London, and is named after actor Sir Charles Hawtrey, for whom the cocktail was created, after he proclaimed ‘By Jove! That is the real hanky-panky!’ upon tasting it.

Negroni £9

While the drink’s origins are unknown, the most widely reported account is that it was first mixed in Florence, Italy, in 1919. Count Camillo Negroni concocted it by asking the bartender, Fosco Scarselli, to strengthen his favorite cocktail, the Americano, by adding gin rather than the normal soda water. As the drink was conceived before the invention of dry gin, the kind of gin used would have likely been barrel aged or Old Tom style.

Originally created by New York bartender Sam Ross, the Penicillin Cocktail takes the warming, soothing flavors of honey, lemon juice and fresh ginger, and fortifies them with a good dose of Scotch whisky.

In The Old Waldorf Astoria Bar Book, A.S. Crockett calls for equal parts of whiskey, vermouth and absinthe. That is quite a lot of absinthe and over the years the ratios have been adapted to those above. If you are adventurous, give the original a try - it’s very interesting.

El Presidente £20

Described in a 1919 article in the New York Evening Telegram, this Cuban mixture was apparently christened in honor of Mario García Menocal, president of that country from 1913 to 1921.

By the mid 1920s, the more discriminating among the massive influx of Americans that prohibition had tempted to Cuba had learned to like it too.

Before long, El Presidente was one of the most popular drinks in the USA as well, whether served illegally during prohibition or legally after.

Corpse Reviver No.1 £20

The Corpse Reviver family of cocktails are intended as ‘hair of the dog’ hangover cures, hence the name.

Many of the Corpse Reviver cocktails have been lost to time, but the Corpse Reviver No. 1, which appeared in print as early as an issue of Punch in 1861 and is listed in the 1930 Savoy Cocktail Handbook by Harry Craddock has survived to this day.

Old Fashioned The first use of the name ‘Old Fashioned’ for a Bourbon whiskey cocktail is said to have been at the Pendennis Club, a gentlemen’s club founded in 1881 in Louisville, Kentucky. The recipe was said to have been invented by a bartender at that club in honor of Colonel James E. Pepper, a prominent bourbon distiller, who brought it to the Waldorf Astoria Hotel bar in New York City.

It is safe to say the Martini is one of the world’s most iconic and renowned mixed drinks, although it’s exact origin is unclear.

Written records of the Martini started appearing towards the mid to late 19th century, but like many classics of its kind it is certain that people would have been enjoying the mix of gin and vermouth many years before. During prohibition the easy access of both of these ingredients ensured the Martini was cemented in our culture and it became the drink of choice for those wishing to consume hard liquor in a civilised manner.

Over the years the ratio of spirit to vermouth changed - originally the mix would most likely be 1:1, most likely due to the crudeness of the quite often homemade gin and the lowprice of French and Italian vermouths.

As gin became more refined, the ratio gradually shifted towards what we commonly see now as a Martini, heavy on the gin and very light on the vermouth.

No one knows exactly when we Scots began distilling whisky, but it has certainly been an evolving art and business for many centuries. The ancient Celts called it ‘Uisge beatha’, which translates literally as ‘the water of life’, a sign that the our passion for whisky is nothing new!

True scotch must adhere to the rules set forth in the Scotch Whisky Order of 1990 and be aged in barrels for at least three years. Scotch must be distilled from water and malted barley and can be fermented using only yeast. The spirit must be distilled at an alcoholic strength of less than 94.8 percent by volume so it retains the flavour of the raw materials. Scotch is bottled with the addition of no other substance with the exception of water and caramel spirit.

Speyside Generally accepted as a sub-division of the Highland region, over half of all distilleries are located here. Speyside malts are typically either heavy, rich and sherry flavoured or light, floral and complex.

Islay Islay malts are some of the most well known due to their heavy, smoky and peaty characteristics. At one time, there were as many as twenty three distilleries on this small island but there are currently only eight.

Highland This Highland region offers the most variety of all.The Western Highland whiskies are less peaty than Islays but still slightly smoky, most commonly found to have sweet starts and dry finishes. The Southern, Eastern and Central Highlands are lighter bodied, sweeter with dry finishes. The Northern Highlands tend to offer a slightly spicy character with a light body and dry finish.

This region now includes the Islands with distilleries found on the Islands of Mull, Jura, Orkney, Arran, Lewis and Skye.

WHISKY

Lowland Lowland malts offer a perfect entry to the category as they are generally lighter and sweeter than the other regions. Most of the single malts from this region end up in blends but there are a small selection which are great as aperitifs.

Campbeltown The Campbeltown single malts are very distinctive, tending to be full bodied, renowned for their depth of flavour and also for their slightly salty finish with peat adding a hint of flavour similar to that found in an Islay malt.

WHISKY

Whiskies from the United States can vary from bourbon,rye or blends of both.

Bourbon is technically a blend of differing grain bases but has to contain a larger wheat percentage than other grains in the blend.

Rye whiskies tend to be a bit more peppery and earthier, but have fruitiness buried in their characteristics. Canadian Club is also a blend that includes rye in its mix and was sold as such during prohibition in the US due to their favouring it. Japanese whiskies were similar to Scotch originally but are now generally aged in indigenous Japanese oak.

WORLD WHISKIES

Although each spirit has a unique history, vodka, rum, tequila, gin, bourbon, whisky and cordials are produced using similar methods. Variations occur in the raw materials and the stills used to create these potables, but the basic production process can be broken into six steps.

The first step is selecting the raw materials to be used. Each ingredient used adds to the overall flavor profile. They are then milled, before being mixed with water which begins the mashing process.

This is followed by the fermentation stage, during which the mash breaks down and ferments, resulting in a process which creates ethyl alcohol and carbon dioxide.

Distillation then separates the alcohol and water and forms a pure alcohol liquid. The distillation process is often repeated to ensure pureness of the liquid.

The final process is the aging, or maturation stage. The ageing process is different for all spirits and can range from hours to decades.
