One of the delights of herbal medicine is bottling up seasonal tastes. These potions are oſten ephem- eral in nature. Sure, you can follow the same recipe again, but each season and year brings different flavors and memories. This spicy liqueur gathers some of my favorite autumn flavors like dandelion root, hawthorn, and rose hips and combines them with the spicy aromatics of ginger, all spice, cloves, and cinnamon. The result is a blend that supports your heart and digestion. This recipe is very amenable to substitutions. Play with the ingredients to find what suits you best! If you don’t have Honey Shine spirits you can use another or other 190 proof, ethically sourced spirit (or a lower proof and omit the water). Heart Warming Autumn Digestive Liqueur BY ROSALEE DE LA FORÊT ingredients directions 150 grams fresh dandelion root, chopped (roughly 1 cup) 50 grams dried hawthorn berries (roughly 1/2 cup) 35 grams dried rose hips (de-seeded) (roughly 1/4 cup) 2 inches fresh ginger, minced 6 allspice berries 3 cloves 1 cinnamon stick 1 cup honey 1 cup Honey Shine Spirits 1 cup water 1. Place all the herbs and spices into a 1 liter or 1 quart glass jar. 2. Add the honey, spirits, and water. If necessary, continue to fill the jar with half spirits and water until it is full. 3. Cover with a tight fitting lid. Shake well. Label. Continue to shake oſten each day. 4. Taste aſter two weeks to determine next steps. It could be delicious as is. Or you could choose to let it steep more, add more spices, etc. 5. When ready, enjoy this in small sips before or aſter a meal. Yield: 3 cups
