Blend green pea fl our with a little coconut milk until smooth. Add remaining coconut milk, vanilla essence, banana essence and sugar. Cook over low heat, stirring constantly with a wooden spoon. 2. When mixture is hot, stir in evaporated milk and continue stirring until mixture boils and thickens. Remove from heat and stir in banana slices. 3. Pour mixture into a 17 x 27-cm tray. Allow to cool then chill in the refrigerator. 4. When cold, stamp out rounds with a pastry cutter or cut into squares. Serve in individual serving dishes topped with a little palm sugar syrup. Banana Coconut Cream with Palm Syrup Recipe

Ingredients :

Green pea fl our (hoon kway powder) – 1 packet, 85 g

Coconut milk – 750 ml, from 1 grated coconut and suffi cient water

Vanilla essence (extract) – 1/2 tsp

Banana essence (extract) – 1/4 tsp

Sugar – 90 g

Evaporated milk – 3 Tbsp

Bananas – 3, peeled and sliced

Palm sugar (gula Melaka) syrup – 1 recipe

Method :

1. Blend green pea fl our with a little coconut milk until smooth. Add remaining coconut milk, vanilla essence, banana essence and sugar.Cook over low heat, stirring constantly with a wooden spoon.

2. When mixture is hot, stir in evaporated milk and continue stirring until mixture boils and thickens. Remove from heat and stir in bananaslices.

3. Pour mixture into a 17 x 27-cm tray. Allow to cool then chill in the refrigerator.
