1 INTRODUCTION

The second part of the study was prepared in the period from November 2013 to May 2014

and focuses on preparing the list of farmers in the Ústí Region, the list of farmers´ markets

organizers, the offer specification of products and their producers (including the database of

products and their producers in ÚR) and giving examples of markets in other regions.

This period is not very convenient for addressing farmers selling at the markets as in most

cases markets terminate their operation in November and newly open in March.

To prepare the list of farmers and the market organizers, first agrarian chambers in the Ústí

Region, then directly the farmers at the markets were addressed. Not all the organizers were

willing to provide the contact to “their farmers” so their names were acquired e.g. at the

organizer´s websites and subsequently traced either at the market directly or on the

websites. Websites were another source of the farmers and possible contacts search1.

A farmer was included in the list after granting his consent which was obtained either directly

in the personal interview at the market or in a phone communication. We can say that most

of the addressed farmers was willing to grant a consent, they look at it as a way of possible

publicity of their farm and their products as well as the opportunity that they might be

addressed by another organizer than the one they cooperate with at the moment. For some

farmers to be listed means a possible start of their presence at the markets.

In the list there are also farmers who do not sell at the markets but sell their products “from

the courtyard”. It pays off for the farmers who haven´t got too high production e.g.

beekeepers, small greengrocers or sheep, pig or goat breeders.

Some of the vegetable growers state as a reason of the sale from the courtyard the fact that

the amount of rent for the sales place is too high as opposed to the price of the sold goods,

e.g. seedlings. Some addressed growers perceive the market organization as a prestige for

the city/community and think that they should support the farmers in the way of a financial

discount for the sales place. They see the interface of a private person organizing markets

redundant.

The following chapters include the list of markets organizers, then the list of farmers who

gave consent to be listed in the public list and state their products which they offer for sale.

Then there are three examples of markets in other regions and annexes listing the farmers

who did not give a consent or do not come from the Ústí Region or it was not possible to

trace their contact either for the reason of their selling products occasionally so they are not

registered sellers or the organizer did not allow the contact provisioning.

part of the study was complemented with some other organizers who we have managed to

get in touch.

3 THE LIST OF FARMERS AND SELLERS The list of farmers was developed by direct addressing of the sellers at the market or

acquiring contacts from several organizers or searching on websites and follow up telephone

addressing.

The farmers were explained the purpose of the prepared list. It is divided by districts and by

sections according to the production. The name under which the farmer sells his products is

always stated, then the contact and the name of the community or a town where the farmer

can be found.

First websites are stated in priority as the site visitor can find all necessary there – production

and necessary detailed contacts. Who has no websites available stated which contact he

wanted to publish: an e-mail address or a telephone number. Then basic production and

information if it is a sale at the market or from the courtyard is mentioned.

94 farmers and producers of the regional products in total were listed of which 42 fruit

growers and greengrocers, 3 producers of meat products and sausages, 7 bakers,

10 beekeepers, 2 fishermen, 3 herbalists, 9 providers of poultry, eggs and dairy products,

8 producers of drinks without distinguishing if alcoholic and non-alcoholic ones and 9 others

including the sale of spices, Greek specialities, sale of animals for slaughter, pasta, oils.

3. 8 Regional Food Mark

The below stated table lists the farmers who received the

Regional Food Award for their products in 2013 with stating the

awarded product.

The Regional Food is a mark awarded by the Ministry of

Agriculture to the agricultural or food products of the best quality

which had won in the regional competitions.

The Regional Food fulfils the most strict European and national requirements for the food

quality and proves its uniqueness compared to the products which are available at the

market.

The Regional Food logo at the packaging of the products guarantees to the consumer that

the raw materials used in their production come from the home production and that the

customer gains not only the guaranteed quality and taste but by purchasing it he supports his

region – the farmers, producers and sellers help maintaining and increasing the number of

jobs in the region4.

An interview with Miroslav Dušek, the market organizer

The market where we are now is large and I must admit that it is nice because the stalls look

the same or very similar. How many sellers are here and are the stalls yours or belong to the

sellers?

The stalls belong to the City District of Prague 6 which bought them when we were launching

the markets and uses them for other events too. There are about 90 sellers at the market

today.

It means that the City District helps you to organize the markets?

It helps us with the place which was selected particularly and partly with the inventory which

have been the purchased stalls.

So the sellers pay the rent for the stalls and the place?

Yes, the amounts are different according to the selling goods range.

How long have you been organizing the markets?

We were the first in Prague and have been organizing the markets for five years.

Which goods range will be represented there?

We are mainly trying to support greengrocers, there are about 30% of them, then bakers and

butchers who represent another 30% and the rest is a various range of goods which enriches

the market.

I can see the stalls with refreshment here. Do you monitor their amount or do you enable the

sale to everybody who applies?

We do not want to have too many stalls with refreshment but to be interesting and tempting

for the visitors. We are always trying to attract the visitors so we have a foreign food and old

Czech cuisine tastings.

The refreshment food should be made from the home-made raw materials either their own or

bought at the farmers´.

Do you have an accompanying program?

We have the children´s corner here where students organize some programme for children.

We are trying to lead the visitors to the healthy lifestyle not only with the offer of the food but

e.g. showing the way of waste separating. On Saturdays we have a small music performance

– an accordion, guitar. It is not a concert but the accompaniment and background of the

market.

What king of market promotion do you choose?

It is definitely a facebook, our websites, the advertisement e.g. on the benches. We do not

use advertising very much because the markets are held every Saturday and as they are

regular people are used to come. We also use the communication channel of the City

District.

What do you see a strength or a weakness of your market?

Goods variety is definitely the strength and also catering which is interesting for people. Our

interest is for the people not only to buy but also sit down, have a rest and eat well.

I consider the risk of weather a weakness. We are a market in the open air so when it rains

and the wind blows it is unpleasant not only for the visitors but also for the sellers. When we

know in advance, maybe in December, that the weather is going to be really bad we cancel

the market.

When talking about the waste separating, which way do you dispose the waste?

The City District takes care of the usual waste, EKO-KOM company, which is our partner,

helps us with the waste separation and e.g. delivering education material for the children´s

corner.

Which is your target group, how many people come by?

The market is open till 2 p.m. and from 5 to 10 thousand people come by. We can say they

are of all age groups.

Apart from food do you have e.g. basket makers or similar production represented at the

market?

Yes, we have basket makers, spices, products from honey. We are trying for the market to

be really interesting. We also organize strawberry or flower markets seasonally.

Where do your sellers come from?

The sellers come from many places. From Moravia, the region of Mělník, Podřipsko, from

various places.

So we can say that your market rather supports Czech food than the regional ones?

Yes, that is so.

Do you have sellers who sell foreign goods?

Yes. As we are in Prague 6 where embassies are situated we are trying to cooperate with

them. We have built a foreign corner which covers about 10% of stalls. It is Italian, French,

Greek goods etc. We also make a survey among people and the results is they are

interested in buying fish, olive oil, Italian cheese and that is how we accommodate their

requests.

Do you have permanent sellers or do you still search for new ones?

New ones apply but we have had a permanent group we cooperate with for 5 years and who

we and the customers approved. But as we always look for new things we have to have new

sellers, too. A lot of offers come. But we do not do “blind” sale only according to the offer

from the electronic communication. We agree a meeting at the market and want to know

what they sell, manufacture, what they produce.

Where about can the visitor find the Market Regulations?

It is located with us at the production tent. At the edge of the market and in the centre there is

an orientation plan so the visitor can easily find what he is looking for. There is a name of the

farmer, what he sells and the number of the stall so the buyer finds what or who he is looking

for.

4. 2 Plzeň

Plzeň farmers´ markets

An interview with Tomáš Popp

How long have you been organizing the markets?

Since 2010, this year is the fifth season and we have been one of the first organizers. The

first market was held in the year 2009 in autumn in Klánovice. That time we were preparing a

project which focused on food. From that the farmers´ markets developed.

How often are the markets held?

1x in a fortnight, from March to December. In the interim period when the markets are not

held people can buy in one of the farmers´ shops located in Plzeň. On top of that people

know their farmers and when they travel they may stop by and make a purchase there.

There are visually uniform stalls at your market. Are they yours or have the sellers purchase

them?

The stalls are ours. We bought some of them from the grant. Their purchase was a part of

the project implemented. The rest was bought for our own money when we saw that people

were interested in shopping at the market. We have 25 stalls and there are about 40 sellers.

So there are sellers who have their own mobile stall. If the seller has his own stall we make

him send the photo to see in advance how and where they sell. If it is suitable and the seller

has a range of goods we like we include him to the market. If we like his range of goods but

he has no stall he has to wait until one of them is free.

So the sellers pay the rent for the place and the stall?

The sellers pay for the sales place regardless how many meters they occupy, a uniform

amount 800,-CZK.

You are saying the range of goods we like. How do you select what you are going to offer?

We know all the sellers and we have been to all the farms where we could see how things

are generated and in which environment. E.g. it is a great advantage when the butcher owns

the animals and the breeding is followed by the slaughter and meat processing. That is the

fact which we prefer. We have an idea who and which goods should be there and we select

the seller according to that. There could be easily 60 sellers at this place, but we do not do it,

we want real quality, we do not need quantity.

Do you have any permanent sellers for the period of the markets duration or do you still look

for new ones?

Of course we have sellers who we have been cooperating with for a long time. There are

about 20 of them. Today we do not look for new ones but new ones apply and if we like them

we include them to the market. Of course we monitor the type of goods and regulate the

number of stalls from each kind. It is better to have a smaller queue at the stall than an

unhappy seller.

I have noticed that the sellers from the other regions also sell here, so your market does not

condition the sale of a regional food?

Of course it is an advantage when goods from the region are sold there. But if we do not

have a greengrocer or a milkman then we are happy for the offer from another region. This

year two mini dairy should be opened in the Plzeň region so it is possible that they will sell

here. It is good for us when the market is local but if something is missing in the offer we

complement it with the seller from outside.

And what about foreign goods?

We have been resisting it for a long time and at the moment there is only one stall with olive

oil. There were lots of offers. But we wanted to maintain the level of the farmers´ markets

with the Czech products. Later we made a survey among people and the result was they

were interested in the goods imported. For example they wanted sea fish which we have

been trying to resist from the beginning. The sellers who sold freshwater fish bought sea fish

and we did not want that. Finally we found out that we should make a little compromise and

allow maximum 2-3 stalls with imported goods. We would also like some food with a story.

Do you offer accompanying programme to the visitors?

At the beginning we had an accompanying programme but later we came into account that it

would be better to let the food speak and not to do a big theatre around it. This year we had

a plan to organize a festival of apples but as we are moving to another place due to the road

repair, we must postpone it.

How do you dispose waste which is generated during the market? Does anybody help you

with that, e.g. the city?

We have a contract with the Gondola hotel in the area where the market is held and they

have containers for the separated waste. So we are used to separate waste, the sellers do

the same and the bio waste is taken home by the sellers. The city is not involved in the

markets organization, neither in the waste disposal.

How many visitors come to the market?

About three thousands. They are mostly people who like quality food and are interested

where it comes from. In the morning they are mostly older people, later families with children

and younger generation.

What is the strength and weakness of the market?

Food offer is definitely the strength. We have various offers from the proved sellers and I

think that not only buyers appreciate it but also the sellers do. We deny having dealers here

and that is our motto. We have educated our sellers, we teach them to sell, designate their

goods. Transparency is the other strength of our market. People can find the list of sellers

who are going to be at the market on the websites. Not all the organizers do that, it may be

for the fear that another organizer would “drag” the seller from him. That has been so from

the beginning. We also cooperate with the restaurant which buys some goods from the seller

for further processing.

Somebody could consider smaller space where the market is held a weakness. On the

contrary we see it an advantage. People get close and associate.

Do you stick to unwritten rule that the stalls should be always built in the same place so the

buyers would always find them?

The same place of the stall is more required by the sellers. The space here is not very large

so the buyer will find his stall anyway but the sellers have a feeling that if they stand in

another place they will not sell as much as in the place they stood before.

How do you solve the promotion of the market?

We have a contract with Mladá fronta which we distribute in a printed form at the market.

Recently we have had a page reserved where the profile of sellers was stated. Then on the

websites, facebook. The city sometimes helps us with the promotion on their sites

Do you enable the sale of handicraft at your market as e.g. baskets, small wooden products,

decorations?

At the beginning we sold local handmade producers. Today there has not been much space

and I do not look for such an offer.

Apart from the stall with coffee I cannot see any refreshment which is a custom at the

markets.

I have experienced that coffee and some pastry in the morning was sufficient for the visitors.

We have tried to offer halušky, goulash, beer, but there was no interest.

A thought at the end – the markets should be built from the bottom. In Western Europe there

were farmers who needed to sell their goods, they wanted sales and so they established a

market. In Bohemia it is the way round. People want to eat something of a good quality, tasty

and therefore they started to look for sellers. And they found out there were not that many of

them. The farmers found out there was an interest in their products so they started to

increase their production. New ones appeared, built a farm. The typical example is Držovice.

4. 3 Karlovy Vary Farmers´ markets Karlovy Vary

An interview with Mrs Božena Turoňová – markets coordinator

How long have you been organizing farmers´ markets in Karlovy Vary and how did they

come about?

We have written a project with my colleague and got a grant for starting the farmers´

markets, purchasing stalls, tables and other equipment which is necessary for it. That time

we were inspired by Prague and Plzeň. The prerequisite for obtaining a grant was a

connection with a partner and a financial participation. So I addressed the Municipality of

Karlovy Vary and they accepted. This year it has been 4 years since we organize the

markets and I can say they are a permanent part of the activity in the city. The City of Karlovy

Vary is the organizer providing the market from the technical point of view. I as a coordinator

of the market I provide for the market cast by the sellers who I visit, monitor where and how

the goods sold at the market is produced. I go to the training and monitor the activities

around the markets. As ones of the few we are also in the Association of the Farmers´

Markets. I am in charge of the market promotion. The city also helps me with the disposal of

waste generated at the market.

Not everybody can show that the city on its expenses helps with promotion, wastes. Which

form of promotion do you choose?

Mainly press releases, articles for the magazines, you have to write permanently about

something new, make yourself visible. It is difficult to get through and what can be

permanently written about farmers´ markets? You have to attract people.

What would you say about your market, what is specific about it?

You know these markets really revived the city. Karlovy Vary is known as a spa town with

foreign clients and my target was to bring local inhabitants to the city, young people. We

provided babysitting with a programme and by time more young people and families started

to come. We followed with a series of educational programmes focused on mothers and their

children dealing with the healthy lifestyle. Today a lot of children suffer from allergies,

obesity, depressions and we are trying to educate them in that respect. We are trying to

promote the farmers´ markets as one of the places which show healthy lifestyle.

We can consider specific the fact we managed to succeed in Germany. I was personally

addressed by German organizers to implement farmers´ markets turnkey as they wanted to

experience the atmosphere. Later I received an offer to implement an exchange market. It

was a perfect chance to present Czech quality goods. The holding of the market was very

demanding (all contracts had to be translated into German, the German side has different

hygienic requirements etc.), but the result was worth it.

How many sellers are present at your markets and do you have permanent sellers or do you

look for new ones?

We have 31 stalls and the dedicated space would not house more. But we do not want to

change the place. Historically there has always been a market and people are use to it. Of

course we have our permanent sellers but who would like to have a market which would be

all the time the same? So we are trying to make changes, new offers, so we look for new

sellers, I monitor the goods quality and try to offer something more to the people as various

topical lectures and workshops. Of course I monitor what people buy the best, where the

longest queue is, I talk to the farmers and get feedback who sells at the market more and

who less. I always have to look for new farmers, new initiatives. What I watch the most is the

Regional Food competition, and I invite the winner to our market.

You have your own stalls, uniform, do you allow the seller with his own stall?

If they fulfil the conditions of the market participation, have quality goods then they can sell at

our market and have a lower rent for the stall.

Do you manage to sell regional products at the market or do you have to invite sellers from

another place?

As we say – Ore Mountains – tough life that is reflected in our production for example

vegetables and fruit. There are not that many greengrocers and fruit growers in our region so

we have to help ourselves with the sellers from the other regions, e.g. from the Litoměřice

region, Moravia. I am only concerned of the distance the farmers have to travel before they

comes to us and the expenses for their journey to be able to sell here so I agreed with the

city and some farmers have the charges for the rent of the place and the stall decreased.

I have noticed there is a stall with various bags, pocket holders etc. Why this type of stall at

the farmers´ market?

You know I have a social conscience so I try to sell goods from the protected workshops at

the market. That brings me the greatest satisfaction. These workshops produce nice and

also useful goods but there are few customers. Being at the market gives them a chance that

someone notices them and starts selling their goods. Today you will find Český Západ, o. p.

s. protected workshop at the market which makes various pocket holders, aprons, buckwheat

pillows.

Is there anything you would like to change at your market?

Due to my aesthetic feeling I would like to unify all the stalls, even the ones which some

sellers build themselves. I would definitely welcome an integrated offer of really approved

sellers which would be accessible for the market organizers. The offer would serve as one of

the communication channels among the organizers for the exchange of experience with

sellers, recommendation etc. I think that would facilitate not only our work but save time to all

who prepare the markets.

Are you afraid that another organizer would take over your sellers?

If I or another organizer did not want to provide a contact for his seller nothing is easier than

come to a market, agree with the sellers and find a contact from them. If the seller has a

feeling it would be better for him to go to another market and he can consider what is good

for him, he will be pleased to give you the contact. Most of the sellers are very loyal and if

they are happy at your market they have no reason to leave. On top this openness is the way

to healthy competition not only among seller but the organizers, too.

5 Conclusion

This part of the study focuses on the preparation of the list of farmers in the Ústí Region, the

list of farmers´ markets organizers, offer specification of products, their producers (including

the products database and the producers in ÚR) and also gives examples of markets in the

other regions.

Their representation within the region follows from the given list of farmers and sellers at the

farmers´ markets. If we have a look at the most extended group of farmers as fruit growers

and greengrocers, it is obvious that the largest number come from the Litoměřice region.

From the district which is favourable for growing fruit and vegetables not only with the

agricultural land area but also climate conditions. On the contrary most of the addressed

beekeepers come from the Most region.

A lot of farmers or sellers are not included in the list either for the reason that a contact has

not been acquired or we failed to address them in spite of the study author effort. These are

stated in the annex together with the farmers and sellers who sell at the markets in the Ústí

Region although do not come from this region.

There is a note given at the farmers´ name if they sell at the markets or from the courtyard.

There are lots of those who sell from the courtyard mainly for the reason of unprofitability of

their participation at the market. The reason is insufficient capacity of the farmer – either time

of labour. Other reason is the costs for the participation at the market – transport to the

market, the rent of the stall compared to the prices of the goods is not balanced in many

times and it is unprofitable for the farmer. They are mainly sellers of seedlings, smaller

amount of fruit and vegetables whose income from sale hardly covers necessary costs.

These sellers would welcome the organizer´s helpfulness in the possibility of decreasing

costs for the participation at the market or total elimination of an organizer as a natural

person.

It is worth mentioning the opinion of one of the markets organizers who would welcome

publishing the list of farmers and sellers at the markets which would serve to all the

organizers for the exchange of experience with them and the possibility of the offer variation

at their market.

This annex includes farmers who could not have been incorporated into the public list for one

of the following reasons:

- We failed to find necessary contact.

- We failed to address the farmer directly in the course of preparing this part of the

study.

- They refused to be included in the public list.

- They sell at the market in the Ústí Region but do not come from the Ústí Region. So

they are not regional sellers.
