Paul Conti’s Winery
President Norm welcomed all of the members and the following guests:
Kaye Douglas, Stephanie Lowndes, Don Slater, Gary Scott, Brian Cooper, Bill Olsen and the two Exchange Syudents Anson and Akin.
Also present was Jason Conti who was to give us a tour and talk about the winery.
The evening was a bit cool and windy but we were protected in the winery alcove where we had the BBQ’s operating ready for the lovely Scotch Fillet Steaks.
Neil Cook with the help of Paul Conti and another past Rotarian prepared the canapés of Anchovies on French bread sticks and also some marinated Octopus.
These went down well with a tasting of some wine and beer.
Jason informed us that they are one of the last remaining winery’s that pick the grapes manually off the vines and that the have three properties that they grow the grapes on. It was good to hear they don’t use bare feet anymore to crush the grapes. The image of Paul jumping up and down in a vat of grapes would not be a pleasant sight lol. Reading between the lines I think Jason was saying Paul is not as fast as he used to be. Were not getting any younger!
Jason took us into the winery and showed us the grape crushing plant and the vats into which the juice is promptly pumped into. It is quite a process especially with the different ways in which the white wine is handled in relation to the red wine.
The intricacy of keeping the air out of the white wine and the separation of the clear liquid as opposed to the aeration of the red wine and the constant mixing required to keep the air in the wine and the addition of the yeast etc.
Constant monitoring by tasting the fluids during the process is required to maintain what the result is going to be.
A very hard job said Jason, but someone’s got to do it.
The white wine vats have to be sealed on the top with CO2 to prevent exposure to the air whereas the red wines are open to the air.
Once the wines are ready to be stored they are pumped into the wooden barrels which can be used up to about 6 times before they have a buildup of unwanted microbes that will affect the wine in its maturing process. The new wooden barrels cost about $1300.00 each.
The whole process requires constant cleaning of the apparatus to maintain no contamination of the finished product.
The other entrée of half an Avocado with Prawns in the middle with a drizzle of jus over the top prompted a fast withdrawal from the tour.
We thanked Jason for a very informative evening.
I think a follow up Vocational Meeting should be organised for us to assist in the bottling of the finished product. Don’t worry Paul we won’t drink too much.
More fellowship followed the entrée as the steaks were put up for cremation which is not really fair to say because our two cooks Colin and Andy did a great job.
The people that liked their steaks rare had their wish and the rest were to everyones taste.
Really nice thick Scotch Fillets with a nice potatoe and rice salad to accompany them.
Compliments to the chefs and Paul for a great meal.
Everyone enjoyed the evening and had a relaxing time catching up with past acquaintances.
The Vocational evenings are proving to be a real hit with the members with the variety and fellowship away from the more structured meetings.
All members please remember that there is no meeting next Monday due to the
Public Holiday for the Queens Birthday.

A Second Ago ?
Phil Cousins has sent out the roster for the Perth International Golf parking requirements so we must pull out all the stops to fill all these positions with members, family and friends to ensure we have a smooth run at this great fund raising event for our club.
I have found out that the current website service at rotarnet is being closed at the end of this year which means that we have to create a new webpage and organise another hosting company for the webpage.
This also entails us having our own Domain Name possibly “rotarywanneroo.org” that people can type in to their search engine and find our website easily. A Google search for Rotary Wanneroo should also point to our site.
We have been paying approximately $200.00 every 6 month period to host our current website but I can organise and build a webpage with hosting through GoDaddy for approx $11.00 per month. This webpage is also mobile friendly which means the display is automatically changed to be easily viewed on the mobile phone or tablet. This webpage should compliment our facebook page.
Once I have something concrete organised I will let you know.

It’s That time of year again!
19th to 20th October
We are really going to be stretched to the limit with the Golf and Telethon being on the same weekend!
A roster will be available in the next bulletin and I ask that all members please set aside some time to do a shift to rattle the cans at the Dolphin Wishing Well.
Hopefully we will have better weather this year and the Mid-night to Dawn graveyard shifts have the extra clientele from the Breakwater to keep them entertained instead of having to beat retreat.
Thoughts on taking a gas heater or Weber BBQ to keep warm or cook some sausages, rolls and an Esky for drinks ?
I will check with Hillarys to see if they have any ideas.
