Kransky and Tangy Carrot Rolls

Ingredients
1 tablespoon olive oil
4 Kransky Sausages - scored
4 hot dog buns – warmed & buttered
200g carrots – peeled and cut into thin matchsticks
1/2 cup whole egg mayonnaise
1 teaspoons extra-strong Dijon mustard - plus extra to serve
1 tablespoon apple cider vinegar
1/4 cup fresh continental parsley leaves
Method
1. Place the mayonnaise, vinegar, and mustard in a bowl and stir to combine.
2. Place carrot in a bowl and fold through.
3. Season with pepper.
4. Cover and set aside for 20 minutes.
5. Stir through the parsley and season.
6. Heat the oil in a large frying pan over medium-high heat.
7. Cook the sausages, for about 8 minutes or until cooked through (turning often).
8. Fill the bread rolls with a little carrot mixture, sausages and top with extra mustard.
