From the Garden:
Apples,Tomatoes, Chillies
Equipment:
Chopping board,chopping knife,measuring cups, kitchen scales
large pot
Ingredients:
1.650 kg green tomatoes cut into chunks
6 firm apples, cored, and cut into chunks
300 grams peeled and sliced onions
2 chillies split and finely chopped
2/3 cup chopped candied ginger
2 cups (250ml) cider vinegar
2 cups raisins
2 cups dark brown sugar
2 tablespoons yellow or black mustard seeds
2 teaspoon ground cardamom
1 teaspoon ground allspice
zest of one orange peel
Method:
1. Mix together all the ingredients in a large, non-reactive pot.
2. Bring to a boil, then reduce heat to a low boil and cook,
stirring frequently, for 45 minutes, until the mixture is thick and
jam-like.
3. Once finished, ladle the chutney into clean jars.
