An Interview with The Parsnipship

There’s nothing quite like a f resh salad or f ruit platter on a hot sunny day, and with the summer monthsf ast approaching, many of us will be ready with our trowels to harvest the f irst crops f rom the garden. ForBen Moss and his team at The Parsnipship, vegetarian cuisine is a labour of love. Having worked as a chefat various restaurants over the last twenty years, Ben has developed a unique style of cooking and hasdevoted his t ime to perf ecting his mouth-watering vegetarian and vegan products. The Parsnipship wasborn in 2007 when he began selling his produce at local f armers’ markets, and the company has sinceevolved, of f ering cookery classes and wedding catering.

Helen Rossiter, who describes herself as a “tof u and cat loving vegan, with a passion f or f ine f ood, yoga,music and crochet” is the Publicity & Cookery School Coordinator at the Parsnipship, and tells us moreabout their venture.

Tell us a bit about yourselves and yourpioneering vegetarian and vegan venture, TheParsnipship.

The Parsnipship produces and sells unique and originalvegetarian & vegan f ood at f armers markets, f ood f airs,events and wholesale too! Very soon we will be selling ourproduce online, through our website. We also have apopular Cookery School, with monthly cookery coursesteaching imaginative cooking with seasonal f ood, out ofthe box!

Why is vegetarian and vegan food so important to you?

Vegetarian and vegan f ood is the f uture as f ar as we are concerned. Meat eating is bad f or animals, theenvironment and our health. We aim to show that vegetarian and vegan f ood can be outstanding in termsof taste and variety and can hold its own in terms of f lavour against any meat dish.

Your summer calendar is burst ing with markets and fest ivals galore. Which are you mostlooking forward to?

We are currently at Glastonbury Festival, which we hope is going to be f antastic. Alongside our regularf armers’ markets across South Wales, we are also really looking other f ood f estivals in including The BigCheese at Caerphilly and Cardigan’s River and Food Festival.

What would you say are your best-sellingproducts?

Our Glamorgan Crumble and Indian Summer Pie remainconstant f avourites among our customers.

Your approach to cookery classes is unique,offering students an opportunity to explore andget creat ive with seasonal vegetables andproduce. Do you have any t ips on select ingseasonal produce?

Find out where your local f armers’ market is. They alwaysf eature small companies who take great pride in selling the very best ingredients and products grown andmade close to where you live. Here you will be guaranteed to pick up some really wonderf ul f reshly pickedf ruits and vegetables.

What is your most treasured kitchen appliance orgadget?

A good sharp knif e, nice heavy pots and an induction hob!

What advice would you give to someone lookingto cut down on their meat intake?

Try cooking vegetarian once or twice a week to start.There are some f antastic recipes available – it ’s possibleto make lots of your f avourite dishes without the meatand they can taste delicious!

When you’re not cooking, teaching and selling at markets, what does the Parsnipship teamenjoy doing?

We enjoy being outside and enjoying the wonderf ul Welsh countryside!
