Car#ll Carruthers with NoNuts Golden Peabutter uses local peas to make a nut-free alternative peanut butter, not only for those who have nut allergies, but also for those who can’t have gluten, soy, dair# or e$gs. “You can substitute peabutter in almost any recipe that you could use with peanut butter,” Car#ll says, noting that the substitution is one-to-one in a wide variety of recipes. “There are a lot of recipes for granola bars, or you could use it in a Thai sauce.” The peabutter is created using mostly local ingredients, including the peas, which are grown in Legal. “We contract farmers to grow them for us, because they are a special variety of pea,” she says. “The canola oil comes from Lethbridge and the sugar comes from Taber.” W"ile there are lots of recipes for you to tr#, Car#ll recommends a peabutter popcorn. “The recipe includes peabutter, corn syrup and some brown sugar,” she says. “It’s not nearly as sweet as caramel corn, but it tastes ver# similar.”
