This is a great recipe that uses root beer as an alternative to the classic beer can chicken. Brining in root beer will add sweetness and complexity to the flavour of the meat that will have everyone asking for more!

INGREDIENTS1 whole roasting chicken

1 1/2 cups of brine - we recommend Jules & Kent Daily BrineDenzel’s Root Beer BBQ SauceYour favourite root beer

SETUPSet your barbecue up for indirect cooking at 275-300f

COOKINGPlace the chicken on the grill and close the barbecue lid.

Cook for approximately 3 hours, adding more wood chips halfway through, until an internal temperature of 165f is reached.

Glaze with Denzel’s Root Beer BBQ Sauce during the last 10-15 minutes of cooking

Remove from heat, tent with foil and allow to rest for 10 minutes before serving.

Simmer the Daily Brine in 1 litre of water, then set aside and allow to cool.Thoroughly rinse a fresh whole chicken and place in a large stock pot with the cooled brine liquid.Add root beer to completely cover the chicken and use a plate to weigh it down.Refrigerate for 12-16 hours, then remove from brine and rinse thoroughly, then pat dry.Soak 4 handfuls of hickory wood chips for 2 hours.Open 1 can of root beer and pour out half of the soda. Place in a beer can roaster and then slide the chicken cavity over the can.Drain the wood chips and add them to the hot coals or smoker box.
