hose of you who have been long time cus-tomers of the Bean may remember Eileen“Bean” Jessurun, younger sister of Barry and
Brian and founding partner and namesake of theVanilla Bean. Eileen left the family business andmoved with her husband Frank and two sons Quinnand Cassidy to Johnson, Vermont back in 2002,shortly after the launch of Vanilla Coke.
This past May, Eileen graduated from JohnsonState College with a Masters degree in Education, buther journey to that degree was not a traditional one.A 1985 graduate from Pomfret Prep school at age 16,Eileen decided she wasn’t ready for college anddecided to work as a waitress at the Golden LambButtery in Brooklyn and travel. After a few tripsoverseas and across the US, and many visits to cafesin the process, Eileen convinced her parents andbrothers to help her open the Vanilla Bean in 1989.
After moving to Vermont, Eileen started a special-ty food business making organic kettle corn to sell instores – at that time, the popular sweet, salty pop-corn could only be found at fairs and festivals. Shecame up with several flavors including maple andchipotle and grew a thriving business producing itby hand. She was beginning to look into automatedproduction when her path suddenly changed course.
Although Eileen had an extensive background inthe food business, she had also been pursuing a par-allel course in the healing arts. She attended massagetherapy school during a one year hiatus from theVanilla Bean in 1995, and soon began exploring theuse of tuning forks therapeutically in the part timemassage practice she maintained after her training.
Fascinated by the outcomes produced by the appli-cation of acoustic frequencies on the body, Eileencontinued this practice, which she calls “sound bal-ancing”, part time even as she was growing her pop-corn business. She found the sound to be particularlyeffective in relieving people’s pain and also anxietyand other emotional stress. Realizing that audible
sound was not scientifically recognized as being ableto treat these issues, and also after receiving theinsight that “the world needs harmony more than itneeds another snack food”, Eileen felt inclined to goto college and get some degrees, and to learn andteach about sound.
She sold her popcorn business and entered into aunique program through Community College of Ver-mont called Assessment of Prior Learning, whereadults can earn college credits for documented lifeexperience. Through the portfolio produced in thisone semester course, Eileen earned enough credits toenter Johnson State College as a senior. She attendedfull time and graduated in 2009, entering immediate-ly into the college’s Masters in Education program.
While at Johnson, Eileen

roots/folk rock that hits with a gritty, earthy edge. There’s an authenticity to Chace that makes hermusic captivating, and in the same breath makes herdifficult to categorize: she’s a singer-songwriter whotranscends a number of genres, pulling togethercommon threads into solid music that commands alisteners’ attention.”-Worcester Telegram andGazette. Becky Chace believes that music should beused as a tool to bring people together. Her entirecareer has been a testament to her vision of whatmusic can do. Like her idols, Dylan, Springsteen, and Lucinda Williams, she has always believedthere is more than one way to get her messageacross. Chace proves genres and styles don’t matteras long as the singer expresses herself with passion.

Our Pricing Practices1. Sales Tax Included - Our prices include the
6% Connecticut Sales Tax. The prices listed on themenu are exactly what you pay. Our prices may seem tobe inflated; however, a $8.50 menu item is actually$8.02 + $.48 sales tax. Furthermore, this practice makesit easier for the customer, especially if that customer isa child who has exact change for a cookie. What yousee is exactly what you pay - what could be simpler?
2. Not Market Standard Pricing - We are nottrying to fool the customer into thinking that $8.95 isless expensive than $9.00. We find this type of pricinginsulting to our customers. However, the reason it isused so extensively around the nation is that it workseffectively. We don’t like that practice, and we also liketo believe that our clientele is not so easily fooled.
3. No Pennies, Dimes or Nickels - Because ourprices include tax and we do not price in the standardway, we do not have to use pennies, dimes or nickels. This is a service to both the customer and to us. Wedon’t give you lots of change, and we only have to usequarters and fifty-cent pieces. This also helps our staff tobe more efficient performing transactions, which savestime and money. An added bonus is that we don’t haveto count change at the end of the business day.

conducted thesis research - “Exploring the Effects ofAudible Sound on the Body and its Biofield”. The biofield is composed of theveritable electromagnetic energy of the body and the putative (as yet unproven)subtle energy that surrounds and interpenetrates the body. Eileen’s research hasshown that it is this system that interfaces and responds to the sound inputs. Herthesis won an Academic Excellence award and gained national and internationalrecognition, resulting in the opportunity to engage in joint research this summerwith global authorities and leading edge researchers on the human biofield.
This fall, she will be teaching a 1 credit course on Sound Healing at JohnsonState College, which has a unique undergraduate program in Wellness andAlternative Medicine. This course, which will explore the use of sound in bothalternative and conventional medicine, is the first of its kind in a public collegein the US.
Eileen lectures regularly on the therapeutic use of sound and also teaches thesound balancing method privately. You can learn more about Eileen and soundbalancing at www.eileenmckusick.com c
