At your request, the yacht will take you wherever you desire. Be it away from crowds, politics, clocks and diaries ; or into the heart of the action to hotspots in the likes of St Tropez or St Barth, Vickyh Yachting knows the best locations.

gUlETSTurkish Gulets are very similar to the working

boats of old times, only equipped with engines and modern facilities. They allow charterers to explore the beautiful Turkish coast in comfort and style, while also experiencing a unique traditional atmosphere. We inspect all the Gulets every year and make a very careful selection, choosing each one for its standard but also –and most importantly- for its captain and crew.

Gulets provide large open deck areas for sunbathing, and are equipped for watersports. The cabins are mostly doubles, with some twins, and all have en-suite shower and toilet. One way cruises and land excursions can be arranged, and the Gulets can also visit Greece. They are designed for comfort rather than speed, boasting a strong, heavy structure with powerful engines and beamy hulls. Boarding and disembarkation can take place from a number of ports along the Turkish coast, mainly Bodrum, Gocek, Marmaris and Kas allowing for one-way trips. Other choices of ports are also possible, incurring an additional fee. All our Gulets have experienced professional crews, at least one of whom speaks English, and all are child-friendly, and hold the promise of a superb holiday experience.

BAREBOATWith no timetable, no crew, and an endless

supply of beaches, coves and unique islands to visit ; a powerboat or sailing bareboat charter represents the ultimate get away vacation.

There are many companies offering worldwide bareboat yacht charters, yet standards vary enormously so that choosing the right boat and company makes all the difference. There are many enticing bareboat charter sites on the internet, however in reality it is virtually impossible to judge a boat’s condition from a web site or a magazine ad. Tzatziki is traditionally served as an appetizer and can be left on the table as an accompaniment to foods throughout the meal. The key to great tzatziki is the thick creamy texture that allows it to be eaten alone, as a dip, as a spread, and as a condiment.

16 ounces (2 cups) of thick greek yogurt4 to 10 cloves of garlic, finely chopped1/2 cup of diced or grated cucumber 1 tablespoon of olive oil2 teaspoons of lemon juice

Prepare all ingredients in advance. Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber. Stir until evenly distributed. Garnish with a bit of green and serve well chilled.

- To serve : 6- Preparation : 20 min- Cooking : 40 min- Budget : Cheap- From : Exotic- Difficulty : Easy - 1 medium-sized chicken- 3 cloves garlic- 2 tablespoon quatre épices- 1 tablespoon saffron- 2 tablespoon curry powder- Salt & pepper- 200g potatoes- Cinnamon leaves- 1 cup coconut milk- 2 tablespoon oil- ginger

Cut chicken into small pieces. Boil up chicken, with pepper, salt and 2 tablespoons quatre épices, for 5 or 10 minutes. Peel and crush garlic, ginger and saffron. Peel potatoes and cut into quarters.Wash and dry cinnamon leaves, roughly chop.Remove chicken from heat, place in a pan with 2 tablespoons of oil. Add crushed spices, cinnamon leaves and curry powder. Stir for 5 minutes over a low heat, cover and leave to cook. Add coconut milk and potatoes, leave to simmer. Cook for a further 20 minutes, stirring from time to time, until fairly dry. Taste, adjust seasoning and serve.

Mrs Zadie livingstone’s Steamed Flying Fish

Steamed Flying Fish and Coo-Coo is the national dish of Barbados. No visit to that island would be complete without a taste of this treat.These fishes, which grow to around 15 inches long, live on the surface of the ocean and do not actually fly. They leap into the air and spread their enlarged pectoral fins allowing them to glide over the ocean’s surface with recorded distances of over 600 feet. However, the normal distance is around 30 feet.Yield : 4 servings

- 8 flying fish fillets- 3 limes- 1 tbs salt- 3 tbs Barbadian Seasoning- 1 large onion sliced- 6 cloves garlic minced- 1 green bell pepper cut in julienne strips- ½ oz fresh thyme- ½ oz fresh marjoram- 1 tsp parsley chopped- 1 large tomato chopped- 1 tsp limejuice- 2 cups water- ½ tsp hot pepper sauce- ½ tsp curry powder- 3 tbs margarine- seasoned salt to taste

Rub the fish with the juice of the limes and the salt and leave to stand for 10 minutes.Rinse the fish and pat dry with paper towels, then rub in the Barbadian Seasoning. Roll each up (like a sausage) and secure with a toothpick.Heat the margarine in a saucepan and sauté the onion and garlic for 3 minutes, or until the onions become transparent. Add the tomato and parsley and continue to cook for a further 2 minutes. Tie the thyme and marjoram together and add to the pan together with the remaining ingredients – except the fish. Bring to the boil, then reduce the heat and simmer for 10 minutes. Add the fish and continue to simmer for 10 minutes.

Mrs. Nannuraluk halibut soup

- 1 1/2 kg fresh fish with bones, cut into pieces to fit in the pan- 1 1/2 litre water- 2 tbs white vinegar- 2 tsp salt- 2 bay leaves- 50 g flour- 100 ml cold water- 1/2 lemon- 20 prunes- 1-2 tbs sugar- 200 ml water- potatoes- parsley

1. If the prunes are dry, soak them in water for an hour or so, or cook them in a little sugar-water with the zest of the 1/2 lemon until soft. Keep them whole.2. Put water, salt, vinegar and bay leaves in a saucepan and bring to the boil. Add the fish. skim off the scum when the liquid boils again. cook the fish until it loosens from the bones. Strain the cooking liquid into another saucepan, leaving a little in the pan with the fish to keep it moist.3. Mix together the flour and cold water into a smooth paste. Bring the strained cooking liquid to the boil and pour in the flour paste in a thin stream, stirring constantly. Cook for 5-10 minutes.4. When the soup is fully cooked, add the lemon juice and prunes, and if they were cooked, the prune cooking liquid with them.5. Arrange the fish on a serving dish and surround with boiled potatoes, sprinkled with chopped parsley. Serve on the side with the soup.

Mrs. Jackie Kennedy’s Chicken in White Wine

- 4 tablespoons margarine- 1/4 lb bacon or salt pork- 1 large onion, chopped- 1 carrot, sliced- 1 minced garlic clove- 2 minced shallots- 8 boneless skinless chicken breasts- 2 tablespoons flour- 2 tablespoons chopped fresh parsley- 1 teaspoon marjoram- 1 bay leaf- 1/2 teaspoon thyme- 1 pinch salt- 1 pinch pepper- 2 cups dry white wine- 3/4 lb sliced mushrooms

1. Melt butter in a dutch oven, add bacon, onions, carrots, garlic, and shallots.2. Brown lightly.3. Remove veggies to a separate plate with a slotted spoon, and brown the chicken in the remaining juices.4. Remove the chicken to a separate plate, add the wine and seasonings, and stir to incorporate all the little brown bits in the pan.5. Put the chicken back in, turn to low, and simmer for 40 minutes with lid OFF.6. Lightly saute mushrooms to get rid of the moisture.

7. Drain.8. Remove chicken from pan, whisk in flour until sauce is thickened and bubbly.9. For the last 10 minutes of the chicken cooking, add the mushrooms and the vegetable mixture to the chicken.10. Alternatively, if preparing ahead, once the sauce is thickened and bubbly, you can put the chicken, vegetables, and mushrooms in an oven safe serving dish, and pour the sauce over the top. Place in oven on “warm setting.” Do not increase oven temp, so you don’t dry out the chicken.

- 2 tbsp Olive Oil- 900g/2lb Raw Prawns ( shrimp), peeled- 120ml/4fl.oz. Dark Rum- 240ml/8fl.oz. Double Cream- 1 Vanilla Pod, split lengthwise- 180ml/6fl.oz. Coconut Milk- Salt and Pepper

1. Heat the olive oil in a frying pan add the prawns and stir-fry for 3 minutes or until they turn pink. Remove them from the pan and set aside and wipe the pan clean with kitchen paper.2. Add the rum and the vanilla pod to the frying pan, bring to the boil and reduce down to about 2 tablespoons. 3. Stir in the cream and coconut milk, and reduce the mixture by half. Scrape seeds out of the vanilla pod into the cream mixture and discard pod. Season with salt and pepper.4. Return the prawns to the sauce and cook for 1 minute, stirring. Serve immediately over boiled rice.

Gulets are traditional style Turkish wooden motor sailers, fully equipped for a comfortable and relaxing holiday. On your very own villa afloat, a professional captain will take you on a journey of your choice, while the crew spoils you with deliciously prepared local food. Gulets offer large open deck areas for sunbathing, and are fully equipped for watersport activities. The cabins are mostly doubles, with some twins, and all have en-suite shower and toilet. One way cruises and land excursions can be arranged, and the Gulets can also take you to neighbouring Greece. Gulets are designed for comfort rather than speed, boasting strong, heavy construction with powerful engines and beamy hulls. Some have better sailing performance than others : if you are keen to use the sails as much as possible, please tell us at the time of enquiry, so we can ensure the selected Gulet and itinerary suits your desires. Boarding and disembarkation are possible from various ports along the Turkish coast – mainly Gocek, Marmaris and Bodrum- allowing for one-way trips. Other ports may be selected at additional cost. Full board provisioning at approx. € 35.– per person per day (breakfast, lunch, afternoon tea and dinner) is usually selected by our customers. Soft and alcoholic drinks and seafood are not included in the full board provisioning.

Some of the yacht’s unique facilities include a Jacuzzi on sun deck, a fully equipped gymnasium, a beauty salon, a massage room, a sauna, an aft swimming platform and a passenger lift. Her highly trained crew of 30 staff provides an outstanding level of service. She is especially well suited for glamorous events such as the MIPIM, the Cannes film festival or the Monaco Grand Prix. Once you have decided upon your preferred cruising ground and yacht, we will draw up a Charter contract between yourself (the Charterer) and the vessel’s Owner. In this contract, Vickyh Yachting will be mentioned as the Charterer’s Agent. Our commission is included in the charter fee. In order to build a correct budget, it is important to understand the MYBA (Mediterranean Yacht Broker Association) terms under which all yachts usually operate nowadays. These terms are usually applied to charters in the Mediterranean or the Caribbean. The charter fee based on these terms includes the use of the yacht and equipment, the crew’s wages and its food and insurance. All other expenses, such as fuel, food and beverages for the charter party, berthing charges, eventual cruising taxes and onboard communication fees will be charged additionally (Advance Provisioning Allowance). When signing the charter agreement, a deposit of 50 % will be required to confirm the booking. The total remaining balance will be due 4 weeks prior to the agreed boarding date. The additional Advance Provisioning Allowance (APA is usually equivalent to 25% to 30% of the charter fee), and eventual positioning (delivery) charges –if your charter involves meeting or leaving the yacht in a place other than its home port– are to be made together with the second instalment. Upon completion of the charter, you will be presented a final itemised account statement of the APA, showing whether a refund or any further payment is due. Eventual outstanding balance will be refunded to you.

HOW TO bOOk

CREW’S GRATUITY

The crew’s gratuity is entirely at your personal discretion. Should you feel satisfied with the level of service received on board, the usual gratuity amounts to about 5 to 10% of the charter fee. It is customary for the charter party to leave the entire gratuity with the captain with suggestion as to how the gratuity should be distributed among the crew.

CATERING & PREFERENCE SHEET

Along with your charter contract, a preference sheet will be provided, which we kindly ask you to complete. This will enable us to itemise in detail your requirements for provisions, recreational interests, any cruising preferences along with any other requests. The completed preference sheet should be sent to us at least 2 weeks before your charter begins and will be forwarded to your captain. Most cooks are able to cater for any dietary requirements. Shall you desire so, we will put you in touch with your captain or cook before your departure to ensure you every desire are fulfilled by our bespoke services.
