Ramadan Kareem.

In this edition, we take you around the world from Hanoi, Vietnam to Shillong in India and on to Queen-sland, Australia.

Hanoi is interesting in that Gucci shops and international banks have sprouted along what used to be sand-bagged streets at the height of the Vietnam War in the 60s and early 70s. Our contributor, Monica Kapila went to see the place and tells us how it’s been. Shillong is one of those lesser known destinations, by far that is, which should be on anyone’s bucket list especially so that the hill top town, sometimes hidden in the clouds, has remained unspoiled. And if this doesn’t ring a bell, we don’t know what will: Rumors have it that it was during his sojourns in Shillong that Nobel Laureate Rabindranath Tagore came up with some of his best literary pieces. His table and chair are on display and can be used in a museum there.

Bungee-jumping, kite-surfing, hang-gliding, feeding the kangaroos, star gazing—the list goes on if it’s Queensland, Australia for your next stop. Everybody back there is doing their share to make the place an exciting tourism spot. Come by and check for yourself. Of course you know Sanjeev Kapoor. The internationally renowned master chef from India was recently in Dubai to inaugurate his restaurant. We asked him why Dubai and he said…well check out what he said in Our Facebook. By the way, we also asked him to name three things he never leaves home without when traveling and number one was a nailcutter. Piece it together, he’s a chef.This being the season of Ramadan, we have Ayesha Attique, also one of our regular contributors, tell about the wonders of henna in Arabian Experience. We’ve also lined up 60 ways to break your fast and celebrate Eid in our Cover Story.All said, this edition should make for another good read.

48The use of henna as body embellish-

ment is transmitted in various cul-tures from generation to generation. Be it the celebration of Eid ul Fitr or

Eid ul Adha, Nawruz, Diwali or Karwa Chauth, births, circumcision, birthdays, or weddings, henna is the essence of celebration. Most saints’ days are celebrated with some henna applied to the hooves, paws and tails of favorite horses, and cattle. Henna is regarded as having “Barakah,” blessings, and is applied for luck as well as joy and beauty. Brides typically have the

most complex patterns to support their greatest joy and wishes for luck. Some bridal traditions are very complex, such as those in Yemen, where the bridal henna process takes four or five days to complete with multiple applica-tions, and resist work.

Muslim men also use henna as a dye for their beards following the tradition of the Holy Prophet Muhammed PBUH who used to dye his beard with henna. It is considered a “sunnah” and akin to something fortunate. The holy prophet is known to have encouraged

Muslim women to dye their nails with henna to distinguish them from the hands of a male. Hence this tradition is greatly practiced in the Muslim countries where women apply henna to their finger and toe nails as well as their hands to mark both religious and aesthetic values.

Currently henna application is growing in complexity and elaboration, with new innova-tions in glitter, gilding, and fine line work. Talented contemporary henna artists command high fees for their work. UAE is one of the many countries having thriving women’s henna businesses. These businesses are often open all night for Eids, Diwali and Karva Chauth, and many women may work as a team for a large wedding where hundreds of guests will be hen-naed as well as the bride and groom. As part of a desert safari package, exhaustive dune bashing might be turned down by old people, those suffering with back aches, children or pregnant women but henna application is certainly one of the most fascinating attractions for all girls and women in the UAE.

Henna Tattoo Making a permanent tattoo is a painful

process. To tattoo, skin pigment is placed in living tissues under the deepest layer of the five layers of the epidermis. This is why tattoos bleed and hurt. Henna on the other hand does not hurt and may just have a tingling, burning sensation, because it is applied on the surface of the skin, staining dead cells which exfoliate in due time.

Henna tattoo is a practical combination of both these techniques of body art. This is a temporary tattoo and the process of mak-ing it is pain free. It is made using different designs, shapes and sizes which last for around 3-4 weeks, thus allowing flexibility on design change. Most westerners opt for henna tattoo as an alternative to permanent tattoo. It is not a bad idea to try out this temporary tattoo first, just to know how the permanent tattoo might look.

ApplicationThe dry henna powder is mixed with lemon

juice, strong tea, or other mildly acidic liquids to make a preparation with toothpaste-like consistency, which can be used to make finely detailed body art. The henna mix must rest for 6 to 24 hours before use, to release the colour pigment. Essential oils with high levels of alco-hols improve skin stain characteristics.

The paste can be applied with many traditional and innovative tools including a cone, syringe, or fingers. A light stain may be achieved within minutes, the longer the paste is left on the skin, the stronger the stain will be, and should be left for several hours. After some time the dry paste is simply brushed or scraped away.

Henna as a hair dyeIn this form, it is generally mixed with

herbs and perfumes during manufacturing to give it a pleasant fragrance. It is prepared in much the same way that it is prepared for body art: it is usually sold in block form, and is used in the quantity required for the desired shade of red, brown or black. This will vary accord-ing to the user’s natural hair colour. The henna is grated into a non-metal container (metal may chemically interact with the henna and ruin the dye) such as a glass bowl. Then hot water is added to it, and the mixture is stirred with a non-metal tool such as a spatula. Once dissolved, the henna is spread onto clean, dry hair. The hair should then be covered with disposable plastic wrap to hold in the heat and moisture, which help the dye to activate. Since

any henna that drips will dye skin or cloth-ing, many users will then put a dark towel or a shower cap over the plastic. The henna typically requires at least four hours of processing time before it is washed out.

The Henna tree The henna tree is a flowering plant. Since

antiquity, the leaves of this plant are used to dye skin, hair, fingernails, leather and wool. Henna’s coloring properties are due to lawsone, a burgundy organic compound that has an affinity for bonding with protein. Lawsone is primarily concentrated in the leaves, especially in the petioles of the leaf. The henna plant produces highest dye content in temperatures between 35 °C and 45 °C. It does not thrive where minimum temperatures are below 11 °C. Temperatures below 5 °C will kill the henna plant. Henna is commercially cultivated in UAE, Morocco, Algeria, Yemen, Tunisia, Libya, Saudi Arabia, Egypt, India, Iraq, Iran, Pakistan,

Bangladesh, Afghanistan, Turkey, Somalia and Sudan.

Since it is difficult to form intricate patterns from coarse crushed leaves, henna is commonly traded as powder made by drying , milling and sifting the leaves. The leaves of the henna plant are dried and powdered to be mixed into a paste which is used to dye the skin, hair, and nails. Recent technological innovations in grinding, sifting, temperature control, and packaging henna, have improved dye content and artistic potential for henna.

Apart from its religious and aesthetic values, henna also acts as an anti-fungal, repels some insects, pests and mildew, and acts as a preservative for leather and cloth. It provides a cooling sensation for the body in hot summer days and its application is known to release fe-male hormones. Above all, the most highlighted association of henna is that it weaves the social fabric of felicity across all Muslim countries in general, and Arab countries in particular.

There are few modern countries that can evoke an emotionally moving, soul-stirring reaction from a travel writer. You think you’ve seen it all

and viewed the tourism industry with jaded glasses because, after all – isn’t it all done for money?

It was with a bit of surprise when I had to admit, even on my second visit to Queensland, Australia, that this country mixes a huge dose of passion into its tourism. Whether it’s a hotel managed by retired pensioners, a cruise run by somebody who loves water or a zoo started by an animal lover – it is inevitably done with an extra-large dose of love.

No surprise then, that Queensland never fails to move a visitor. Its rich natural resources:

the best surfing beaches, the largest, best-preserved reef in the world, oldest rainforests, huge array of colourful birds, butterflies and plant life; a natural penchant for sports and adventure: walking, swimming, surfing, cycling, kayaking, bungee-jumping, kite-surfing, hang-gliding—the list goes on; all manner of modern entertainment; a huge variety of shopping; a large number of theme parks, all within easy reach: there is so much to see and do that a family could easily spend a month and still feel like they had missed something. But this is how a smaller sample could look:

to the north of Brisbane. About an hour into the drive, make the first stop at Australia zoo of Crocodile Hunter Steve Irwin fame. Now run by Steve’s wife and children (who are all actively involved in the zoo’s marketing), this is one place for anybody with a heart. The ticket seems pricey at $A 120, but you’ll not feel that way on your way out. A lot of work and money goes into caring for these animals, employees look happy and there are plenty of places to sit and observe tigers and elephants go past, inter-act with koalas, feed kangaroos and see birds of every colour. Not to be missed is the daily show that is held every afternoon. Starring amazingly trained animals, this is an experience that can give goose bumps even to adults.

Further north-west towards the Blackall Mountains another half an hour away is the Montville-Flaxton-Melany triad of mountain villages typical to this part of the world: quaint, old-world and filled with things to smile about. You could stop at Montville to check out some of the local shopping or continue on to the Mary Cairncross National Park or the Kon-dalilla Falls. Take a guided tour to help you recognise some of the local fauna, or simply walk amongst the majestic trees, drinking in the magnificent views.

Spend the night at The Narrows Escape, a 4.5-star property that is run by Mark and

Joanne Skinner and is everything you could ask for at the end of a long day. The cottages are right in the middle of the jungle and have been constructed on stilts for least impact. Nature surrounds you in all its glory and there is a wonderful sense of being alone.

Day two Rise with the chirping birds and go out

for a walk; it’s not often you get the chance to get this big a dose of nature! If early mornings aren’t your thing, relax and head to Flaxton for an early lunch. Le Relais Bressan, run by Cindy and Thierry Clerc, offers traditional French fare with an Australian twist, and has won several awards from the Australian Good Food Guide. Average price of a simple entrée and main course would be around $A40. The Flaxton Gardens comes highly rated too but it happens to be a popular wedding venue, so the service could be iffy, depending on how busy the staff is.

Lunch done, it’s on to Noosa, an upmarket coastal town about half an hour away. Very popular as a holiday destination, this town has plenty of great hotels to choose from, with a huge variety of two and three bedroom apart-ments available at $A150-250 per day. Australis Noosa Lake resort offers great, airy apartments; The Outlook is un-starred but a good property

with large, open rooms and a modern décor, as is L’auberge Noosa. Sebel Noosa is a five-star property right in the middle of the shopping action on Hastings street, a few minutes’ walk away from the Main beach.

Work the lunch off at any of the exciting array of water activities: go kayaking in the gorgeous Noosa river, take kite-surfing lessons, go tandem skydiving if you feel up to it, take a walk into the lovely Noosa woods, check out the variety of shops on Hastings street or simply sit at a café and watch the colourful world around you.

Day threeIf it is a Wednesday or Saturday, make it an

early morning and head to Eumundi markets, a colourful medley of temporary shops that comes alive twice a week. The market’s motto is “Make it, bake it, design it, sew it or grow it” so it is very much a local market with unique local fare: farm produce, home-made quandong (or other local fruit) jams, pretty hand-made aprons and lots more. Stalls start winding up by mid-day so make the most of your morn-ing and head back to be in Noosa by 12:30pm, from where it’s time for the Noosa Everglades Discovery cruise, the knowledgeable skipper leading a custom-built boat with large viewing platforms down the Noosa river. Apart from the

56beautiful serene surroundings, there will be lots of great photo opportunities for trigger-happy enthusiasts.

Those who would rather spend the after-noon at the golf course are sure to be over-whelmed, there is so much to choose from in Noosa alone! Best to start at the home of the Australian PGA championships, Hyatt Regency Coolum’s golf course at Noosa, a beautiful and challenging course with gorgeous views.

Day fourThis is the last leg of the journey – and the

most magnificent. Fraser Island Discovery Tours run daily tours in custom-built 4x4 vehicles because the drive to Fraser Island is a 75-mile stretch of beach. If you are travelling to Queen-sland around August, it is a great time to spot

migrating whales along the Fraser coast. The largest sand island in the world Fraser Island is a World Heritage site that is being preserved beautifully. An obviously popular day trip spot, there are still many areas on the island that are completely untouched and where you can be absolutely alone with nature. It is a serene place, one that asks you to be quiet so you can hear its voice.

A hill town where Tagore used to spend cool summers in is certainly a place that merits your bucket list.

Rumors have it that it was during his sojourns in Shillong that Nobel Lau-reate Rabindranath Tagore came up with some of his best literary pieces.

In fact, a writing desk and chair used by the poet laureate can still be seen and used in the Maharaja Suite of the Tripura Castle Heritage Hotel, a place built in the 1920s and is now home to various relevant objects from the past.

And if that’s not enough to have you pack-ing to head to the place, here’s one more tidbit about this heaven on earth: Booker Prize winner Arundhati Roy (God of Small Things), and John Adrian Shepherd-Barron, the Scottish inventor behind the now ubiquitous automated teller machine, were born there.

Shillong, as popular American musician Shawn Lane once put it during his visit, “barely exists on the map,” but its people, he said, “are just bizarre, simply inconceivable.” He was sur-

prised that they knew everything about him.Sanjeev Kapoor, who was recently in Dubai

to open his restaurant, told Travel Arabia—with eyes glowing—that he wants to see Shillong again. Kapoor, “the most celebrated face of In-dian cuisine” has been travelling for the past 20 years and have obviously gone places. He’s been there but apparently is not done yet. Kapoor is featured in this edition of Travel Arabia’s Our Facebook.

‘Scotland of the East’Shillong is the capital of Meghalaya in

India. It sits on a plateau that lies at an altitude of approximately 5,000 feet in the middle of rolling hills that reminded European settlers of Scotland.

Guwahati is the nearest airport from where Shillong can be reached by bus or car. Daily buses also connect Shillong with Gu-wahati airport. Pawan Hans Helicopters Ltd, under the aegis of the Government of Megha-laya, has commenced regular helicopter flights connecting Shillong and Tura to Guwahati.

Moreover Guwahati is the nearest railhead and is well-connected to the rest of the country.

Both deluxe and ordinary bus services are available if you’re thinking road transport. Meghalaya Road Transport also run regular bus services in Meghalaya.

India’s tourism authority.Shillong has several must-see attractions,

among them are waterfalls like Elephant Falls which is some 12 kilometers on the outskirts of the city. The mountain stream descends through two successive falls set in dells of fern covered rocks.

Other falls are Bishop and Beadon Falls which cascade down the same escarpment into a deep valley, “the mass of water dissolving into misty sparks,” as those who have been there put it.

Spread Eagle Falls, Sweet Falls, and Crino-line Falls are three others that pull you closer to mature

Shillong is also home to Gleneagles of the East, a golf course said to be the biggest natural links in Asia, the wettest and most challenging due to its tight fairways and a number of streams that criss-cross the fairway. Obstructions come in the form of bunkers, trees and rain. The longest hole is the 6th, which is a gruelling 594 yards.

Other attractionsSituated some 10 kilometres from the city

proper is the Shillong Peak, which is 1,965 me-tres above sea level. The place is a favorite spot to while away the time as it provides for a splendid view of the countryside.

There are also a number of museums among them the Capt. Williamson Sangma State Museum, a government-operated museum which also is located in the State Central Library complex where monuments for the great patriots of the state were erected.

The Don Bosco Centre for Indigenous Cul-tures houses the Don Bosco Museum at Mawlai, Shillong, and the Entomological Museum, a privately-owned museum and is said to be the only known museum in India devoted to moths and butterflies.

Other museums include the Air Force Mu-seum at Upper Shillong, the Forest Museum in Lady Hydari Park, the Rhino Heritage Museum at Shillong proper, the Zoological Museum in Risa Colony, the Anthropological museum at Mawblei, the Botanical Museum at 4th Furlong, and the Arunachal Museum at the Cantonment Area.

Shillong is bounded by Umiam gorge in the

north, Diengiei Peak in the northwest, and the hills of the Assam valley in the northeast.

The city is blessed with a year-long cool breeze, making it an excellent choice for a holi-day destination. The rolling hills give that feeling of seclusion, that sense of being away from the noise. The city is also pollution free; the grime of urbanity is just not there.

Many travelers who have visited the place swear it’s perfect to unwind, walk with nature and re-discover one’s self.

Steeped in history the Metropole Legend hotel was first opened by two Frenchmen in 1901 and remained in French hands till 1954 when the government took over the hotel. In fact the hotel is still owned by the Vietnamese government but is run and managed by the Sofi-tel/Accor group. Split into the older, historical wing and the more contemporary Opera wing,

the overall feel is one of a “characterful” place to rest your weary heads. From the serious wooden staircases (think Downton Abbey) to the beauti-ful and abundant floral arrangements (mainly obscenely large white lilies flown in from Dalat) every detail in this hotel has a story.

The famous Bamboo Bar has just been reopened, they have a very French Epicerie and patisserie where well heeled Vietnamese come to do their grocery shopping. They have even uncovered an underground bunker at the hotel, go on a historical tour to find out the details.

With products from France and Thailand, the hotel has some of the most romantic 1930s-style spa treatment rooms I have ever seen.

Breakfast is served in the most amazing room with high ceilings around an impossibly long French style wooden table where a basket of perfectly baked croissants and pastries appear

as soon as you sit down. No Edith Piaff in the background but Angelina Jolie, Brad Pitt, Gra-ham Greene and even Charlie Chaplin have all stayed here. Tempting though it might be to just never leave the hotel, do go out and visit Hanoi.

Ever tried biryani with heart-pounding tabla rhythms reverberating around you? That would make for the ultimate north Indian fare, right?

Dubai life is 24-7 with barely enough time for sleep or, at times, a decent meal. Indeed the city of workaholics is busier than a beehive be it at 2am or 8pm—which is why in between is Handi, a north Indian restaurant at the heart of what is now, of course, “Old Dubai” in Deira.

Handi throws you back to the days of the nawabs in Mughal India. Step in and suddenly there’s no Zayed Road traffic, no metro to catch; nothing but the thick waft of unmistak-ably North Indian cuisine coming from the tandoori ovens and the kitchen.

The waft that drifts into the air would sometimes come in very thin veils that seem to make circular dancing motions to the heart-pounding rhythm of the tabla and its harmonium accompaniment from two musicians engrossed in their perfor-mance for the night.

Handi is Taj Palace Dubai’s award-winning north Indian res-taurant located on Rigga street.

With bragging rights to several prestigious awards over the years—Best Indian Cuisine, Best Indian Res-taurant and Best Curry for its adorable Gosht Korma Awadhi—Handi, which seats 64 people, has 70 percent of its weekend guests booked through reservations, according to Marcel J. Monteiro, restaurant manager.

“On weekdays, it’s around 30 percent to 40 percent,” he says.

Dum Biryanis are the most popular item on the menu, Monteiro tells Travel Arabia. “But equally good are the kebabs and curries,” he says.

Noteworthy is that Handi’s Master Chef

Mohammad Rasheed Quraishi, who belongs to the renowned Qureshi family of chefs from Lucknow in Uttar Pradesh, India, has been with the restaurant since day one in 2001 and to his name are accolades like Best Gourmet Cuisine, Best Indian Restaurant, Highly com-

mended Restaurant and best curry in town from Time Out Awards in the Awadhi Cusine.

“The items of the menu are basically his own creations. All of them,” says Monteiro.

Among signature dishes are Gosht Korma Awadhi, Dal Handi and Galouti Kebab.

Dhabi is meal from across the globe on your table presented in minimalist form. Not bad at all for AED489 as it also comes with what the avant-garde three Michellin-starred Chef Juan Amador’s restaurant is becoming the city’s buzz for: virtual food.

The degustation menu takes you all around the world in one sitting

Did tasted like oyster but it’s not. And there’s the kick—something that is not, ergo virtual.

A little while later came more fireworks, I should say, this time in the form of nitro. For a quick backgrounder, sorbet clears your tongue and mouth to better prepare you for the next course, in our case, the Mieral pigeon with purple curry recipe.

So there came the chef with a trolley tray and his paraphernalia: one cup each of lemon juice, pomegranate syrup, and sugar syrup; a metal pitcher of nitrogen, and a larger bowl from where he put a little bit of this and that altogether before continuously stirring the mix till foggy mist came out as the -196 degree Celsius nitro coagulated with the syrups to form sorbet –voila!

For a moment there though, someone’s mind was busy wondering whether the same goes for witches’ brew in huge pots—but that’s for Halloween and the guys at Amador can think of something by then.

In all, dining at Amador is an experience in gastronomy, a lesson even for as the food came in, the waiter would give you a quick crash course about what you’re having just to make sure you don’t get lost in the preparations and all, or probably to help you remember which one could have caused the indigestion if ever you’d have any afterwards.

Amador opened in April this year. It seats a total of 120 people. Low lights. Dark wood. Cozy and anonymous. Piped-in music. Classy crowd. Good for couples on a date, a ren-dezvous or gatherings for a celebration.

How do you find Dubai? Dubai is something. It is ever changing. There is always something new.

Why did you decide to open your restaurant in Dubai?Dubai is a place where I think all chefs of sig-

nificance need to be in. Dubai is like Google, if you’re not in Google, you’re nobody.

What excites you when traveling? The place. The people. Food—I love to start by finding where to have good food for the pleasure of it.

In this edition of Our Facebook is internationally renowned chef, Sanjeev Kapoor, described as “the most celebrated face of Indian cuisine” and host of the hit TV cookery show Khana Khazana.Chef Sanjeev, who has just recently opened his franchise fine dining restaurant — Signature by San-jeev Kapoor — in the new Melia Hotel Dubai, has been traveling for the past 20 years. Chef Sanjeev also has the flagship brand Khazana and The Yellow Chilli to his merit.During the Melia event held in June, the chef took a break from the usual cook talks and sat back with Travel Arabia to share his travel fancies instead.

What do you make sure you don’t leave at home when you travel? My dreams. I believe that if you have dreams, you want to turn them into a reality and thus you should never lose sight of them. Of course, money and passport is what you also don’t leave at home when you travel.

What are the top three things you always carry when you travel?Mobile phone. Wallet. Nail cutter—I can’t have long nails.

How often do you travel? Very often. In some months it can be 20 days of travel. In the last 15 days, I was in Spain Singapore, India, Kusala Kumpur and here in Dubai. Tomorrow it’s Bombay.

What are the three destinations you would want to be?I have been travelling for the past 20 years and I’d love to see Rio de Janeiro in Brazil, Cam-bodia and a place close to home—Peshawar in Pakistan.

Having been traveling for 20 years, what then would be the places you’ve been to that you would want to revisit?That would be New Zealand, Shillong in India and Montreal, Canada.
