    The inaugural Mesquite Open Dutch

    Oven Cook-off highlights activity at the

    CasaBlanca Resort HotelJan. 7-8 with

    an impressive $5,000 purse and the

    expectation of 30 teams competing

    behind the presentation of the same

    man who spearheads the annual

    Smokin in Mesquite BBQ Champion-ship each Labor Day Weekend.

    The Mesquite Open Dutch Oven event

    is expected to turn the grounds of the

    CasaBlanca into a culinary delight.

    We will start with all of the teams

    cooking Jan. 7, explained Arlie Bragg,

    whose Smokin in Mesquite BBQ com-

    petition on Labor Day weekend draws

    teams from all over the country each

    year. On the final day, half of those

    teams will advance to the final round.

    Bragg, a 12-year veteran of cooking

    competition events, said the response to

    the event has been strong in a very

    short period of time with emails being

    received from several states including

    Idaho , Utah , New Mexico , Nevada

    November 27th event and it was great for

    the vendors and shoppers as well. We

    really had fun. We saw some very unique

    Allure of The Sea Cruise

    TOPOGEAR will be Cruising in Decemberaboard Royal CaribbeansAllure of The

    Sea We hope to have lots of Photos and

    an unbiased trip report to share with you

    readers in the January 2011 Newsletter.

    We would like to hear from readers if you

    might be interested in a group event sail in

    the coming year? Please provide us some

    feedback at [email protected] Type of

    trip, length, destination etc. We may organ-

    ize an event if there is enough interest out

    there.

    We sailed with Royal Caribbean in that past

    aboard the Mariner of The Sea We re-

    ceived top rated service and expect nothing

    less on this upcoming cruise.

    If you have never cruised, expect to be pam-

    pered with the finest food and accommoda-

    tions. We suggest balcony rooms over inner

    rooms. Believe us, the extra fee is well

    worth the cost. We enjoyed the views while

    in port and under way. Those of course

    wanted to save some money can opt for the

    inner rooms. The deck is always open and

    most people only spend their time in the

    room sleeping.

    Our last cruise was out of Long Beach, Cali-

    fornia. This one will be out off Fort

    Lauderdale. (Continue on page 2)

    and Arizona along with several calls from

    California . Competition will be staged in the

    CasaBlanca Event Center

    This is absolutely competitive, said the soft

    -spoken Bragg explaining that the contestants

    cook with charcoal. They will cook gourmet

    like crown roasts and salmon. The cooks use

    tables that are 18 inches off the ground, andthey have very strict rules. They will be

    judged ingredients. There is going to be an

    incredible amount of culinary work going

    into this event.

    Three pots with different items including

    breads, a main course and dessert will be

    cooked in the Dutch ovens.

    The first Mesquite Open Dutch Oven Cook-

    off event is expected to lead to the richest

    event of its kind at the CasaBlanca in 2011.

    Its another exciting new event for the Casa-Blanca , said Christian Adderson, sporting

    events manager. We anticipate a great turn-

    out for our first event and expect that the

    Dutch oven competition will grow over the

    next couple of years to become the richest of

    its kind in the world.

    Adderson said the staff of the CasaBlanca

    met with Bragg after the 2010 Smokin in

    Mesquite BBQ event.

    We appreciate Arlies passion with cooking

    events, said Adderson, a 31 year-old nativeof Seattle , Wash. who has been with Black

    Gaming for five years. There is great interes

    in Dutch Oven competition especially in

    Utah and other surrounding states.

    Allure of The Sea (From Page 1)

    Our itinerary is to sail from Fort Lauderdale

    to the Bahamas, St Thomas, St Maarten,

    then back to Fort Lauderdale. We are ex-

    pecting temperatures in the upper 70s. Man

    will that be hard to take :-)

    We are excited to see this new ship. A revo-

    lutionary design. Loft suites with 2 story

    views. A Carousel, adults only Solarium, ayouth zone. A Pool Zone with Cantilevered

    whirlpools, FlowRiders and a heart racing

    Zip-Line view of the ship and sea below.

    Stroll through Central Park, a garden area

    and public area lined with foliage and res-

    taurants. There is also the AquaTheater and

    Amphitheater.

    With 16 huge decks, 2700 staterooms and

    28 loft suits, the Allure can ship out with

    over 6000 passengers.

    The Allure is 1187 feet long, 208 feet wide

    and 213 high from the water line. The

    6000+ guest capacity is served by a crew of

    2394 (from over 71 countries)

    The Allure was built in Finland and had her

    Maiden Voyage December 5th, 2010. The

    ship is the largest Cruise ship in the world.

    Trip Report: Colorado River Canoe Trip 11/6/2010 (Las Vegas Canoe Club)

    The Las Vegas Canoe Clubleft on a 2 day, 14 mile downriver trip. There were six

    of us. We where picked up by Helen who owns Desert River Outfitters. A 30 minute

    shuttle ride that took us across the recently opened bridge at Hoover Dam. What a

    time saver that was. We had a late start, so that made up lots of time.

    We unloaded the canoes and stowed our gear, food and firewood. There was

    only a breath of air so we launched in nearly flat calm water. This section of river has

    little current. Willow Beach is actually about 11 river miles south of Hoover Dam.

    Launching at Willow Beach, we were heading south to Nelsons Landing, 14 river

    miles south. The Landing and river edge communitylong since washed away in a

    devastating flash flood that came surging down the normally dry wash in 1974.

    We made about 4 miles of the 14 total and some in the group wanted to stop and

    make camp. That was to be a ill fated decision.

    We set up camp and enjoyed what was left of the afternoon, and evening. The

    temperature was pleasant. We shared the campfire, food and stories. Recanted sights

    we had seen coming downriver. On the water the terrain is seen more in detail and

    up-close. Birds, fish, critters on the bank and the occasional Petroglyph if one takes

    the time to find them. To some people, passing the area in a car, one might think the

    area stark and lifeless.

    The next morning we were on the water at 9:30am with Helen scheduled to pick

    us up 10 more miles down river. We immediately had head winds of around

    25MPH. These winds were not predicted. The next 10 miles were physically ex-

    hausting. Our last canoe full of members pulling in around 5pm in the dark.

    RECIPE OF THE MONTH

    December Recipe

    4 Boneless, skinless chicken breast4 Ham slices

    4 Provolone Cheese Slices

    2c Flour3 Eggs

    2c Bread Crumbs2T Italian Seasonings

    2T Parmesan Cheese

    Pound each breast to about inch thicknessPlace sliced ham on top of chicken

    Place sliced cheese on top of hamRoll the breast and secure with a toothpick

    Combine Bread Crumbs, Italian Seasonings, a Parmesan Cheese

    Bread chicken by first coating with flour, then coating with egg,then coating with the bread crumb mix.

    Bake using 8 briquettes bottom and 16 briquettes on top for about 30 minutes

    Gouda Cheese Sauce

    2T Butter4oz Mushrooms, fine chop2T Flour1c Milk

    SaltPepper1c Smoked Gouda Cheese

    Saute mushrooms in butter for about 5 to 10 minutes

    Add Flour to make a rouxAdd milk, salt and pepper to taste

    Add cheese and stir until completely melted. Add more milk if the sauce is toothickPour about half a cup of the sauce in a small zip lock bag. Cut one corner of the

    bag and drizzle the sauce over the Chicken Cordon Bleu

    Garnish with fluted mushrooms and shredded Gouda Cheese

    Dutch Oven Heat Three Up-Three Down RuIt is better to place more coals or briquettes on the lid o

    the Dutch oven. Many Dutch oven cooks follow a sim

    three up, three down rule. Measure the diameter of yo

    Dutch oven and add 3 to estimate how many briquettes

    place on the lid. Take 3 away from the diameter measu

    ment and this is the number you need to place under th

    Dutch oven.

    If you have a 12 inch Dutch oven. 12 + 3 = 15. Place

    briquettes on the lid of your oven.

    We added more coals

    It was clear to me,We needed more heatBecause its minus 4 degrees.

    The food has been cookingWe have all done our best,Should we trust the timerOr use the smell test.
