    TOPOGEAR was on the hunt

    again. This time we set out for the ArtWalk in Summerlin, on the west side of

    Las Vegas.

    It was a gray cloudy Sunday morn-

    ing. A few drizzles of rain now and

    then. We found the Starbucks at the

    South East end of the parking lot and

    started our walk from that point.

    We enjoyed the live music coming

    from a musician just outside Starbucks.

    We ordered a warm drink and set off in

    the direction of numerous white tents

    that dotted the parking lot. Stopping

    here and there to enjoy the variouspieces of art, hand crafted jewelry and

    more.

    About half way through our stroll

    we ran into Ramon and Rosa

    Velasquez ofAMIGO METAL and

    IRON WORK. Both Ramon and Rosa

    were the most friendly couple. We

    admired their Metal and Tile benches.

    back yard.

    We would like to share their story. We found it interesting and heart warming. It demonstrates what a small business person struggles with

    to produce a product, and compete to show that product before ever turning a dime. We cant imagine living on the road to move the pieces

    art around, let alone the expense of it all.

    Ramon was born in Guadalajara and raised in Nogales, Sonora. He grew up around arts and crafts. Though a sibling in a large family

    Ramon was the only child that followed on in the subject of Art. His father owned 6 curio shops. He started working for him at a very youn

    age.

    When old enough Ramons father gave him one of his stores. It was Called Tonys Sur Curios. Ramon and Rosa owned the storefor 18

    years. Specializing in wool rugs, leather goods, pottery, wrought iron, and Mexican tile.

    Ramon started making his own artwork after traveling to Guadalajara, Jalisco in search of new pieces for inventory. The beautiful metal

    works made there, encouraged him to take classes and learn to do the works himself. Those classes made him realize just how much he en-

    joyed creating his own unique pieces of art.

    In 2002 the store was sold and Ramon put his skills to work at home, in Rio Rico, Arizona. It is now a family business. Rosa and their 2 chi

    dren have learned the trade. They assist Ramon in creating the pieces of art as well as making it all come together at the numerous Art Fairs

    they attend. Their specialties are Wrought Iron Furniture combined with tile, and colorful metal art.

    The Velasquez family dedicate their time to creating the works of art, and travelling to sell throughout Arizona, California, Nevada, and New

    Mexico.

    We find it amazing so much time must go into producing the final product displayed, as we see it at one of the many Art Fairs.. The task of

    creating the Art piece is difficult on its own. They work the pieces by hand and with the help of conventional gas torch and plasma torch as

    well. Then there is the application of automotive paints and tile accents. We would find it difficult to then travel from place to place and set-

    up, tear-down and pack the items, tents, etc...to then move on to the next event location, or back home to create more pieces. Add to that all

    of the behind the scene activities a person may never be aware of. Let us continue with more of their story.,

    Looking at their schedule you can see they travel most every weekend. For every good weekend, sunny and warm weather, and perhaps suc-

    cessful shows, there is bad weather, vehicle mechanical problems, bad shows, and sparse sales. For each show they must first locate a suitab

    event. Then they must submit an application, photograph their art and submit those with their application. This also includes photos of the

    booth/display. Along with that material an application fee must be paid. They are then put through a jury selection approval process to de-

    cide whether they are to be accepted into the event.

    In most cases everything must be handmade, not commercially purchased, such as wholesale products re-sold at the event. Space fees foreach event range from $500.00 to $1600.00 for a weekend. They also participate in fund raising events that may charge smaller space fees bu

    then having them donate 10 % to 20% of their Total Sales.

    If you are in the area of any of the events they attend be sure to track them down and say Hi! Better yet remember all the hard work that goe

    into each and every unique piece of Art. Find something that catches your fancy. Know there is more to the story than what you hold in you

    hand. They would love to see you take one or more of their pieces home with you! We hope to catch up with them again at the Fountain

    Hills Art Festival, just outside Phoenix, Arizona.

    RECIPE OF THE MONTH

    November Recipe

    Duxelles: (See Definition on the following page)

    3 Pints (1 1/2 pounds) mushrooms peeled and roughly chopped

    2 Shallots, peeled and roughly chopped

    4 Cloves garlic, peeled and roughly chopped

    2 Sprigs fresh thyme, leaves only

    2 Tablespoons unsalted butter

    2 Tablespoons extra-virgin olive oil

    Kosher Salt and fresh ground pepper

    Finely chop (mince) together the Mushrooms. Shallots, Garlic andThyme. Add Butter and Olive Oil to large saut pan and set over me-dium heat. Added the minced ingredients and saut for 8 to 10 minutes,or until most of the liquid has evaporated. Season with Salt and Pepperto taste. Set aside to cool.

    For the Beef:

    1 (3 lb) Center Cut Beef Tenderloin (Filet Mignon) Trimmed

    Extra Virgin Oil Oil

    12 thin slices of prosciutto

    Kosher Salt and Fresh ground black pepper

    6 sprigs of fresh thyme, leaves only

    2 Tablespoons of Dijon Mustart

    Flour for rolling out Puff Pastry

    2 large eggs lightly beaten

    1 lb Puff Pastry, thawed if using frozen

    1/2 teaspoon of course sea salt

    Tie the tenderloin so it holds its cylindrical shape while cooking. Drizzlewith olive oil, then season with salt and pepper and sear all over, includ-ing the ends, in a hot, 12 D/O lightly coated with olive oil - about 2 to 3minutes.

    Meanwhile set out your prosciutto on a sheet of plastic wrap (plastic

    needs to be about a foot and a half in length so you can wrap and tie theroast up in it) on top of your cutting board. Shingle the prosciutto so itforms a rectangle that is big enough to encompass the entire filet of beef.Using a rubber spatula cover evenly with a thin layer of duxelles

    Dutch Oven Heat Three Up-Three Down RuIt is better to place more coals or briquettes on the lid o

    the Dutch oven. Many Dutch oven cooks follow a sim

    three up, three down rule. Measure the diameter of yo

    Dutch oven and add 3 to estimate how many briquettes

    place on the lid. Take 3 away from the diameter measu

    ment and this is the number you need to place under th

    Dutch oven.

    If you have a 12 inch Dutch oven. 12 + 3 = 15. Place

    briquettes on the lid of your oven.

    Season the surface of the duxelles with salt and pepper and sprinkle with fresh thyme leaves.When the beef is seared, remove from heat, cut off twine and smear lightly all over with Dijonmustard. Allow to cool slightly, then roll up in the duxelles covered prosciutto using the plasticwrap to tie it up nice and tight. Tuck in the ends of the prosciutto as you roll to completely en-compass the beef. Roll it up tightly in plastic wrap and twist the ends to seal it completely andhold it in a nice log shape. Set in the cooler for 30 minutes to ensure it maintains its shape.

    Preheat oven to 425 degrees F.

    On a lightly floured surface set your puff pastry out to thaw. Depending on the size of your

    sheets you may have to overlap 2 sheets and press them together. Remove beef from coolerand cut off plastic. Set the beef in the center of the pastry and fold over the longer sides,brushing with egg wash to seal. Trim ends if necessary then brush with egg wash and foldover to completely seal the beef - saving the cut off ends to use as a decoration on top if de-sired. Top with coarse sea salt.

    Place the beef seam side down on a baking sheet. Brush the top of the pastry with egg washthen make a couple of slits in the top of the pastry using the tip of a paring knife - this createsvents that will allow the steam to escape when cooking.

    Bake for 40 to 45 minutes until pastry is golden brown and beef registers 125 degrees F on aninstant-read thermometer. Remove from oven and let rest before cutting into thick slices.

    Cooking Term

    DUXELLES: There seems to be a variety

    of options. But in general it is a garnish or

    stuffing made of finely chopped sauted

    mushrooms.

    A paste-like reduction of finely minced

    mushrooms. It is intensely flavored.

    Made with Mushrooms, Onions, Shallots,

    and herbs, slowly sauted in butter.
