Notes from Kim...Hello my friends. Who’s ready for Christmas? I was chatting with the big guy in the red suit and he informed me that we’ve all made the nice list this year. Whew, I was worried about a couple of you! We’ve all been spending time at home with our families and making new memories in this challenging year. That got me thinking of family traditions and how fun and important they are. The joys of putting up the tree, wrestling with the lights, and tree trimming. Unwrapping the cherished ornaments your children and/or grandchildren made and the ornaments that marked a special occasion in your life. They seem to be more treasured the older we get. Soon it’s going to be time for the holiday baking. We makethesamecookieseveryyearandonlyatChristmastime.AnotherflavorfultraditioninourfamilyistheSwedishmeatball. They show up in some form every year. It could be as an appetizer or my mother’s favorite, the jumbo 3lb meatball that you can’t lift with a fork. They are served in a green crockpot with the mismatched lid that is older than my children. However, we all look forward to them and there’s no need for the Tupperware because there won’t be a ball left! Here is this prized recipe:

This year has taught us all a lot about what matters and reminded us to be thankful for the goodness and blessings in our lives. We are inspired by the creativity, the dedication and the optimism we have seen at a time that has been anything but normal. SWEDISH MEATBALLS

2 lb ground beef 1 tsp salt1-1/2 cup bread crumbs 2 eggs1/2 cup milk 1/2 tsp ginger1 package Lipton dry onion soup mix garlic powder to taste (save 1TBSP for the gravy) salt and pepper to tasteMix well and shape into ball form. Bake on a cookie sheet for 1/2 hour or so.Place in crockpot or casserole. Mix a can of cream of mushroom soup with the left over Lipton dry onion soup and pour over the meatballs. Bake at 350 degrees until done or plug in the crockpot for a couple hours. I double the sauce for the meatballs. Enjoy!!
