Circle of Excellence MembersThe following restaurant operating companies support the 15th Annual UCLA Extension Restaurant Industry Conference in our advocacy of education, leadership development, networking, innovation, and community involvement in the restaurant industry:

For the past 15 years, UCLA Extension has worked to develop our annual restaurant industry conference and expand from a regional to a preeminent national event. Our goal is always to bring the collective synergy of honored speakers and panelists together to present topics addressing current issues and trends in the restaurant industry. Education, practical application and networking are the key components to making our conference a relevant event year after year. This year’s conference is no different and includes vital sessions in regard to management, financing, design, emerging concepts and the future of the industry. I would like to thank our amazing planning committee and staff for all the hard work and effort that they put into creating such a value added event. What a difference a year makes! At the time I write this, most forecasters are predicting solid GDP increases and moderate, but steady, employment growth in 2011. We’ve all seen sustained improvements in the capital markets and watched as the debt markets begin to ease. Most households are finding themselves with increased discretionary spending power following stock market gains. CEO confidence and outlooks are vastly improved. Recent restaurant industry per-formance indicates that the old adage is true: Restaurants lead into a recession, and lead out of one. With most economic indicia looking favorable, now is the time for astute restaurant operators to plan the next phase in their company’s growth. The theme of this year’s conference, “Resetting the Table: New Approaches to Profitability,” is exceptionally on point.

As the conference chair, I cannot say enough in praise of our distinguished speakers and the program’s relevance to current operating realities. We’ve designed the conference to provide restaurant executives with the tools and information they need to take advantage of the tremen-dous opportunities the next year holds. The program will help restaurant companies find their market niche, distinguish themselves from their peers, and maintain a fresh approach. We will present visionary ideas—and practical guidance—from today’s industry leaders.

In keeping with our tradition of extraordinary keynote speakers, this year we will be joined by Julia Stewart, Chairman and CEO of DineEquity, Inc., who will talk about the focus, fundamentals, and finance which are necessary to successfully navigate a recession. Our lunch keynote is Adam Tihany, widely regarded as the preeminent hospitality designer in the world—sophisticated, ele-gant, versatile, global. Our Innovation Award winner this year is José Andrés, the Chef/Owner of ThinkFoodGroup, which operates numerous restaurant concepts, including Jaleo, Café Atlántico, minibar by José Andrés, and The Bazaar by José Andrés Los Angeles’ celebrated destination in the exclusive SLS Hotel. José is credited with bringing the “small plates” concept to the United States and considered one of the fathers of the molecular gastronomy movement. The award will be presented by Kerry Kramp, last year’s recipient and CEO of Sizzler USA. As always, conference attendees will be treated to an informal and highly instructive one-on-one dialog between our two most recent award recipients. I think today’s discussion will be particularly interesting since, while their concepts may be diametrically opposed, their extraordinary success in appealing to their particular guest base is exactly the same.

We will also hear from a world-class economist and author of the highly acclaimed UCLA Anderson Annual Business Forecast who will provide insights and direction on what 2011 will hold and explain how restaurant operators might best prepare for it. A respected industry analyst and a prominent equity researcher will discuss the state of the restaurant industry and explain what’s hot, what’s not, and most importantly, why. Since overall economic conditions remain mixed and there are some lingering negative indicators—and failing concepts—we will examine when it is appropriate to reset the terms governing your capital structure, and whether the best answer is renegotiation, restructuring—or repossession. We will also hear from the senior execu-tives of several companies which have sustained significant growth throughout the recession and are continuing to significantly outperform many of their peers. They will share their secrets in achieving exceptional performance during an extremely challenging economic climate. A recog-nized expert in workforce development will lead a panel explaining successful strategies to fully engage Gen Y employees. In another session, we will hear the franchisee’s perspective on han-dling traditional franchisor/franchisee relationship issues as well as increasingly important intellec-tual property matters arising in the digital age.

I am very proud to serve as chair of this conference, and very grateful to the members of our Planning Committee and the staff of UCLA Extension for their work in designing the conference curriculum and organizing such a powerful group of speakers. What is distinct about this recession is the abysmal job market. Housing is really bad too, but it’s impossible to get housing back on its feet without some big improvement in jobs. Restaurants and hotels will do a lot better when more Americans are working. Indeed there is hardly a forecasting question that isn’t related to jobs.

What’s causing the jobs problem? What sectors are lagging behind and which sectors are leading the way? (One is hospitality!) Will the situation improve significantly in 2011? This panel reviews a number of relationship issues, including typical oper-ating, financial, transfer restriction, and control concerns, and also focuses on intellectual property matters in the age of social media. What can, and should, franchisees control independently in terms of websites, Groupon participation, Facebook and Twitter accounts, location-based social media services such as foursquare, and social media analytic services like FohBoh? Gene R. Baldwin, CRG Partners. Mr. Baldwin has more than 25 years of interim management and advisory experience. He is a corporate leader with a well established

reputation for his ability to assess, develop, and implement operational and financial improvement initiatives that enhance enterprise value for stakehold-ers. He has successfully served as CEO, CFO, and president, and acted as an advisor for numerous companies in many industries, including automotive, con-struction, energy, financial services, food service, manufacturing, real estate, res-taurants, and retail.

The firm is an acknowledged industry leader in the sale, financing, and restruc-turing of franchisors and independent and franchisee owned restaurants. Mr. Burke is a graduate of the Mason Graduate School of Business at the College of William & Mary and Old Dominion University.

H. G. (“Carey”) Carrington Jr., CFO, Romano’s Macaroni Grill. Mr. Carrington joined Romano’s Macaroni Grill as Chief Financial Officer in July 2010, where he currently

leads the company’s accounting, finance, purchasing, information technology, real estate, legal, and risk management departments. He has more than 17 years of senior financial management experi-ence, primarily with private equity backed restaurant companies, as well as 13 years of investment banking experi-ence. Edward E. Leamer, PhD, Director, UCLA Anderson Business Forecast . Dr. Leamer is the Chauncey J. Medberry Professor of Management, Professor of

Economics, and Professor of Statistics at UCLA as well as Director of the UCLA/Anderson Business Forecast Project and Chief Economist of the Ceridian-UCLA Pulse of Commerce Index. He has served on both Governor Wilson’s and Governor Schwarzenegger’s Council of Economic Advisors and in 2005-2006 chaired a panel of the National Academy of Sciences on outsourcing and delivered the report to Congress. Professor Leamer’s research in international eco-nomics and econometric methodology has been discussed in New Horizons in Economic Thought: Appraisals of Leading Economists.

Bruce McDiarmid, Partner, Pillsbury Winthrop Shaw Pittman LLP. Mr. McDiarmid, a State Bar of California Certified Specialist in Franchise & Distribution Law,

is the leader of the Franchising & Distribution practice team. His practice includes the drafting of distributor, dealer, and franchise agreements, and compli-ance with antitrust, franchise, and other trade regulation laws. He also handles the purchase and sale of businesses engaged in the marketing and distribu-tion of goods and services, dealer rela-tions, credit matters and analysis, and lobbying of proposed legislation relating to marketing and distribution matters.

Nicole Miller Regan, Managing Director & Senior Research Analyst, Piper Jaffray & Co. Ms. Regan is a managing director and senior research analyst at Piper

Jaffray, where she focuses on the restau-rant sector. Prior to joining Piper Jaffray in August 2006, Ms. Regan worked in equity research at ThinkEquity Partners in Minneapolis, and at Sterne, Agee & Leach in New Orleans. In 2006, she was ranked No. 1 Stock Picker, related to 2005 coverage of her universe, by StarMine. Ms. Regan holds a Bachelor’s degree in Communications from the College of Saint Benedict.

Leanne Lindsey is Vice President/National Accounts Manager for Young’s Market Company, a distributor of fine wines and spirits, and has been with the company for

over 25 years. She has worked in the wine division and currently represents the entire portfolio of brands, calling on cor-porate restaurant chains. Ms. Lindsey has traveled through the wine country in California and Europe, and has com-pleted the Society of Wine Educators Program and received her CSW.

Michael Patrick, Managing Director for Gallagher Equity Advisors, the Private Equity Practice of Arthur J. Gallagher. Mr. Patrick is responsible for the growth

and management nationally of the com-pany’s private equity practice which spe-cializes in advising the private equity community on acquisitions and strategic implementation of employee benefits across industries. In addition, Mr. Patrick is responsible for new client prospecting, client renewals, marketing, claim analy-sis, client management, employee sur-veying, industry benchmarking, and seminars.

Stephen Pettise, Managing Principal, Golden Spike Resources Group. After heading successful market-ing/strategic planning efforts with IHOP Corp., Carl

Karcher Enterprises, and Burger King, Mr. Pettise founded Golden Spike Resources Group to consult in the franchising and foodservice arenas. Leveraging his expe-rience has enabled Mr. Pettise to focus on consumer strategy and marketing, business start-ups/acquisitions, emerg-ing growth chains, and turnarounds. Some of his current or past clients include HMS, McAlister’s, Panda, Polly’s Inc. and Baja Fresh.

Lauralynn Rogers manages the Internal Audit function for DineEquity, franchisor of IHOP and Applebee’s. She is responsible for internal con-trol and process improve-

ment, the franchise sales reporting program, and Sarbanes-Oxley compli-ance. She has successfully integrated the internal audit function for the IHOP and Applebee’s brands. Ms. Rogers makes regular presentations on audit and inter-nal control matters to the Audit & Finance Committee of the DineEquity Board of Directors.

Teresa Siriani, Industry People Expert. Recognized as one of the industry’s best human resource and training executives, Ms. Siriani brings passion, commitment, and

many years of operations and human resource experience to every presenta-tion. She spent seven years as president of People Report and was instrumental in the design of their industry leading sur-veys as well as growing the company to the size and level of influence it has today. Her other past leadership posi-tions include vice president of human resources for Wolfgang Puck Food Company and positions in operations, training and development, and human resources for Peasant Restaurants and Restaurants Unlimited.
