We are fortunate to haveall of our five children andtheir partners home forChristmas and especiallypleased to have our firstgranddaughter to spoil. As allyou grandparents will knowit is fantastic to indulgegrandchildren and thensimply to hand them back totheir parents when they aretired and grumpy.

Council has had a verysuccessful year with a high-light for me being the com-pletion of the new Te Awa-mutu Library which isproving very popular andadding to the revitalisation ofthe commercial area of town.Over the next few years wehope to see a lot moredevelopment in this area aswe strive to make this area oftown more community fo-cused and vibrant.

I was also very pleasedand honoured to have beenre-elected as your Mayor for afurther three years – a posi-tion I take very seriously. Ontop of that all 10 Councillorswho stood for re-electionwere successful whichindicates Council is generallyon the right track. It also anopportunity to welcome ourtwo new Councillors, ElwynAndre-Wiltons and SusanO’Regan, who bring with

them a great deal of experi-ence and a fresh perspectiveto the Council table.

Next year is shaping up tobe another busy year as wemanage unprecedentedgrowth across the Districtwith major growth drivers,such as the expansion ofWaikeria Prison, creatingmore than 600 permanentjobs for the region. Whilst all

of this growth provides anumber of challenges for ourinfrastructure it also providesa huge opportunities for us allto take advantage of.

Saint Saviour’s Anglican Church in Pirongiawill once again be filled with Christmasdelight.

For the next two weeks the church onFranklin Street in Pirongia will have a Christmasshop and cafe.

It will be open from 10am to 4pm Monday toSaturday leading up to Christmas.

The church will transform into a cafe and willbe decorated to the theme is “Christ is the light”.

There will be drinks and food available forpurchase.

For 20 years the Pirongia church craft grouphas been meeting once a week to make crafts forChristmas every year.

The group of 14 has been working hardmaking decorations, table centres, wreaths,candles, flower fairies and Christmas trees.

“We have a lot of fun.”Everything is handmade and sold in the

church’s Christmas store.Director of Pirongia Church crafts Barbara

Preece says in previous years the craft money hasfunded a new kitchen and bathroom facilities forthe church.

“We’ve been able to do wonderful things forthe church.”

She says 20 years ago the group beganwithout any funds and created decorations frompine cones and other free natural things.

But the group can now buy supplies andequipment to create the decorations.

“The group has developed remarkably.”The store and cafe will be open 10am — 4pm

every Monday to Saturday leading up toChristmas, with the final day on Friday, Decem-ber 23.

been targeted recently.Mrs Porima also encourages keeping

She says police have seen a rise in theftof car trailers, too.

“Many trailers are just sitting therewaiting to be towed away.”

New findings indicate many NewZealanders are at risk for packagethefts and break-ins these holidays,

with people having gifts delivered to theirhome and not having enough homesecurity to protect their preciouspossessions.According to the recent survey of 500 NewZealanders 72 per cent intend one to buyone or more Christmas presents onlinethat will to be delivered to their home, and76 per cent are willing to let their mailmanleave packages at their door if they are nothome.Tips: Have packages delivered to yourwork; get scurity, or a sign that says youhave it; liaise with neighbours.

As I reflect back over thelast twelve months Iam struck by the in-

credible highs that the elec-torate has experienced butam also saddened by thetragedies that impacted ourcommunities.

Ho.n Anne Tolley’s re-cent visit to the electoratewas a great day. The Minis-ter and I attended a WhiteRibbon BBQ arranged byMFVIN held at the Benney-dale School. It was a greatcommunity event and wewere both endeared by thestudents of the school andtheir great enthusiasm tohave photos taken with us.The day was concluded by avisit to the WINZ, Te Awa-mutu office where the Min-ister met the hardworkingteam.

I recently attended thecommunity consultation atTe Kawa Hall regarding theproposal to increase thecapacity at Waikeria Prison.This was a great opportun-ity for the locals to have ad i scus s ion wi th theCorrections Department toask any questions or raiseany concerns they mayhave. It was very pleasing tosee the positive feedback.

It was a great honour tobe invited to Frank Kelly’s90th birthday, a stalwart ofthe Te Kuiti community andfeel the love and affectionfor Frank from his friendsand family. Frank’s storiesand knowledge of the areaare fascinating to listen too.Congratulations once again

on meeting this milestone!Thank you to Waitomo

Food safety crucialduring hot monthsWith summer fast approaching and

warmer weather already here, theMinistry for Primary Industries (MPI)

recommends a few simple steps to reduce ourchances of getting sick from food prepared athome.

MPI’s Public Health Medicine Specialist DrDonald Campbell says foodborne illness trendsshow that more people get sick from food oversummer than at any other time of the year.

“Bacteria grow faster in the warm moistconditions of the summer months, so can bepresent in higher numbers than we’re used to inraw foods.

“Over summer we are more likely to beeating raw foods like salads and seasonalsummer fruits. We recommend washing all fruitand vegetables before eating them raw,” saysDr Campbell.

We also tend to do morecooking or preparing of foodoutside at picnics, barbequesand on camping trips, whichmeans foods might be out ofthe fridge for longer than usual.

“Delicious, nutritious food isone of the great things in life.There’s nothing better than afantastic meal with family andfriends. But there’s also nothingworse than that same foodcausing days of misery thanks toit being contaminated by harm-ful bugs (bacteria, viruses andother organisms that can causeillness),” he saysFortunately, you can reduce the risk ofyou, your family or friends having a nastyfoodborne illness by following simplefood safety steps:• Begin with clean hands — wash your handsfor 20 seconds with warm water and soap anddry your hands for 20 seconds before and afterhandling all food, including fresh produce.

• Remember the 4Cs (Clean, Cook, Cover, Chill)can help keep harmful bugs at bay.• Barbeque safely by precooking chicken,

sausages and minced meat,then barbecue until meat issteaming hot (over 75 degreesCelsius) all the way through.• Washing fresh produce underrunning water is an importantpart of ensuring your favouritefruits and veges are safe toconsume.• Many precut, bagged freshproduce items like lettuce arepre-washed. If the package labelindicates the contents havebeen pre-washed, you do notneed to wash it again.• Cooking destroys harmfulbugs. Cooking some specifichigher risk foods, like bean

sprouts and frozen imported berries for in-stance, will help keep you safe. Someconsumers wish to eat these products withoutcooking though, and need to understand thereis a risk in doing so.

campaign has returned tohelp put another ambulance

on our roads.The block-set ambulances are

available for $15 at ASB branchesacross the country. ASB aims toraise money to go towards pur-chasing another fully-functioning,fully equipped ambulance to bene-fit St John.

According to Safekids there is a sharprise in serious child injuries during theholiday and summer periods — theseinclude injuries caused by trampolines,bicycles and other popular Christmas gifts.

“Parents should also be aware of pro-ducts that could be harmful to childrenunder five years old, such as householditems that are powered by button batteries,or small toys that are choking hazards," saysMs Weaver.

Retail NZ general manager public affairsGreg Harford encourages parents to askretailers for advice.

“If you have any questions or concerns,it’s a good idea to ask the store."

kiwi ‘elves’ in its shelvesthis Christmas to donate

much needed gifts to womenand children affected by vio-lence.

The campaign launched inall 93 The Warehouse storesfor the beginning of Decem-ber, with shoppers able todonate items of their choice,such as canned goods, toys,and clothing items via acollection point in-store.

Women’s Refuge chiefexecutive Dr Ang Jury saysthat last Christmas just under4000 women and childrenacross New Zealand called onthe help of Women’s Refuge,nearly half of which wereunder the age of 18.

“Christmas is a particularlystressful time of the year formost people, and the ad-dition of family violence can

turn what is supposed to be ajoyful and fun occasion in to anightmare,” she says.

“All of the whanau wework with during the Christ-mas season just want to givetheir kids a safe and happyChristmas, every child de-serves this; we need NewZealand’s help so that familieswe work with can open a gifton Christmas day.”

The Warehouse has a longstanding partnership withWomen’s Refuge to bringabout change to New Zea-land’s horrific family violencerecord. This includes the in-troduction of its shielded siteon The Warehouse retailwebsite and its domestic vio-lence leave policy for teammembers.

INGREDIENTS

2kg boneless pork belly, skin on2kg rock salt3 radicchio, halvedStuffing:1⁄2 bunch marjoram, leavespicked1⁄2 bunch sage, leaves pickedfinely grated zest of 1 lemon3 garlic cloves1 Tbsp extra virgin olive oilSalsa verde:2 cups flat-leaf parsley leaves1 cup marjoram leaves1⁄2 cup sage leavesfinely grated zest and juice of 1lemon1⁄2 cup (125ml) extra virgin oliveoil

METHOD

Place the pork belly in a deep-sided baking tray, rub with rocksalt on both sides, cover with foiland chill for 3 hours to cure slightly.

Preheat the oven to 220C.Rinse pork well under cold runningwater to remove salt, then pat drywith paper towel to ensure skin iscompletely dry. Using a sharpknife, score pork skin at 1cmintervals, being careful not to cutall the way through.

For the stuffing, place

marjoram, sage, lemon zest, garlicand olive oil in a food processorand whiz to a coarse paste.

Place pork, skin-side down, ona chopping board. Spread stuffingmixture over the pork flesh, leavinga 1cm border. Season.

Roll up belly tightly from thelong edge to form a log shape,making sure the skin is on theoutside and not overlapping. Tiesecurely with kitchen string at2-3cm intervals to ensure porkholds its shape.

Place pork on a wire rack set ina roasting pan.

Roast for 30-35 minutes untilthe skin is golden and starting tocrisp. Reduce the oven to 160Cand cook for a further 1-11⁄2 hoursuntil the core temperature of thepork reaches 62C on a meat

thermometer and meat is tenderand crackling is crisp. Removefrom oven and rest, looselycovered with foil, for 10 minutes.

Heat a chargrill pan orbarbecue to high heat and chargrillradicchio, turning, for 3-4 minutesuntil charred and slightly softened.

For the salsa verde, place all

ingredients in a smallfood processor and whizto a coarse paste.Season to taste.

Slice pork into thickpieces and serve withsalsa verde and charredradicchio.

SPICED PEACH &PASSIONFRUITPAVLOVAServes 8Prep: 1 hour 50 minutes, plus 6hours to coolCook: 1 hour 20 minutes

INGREDIENTS

6 egg whites11⁄2 cups (330g) caster sugar3 tsp cornflour1 tsp white vinegar500g mascarpone2 tsp vanilla bean paste

spiced peachesand passionfruit1⁄2 cup (110g) caster sugar1⁄2 tsp ground allspice5 cardamom pods1 cinnamon quill4 juniper berriespulp of 4 passionfruit4 peaches, stones removed,thinly sliced

METHOD

Preheat oven to 160C. Line a largebaking tray with baking paper anddraw a 20cm diameter circle on thepaper.

Whisk eggwhites and sugar inthe bowl of a stand mixer for 15minutes or until thick, glossy andsugar has dissolved. Whisk incornflour and vinegar until

combined. Spoon meringue ontotray, staying inside the circle.

Using a small palette knife,drag the meringue from thebottom upwards to form peaksaround the edges. Place themeringue in oven and reduceoven to 100C. Bake for 1 hour

20 minutes or until outside iscrisp and dry. Turn off oven andleave meringue in oven with thedoor ajar for at least 6 hours, oruntil cooled completely.

For the spiced peaches, placesugar, allspice, cardamom,cinnamon, juniper, passionfruitand half a cup (125ml) water in asaucepan over medium-low heat,stirring until sugar dissolves.

Simmer for 8-10 minutes untilslightly thickened. Place peachesin a heatproof bowl and pour overthe spice mixture. Cover withplastic wrap and chill for 1 hour.

Combine mascarpone andvanilla in a bowl, then gently spooninto the centre of pavlova. Top withspiced peaches and passionfruitsyrup. Serve immediately.

METHOD

Toast the walnuts in a smallskillet over medium heat,stirring frequently. Cook untilthe walnuts turn brown andsmell toasted. This will takeabout 5 minutes. Transfer to asmall bowl to cool.

Place the greens in a largebowl. Top with sliced apples,Gouda cheese cubes, farro,

FOURMAPLE & PEPPERGLAZED TURKEYSERVES 8

INGREDIENTS

3 Tbsp (45g) butter, melted3 Tbsp maple syrup4kg turkey1⁄4 cup fresh sage leaves

METHOD

Preheat oven to 200C. Place theturkey on a large baking tray and,using kitchen string, tie together theback legs. Blend the butter andsyrup and baste the entire turkey.Season generously with crackedpepper. Pour 1 1⁄2 cups (375ml)water into the tray, and cover withfoil. Pleat 3-4 sheets of alfoiltogether and tuck securelyunderneath, creating a sealed

envelope around the turkey. Roastfor 30 minutes, then reduce the heatto 180C and continue to roast for 2hours. As a general rule of thumb,for a turkey up to 5kg, allow 15minutes per 500g, plus 10 minutes.Forty minutes beforehand, removethe alfoil and baste with juices in thepan. To serve, place sage in a fryingpan with 1 tsp butter and gently fryuntil crisp. Scatter across the turkey.

CITRUS GLAZEDHAMSERVES 8

INGREDIENTS

4kg bone in, cured and smokedham, skin on4 oranges, cut into thin roundslices1 cup (320g) marmalade1⁄2 cup (110g) brown sugar

METHOD

Preheat oven 180C and put theoven shelf to the lowest position.Peel the skin away from the hamusing a sharp knife, leaving a thinlayer of fat on the surface. Transferthe ham into a large roasting pan, orif too big onto a large baking tray. Ina small saucepan over low heatcook the marmalade and sugar untilcombined. Glaze the ham. Arrangethe orange slices, overlapping, ontop. Secure each slice with atoothpick if needed. Brush with alittle more glaze. Bake for 1 hourand 20 minutes. Brush occasionallywith remaining glaze. Serve hot orcold.

MARZIPANMARBLESThis recipe made Oprah’s Top 12list of Christmas treats in 2013(she used it from the USA versionof the 4I Christmas book . . . )MAKES 40

INGREDIENTS

500g almond icing, softened4 cups (500g) icing sugar100ml light corn syrup40 pecan halves

METHOD

Place half the almond icing andicing sugar in a blender and blenduntil combined. Add half the cornsyrup and continue to blend untilwell combined. Turn out onto a flatsurface. Repeat with remainingingredients and blend untilcombined. Knead both lots ofmixture until a smooth dough forms.Line a baking tray with bakingpaper. Roll tablespoons of themixture into balls and pop onto thetray. Firmly press a pecan into the

centre of each round. Set aside for 4hours or until firm. Hint: Light cornsyrup is found in mostsupermarkets.

ENTERTAINER’STIMBALESERVES 8

INGREDIENTS

500g smoked chicken250g seedless red grapes3 ripe avocados100g toasted pine nuts

METHOD

Thinly slice the smoked chicken.

Cut grapes in halves. Scoop theflesh from your avocados andslice. Stack all of your ingredientsinto a mould to make eight petitesalad timbales. Top with toastedpine nuts, and gently remove themould. This dish can also beserved as one large salad if youare preparing more of a sharedChristmas banquet. Optional:Drizzle with your favouriteflavoured oil or a squeeze oflemon juice. Hint: A timbale is adish of meat or fish cooked withother ingredients in a pastry shellor in a mould. The moulds can bebought at any kitchenwares shopand are really easy to use . . .This recipe looks so much morecomplicated than it was toprepare; easy entertaining.

pare for delays as thesummer work s p ro -gramme gets underwayaround the Waikato.

The warm summermonths are the main timefor doing maintenancework on the roads as thatis the time that the sealwill stick best to the roadsurface.

This summer around$18.2 million will bespent on repairs to theWaikato state highwaynetwork says regionalperformance managerKaren Boyt.
