WELCOMEWith the 2012 Vintage well underway, we are all eager to see how the winery crew work their magic with the diverse selection of premium fruit at their fingertips. The winery crew consist of many familiar faces from last year with a couple of international additions from the USA and Europe. This year’s team include Jim, Luke, Todd, Joe, Azure (USA) and James (Europe). See page 4 for a full update on how the 2012 Vintage has been so far with Winemaker Jim Chatto. We kicked off the 2012 calendar of events with the increasingly popular Annual Gala Dinner! This year’s theme “Moulin Rouge” created an enchanting atmosphere of bright lights, red and black feather boas and some burlesque tunes provided by ‘The Big Bang’, keeping the guests well entertained; check out the photos on page 8! Through the growing demand for our members’ events, we are excited to announce that we will be introducing a few new events to the calendar for this year! If you are interested in attending an event, please let us know as soon as convenient to avoid disappointment as seats do sell out quickly. Keep your eyes posted on our website for regular updates! You would have recently received an invitation from our Owner John Davis and Chief Winemaker Jim Chatto, introducing you to our new Wine Club membership tier called ‘Q4’. This club stands behind our philosophy of providing ‘Quality’ wine on a ‘Quarterly’ basis. This exclusive membership will be capped at 200 members only and guarantees members a supply of highly sort after Reserve and Single Vineyard wines along with a number of additional benefits. Through this club you will have a more one on one experience with our winemaking team and will assist in hand crafting one of our signature wine styles. Reserve 2010 ‘Venus Block’ Orange ChardonnayThe Venus Block derives its name from the first name of the woman who ran a grazing property on the land for many years. Situated at our high altitude vineyard in Orange, the 'Venus Block' is 800m above sea level, ensuring a long cool ripening season, perfectly suited to Chardonnay. The 2010 Vintage is an intense cool climate Chardonnay with flavours of stone fruits, fig and melon seductively integrated with barrel ferment complexity. A crisp and elegant style of Chardonnay, showing great purity of fruit.

Drink to 2020.”

REGIONAL OVERVIEWThe Orange region of New South Wales is one of Australia's newest premium regions favoured for its high altitude cool climate conditions. Situated approximately 270 km west of Sydney the topography and soils of the Orange region are dominated by the extinct volcano, Mt Canobolas. The present day peak of the mountain is at 1400m and vineyards in the region are planted at elevations as high as 1100m with the lowest elevations in the region being 600m. The great diversity of elevation, climate and topography allow for a wide range of grape varieties to be grown in this region. From Sauvignon Blanc and Riesling in the coldest sites to Shiraz and Cabernet in the warmer. Soils in the central part of the region are derived from the basaltic lavas of the old volcano and primarily consist of deep red to brown free draining clay loams which have long been used for apple and stone fruit orchards. The slopes of Mt Canobolas provide the additional viticultural advantage of cold air drainage preventing frosts in the growing season. Wines from the Orange region have a distinctly elegant structure across almost all varieties which can be attributed to the cool climate growing conditions. Red wines are typically deep blackish-red in colour with a bouquet and palate profile easily recognized and distinctive of the area. These are two fine examples of wines produced in the Orange region.

Vintage 2012 – So Far!HunterThe effects of the ‘non summer’ across NSW have led to our latest start to Vintage in a very long time. We kicked things off with our first Semillon’s at the beginning of February – almost two weeks later than usual! The cool conditions have provided crisp and vibrant whites with a lovely natural acidity. However, the dreaded scourge of harvest time rain is proving to be very challenging for the reds. That said, at this stage we have picked our best Shiraz block’s and they are looking very promising in the fermenters. Fingers crossed for the rest…….

Orange, Coonawarra & Wrattonbully are still a way off picking, so I will provide an update in the winter newsletter on how things went.

Adiós Patagonia!My fly fishing trip to Argentine Patagonia seems a lifetime ago now that Vintage is in full steam. However the memories of floating down pristine rivers and casting to rising trout will be with me for the rest of my life. After 4 days in Buenos Aries “adjusting to the time zone” (read: drinking too much), we headed for San Carlos Bariloche to start our Patagonian adventure. The scenery was amazing and the fishing and steaks bountiful – I only ate salad and fruit for the first few days after returning! Argentina is a wonderful country of beautifully stark landscapes, vibrant markets, old world charm and enchanting Tango, to name but a few highlights. I will be going back.

Harvest LunchThe perfect way to celebrate the end of the Vintage - the Harvest Luncheon is on again on Saturday 19th & Saturday 26th May. Always a great day and a fun opportunity to taste the new vintage wines before they go on sale! This year we will be releasing the 2010 Reserve Coquun Shiraz from our 1921 planted Tallawanta Vineyard. Due to the popularity of the event, tickets don’t last long, be sure to call the Wine Club to secure your spot!

Elderslee Road runs along one of the ancient dunes or shorelines that make up the Wrattonbully landscape. Bouillabaisse - traditional Provençal fish stew

Serves 4

Stock1 onion2 carrots4 sticks of celery1 Kilo fish bonesPinch of saffronHandful of fresh oregano3 to 4 fresh tomatoes300ml white wine1litre of water

Place all ingredients in a large pot and boil for 25 to 30 mins. Rest for a couple of hours for flavours to infuse then strain producing liquid stock.

Additional4 whole peeled baby potatoesTurmeric

Cook peeled potatoes with a pinch of turmeric for 20 mins. Keep apart from other ingredients.

The Body8 green prawns, tails intact8 mussels, de bearded8 clams400g of Barramundi or Blue Eye Cod16 whole cherry tomatoesOlive oil

Fry all these ingredients in a pan with olive oil. Add stock (prepared earlier) andParsleyOreganoLemon juiceGarlicChilli chopped and seeded

Simmer until the shell fish open. Place in individual dishes with a turmeric potato per person and serve with Bruschetta on the side.

Hello Winery Wanderers! If you have decided to take on the challenge of the winery wander this year then you may need a plan of attack!1. Plan your run. You will need to choose which distance you will run. 2. Start moving. Begin slowly by walking or running a comfortable distance; a gradual increase will minimise your risk of injury. Challenge yourself slowly but try not increase your progress by more than 10% each week. 3. Make your chosen distance. Once you have made your chosen distance it’s time to run walk your way around the course slowly increase your run time and decrease your walk rest time. Training tips:• Warm up and stretch. Warming up before

you run will prepare your muscles for the run and keep them flexible enough to

avoid injury. • Consistently train three to four times a

week to make best gains. • Wear appropriate clothing and footwear. • Remain hydrated drink mostly water and a

sports drink when needed. • Remain fuelled. • Take rest breaks between training
