The Energy Efficient Christmas Dinner Serves 8 Total time required: 3 hrs 20 mins* Ingredients : 1x 4-5kg turkey 350g minced pork 250g bread crumbs 5 tbsp chopped herbs, thyme, rosemary and parsley 1 Onion 1 head of celery 250g streaky bacon 12 Pork Chipolatas 1kg Roasting Potatoes 500g Carrots 500g parsnips 500g sweet potatoes 1 onion squash 450g peeled brussel sprouts 10 shallots unpeeled 2 Bay Leaves 3 tbsp gravy granules 50g Butter Sea Salt & cracked Black Pepper Prepare Ahead Ensure that the Turkey and the minced pork is thoroughly defrosted in the morning of cooking, to allow them to come to room temperature. Energy efficiency tip 1 – having the food at room temperature will reduce cooking time, therefore saving energy. Plus, it will make the turkey cook more thoroughly and keep in the moisture. 1. Wash the turkey in cold water then dry the bird very well. 2. Mix the minced pork with the breadcrumbs and chopped winter herbs to create the stuffing, mix in 75ml of the extra virgin olive oil and 50g of butter, before tightly stuffing into both ends of the turkey. Energy efficiency tip 2 – getthewholefamilyinvolvedincookingthemeal–it’llnotonlybefun,butyou’llsaveenergywithouthavingeverythingoninotherroomsofthehouse.

1. Placetheturkeyonaseparate,overlylargeroastingtrayontopofchoppedcelery,choppedonionandchoppedpeeledcarrots–thiswillpreventtheturkeyfromburningandalsohelpkeepthebirdmoist.

2.Laythestripsofbaconontopoftheturkeyanddrizzleoliveoilovertheturkeyandvegetables;seasonwithsaltandpepper;andplacetrayinoven.

3.Turntheovento180°Candroastforanhourandahalf.

Energy efficiency tip 3 – thereisnoneedtopre-heattheovenhoursbeforecooking.Astheovenheatsup,itwillcooktheturkeymorethoroughly,plusyou’llbesavingenergy.

4.Peel,topandtailthepotatoes;addthem(ontheirunflatedges)totheturkey,alongwiththreeglugsofvegetableoil.

5.Removethebacon,whichshouldnowbecrispy,andplaceonaseparateplate.Thiswillexposetheturkeyskinandenableittoturngoldenbrown.

6.Returntheturkeyandthepotatoestotheoven,reducethetemperatureto160-170°C,andleavetocookfor45minutes

7. Addtherestoftheroastingvegetables(peeledparsnips,sweetpotatoes,onionsquashandunpeeledshallots)andcookforafurtherhour.

10.Removetheturkeyfromthetrayithascookedin;leaveittorestonaservingdishforafurther10minutes.Turntheovenoff,andputthetraybackintheoventokeepthevegetableswarm.Alsoplacethebaconbackintheoventowarmupbeforeserving.

11. Whentheturkeyhasrested,removethebakingtrayofroastvegetablesandchipolatasfromtheovenandplacearoundtheturkey.Removethecarrotsandsproutsfromtheirpans,andservewithaspotofbutter.

12.Tomakethegravy,putthetrayoveramediumheat;pourinsomechickenstockorthepanwaterthecarrotsareboilingin.Thickenthemixturewith3tbspofgravygranules-thiswillmakethebaseforthegravy.Keepstirringthegravyandseasonwithsaltandpepper.

13.Strainthegravythroughasieve,pushingthroughallthejuices;pourthegravyallovertheturkeytokeepitwarm.
