Douglas and District Lions Club Cookery Evening with Fred Desormeaux Douglas and District Lions Club are hold a cookery evening on the Monday next 26th of April in the Rochestown Park hotel. Award winning chef Fred Desormeaux is hosting the night. Fred is one of the highest ranking chefs in Munster and has won chef of the year two years in a row. Fred is currently the head chef of Greens Restaurant on Mc Curtain Street, Cork. Finger food will be provided and Fred will be showing how simple it is to prepare a several course meal. The event starts at 8p.m. sharp and all are welcome. You can pay at the door, Admission is only €20. monies raised will go towards the Lions Club local charities fund and great night is assured.

Alan O’Connor – Example of mind over matter. Alan O’Connor is one of the most talented motorcycle racers I have come across and less than 2 years ago the Cork man was involved in a horrific crash while competing at a round of British Superbikes in the UK. The prognosis wasn’t good for Alan’s recovery at the time, with the loss of the use of one arm on the cards apart from the other multiple injuries both physically and mentally to deal with. Alan’s future at the time looked bleak, with the prospect of staring disability in the face. After many complex operations and with a tough resolve, Alan got behind the wheel of a car last year to many people’s surprise and to defy the laws of human nature and medicine even further, Alan recently got back on a bike and only last weekend competed at the Motorcycle Drag Races at Halfway on a BMW S1000RR from Joe Duffy Motorrad (Dublin). If there is ever a true example of mind over matter then Alan O’Connor is it!

Phil Goodman – Lord Mayor’s AwardI was almost became public enemy number one last week having forgotten to mention the Lord Mayor’s Awards and in particular our own Phil Goodman’s recognition by the Lord Mayor and City Hall for her on going Trojan work on behalf of the Young at Heart in Douglas. Also congratulations to Mahon Community Centre and Lee Rowing Club who were also recognised on the Lord Mayor’s honours list for their efforts. Indeed congratulations to all who were honoured this year.

Time to end political cronies on State boardsSaying “Stop” to cronyism will speed up recovery

It’s time to end the practice of appointing friends and failed political

allies to State boards, and instead to make sure that the best-qualified

people are serving the State, said Fine Gael Cork South Central Senator

Jerry Buttimer .

Speaking before a Fine Gael meeting in Rochestown, Senator Buttimer

said this would ensure the right decisions are made to bring about a

faster economic recovery.

“We need an end to the practice of appointing friends or former failed

political allies to State boards. We need a meritocracy where the job

goes to the person with the best skills or the most suitable qualifications,

rather than their personal friendships with people in power.

“Ensuring that there is an open, transparent system in place for

appointments to State boards will help to rebuild trust between the

political system and the public. And it will send out the right signal

internationally that we want the best people working on our State

boards and in State bodies.

“This can only boost our investment potential. Foreign investors will

take Ireland more seriously as an investment opportunity. And I believe

that Cork, as the major city in the southern region, should be at the

heart of this investment from national government and internationally

from foreign companies.”

Community debateDear Editor I read with interest the recent letter and the reaction by residents against the call by Cork City Council inviting the public to clean up their own area as part of National Spring Clean month and with regard to the Community Maintenance Grants. I agree with the sentiment that in terms of infrastructure and litter there are areas of the south east ward that need addressing and I note concerns at Monahan Road and the Atlantic Pond and will follow them up at Council level. However, I do not agree with the sentiment that we should depend on the Council to sweep in front of our homes 365 days of the year. We need to take some responsibility for the areas that we live in. The City Council gives the bones of E.500,000 upwards to community groups across the city per year so that services such as meals and wheels and community associations can make people’s lives that bit better. In the south east ward, there are three community centres that require more investment so that they can advance the positive work they do. The work they pursue is very important and I hope valued by local residents. In addition, I also feel that since this country is so entrenched in an economic recession that the only way out is building new enterprises many of which start off small and need the support of the community. I would argue that in that light it is important that local communities keep discussing new ideas and through developing a sense of place, pride and belonging. Those I feel are also essential traits and values to any vibrant place. If people expect the Council to sweep outside their door, 365 days of the year, I would argue this country has bigger problems

that just the recession. We have lost how to value ourselves in the whole process. Cllr Kieran McCarthy

Politican's Double Speak!

Dear Editor, While I am all in favour of politicians who engage with their constituents outside of elections, I have received an invitation to a meeting this week that must rank as one of the most cynical exercises in political PR that I have ever seen.This Thursday evening, a public meeting is being held by Simon Coveney TD and Cllr. Des Cahill to discuss, amongst other things, "traffic issues". Given the area that Councillor Cahill represents, I can only assume that one of the issues being referred to includes those people who park at the on the double yellow lines and footpaths in the village. This is what infuriates me about this meeting as the problem could be quite easily solved if one of the most persistent offenders removed his delivery van - Cllr. Des Cahill!Surely in this day and age politicians should be leading by example rather than by persistently and flagrantly breaching the traffic bye laws as laid down by his own City Council? Is being a City Councillor and then parking on double yellow lines because it makes access to your own retail premises easier not an appalling case of yet another politician speaking out of both sides of his mouth? Last June we voted for change and Des Cahill was one of the new wave of politicians who was going to be different. He was supposed to be a breath of fresh air. Sadly, he turned out to be just yet another councillor who has learned nothing from the mistakes

It was our 18th wedding anniversary and my husband and I went out to dinner. We found it surprisingly difficult to get a booking but finally managed to get a table in a restaurant in town. I usually go for fish but decided that I needed the iron and ordered a fillet steak. However, when the steak arrived it was sirloin. I felt bad for the waitress thinking that maybe I hadn’t made my order clear and she might now get into trouble. I called her back nonetheless and explained the mistake. She was very pleasant about it and took my plate back to the kitchen. She came back two minutes later but instead of a fillet, it was the same steak as before doubled over. I stared at it and thought, ‘Is there really someone back there in the kitchen who thinks that I am not going to notice this?’ I know that I am not the first to make this observation but the Irish take a lot of crap. We are met daily with sloppy service from surly assistants; charged higher prices than elsewhere in Europe for food and products that are not always of equally high standard and we get fobbed off with laughable excuses as to why things don’t work or someone hasn’t turned

up when they said they would. If we dare to complain we are often met with derision and hostility and so, it becomes easier to pay up in silence than to make a fuss about what is rightfully ours. We are more laid back than most nationalities but this has as much to do with our reluctance to rock the boat as it does with our ability to go with the flow. I weighed up my options and decided that this wasn’t worth the indigestion.The steak was delicious. We passed on dessert and asked for the bill. When it came, we were charged for a fillet steak. I looked at my husband and he looked back at me. I broke the silence. “This has to be sorted. I can do it or you can do it but I’m not leaving until somebody does it.” My husband sighed and asked to speak to the manageress. She came forthwith and listened intently while my husband explained the discrepancy in the bill and the non-appearance of my fillet. When he finished, the manageress switched her attention to me and in a challenging voice said, “But you ate it, didn’t you?” I was so surprised by the question that I laughed but I rallied quickly and said, “Yes, I did. But, I will not pay for what I did not have.”

We locked eyes: it was a stand off. She blinked first and turning away from the table abruptly she marched off to correct the bill. As we left, we bumped into my Aunt Eleanor who told me that she was ‘starving’ after a hard day’s shopping. I recommended

the steak. If there was ever a woman who loved a battle it was Aunt Eleanor. We stepped out into the cold, rainy night but I mentally kicked my heels in the air: another blow struck for the Irish consumer.Striking a Blow

No one can analyse its magic fully. One thing we can say, however: a poem is made up of words. Words have not only meaning, but also form and sound. Taking in Charge of Unfinished Estate Everyone wants to live in an area that is well maintained but for many this is not the reality. An increasing number of unfinished estates have been left in limbo with nobody accepting responsibility for completing or maintaining them. Local Authorities have no responsibility for estates they have not taken in charge because agreed works on the planning application have not yet been completed.The estate’s developers may no longer be in business, may be unable or refusing to carry works or may be in dispute with the Council about the outstanding work.It is the residents of these unfinished estates that suffer the consequences which may include problems with road surfacing, landscaping and public lighting among others.In an ideal situation the local authority sets conditions requiring the developer to carry out a list of works when building the estate. This work is carried out during construction. The local authority inspects the estate and provides a snag list of outstanding works. These are completed and then the local authority takes the estate in charge. The system rarely works like this. In February 2008 the Department of the Environment, Heritage & Local Government issued guidelines to planning authorities in relation to the taking in charge of residential estates.

A statement of the facilities that will be taken in charge and the •maintenance services that will be provided must be set out at the preplanning stageDevelopers will be required to complete residential developments •to a standard that is in compliance with the planning permission granted;Planning authorities must take all necessary measures through •securing adequate bonds, inspection of construction and enforcement action when necessary;The procedures for taking in charge will begin promptly on foot •of a request by the majority of the residents in the development or by the developer.In relation to older estates, priority must be placed on resolving •those estates that have been left unfinished /not taken in charge for the longest period.

Cork World Book FestAre you a bookworm? The 6th Cork World Book Fest will take place from April 21 to 24 and will feature its most extensive programme to date. The Festival is fast developing into a prestigious and eye-catching event in Ireland’s cultural calendar and will showcase a rich cross-section of contemporary writers, from household names to cult classics to new talent. One of the most enticing events will be the visit of John Montague, one of Ireland’s most celebrated poets; as well as John Montague’s reading, the event will include mezzo-soprano Aylish Kerrigan singing some of his poems set to music by Aloys Fleischmann, accompanied by Dearbhla Collins. The Cork Festival continues to attract world renowned international and Irish writers. World Book Day will take place on Friday April 23. To mark this unique day a series of events including children and teenage readings, book exchanges, a lecture on publishing in Cork, a discussion on the impact of the eWorld and the screening of Todo Para Mi Madre, directed by Pedro Almodovar will take place. Cork South Central T.D. Michael McGrath has welcomed the publication of tender documents for the construction of the Bandon road and Sarsfield road flyovers.The tender documents have been published by Cork City Council and contractors have until 17th May to apply to be considered for the project. “The construction of flyovers at the Bandon road and Sarsfield road interchanges is a major boost for Cork. Both of these junctions have been real bottlenecks on the Southern ring road network and it is tremendous news that they will proceed to construction in the coming months,” stated Deputy McGrath “I understand that a detailed programme covering both the design and construction phases will be finalised over the next couple of weeks. A scale model of the proposed scheme is available for viewing at the National Road Design Office in Glanmire. “Once these new interchanges are completed, the South Ring Road will be a critical piece of infrastructure and will be an important asset for the region. I have no doubt but that the investment in these interchanges will pay a rich economic dividend for Cork in the years ahead. The interchanges will also make daily life so much easier for thousands of Cork commuters. “In recent weeks, I have again spoken with Senior NRA officials and Minister Noel Dempsey in relation to this project. There is a real commitment to delivering this project for Cork. “I understand that the construction project will take approx. 18 months to complete. The NRA will secure extremely good value for money in the marketplace at the moment given the level of competition between the leading building contractors. I very much look forward to seeing progress on the development of these two key interchanges in the period ahead,” concluded Deputy McGrath.

port of Cork Announce Schools initiative WinnerThe Port of Cork Company has announced Glasheen Boys National School as the overall winners of the 2010 Port of Cork Schools Initiative. The 5th classes’ efforts paid off when they were presented with overall best project by the Chairman of the Port of Cork, Mr. Dermot O’ Mahoney, in the boardroom at Customs House. Over 50 schools in and around Cork were invited to take part in the schools initiative which was themed ‘Cork Harbour through Your Eyes – commercial, leisure and environment – Working in Harmony’. All submitted projects are on public display in the reception area of Customs House. This is the fifth year of the Port of Cork Company’s successful Primary Schools initiative. This year’s judges Hugh Bruton Brittany Ferries, John Neville Port of Cork and Brian Lougheed Evening Echo all praised the huge effort made by the participating schools. Commenting on the school projects, the Chairman of the Port of Cork, Mr. Dermot O’Mahoney said; ‘Congratulations to Glasheen Boys National Schools for their excellent submission, it is clear they went to a lot of effort creating their project. We are delighted with the efforts put in by the participating schools. All the projects were of a very high standard and we acknowledge the time and commitment of the teachers and thank them for their support for this initiative.’ He continued; ‘This is a great way of educating school children on the history of the Port and Cork Harbour. Each participating class will be invited for an informative visit to the Customs House and a boat trip around Cork Harbour in May/June 2010. The overall winning class will also go onboard the largest liner ever to call to an Irish port, M.V. Independence of the Seas for an onboard tour in May. There are two models of Health care when it comes to taking care of yourself. The first model is the one most of us have grown up in and it’s called ‘Crisis Care’. This model of healthcare is essentially when an individual waits for something to go wrong in their body (a crisis) and then responds to the crisis. Bad breathCertain foods, health conditions and habits are among the causes of bad breath. In many cases, you can improve bad breath with proper dental hygiene. But, if simple self-care techniques don't solve the problem, you may want to see your dentist to be sure a more serious condition isn't causing your bad breath.

CausesMost bad breath originates in your mouth. The causes of bad breath are numerous. They include:Food. The breakdown of food particles in and around your teeth can cause a foul odor. Eating foods containing volatile oils is another source of bad breath. Onions and garlic are the best-known examples, but other vegetables and spices also can cause bad breath. Dental problems. Poor dental hygiene

and periodontal disease can be a source of bad breath. If you don't brush and floss daily, food particles remain in your mouth, collecting bacteria and emitting hydrogen sulfide vapors. Dentures that aren't cleaned regularly or don't fit properly also can harbor odor-causing bacteria and food particles. Dry mouth. Saliva helps cleanse and moisten your mouth. A dry mouth enables dead cells to accumulate on your tongue, gums and cheeks. These cells then decompose and cause odor. Diseases. Chronic lung infections and lung abscesses can produce very foul-smelling breath. Other illnesses, such as some cancers and certain metabolic disorders, can cause a distinctive breath odor.Mouth, nose and throat conditions. Bad breath is also associated with sinus infections because nasal discharge from your sinuses into the back of your throat can cause mouth odor.

Tobacco products. Smoking dries out your mouth and causes its own unpleasant mouth odor. Tobacco users are also more likely to have periodontal disease, an additional source of bad breath.Severe dieting. Dieters may develop unpleasant "fruity" breath from ketoacidosis, the breakdown of chemicals during fasting.

Lifestyle and home remediesTry the following steps to improve or prevent bad breath:Brush your teeth after you eat. Keep a toothbrush at work to brush after eating. Be sure to brush at least twice a day, for two to three minutes at a time.Floss at least once a day. Proper flossing removes food particles and plaque from between your teeth.Brush your tongue. Giving your tongue a gentle brushing removes dead cells,

bacteria and food debris. Clean your dentures well. If you wear a bridge or a partial or complete denture, clean it thoroughly at least once a day or as directed by your dentist.Drink plenty of water. To keep your mouth moist, be sure to consume plenty of water — not coffee, soft drinks or alcohol. Use a fairly new toothbrush. Change your toothbrush every three to four months, and choose a soft-bristled toothbrush.Schedule regular dental checkups. At least twice a year, see your dentist to have your teeth or dentures examined and cleaned.Chew fresh parsley or suck on a sugarless mint. Binge Eating For as long as I can remember I’ve been a binge eater, I’m 5'8" in height, 19 stone in weight and soon I’ll be heading into my 30’s so maybe it’s time I addressed a few issues. As a kid I would sneak food from the cupboard and when sent to the shop I would buy and extra few bars or chocolate and sweets, hide them when I got home and then later in the evening I would go out to the garden shed and devour the lot. I remember being in school looking forward to getting home, contemplating what I was going to treat myself to after dinner or supper. This habit, if you can call it that, has stayed with me into my adulthood and unfortunately for me it has gotten progressively worse over the years and now I’m binging a few times a week. For example, I might drive to one fast-food outlet, buy a meal and then eat it in the car while driving to another fast-food to buy something else. Last weekend I went to the shopping centre and bought a large sherry trifle, one of

the ones that gives enough portions of dessert for a family of 4 or 5, I then drove to town and ordered a large chicken, ham and mushroom pizza, I ate the pizza while driving home and then had the trifle while watching a DVD. I really want to live a normal life but for some reason I can’t manage to do it, and therefore, I’ve come to the conclusion that I need more help than just dieting. I tried so many ways to lose weight but nothing ever seems to work for more than a few weeks and then I’m back to where I started. Can you please help me? - Richie

Hi Richie,The symptoms you describe would indicate the existence of a condition known as binge-eating disorder. This may come as a surprise to most but binge-eating has been officially recognised as an “eating disorder” only in recent times. Those who have this disorder will often recall having started eating larger amounts of food in childhood or during their teenage years, with the urge to eat more getting progressively stronger as

time went by. However, binge-eating disorder may be present at any age and for some it may develop in adulthood. During a binge eating episode the subject loses all sense of control pertaining to food consumption, which is often followed by feelings of distress, guilt and shame, which in turn and ironically can lead to more binge eating. This disorder can be a cause of high cholesterol, high blood pressure or lead to heart disease, joint pains, Type 11 diabetes, fatigue and other complications if control over eating patterns isn’t gained, including obesity,

hypertension, stress and depression. Binge-eating disorder is highly treatable and as with other eating disorders we set out to identify and resolve the issues and triggers that are causing the compulsion. If you have concerns about any of the issues mentioned you should contact your local support group, doctor, health care provider or your psychotherapist. Now!

Every wind that blows brings something good to somebody. Even ill winds of mischance and calamity – often carry as they go the seeds of Providence, so that out of trouble comes some happy consequence. So in spite of our winter weather the future promises to be very bright. We'll try to give you a few ideas on what might need doing in your garden this week. Not everything in this article may apply to your garden - but there might be something, if not this week maybe next week.

Flower Garden Continue sowing hardy annuals wherever there is a need for colour; Sow extra in spare ground for cutting. Mulch lilies outdoors with compost, and feed those growing in pots. Watch out for black fly on philadelphus, elders and other shrubs, and spray.

Kitchen Garden Tuck straw or special mats around strawberry plants to keep the fruit

clean; do this before plants begin to sprawl. Remove grease bands from fruit trees and burn. Cut asparagus spears regularly, but not from new plants. Remove flowers from perpetual strawberries for heavier crops later in the year. Sow kolh-rabi little and often, and every 3-4 weeks for young tender crops. Support peas before they make their first tendrils. Erect supports for runner and climbing French beans. Thin out autumn rasberry canes to 10cm(4in) apart, and tie in as they grow.

Lawns & Hedges Continue mowing, twice weekly, for a fine finish if the grass is growing vigorously.

Greenhouse Remove greenhouse insulation; apply a light speckle of shading to the glass. Start feeding early tomatoes, and continue removing sideshoots. Sow runner and climbing French beans in pots for planting out in 3-4 weeks time. Sow surplus half-hardy annuals for greenhouse pot-plants. Continue pricking out bedding , and move

How to Cut Your running CostsRemove Unnecessary Weight From Your Car: This doesn’t mean you have to rid your car of panels, seats and wheels; but simply take out unnecessary objects that add more weight to your car and make the engine burn more fuel. Do you really need to keep that canoe in the boot all week long when you only use it on Sunday morning? Or what about that roof box or bicycle rack that you haven’t used in a while? Although removing such items from your car may seem insignificant, it is very important. For every 50kg of weight you remove from your car, you can reduce the engines fuel consumption by an average of 2 percent. Out you go kids…Maintain your speed:Maintaining your speed on motorways is an excellent way to lower your car’s thirst for fuel. Driving at high speeds means more fuel is used to com-bat increased air resistance, but driving at very low speeds can be danger-ous to fellow road users. If you drive at 120 km/h rather than keeping a steady 100 km/h, fuel consumption can increase by over 20%! Pump Up Your Tyres:A single tyre that is under-inflated by two pounds of pressure can increase your car’s fuel consumption by 1 percent. There are four tyres on your car, so you do the maths. An under-inflated tyre not only adds an unnecessary strain on your engine, but will also increase thread wear on your tyres. Check the recommended PSI for your car in your owner’s manual, drive down to your local garage and get pumping! Turn Your Engine Off When Stationary;Do not let your car’s engine idle needlessly. If an engine is left idling (ticking over) for more than 10 seconds, it actually wastes more fuel than restarting the engine. Idling can consume up to four litres of fuel per hour, which is the equivalent of €5 worth of petrol. If you do have to stop and start, mini-mise the amount of time you sit with the engine in idle. If you know you are going to be sitting at a traffic light for a minute or two, turn off your engine and save fuel in the process. Clean Your Car’s Air Filter: The air filter is an extremely important part of your car that prevents dirt from entering the engine. It also happens to be an extremely easy compo-nent to maintain, even for those who are non-mechanically minded. Over time it can become clogged with dirt and will need to be replaced. Driving your car around with a dirty filter can reduce your car’s fuel economy by over 10 percent, which is the equivalent of adding around 4 cents to each litre of fuel you buy. A new air filter only costs around €30 to purchase.

Our thanks to Douglas Village Shopping Centre and Quigleys; we had the one and only Declan Ryan entertaining us. We celebrated two golden wedding anniversaries, John and Agnes Dwyer and Tom and Kay Rathcliffe. The manager of the shopping centre Bartozs Miezala who I am sure all of ye know by now as he always has a welcome and a kind word for all who visit the shopping centre. He presented the “golden couples” with two special cakes and flowers. Once again reinforcing the strong community spirit we enjoy here in Douglas. We send our best wishes to the boys and girls of St Nioclais School Frankfield and the girls of St Columbus School, who are making their confirmation this week, enjoy your special day and be filled with the gifts of the Holy Spirit. I am quite sure that in the years ahead you will be teaching our older people all about computers as presently the students of Douglas community school have been doing for the last two years. They can

be very proud of their achievements as they have made such a difference to the quality of life of our older people many of whom can now e-mail etc, better than “Bill Gates”For the summer months we will take a break from Tai-Chi, knitting, and in-door bowls. We have many day trips to enjoy. On the 4th of May we will visit Griffins garden centre and then back to O’Sullivans for dinner. In the coming weeks we will visit the naval base, Iveagh house, Bunratty castle, Sherkin island and a boat trip on the lakes of Killarney and a boat trip to Kinsale harbour and many more. The trip to the House of Commons in September is full. I know many of ye were disappointed that it filled up so fast, I hope to do that trip again as I know there is a waiting list for the September trip.The “Care-Ring Douglas” service is a project that will be available to people in our community Rochestown, Frankfield, Grange, Donnybrook and Douglas. The concept being anyone

who feel they would like a phone call once a week from our trained volunteers will sign up to do so. This service is very successful in Bandon and surrounding areas. I paid a visit to the Bandon resource centre to get an insight into the workings of the service. I am really pleased that our own community and the people who need it will benefit from such a service. After the harsh winter we have endured with many people unable to move outside their homes, this service will enable our volunteers to keep more in touch, and as I always say “we aim to make Douglas a place to grow old in”.Following our recent visit to “round the fireside” radio show, where we recorded two shows. Two CD’S are now available for €10. I would recommend that you get them as there is a limited amount for sale. They are great mementos for families to keep and treasure. Some serious gigs happening in Cork lately and tonight is no exception, Calvin Harris takes to the decks at Savoy tonight for a dj set sure to satisfy any clubber, tickets are 30euro and some are still available on the door. Duke Special and his band will present an evening of songs especially written for each of these twelve near-forgotten silent screen gems, combining celluloid and vinyl, spoken words and musical yarns, bringing to life the beautiful and sinister world of the legendary Hector Mann.Musicians Mick Flannery and John Spillane will head up an impressive line up for a benefit concert in Cork, in aid of siblings Saoirse (4) and Liam (21 months) Heffernan, who suffer from a very rare and fatal neurological condition called Late Infantile Batten's Disease. The MC for the evening will be Dave Mac of Red FM and the full line up also includes Hank Wedel, Kevin Murphy and The Wild Geese. The 900 seat event will be held at the Savoy Theatre Cork on Thurs May 20th, doors 7.30pm. The children’s parents, Tony and Mary Heffernan launched their all-Ireland fundraising appeal following an emotional appearance on The Late Late Show, in March. This concert is part of the initiative to fund the participation of their children in a second generation human medical treatment trial which is due to commence later this year, at the Weill Cornell University Hospital in New York. This is the only hope these children have of avoiding certain death from Battens Disease.In Live At The Marquee news, Blondie, Snoop Dog and Chris Brown have been announced as acts to take to the 5000capacity tent this summer. Blondie will perform on the 24th of June. She will be giving their Cork fans the experience they’ve been waiting for with a combination of new music from their upcoming album and classic hits. Blondie are soon to release their first album in six years, “Panic of Girls’” and is set to be what fans have been craving. Chris Brown will take to the stage on the 15th of June after 3 sold out shows at the O2 in Dublin and 1 show in Belfast in January ’09.Snoop Dog will play at the Marquee on the 5 of July.

Salmon Chanted Evening( A personal recipe of singer Maura O'Connell)

2 large fillets of salmon with skin (about 12 oz. each) •1 1/2 cups crumbled feta cheese •3-4 ounces raw baby spinach •1 teaspoon lemon zest •4 large tomatoes •2 tablespoons crushed garlic •

Method Wash and dry salmon. Blanche spinach by plung-ing it into boiling water and remov-ing immediately. Place spinach in a colander to drain. Coarsely chop spinach and mix with feta cheese and lemon zest. Place one fillet of

salmon skin-side down on a baking tray or oven-safe dish that has been sprayed with cooking spray or brushed with olive oil. Spread all the spinach and cheese mixture over first salmon fillet. Place second salmon fillet on top skin-side up. Chop tomatoes finely and mix with garlic. Spread tomato-garlic mixture over salmon, completely covering top and sides.· Bake in 350 degree oven for 40-45 minutes. Serve with rice and salad. Bon appetit!

South mahon Local Area planCork City Council is preparing a statutory Local Area Plan for the South Mahon area in the south-east of the city, which is identified in the Cork City Development Plan 2009-2015 as a Key Develop-ment Area.The new local area plan will set out a planning and development strategy for the area, the boundary of which is broadly defined by Skehard Road to the north, Lough Mahon to the east, Douglas Estuary to the south, and Mahon Golf Club to the west.To start the preparation of the plan the City Council is undertaking a pre-draft issues exploration consultation to identify key planning and development issues. motoXSouthwestern Hare Scramble at BartlemeyThe Southwestern Group’s latest event was a hare scramble off road race held at Bartlemy near Fermoy.A large entry of over eighty bikes and quads was the order of the day.The main solo race of three hours was a cracker from start to finish. From the start it was Hungarian Jonny Ponzyi on the Yamaha who took the lead, only to make a mistake in the tricky wooded section on lap two. Bishopstown man and race favourite John Barry on his Yamaha, was then in control with Darragh Buckley from Douglas on his Suzuki in second while Nigel Sheehan from Midleton on the KTM was third with Ponzyi remounting in fourth.Then it all started to happen, on lap five Barry was out with engine trouble, next it was Sheehan's turn, out with no back brake. Now it was Buckley leading with a good advantage over Ponzyi, Brian Landers from Fermoy on the Yamaha was now third with Mick Murphy from Mallow on his Honda fourth. With two laps top go and looking like a certain win Buckley's chain cried enough and he was out. Ponzyi eased home to a comfortable win with Landers second and Murphy Third with Michael Brett from Clonmel making up fourth place.

In the two hour solo race it was a win for Douglas man Jonathon O'Brien on his Honda, with Richard Fair from Rochestown in sec-ond, Brian Kidney from Carrigtwohill third and ex motocross cham-pion Des Morris from Castletresure in his first race for five years a fine fourth. The quads were won by Dave Smith from Brian McCarthy, George Stapelton and Nigel Barry. The Feile footballers qualified for the final with a tremendous victory over Carrigaline in Kilmurry on Sunday last. A fine game with some excellent football played by both sides. Douglas started well and went into an early lead, however Car-rigaline fought back and with normal time up Douglas were a point ahead. They managed to extend the lead to five when the ref blew the Final whistle after 7 minutes of injury time.This was a great team performance with Ryan Walsh rock solid in goal, Luke McGrath and Shane Kingston competing for every ball in the defence as if their lives depended on it. In the forwards, Mark Dolan worked tirelessly through-out and Gary Hartnett chipped in with two well taken goals. The lads now meet Nemo in the final.The U13 Hurlers got their league campaign

underway with a good win over Blarney in the sunshine at Douglas on Saturday. Dara Bald-win struck some fine points in a great display at Centre forward. At Midfield Shane Donegan did some great work. Others to do well were, Donnacha Murphy, Eoghan O’Leary, Diarmaid O’Mahony and Ross McCormick.The U15 Hurlers put up another fine perform-ance but lost out eventually to Midleton in an-other well contested game on Saturday. Best for Douglas were Daniel Savage, Jordan Kavanagh, Aaron Ward, Conor Kingston and Sean Walsh. The U11 Footballers qualified for the finals of the John Kerins tournament following a nail bit-ing qualifying tournament in St. Vincents on Sat-urday. Douglas pipped Carrigaline in the play off to go through to the finals. Thanks to our hosts St. Vincents for a well organised day.

G.A.A. FoCUSSnippets from the Local and National SceneBy Pat Harrington“Our feeling was that the games would lose their appeal if the competitive edge was with-drawn from them”. Those were the words of Tony O’Mahony, chairman of Cork County Bórd na nÓg. He was referring to a motion put forward to scrap the championship at under 12 level.Are we right to train children of 11 / 12 years of age to win county titles or should we as adults be coaching them to im-prove their skills and develop their game. I for one must put my hand up and admit that I have coached kids at this level to win county championships. The reason for my change of mindset is that I find there is too much pressure on young peo-ple to achieve. This is much too serious an issue and the biggest culprits can be the mentors on the sidelines and indeed all too often the parents of the kids.We are constantly promoting the elite players but success comes at a cost. The best of our 12 year olds do not necessarily prove to be the star players at 18 / 21. It is essential that young play-ers be given adequate time to mature. Play games with smaller numbers. It is most im-

portant that these young lads are allowed to develop. In my humble (changed) opinion the lads should enjoy themselves – sport just like life at that tender age is to be enjoyed and should not seen as a chore.Wonderful SkillDouglas, in a junior B game against Na Piarsaigh recently were awarded a sideline ball on the 20 Metre line. A young lad, Jerry O’Kane stepped up to take it. Jerry duly cut the ball over the bar with some to spare. Not bad for a lad play-ing his first competitive game in seven years. Jerry learned his skills under the direction of Sam Collins (R.I.P). I could well im-agine Sam looking down from on high and waving his walk-ing-stick in delight.Cork PlayersWell done to Eoin Cotter who has been performing very well at corner back with the Cork senior footballers. Also to Eoin Cadogan who is combining hurling and football at inter-county level and David Hanra-han who is on the Cork minor football team.BallinloughI attended the Na Piarsaigh vs. Douglas senior hurling city championship at Ballinlough last week. The venue has been refurbished and is looking in splendid condition. The pitch has been extended in both length and width with new dug-outs and fencing added. It is a credit to the city board and a venue to be proud of.

Douglas through to under 21 final:Extra time was needed to sepa-rate Douglas and Bishopstown in the semi-final of the under 21 football championship at Ballinlough on Saturday 17th April. In a titanic struggle both defences were on top and little separated the sides throughout this absorbing contest.Douglas started strongly and were two points up before Bishopstown made an im-pression on the scoreboard. However, Bishopstown came back strongly to take the lead. Douglas' team captain Richard Murphy showed great leader-ship and Odhran Mulrooney delivered yet another tour de force performance. Finbarr Desmond drove a left footed shot over the bar and Olan Bermingham kicked over a free

and youngster James Furlong added another as Douglas se-cured a one point lead at the interval.Douglas stretched the lead in the second half but Bishop-stown responded to level the game with time almost up. Douglas were fortunate that goal keeper Bryan McPolin came up trumps with a brilliant save late on to sustain Douglas' ambitions.During the additional period it was Bishopstown who forged a lead but a Colm Lucey pointed free and a Finbarr Desmond point levelled the scores with time almost up. This Douglas team have shown great char-acter throughout the cam-paign and instead of settling for a replay launched another attack and wing back John Collins popped up in the right

place at the right time to curl over the winning point. The bookies have stopped taking bets as Douglas are just about everybody’s underdogs against St. Finbarr’s for the final which will be played on Saturday 24th April and the players are seek-ing your support to help cause an upset.
