An egg restaurant, who would have thought? Jon Hinkle, owner of the five Eggspectation

Restaurants in the United States. Jon moved to this area from Denver, Colo-rado and met his wife here before he could move back out west. He got started in the restaurant busi-ness at Outback Steakhouse as a bar tender when there were only 25 Outback Steakhouses open. He worked his way up through many positions - a Re-gional Kitchen Tech, then he opened multiple res-taurants, and worked as a Service Tech. While working as a service tech he worked with 25 to 30 different locations and was able to see what worked and what didn’t work within each res-taurant, which he says helped him to develop his management style. After that, Jon opened the Outback in Elli-cott City and made it the number one location in the world! For the five years he had the restaurant, it stayed number one! Which he says was because he put Outback above everything else. While Jon was working at Outback, he got the opportunity to go to Canada to look into a res-taurant called Eggspectation. He loved the concept, met with the Canadians who had the restaurant,

and the next thing he knew they were working out a deal for the first Eggspectation in the United States! Jon said, “My idea was always breakfast, it’s really not paid very much attention, but it’s called the most important meal of the day.” Jon saw that there were always meetings, as well as birthdays, anniversaries, holiday parties, etc. going on that all wanted a space, but many restaurants were not conducive to that. That’s why he has a separate meeting room and wireless internet available at all five Egg-spectation locations. Jon has two locations in Maryland: Ellicott City and Silver Spring, as well as three in Virginia: Chantilly, Gainesville and Lees-burg. The Ellicott City location was the first and is celebrating 10 years this year! Eggspectation does a lot through the community, grass-root-ing the company. Each of the locations does activities such as cooking complimentary food for a golf tournament to help get their name out there. They have a large partnership with Howard County Schools, which includes giving gift certificates to the principals that they can use as benefits for perfect attendance, straight A’s, or whatever the school chooses. They also hold 10 percent nights where the school encourages people to go to Eggspectation for dinner, and in return they give 10% of the profit back to the school. They are also involved with Howard County Hospital and Symphony of Lights. Branding is one of the biggest struggles for Eggspectation at this point. People think, they are eggs, so I go there for breakfast, but why would I go there for lunch or dinner? Jon said, “If I can get you through my door, I know I gotcha.” He mentioned that American’s do not think that one restaurant can do more than one segment and do it right. When Jon first opened the Ellicott City location, he said other restaurants around would be on a 90 minute wait for dinner, and Eggspectation had no wait. But what many people didn’t real-ize was Eggspectation is much more than just eggs, they have salads, burgers, chicken, fish, pasta, and much more!

When it comes to social media, Jon likes to use Groupon because you have control and a feel of how well it works. He offered a certificate for a 24 hour period on Groupon, and sold 6,000 certifi-cates. What Jon likes the most about Groupon is if you buy a cer-tificate, Groupon will keep reminding you to use it, so it keeps the brand on the mind of those who purchased the certificates. Also, the company gets a list of email addresses for the customers who bought the certificates through Groupon. In his mind, another large benefit of Groupon is if you bought one of the certificates, you’re probably not going to come in by yourself. You’re likely going to bring other people with you, which means multiple people are exposed to the restaurant because one person bought the certificate. On the negative side, at the end of the month, you discount-ed your price for those customers who bought and used the certifi-cate. The thought is that the certificates brought in new customers

who will hopefully become returning customers. We asked Jon if a young restaurateur came to him for advice, what would he tell him or her? He had three points: validity of the concept, people, and the economy. First, check the validity of your con-cept. Is it already a very competitive segment? Second, the people – you must have good people to make it. You want everyone to come in and have a good time, both employees and custom-ers. The proprietors that work with Jon and Eggspec-tation get a percentage of the bottom line. He has found that this gives a sense of ownership, and has created a low turnover rate. Lastly, the economy – with the economy the way it is, you have to think outside of the box. Things as simple as using LED light bulbs, exhaust hoods that sense heat and speed up and slow down when necessary, and fryers that automatically cool down slightly when they haven’t been used for a certain pe-riod of time can all help your restaurant to be more efficient.

following delivery, SCA will repair or replace the dispenser free of charge.
