Usage of the Table Salt

In cooking

• used to enhance the flavour of various dishes and to aid in bringing out other flavours and textures

• salt in culinary history was used to preserve meats- this would inhibit microbial growth

• used to aid in boiling water by making it boil at a lower temperature

• Salt will prevent food from sticking to dishes and minimize smoking

Formula of Chemical Substance

• Table salt is sodium chloride, a chemical compound with the formula NaCl.

Na (Sodium) and CI (Chlorine) = Sodium Chloride

The Molecular Weight of Salt

• The atomic weight of sodium is 22.990 gram, and of chlorine is 35.453 gram. The molecular weight of sodium chloride is, therefore:

Mw (NaCl) = 22.990 + 35.453 = 58.443 gram.

Toxicity of the Salt

• The major adverse effects of a toxic or excessive salt (sodium) intake are hypertension, cardiovascular and kidney diseases.

• There are also another diseases that link to excessive salt intake such as atrophic gastritis , stomach cancer, kidney stone formation osteoporosis and blood pressure.

• The American Heart Association, the National Heart Lung and Blood Institute, the U.S. Dietary Guidelines, and most other public health organizations have recommended reducing dietary sodium intake to no more than 2000 to 2400mg/day’

• The latest dietary guidelines due out in 2010 are likely to reduce the US Dietary Guideline to no more than 1500mg of sodium per day.
