Dear Lea

I can’t wait! It’s going to be the greatest of trips! I can just tell from now. We are going to Sydney, Australia when it’s nice and sunny. But the only thing wrong is we have to get up at 4:00 am to get there in time! That isn’t very nice. Elliot and Rose are coming with John and I. We are staying at a beautiful hotel called, Sydney Harbor Marriot Hotel and Circular Quay. Guess what! You can see Sydney Opera House from there and all the rides at Luna Park. Speaking of that we are going there twice since the kids loved the look of it so much. I’m so looking forward to going to the beach, Bondi Beach. It looks beautiful! We are doing so many things like: Laser tag, mini golf, picnics and so much more! Will talk to you much more when we get home.

These are very tasty skewers of crocodile tail meat, barbecued over charcoal or hot rocks, and seasoned

with My He Beach sea salt flakes infused with lemongrass and kaffir lime.

Per person:

180g crocodile tail fillet3 skewers5g sea salt flakes infused with kaffir lime or lemongrass

Any salt can be infused with spices, herbs or other aromats. Give it a try.Get an airtight plastic container, such as tupperware. Put sea salt flakes in (your choice)Add torn kaffir lime leaves and knotted lemongrass., lightly bruised.Put the lid on and shake for a few seconds.Shake daily, and after 4-5 days it will be ready

We served this with a really refreshing and memorable salad of:Shredded fresh coconut meatToasted cashew nutsCorianderCondensed milk

And then it was topped it off with deep fried taro crisps so we have a few temperatures and textures on the plate.This one is really nice to eat.

Spring is positively gorgeous in Sydney. The average temperature ranges from 13°C (55F) at night to 22°C (72F) in the day.

The weather is cool but is usually very pleasant and sunny. Spring is normally Sydney's driest season, the 2000 Olympic Games were held mid September for this reason. Spring commences September 1st and extends through to November 30th.
