Sweet Potato and Macadamia Nut Cake

List of ingredients

Cake Ingredients:

500ml sugar5ml vanilla extract375ml Stork Bake, melted60ml boiling water4 eggs, separated550ml cake flour15ml mixed spice15ml baking powder1ml salt375ml grated sweet potato, raw100g macadamia nuts

Icing Ingredients:

500ml icing sugar60ml Stork Bake250ml cream cheese10ml mixed spice

To Decorate:

50g chopped caramelized macadamia nuts

How to make it?

1. Beat the sugar, vanilla and Stork Bake.

2. Add the water and egg yolks, beat.

3. Add sieved flour, mixed spice and baking powder.

4. Mix well and add the sweet potato and the nuts.5. Beat the egg whites and salt until stiff and fold into above mixture.

6. Bake in two well greased 24cm cake tins at 180ºC for 40 minutes.

Icing Method:

1. Mix ingredients together, divide equally on the two sponges.

2. Place one on top of the other and decorate with 50g chopped caramelized macadamia nuts.
