Go ahead, take a look around.
Every item you see has a story and a purpose. We put just as much thought and
love into this space as we did our food – and we truly hope you enjoy both.
The bar and chef’s counter are faced in encaustic tiles designed by world
renowned interior architect and furniture designer, Francisco Segarra. These
beautiful tiles were made in Spain.
The black & white paintings were commissioned by Nashville artist, Angela
Simone, whose work has appeared prominently on television (the hit show
Nashville) and in magazines. Her prints also have a devoted online following.
Angela was inspired by the botanical elements of both the space and namesake of
Eden, which means ‘bountiful garden’.
Framed vintage mudcloths, sourced from around the world, are a nod to the
fermentation processes our chefs love to work with at Eden, as mudcloth is also
created from the fermentation of…you guessed it – mud!
The fiber art displayed at Eden was commissioned by Justine Depalma. When
she’s not at her day job, Creative Director for Whole Foods, the New Jersey based
artist creates stunning fiber pieces using all-natural dyes. Our piece was created
specifically for Eden with Turmeric, Indigo and Green Tea.
Our custom zinc tables were designed in house and sourced locally through Meg
Piercy and her family run company MegMade. And with Eden being a family run
restaurant, we always look to support similar small, local businesses.
Our communal tables and host stand were made locally from beautiful reclaimed
wood by another family run business, Square Nail. Cement lighting pendants
throughout Eden are constructed from concrete to create exceptionally energy
efficient lights compared to glass or metal, furthering our commitment to green
living.

Eden is the longtime dream of Jodi Fyfe and Devon Quinn. Inspired by cuisine,
travels, and yes – even botany, this husband & wife team brought their ideas
together to create a space and experience unique to the city.
So eat, toast, chat, laugh, relax, celebrate – anything you do over amazing food
and drink. We’re happy to have you.

Fresh, local ingredients are important to us. So important that we built a 500
square foot greenhouse and garden just outside our doors. There’s nothing like
it in the city!
Plus, in true ‘family-run business’ fashion, it was all built by our Chef Partner
Devon Quinn and his father, Tom.
So what does this all mean? That with our current growing program, a multitude
of herbs and greens will make the short journey from urban garden to plate all
year round. It’s a difference you’ll be able to taste.
And we won’t stop at the food. Be sure to keep an eye on our cocktail menu too!

Winegrowers around the world have adopted Sustainable, Organic and
Biodynamic® farming practices that have helped to greatly improve the quality
of the wines and the environment. Today’s finest winemakers apply in-depth
knowledge of soil chemistry and microbiology to inform winegrowing that favors
traditional techniques, like turning over the soil rather than using herbicides.
These approaches to winegrowing carry a long commitment to making healthy
wines with low environmental impact.

Sustainable winegrowing and winemaking emphasize environmentally friendly,
socially equitable and economically feasible production, including organic
practices, increasing vineyard biodiversity, soil revitalization, renewable energy
and conservation, and water reclamation.
Sustainable farming is often the first step toward organic farming.

Through organic farming, over time, chemical products are removed from the soil
and the vineyards attain better chemical and microbiological balance, which
results in better grapes.

Biodynamic farming is used to make many wines from Alsace, Burgundy, the
Loire, Champagne, the Rhône, Jura, Spain, Germany, Italy, California and New
Zealand.
Biodynamics eliminates synthetic chemicals and encourages biodiversity and the
use of homeopathic herbs instead of commercial fertilizer, weed killer and
pesticides. Natural treatments (special mixtures added to compost), herbs
(valerian or nettles), natural predators (ladybugs), cover crops and native
animals are used.

and the youngest from 2007. Every glass of this bottle of Krug Grande Cuvee is
the fruit of more than 20 years of patience and crafting.
Notes of toasted bread, hazelnut, nougat, barley sugar and jellied fruits may
take you by surprise. You may even taste hints of apples still on the tree, flowers
in bloom, ripe and dried fruit, almonds, marzipan, gingerbread, sweet spices
and even brioche and honey. You may also notice its exceptional freshness in the
mouth, with rich and tangy flavors of lemon and grapefruit enhanced by the
subtlety of its fine and elegant bubbles. Krug Grande Cuvee can age beautifully.

The handpicked and carefully selected grapes in boxes of 15 kg come from the
three single vineyard plots: "El Consul”, “La Misela” and “Terrazas”.
Clear, deep ruby color with violet rims. Clean, fresh and pronounced on the nose,
with complex aromas and eucalyptus notes. Elegant fragrance of black fruit and
fresh herbal hints of mint and balsamic. On the palate, very well integrated acidity
and tannins from the two years in new Caucasian oak barrels. Sophisticated range
of ripe fruit flavors of nice intensity and a long finish, with a good potential for
ageing.
The wine is made traditionally according to the old-world
methods side by side with the latest technology. The wine is bottled without any
fining or filtering, resulting in an unprocessed and fully natural wine.
Marqués de Vargas subscribes to the environmentally friendly concept and
practice of sustainable winegrowing. Herbicides and pesticides are not used in
our vineyards.
