With the B.C. cherry season being so short (and sweet), we revel in anticipation as the trees begin to spout their cherished cherries. Our supply chain partner Jason spends every Monday and Tuesday in B.C. visiting orchards looking for the largest and sweetest variety of cherry available throughout the season. Once satisfied, he fills his truck and the cherries are in Sunterra Market the next day. Now that’s a fresh pick!

The cherry season is entirely

dependent on weather and

elevation. That’s why we

source our cherries as far

south as Osoyoos, B.C. at

the start of the season, and

follow the trail up the sides

of the valley all the way to

Vernon, catching the last

ripening cherries sometimes

even into September.

FEATURE RECIPE

SERVES 6 — 8

500 g fresh sockeye salmon fillet, skinned

kosher salt1 cup fresh tomatoes,

deseeded and diced½ cup green onions, sliced½ cup white onions, diced1 cup red, green and yellow

peppers, diced1 tbsp canola oil

chili flakes to taste 1 tbsp lemon juice

Rub the salmon thoroughly with kosher salt and cover with a ¼-inch thick layer of kosher salt. Wrap in a paper towel and

refrigerate overnight or 24 hours.

Remove the salmon from fridge, scrape off the salt and rinse the fillet. Pat dry

and cut into ½-inch cubes.

Combine the salmon, tomatoes, onions, peppers and oil in a bowl. Let them rest for 30 minutes. Just before serving, add

the lemon juice.

Serve in a bowl with crackers or spoon into romaine hearts or endives.
